Recent reports of P. olsonii causing postharvest rot of cherry tomatoes emphasize the need for effective strategies to prolong fruit shelf life. This study is the first to explore the use of essential oils (EOs), recognized for their antimicrobial properties, as a potential method to prevent postharvest losses from P. olsonii. Antifungal activity was tested for ten EOs at a concentration of 625 μL/L using the vapor diffusion method. Thyme, wild thyme, savory, oregano, and marjoram completely inhibited fungal growth over 14 days. Thyme EO, at a minimum inhibitory concentration (MIC) of 250 μL/L, fully inhibited all strains, while oregano, wild thyme, and savory were effective at 500 μL/L. Marjoram EO showed weaker activity. The lowest IC90 values, ranging from 35.72 to 162.72 μL/L, were estimated for thyme and oregano. In cherry tomatoes, oregano EO completely halted P. olsonii growth at 250 μL/L; thyme was effective for seven days; wild thyme and savory for two days. Thyme EO prevented P. olsonii spore germination at 500 μL/L for seven days, though germination occurred at half that concentration. The IC90 values varied between 256.2 and 138.7 μL/L depending on the strain. The vapor phase of EOs at 125 μL/L influenced the sensory characteristics of cherry tomatoes; however, for thyme and oregano, this effect was not negative due to their culinary association with tomato flavor. The questionable safety of food spoiled by microorganisms is and should be the subject of attention and investigation. Pathogens such as Penicillium expansum are more difficult to control due to their resistance and ubiquity. Awareness of plant essential oils (EOs) as alternative natural preservatives is increasing because of their significant antimicrobial activity. The aim of this research work was therefore to contribute to this topic with new results. The antifungal activity of twelve EOs was tested in vitro against five strains of Penicillium expansum, using the vapour-phase diffusion method. Three EOs, from bergamot, star anise and rosaline, inhibited colony growth during two-week cultivation with a partial efficacy, all other EOs showed complete (100%) inhibitory activity at a concentration of 625 μL.L-1. These (EOs from clove, cinnamon, cinnamon bark, laurel, lemongrass, peppermint, Mitcham mint, spearmint, and lavender) were included in the second part of the trial, the aim of which was to determine their minimum inhibitory doses (MIDs). In the case of peppermint, Mitcham mint, spearmint and lavender EOs, some strains of P. expansum grew already at a concentration of 500 μL.L-1. Clove EO stopped the fungal growth of two strains at 250 μL.L-1. Laurel EO was 100% effective at MID 250 μL.L-1 throughout the cultivation period. EOs from lemongrass and cinnamon bark had similar efficacy on the strains. Both EOs were able to inhibit one strain at a MID of 125 μL.L-1, cinnamon bark EO inhibited the remaining strains at 250 μL.L-1, lemongrass EO inhibited three strains at 250 μL.L-1 and one at 500 μL.L-1. The lowest MID was recorded for cinnamon EO, which effectively inhibited two strains at 125 μL.L-1, two strains at 62.5 μL.L-1 and one strain even at 31.25 μL.L-1. Essential oils (EOs) are a suitable alternative for extending the shelf life of foods. The aim of this research was to test the effect of fifteen EOs extracted from plants of the Lamiaceae family on five strains of Cladosporium cladosporioides. Cladosporium cladosporioides is frequently found on fruit and may be involved in fruit spoilage. The strains used in the study were isolated directly from lesions on berries. The growth of the fungi on the fruit was the reason for its rejection from sale. The antifungal activity of EOs against Cladosporium cladosporioides strains was determined by the microatmospheric method (625 μl EO/L air) during 14 days of cultivation. Thirteen EOs: thyme and red thyme (from Thymus vulgaris L.), mitcham mint (Mentha x piperita L. var. Mitcham), peppermint (Mentha x piperita L.), savory (Satureja hortensis L.), sage (Salvia officinalis L.), spearmint (Mentha spicata L. var. crispa), lavender (Lavandula angustifolia Mill.), marjoram (Origanum majorana L.), bergamot-mint (Mentha citrata Erh.), wild thyme (Thymus serpyllum L.), hyssop (Hyssopus officinalis L.), and oregano (Origanum vulgare L.) were shown to inhibit growth of all strains to 100%. Basil (Ocinum basilicum L.) and rosemary (Rosmarinus officinalis L.) EOs did not have a 100% inhibitory effect on all strains throughout the