Featured Application: The technological approach can help the health industry access new upcycled plant extracts that the industry could not access before because of the poor sensoriality or difficulty of use, with great sustainability profiles that consumers value very much. The obtained ingredient is stable both under process and harsh storage conditions, is readily water-soluble and easy handling, demonstrating versatility for multiple applications in various industries from cosmetic to nutrition and much more. Grape harvesting generates a high amount of wastes, mostly leaves, which represent an economic and ecological problem for farmers. New products can be generated through these wastes, giving environmental, social, and economic advantages while also meeting the industry demand for novel natural ingredients. In this study, aqueous leaf-extracts from two cultivars of Vitis vinifera Aglianico (Agl) and Greco di Tufo (Gre) were produced by microwave-assisted extraction (MAE) and evaluated in composition by ATR- FTIR and HPLC to identify the main phenolic compounds, especially quercetin and kaempferol. The results showed that leaves extracts confirm to be a potential source of phenolic compounds. Dry extracts, although highly functional, show critical handling characteristics, being sticky and unstable in normal post-processing conditions. A stable and easy handling microparticulate ingredient was produced by spray drying containing the most phenolic-rich obtained extract (AGL-28). The microparticle powder form based on pectin/maltodextrin matrix was produced with high process efficiency. The microstructures were able to confer functional and chemical stability to the extract while also showing good technological characteristics (high water dissolution rate and flow properties), transforming the extract into a handling ingredient able to meet new industrial uses. Abstract: Functional extracts from Fadogia ancylantha, Melissa officinalis and Tussilago farfara posses excellent antioxidant and good antimicrobial properties. The unprocessed extracts occur as sticky and low-water-soluble materials with penetrating smell. The loading onto maltodextrins matrix, widely used by food and cosmetic industries, is often unsatisfying. The industrial products are not always enough stable to preserve the functional properties of natural compounds, also giving practical difficulties for the manufacturing. This paper reports on the plant extracts encapsulation by spray-drying in a maltodextrin/apple-pectin based matrix. Physicochemical and technological characteristics, organoleptic and antioxidant properties of the resulting powders, were examined and compared to both unprocessed extracts and industrial products. The selected carrier and process conditions led to stable and handling microencapsulated powder forms with improved water dissolution rate. The made up powder also masked the extracts unpleasant smell making them suitable for successive manufacturing to produce functional components for foods or nutraceuticals purposes. An extract obtained from hazelnut shells by-products (HSE) has antioxidant and chemopreventive effects on human melanoma and cervical cancer cell lines, inducing apoptosis by caspase-3 activation. A clinical translation is limited by poor water solubility and low bioavailability. Dried plant extracts often show critical characteristics such as sticky/gummy appearance, unpleasant smell, and instability involving practical difficulties in processing for industrial use. A spray drying method has been applied to transform raw HSE in a microparticulate powder. The biopolymeric matrix was based on l-proline as loading carrier, hydroxyethylcellulose in combination with pectin as coating polymers; lecithin and ethanol were used as solubility enhancers. A Hot-Cold-Hot method was selected to prepare the liquid feed. The thus prepared powder showed good technological properties (solid-state, particle dimensions, morphology, and water dissolution rate), stability, and unchanged chemopreventive effects with respect to the unprocessed HSE. The potential of Lutein-rich extract from Chlorella vulgaris (CHL) as a health product ingredient is hindered by stability and solubility issues. We propose a method to produce a stable microparticulate powder using spray-drying and a multicomponent carrier consisting of modified starch (OSA-MS), low molecular weight Inulin, and Lecithin. The influence of matrix selection, spray drying, and storage conditions on powder properties and chemical-physical stability was investigated. The resulting powder exhibited improved flow characteristics, wettability, and enhanced water dissolution rate of CHL. After 12 months of storage, the powder (PURIL-CHL) retained approximately 65 % of Lutein, twice the retention of the raw extract. The properties of the spray-dried powder were well-preserved, and bioactive dissolution remained above 80%. This study provides an approach to upgrade Lutein-rich CHL extract in powder form, suitable for various applications in the health products industry. Lactose is a simple sugar found in milk and is widely used as an ingredient in food, nutraceutical and pharmaceutical industries. Manufacturers prefer to use it in its spray-dried form because it is technologically better than raw material, but it is physically unstable to environmental exposition. This work focuses on the development of a new spray-dried ingredient in the amorphous state using a mix of lactose and sodium carboxymethyl cellulose in different weight ratios that have a higher stability than Spray Dried Lactose. The particles' amorphous state was evaluated via thermal analysis (DSC) and microscopy studies (SEM), and the effect of amorphisation on the particle size, morphology and solubility were studied. The flowability of the spray-dried powders was determined via density measurements and expressed as the compressibility index and Hausner ratio. The innovative ingredient, which was based on a 1:1 NaCMC:lactose blend ratio, was produced with a high process yield (82.2%); the powder resulted in a shapeless microparticulate form with a good flow character, which is also able to control the water uptake during the storage period. The low values of moisture content (<2%) and hygroscopicity (12.9 g/100 g after three months storage) do not affect the powder in the solid state, avoiding plasticization and glassy-rubbery state transition and ensuring long-lasting stability under harsh storage conditions.
