Abstract

The article discusses a study which compared the photostability of carotenoids including capsanthin, derived from red peppers, lutein derived from marigold flowers, and carotene and lycopene derived from tomato fruits in aqueous solutions. It mentions that purity of the carotenoids was determined by combining high-performance liquid chromatography (HPLC) and the absorbance method. It shows that capsanthin degrades faster than carotene, lycopene, or lutein.

Abstract

The article discusses research which examines the photostability of aqueous solution-dispersed lycopene using a xenon weather meter. The study showed a proportional relationship between the consumption of dissolved oxygen and the degradation content of lycopene. Further, it revealed that dissolved oxygen would be involved in the lycopen's photolysis.