cultivation period. Subsequently, minimum inhibitory concentrations (MIDs) were determined using the microatmospheric method. LD90 and LD50 values were estimated by probit analysis. Based on the MID, LD90, and LD50 results, the essential oils can be divided into three groups. The first group (most effective): thyme, red thyme, spearmint, wild thyme, and oregano EO; the second group: peppermint, lavender, mitcham mint and savory EO; the third group: sage, marjoram, bergamot-mint and hyssop EO. Species of the Rhizopus genus are often involved in the moulding of bread and bakery products. Essential oils (EOs) are a suitable alternative to extend the shelf life of food. This research was focused on testing the effect of selected EOs on the growth of Rhizopus species. Tested strains were isolated from mouldy breads. The antifungal activity of EOs against R. stolonifer and R. oryzae strains was determined by micro-atmospheric method (625 μL EO/L air) during 7 days of cultivation. Eight EOs, thyme, red thyme, savory, caraway, marjoram, wild thyme, and oregano 100% inhibited the growth of all strains. Basil, sage, and anise EOs only partially inhibited the growth of strains. Subsequently, the minimum inhibitory doses were determined using micro-atmospheric method. Minimal inhibition doses were 250 μL/L for thyme and red thyme EO, 250 and 500 μL/L for savory EO, 250 and 500 μL/L for oregano EO, 500 and ˃500 μL/L for wild thyme EO, ˃500 μL/L for caraway and marjoram EOs. This study aimed to determine the in vitro and in situ antifungal activity of (14) selected essential oils (EOS), namely clove, thyme, red thyme, litsea, eucalyptus, niaouli, fennel, anise, cumin, basil, rosemary, sage, bergamot mint, and marjoram, by vapor contact against the growth of two strains of Penicillium commune (KMi–183 and KMi–402). Furthermore, to exclude the negative effect of EOs on the lactic acid bacteria (LABs) (Streptococcus spp.) on cheeses, their influence was monitored. Next, the sensory evaluation of cheese treated by EOs was evaluated. The results show that litsea and clove EOs were the most effective in the vapor phase against both tested strains. These EOs were characterized by the highest amount of α- (40.00%) and β-Citral (34.35%) in litsea and eugenol (85.23%) in clove. The antitoxicogenic activity of less effective (in growth inhibition) EOs on cyclopiazonic acid (CPA) production by the tested strains was also observed. The growth of Streptococcus spp. (ranging from 8.11 to 9.69 log CFU/g) was not affected by the EOs in treated cheese. Even though the evaluators recognized some EOs in sensory evaluation by the triangle test, they did not have a negative effect on the taste and smell of the treated cheeses and were evaluated as edible. The antifungal activity of EOs against several types of microscopic fungi and their effect on the sensory properties of treated foods needs to be further tested to achieve the most effective protection of foods from their direct contaminants. Nowadays, it is very important to find out the protection of plant products as an alternative to synthetic fungicides. The promising alternative is the use of the essential oils (EOs). The aim of our research was to evaluate the antifungal effect of angelica (Angelica archangelica L.), anise (Pimpinella anisum L.), fennel (Foeniculum vulgare Miller.), camphore (Cinnamonum camphorum Nees & Eberm), litsea (Litsea deccanensis L.), cumin (Carum carvi L.), dill (Anethum graveolens L.), thyme (Thymus vulgaris L.), mint (citrate) (Mentha citrata L.), mint (piperita) (Mentha piperita L.), laurel (Laurus nobilis L.), cinnamon (Cinnamomum zeylanicum L.) EOs against three isolates of the genus Rhizopus obtained from moldy plants source the chemical composition of selected EOs was determined by gas chromatography coupled with mass spectrometry (GC – MS) and by gas chromatography with flame ionization detector (GC – FID). The antifungal activity of EOs against the growth of Rhizopus spp. was investigated by gas diffusion method (625 μL/L of air). The mycelium growth inhibition was measured on the 2nd, 4th, and 7th days of cultivation. Six EOs: litsea, mint (citrata), mint (piperita), cumin, thyme and cinnamon completely inhibited the growth of all tested fungi. For these EOs the minimum inhibitory doses were determined. According to probit analyses, the most effective tested EO was thyme and the least effective was cumin. Our results indicated that EOs are effective in the vapor phase and had a potential