El Niño cave, located on the south-eastern border of the Spanish Meseta, hosts a discontinuous sequence including Middle Palaeolithic and Neolithic levels, along with Upper Palaeolithic and Levantine style paintings. It is a key site for understanding human occupations of inland Iberia during the Palaeolithic and early prehistory. The introduction of farming had far-reaching impacts on health, social structure and demography. Although the spread of domesticated plants and animals has been extensively tracked, it is unclear how these nascent economies developed within different environmental and cultural settings. Using molecular and isotopic analysis of lipids from pottery, here we investigate the foods prepared by the earliest farming communities of the European Atlantic seaboard. Surprisingly, we find an absence of aquatic foods, including in ceramics from coastal sites, except in the Western Baltic where this tradition continued from indigenous ceramic using hunter-gatherer-fishers. The frequency of dairy products in pottery increased as farming was progressively introduced along a northerly latitudinal gradient. This finding implies that early farming communities needed time to adapt their economic practices before expanding into more northerly areas. Latitudinal differences in the scale of dairy production might also have influenced the evolution of adult lactase persistence across Europe. This paper presents for the first time the results of a combination of petrographic, geochemical and organic residue analyses of early Neolithic ceramics from the Iron Gates region of the Danube basin. Eleven early Neolithic potsherds from Schela Cladovei (Romania) were analysed in detail. The results of the petrographic analysis show that the ceramics were made with the same recipe that was used by Starčevo-Körös-Criș potters elsewhere in southeastern Europe. The SEM-EDX analysis shows one of the earliest uses of Mn-rich black pigments to decorate Neolithic European ceramics. Organic residue analyses detected dairy, non-ruminant and ruminant adipose fats. No evidence of aquatic resources was detected. In summary, the early Neolithic potters at the Iron Gates, although able to make coarse and more sophisticated painted ceramics, did not make specific vessels for a specific use. The Neolithic expansion in the Iberian Peninsula is marked by the introduction of livestock and domesticated crops which modified subsistence strategies in an unprecedented manner. Bulk collagen stable carbon and nitrogen isotope analysis has been essential to track these changes, which have largely been discussed in relation to particular geographic areas or single case studies. This paper reviews the available isotope literature to provide a regional, long-term synthesis of dietary changes associated with the expansion of the Neolithic and the establishment of farming economy in the Iberian Peninsula. Bulk collagen stable carbon and nitrogen isotope values of 763 human individuals and 283 faunal remains from the Mesolithic to the Late Neolithic period in Iberia (ca. 8000–3000 cal BC) were collated and analysed using a Bayesian mixing model. The results show that Mesolithic diets were isotopically diverse in both the Atlantic and Mediterranean regions of the Iberian Peninsula, and that a significant decrease in variability happened with the Neolithisation, culminating with the establishment of farming economies and reliance on terrestrial resources in the Late Neolithic. Research projects undertaken in the Cantabrian region since 1980 have produced new, high-quality information about the neolithisation process(es) in this area. It is now necessary to review this archaeological information and test the main hypotheses put forward to explain it. This paper presents an update on the archaeological evidence (sites, chronological dates, archaeozoological, archaeobotanical and technological information) for the early Neolithic in the Cantabrian region. It summarizes recent research on neolithisation in the region, and assesses the impact of this process during the early Neolithic, and its later consolidation. Although the available information is still incomplete, it is now possible to identify the focal point of the introduction of elements characteristic of the Neolithic way of life in the region. Current evidence suggests that it is in the eastern sector, where the earliest arrival of domesticates and new technologies such as pottery has been attested. The existence of continuities-such as sustained reliance on hunting and gathering and the coexistence of old and new funerary rites-suggests the persistence of native populations, which gradually participated in the neolithisation process after an 'availability phase'. The aim of this paper is to review the current state of research for the Early Neolithic (c.5000–c.4300 cal BC) in Cantabrian Spain. Bayesian chronological models have been constructed to examine the neolithisation process and assess the role radiocarbon dates may play in understanding this period. The models suggest that the disappearance of hunter-gatherer societies took place after the first Neolithic groups were active in the region. These results agree with the archaeological record for the Early Neolithic and are compatible with a “mosaic” neolithisation process in which local Mesolithic groups clearly participated.
