Marshal Govorov, 14â. In the graduate qualification work the feasibility of designing a new restaurant of Russian cuisine is substantiated. The target audience was identified, the concept was developed, the capacity was substantiated - 70 seats, the operating mode was designed from 12.00 to 24.00. The number of visitors in the restaurant per day is 267 people, the number of dishes sold 1198. The menu of the restaurant with a free choice of dishes is presented, as well as a wine list. Technological calculations of the main premises of the restaurant were performed: warehouse, production, auxiliary and for consumers. Based on the calculations and taking into account the current plan of the rented premises with an area of 305 sq.m, a planning solution for the restaurant was made. The organizational structure of the restaurant was developed, the staffing table was drawn up, as well as a two-week schedule for the staff to go to work. In addition, a job description for a cook and a standard of service for waiters for the table cleaning procedure have been developed. A list of potential suppliers has been compiled. Measures have been developed to ensure safe working conditions in the restaurant, and fire safety measures. The economic indicators of the restaurant's activity have been calculated. Investment and production investments in the enterprise amount to 5977,72 thousand rubles, the payback period of which is 3.2 years.