antifungal activity against Rhizopus stolonifer strains. Essential oils (EOs) from aromatic plants seem to have the potential to control several fungal pathogens and food contaminants. Botrytis cinerea is the main strawberry fruit contaminant causing high losses during storage. Here, thirteen EOs applied in the vapor phase were evaluated for their potential to inhibit the growth of three different strains of B. cinerea isolated from strawberry fruits. Eight EOs (lemongrass, litsea, lavender, peppermint, mint, petitgrain, sage, and thyme) were able to completely inhibit the growth of B. cinerea for 7 days when applied at a concentration of 625 μL·L−1. Four EOs with the lowest minimal inhibition concentrations (thyme, peppermint, lemongrass, and litsea) have been tested on strawberry fruits intentionally inoculated by B. cinerea. All four EOs showed high inhibition at a concentration of 250 or 500 μL·L−1, but only peppermint EO was able to completely inhibit B. cinerea lesion development at a concentration of 125 μL·L−1. The sensory evaluation of strawberries treated by EOs at a concentration 125 μL·L−1 resulted in a statistically significant decrease in taste, aftertaste, aroma, and overall quality. Lemongrass and litsea EOs scored better than thyme and peppermint ones, thus forming two viable methods for B. cinerea suppression and the extension of packed strawberries' shelf life. This study aimed to evaluate the fungicidal effect of eight essential oils against five strains of the genus Rhizopus. Strains were obtained from various moldy foods, namely Rhizopus stolonifer KMi 383 from chestnut, R. stolonifer KMi 510 from strawberry, R. stolonifer KMi 511 from nectarine, R. stolonifer KMi 524 from cherry tomatoes, and R. lyococcus KMi 512 from blackberry. The essential oils (EO) used in this study were jasmine EO (extract from Jasminum officinale L.), bergamot EO (Mentha aquatica L. var. citrata (Her.) Fresen), bitter orange EO (from Citrus aurantium L.), grapefruit EO (Citrus paradisi Macfady), sweet flag EO (East Asian Calamus, from Acorus calamus L. var. angustatus Bes), star anise EO (from Illicium verum J.D.Hook), geranium EO (from Pelargonium graveolens), and lemongrass EO (from Cymbopogon citratus DC). The semi-quantitative composition of the essential oil samples was determined by gas chromatography coupled with mass spectrometry (GC-MS). The antifungal activity of essential oils against the strains of R. stolonifer and R. lyococcus was determined during 7 days, using the micro-atmosphere method (0.625 μL.mL-1 of air). Two essential oils, geranium and lemongrass, completely inhibited the growth of all isolates. Bitter orange essential oil inhibited the growth of all isolates of Rhizopus stolonifer, but isolate of Rhizopus lyococcus began to grow after four days of cultivation. In conclusion, certain essential oils are highly effective in the vapor phase. The aim of this study was to determine the inhibitory effect of four essential oils (EOs) on the growth of seven strains of Penicillium commune isolated from moldy milk products by contact vapour. Next objective was to determine the minimum inhibitory doses (in vitro and probit analyses) of EOs, which at concentration µl 625.l-1 of air completely inhibited the growth of all strains. The antifungal activity was evaluated by the micro-atmosphere method. Cinnamon, cinnamon bark and litsea cubeba EOs completely inhibited the growth of strains during cultivation at 25 °C and 5 °C. Laurel EO had no effects on the growth of P. commune strains. EOs that completely inhibit the growth of all strains were used to determine their minimum inhibitory doses (MIDs). The best results were obtained for cinnamon EO (MIDs 15.625 µl.l-1 of air) after all days at 25 °C of incubation. Litsea cubeba EO had the highest MIDs value (from 250 to 62,5 µl.l-1 of air). It was found that EOs have different effects on individual strains of P. commune. The tested strains (KMi 370 and 402) showed differences among themselves even though they came from the same products (sour cream). According to probit analyses, the most effective tested EOs were cinnamon EO and the least effective was litsea cubeba EO. The antitoxinogenic effect of tested EOS was evaluated by TLC method. Also in this study, cinnamon EO was the most effective against CPA production by P. commune. The aim of this study was focused on the determination of the inhibitory effect of selected essential oils on the growth of five isolates of Geotrichum