The effect of heat stress and holding time was evaluated before slaughter in the development ofrigor mortisand physicochemical characteristics of meat in chickenPectoralis major.The treatments were: two and eight hour holding before slaughter at temperature 24 °C (2HE24C, 8HE24C) and two hours holding before slaughter at 40 °C (2HE40C). For therigor mortisdevelopment were measured the pH, color indices L *, a * and b * at 0.25, 1, 2, 4, 8, 24, 48, 96 and 144 h in 90 chickens. For the physicochemical characteristics, and other 90 chickens were slaughtered and the pH, color, water holding capacity (WHC), drip lost (DL), shear force (SF) and cook yield (CY) in meat were measured at 24 hourspost mortem.The pH and indices measured color over time showed differences between treatments (P < 0.05). The physicochemical characteristics showed differences between treatment (P < 0.05) with a higher DL, lower WHC and PC, harder texture, low pH and rates of L * and b * being high for the meat of 2HE40C, while the opposite happened with the meat of 8HE24C. When broilers are subjected to heat stress conditions, a pale, soft, and exudative (PSE) meat is obtained, and long waiting induces dark, firm, and dry (DFD) meat. The holding time prior to slaughter of 2 h at room temperature does not adversely affect the quality of the meat. &nbsp, Se evaluó el efecto del estrés por calor y tiempo de espera antes de la matanza en el desarrollo derigor mortisy las características fisicoquímicas de la carne delPectoralis majoren pollo. Los tratamientos fueron: dos y ocho horas de espera a la matanza a temperatura ambiente 24 °C (2HE24C, 8HE24C) y dos horas de espera antes de la matanza a 40 °C (2HE40C). Para el desarrollo delrigor mortisse midió el pH, color L*, a* y b* a las 0,25, 1, 2, 4, 8, 24, 48, 96 y 144 h en 90 pollos. Para las características fisicoquímicas otros 90 pollos fueron sacrificados y se midió el pH, color, capacidad de retención de agua (CRA), pérdida por goteo (PG), resistencia al corte (RC) y rendimiento por cocción (RCO) en carne a las 24 horaspost mortem.El pH y color medidos en el tiempo mostraron diferencias entre tratamientos (P < 0,05). Las características fisicoquímicas mostraron diferencias entre tratamiento (P < 0,05) siendo mayor la PG, menor la CRA y RCO, textura más dura, pH más bajos e índices de L* y b* altos para la carne de aves de 2HE24C, lo opuesto sucedió con la carne de aves de 8HE40C. Someter pollos de engorda a condiciones de estrés por calor induce a una carne PSE y a un tiempo de espera prolongado induce a una OFS. El tiempo de espera a la matanza de 2 h a temperatura ambiente no afecta negativamente la calidad de la carne. &nbsp