candidum. The isolates were obtained from the dairy products of domestic origin (sour cream, raw cow's milk, base for production of the brand, unsalted cheese, and cheese made from cows' milk). We studied the impact of five essential oils [pure essential oil EOs (100%)] - clove, basil, rosemary, fennel and thyme at concentration of 0.625 µL.cm-3 of air. Gas chromatography-mass spectrometry (GC-MS) analysis was used for the identification of the main components of EOs. We tested the effect of the essential oils by the gaseous diffusion method. The isolates were cultivated on PDA (Potato dextrose agar), in the dark, at 25 ±1 °C, 14 days. The diameter growing of colonies we continuously measured on the 3rd, 7th, 11th, and 14th day of cultivation. The results of the paper suggest that clove and thyme essential oil had 100% inhibitory effect on the growth of all tested isolates. Fennel, basil and rosemary essential oil had not significant inhibitory effects on tested isolates Geotrichum candidum. However, these oils affected the growth of colonies throughout the cultivation. Fennel EO had 100% inhibition only on the growth of one isolates of Geotrichum candidum to the 3rd day of cultivation. Basil EO had the stimultating effect on the growth of two isolates of G. candidum (KMi 322 and KMi 189). Eucalyptus essential oil (from Eucaliptus globulus; leaves), tea tree essential oil (from Melaleuca alternifolia Cheel; leaves), cajeput essential oil (from Melaleuca leucadendra L.; leaves and twigs), niaouli essential oil (from Melaleuca quinquenervia (Cav.) S. T. Blake; leaves) have different effects on the growth of P. commune strains. The order of tested essential oils according to the inhibition effect on the growth of the strains of P. commune (from the strongest to the weakest effect) was: clove > tea tree > cajeput > niaouli > eucalyptus. Clove EO that completely inhibited the growth of all strains was used to determine minimum inhibitory doses (MIDs). The MIDs were 125 µL.L-1 of air for two strains of P. commune and 250 µL.L-1 of air for five strains of P. commune on the 7th and 14th day of cultivation, also. Bread is considered an intermediate - moisture food product that is prone to mould spoilage. Growth of spoilage fungi is currently controlled with the addition of chemical preservatives. Consumers demand more natural products and there is a need to reduce the amount of chemical preservatives added to foods. Essential oils (EOs) and their constituents emerged as promising and effective compounds to protect foods from lipid peroxidation and provide microbiological food safety. So the aim of our study was to determinate microscopic fungi involved in contamination of bread target the genus Eurotium and to evaluate the antifungal activity of 5 EOs by vapor contact against the fungal species of this genus. In all samples after three days of cultivation fungi created colonies on the surface of the crust and the pieces of the bread samples stored on DRBC were after three days of cultivation covered with fungi colonies. Altogether 195 isolates were recovered from 8 bread samples and assigned to 10 fungal genera. The most frequently genus of fungi was Penicillium, Aspergillus, Cladosporium, Epicoccum and Eurotium. Based on phylogenetic and morphological studies, five different Eurotium species were identified: E. amstelodami, E. chevalieri, E. herbariorum, E. rubrum and E. repens. In this study, we explored the potential of five essential oils retrieved from some Lamiaceae species, concretely: basil (Ocinum basilicum L.), lavender (Lavandula angustifolia Mill.), oregano (Origanum vulgare L.), mint (Metha piperita L.) and sage (Salvia officinalis L.). Gas chromatography-mass spectrometry (GC-MS) analysis allowed for the identification of 28 compounds as main constituents. Inhibitory activity of EOs was assessed against 5 species of genus Eurotium (2 isolates for each specie). In all studied strains, the essential oils caused significant differences (P<0.05) on the mycelium growth. Our result showed that the best antifungal effect was shown by lavender and oregano (100%) to all species of tested fungi followed by mint (with the best MGI 79.89% to E. rubrum) >basil (with the best Mycelial growth Inhibition (MGI) 93.65% to E. herbariorum) and the low effect had sage essential oil (with the best MGI 68.62% to E. repens). The aim of this study was to evaluate the fungicidal effect of eleven essential oils against six isolates of the genus Rhizopus. Isolates were obtained from various moldy foods (chestnut, bread, strawberry, nectarine, blackberry and cherry tomatoes). The essential oils used in this study were extracts of basil (Oscimum basilicum L.), hyssop (Hyssopus officinalis L.), lavender (Lavandula angustifolia MILLER.), marjoram (Origanum majorana L.), mint (Mentha piperita L.), oregano (Origanum vulgare L.), rosemary (Rosmarinus officinalis L.), sage (Salvia officinalis L.), summer savory (Satureja hortensis L.), thyme (Thymus vulgaris L.) and wild thyme (Thymus serpyllum L.). Semi-quantitative composition of the essential oil samples was determined by gas chromatography coupled with mass spectrometry (GC-MS). The GC-MS analyses of the essential oils led to identification of 139 compounds, of which 49 were presented in ≥1% amount in at least one essential oil. The antifungal activity of essential oils against the Rhizopus spp. was determined, using microatmosphere method (0.625 μL.ml-1 of air), during 7 days. Seven essential oils: thyme, mint, summer savory, lavender, marjoram, oregano and wild thyme completely inhibited the growth of all isolates. Other essential oils have different effects on the growth of isolates. Basil essential oil stimulated growth of two isolates on the second day of cultivation. The growth of other isolates was, by contrast, inhibited by this essential oil in the same time of cultivation. Hyssop essential oil completely inhibited growth of two isolates, other 4 isolates were inhibited to fourth day of cultivation. In conclusion, certain essential oils are highly effective in vapour phase and can be used in another test of their antifungal activity and could be used in control of Rhizopus spp. or other fungal pathogens. Lemon, eucalyptus and sage essential oil had not significant inhibitory effects on tested isolates Aspergillus flavus, but affected the growth of colonies throughout the cultivation. In addition to the inhibitory effect we witnessed the stimulative effect of lemon, eucalyptus and sage essential oil to some isolates. Together with the antifungal effect of essential oils, we monitored the ability of Aspergillus flavus isolates to produce mycotoxins - aflatoxin B1 (AFB1) and cyclopiazonic acid (CPA) in the presence of essential oils. Production mycotoxins we have seen in the last (14th) day of cultivation. Lemon and eucalyptus essential oil did not affect the production of mycotoxins. In the case of sage essential oil we were recorded cyclopiazonic acid production in three of the ten isolates from the all three repetitions, while neither isolate did not produced aflatoxin B1. The production of secondary metabolites was detected in all control samples. The aim of the present study was to assess the antifungal and anti-toxinogenic activity of 15 essential oils (EOs) against three fungi of the genus Aspergillus (A. parasiticus KMi-227-LR, A. parasiticus KMi-220-LR and A. flavus KMi-202-LR). The minimum inhibitory doses (MIDs) of the tested essential oils and their antifungal activity were determined using the micro-atmosphere method. The original commercial essential oil samples of Jasminum officinale L., Thymus vulgaris L., Syzygium aromaticum (L.) Merrill & Perry, Rosmarinus officinalis L., Ocimum basilicum L., Eucalyptus globulus Labill., Salvia officinalis L., Citrus limon (L.) Burm, Origanum vulgare L., Lavandula angustifolia Mill., Carum carvi L., Citrus sinensis (L.) Osbeck., Zingiber officinalis Rosc., Mentha piperita L. and Cinnamomum zeylanicum Nees. (C. verum J.S.Presl.) were produced in Slovakia (Calendula a.s., Nová Ľubovňa, Slovakia). All essential oils exhibited activity against all tested strains of fungi. After 14 days of incubation, A. flavus (KMi-202-LR) showed the highest susceptibility with a growth inhibition percentage (GIP) of 18.70% to C. limon and 5.92% to C. sinensis, while A. parasiticus (KMi-220-LR) exhibited a GIP of 20.56% to J. officinale. The minimum inhibitory doses (MIDs) of EOs with the most significant activity were recorded. The best antifungal activity, using the micro-atmosphere method was found in S. aromaticum with an MID of 62.5 μL L-1 air, T. vulgaris (MID of 62.5 μL L-1 air) and O. vulgare (MID of 31.5 μL L-1 air) against all tested strains. Mycotoxin production of the tested strains was evaluated by the thin layer chromatography (TLC) method. Mycotoxin production of AFB1 and AFG1 was inhibited following all treatments with C. carvi, R. officinale and S. officinale, Eucalyptus globulus L. and O. basilicum L. Today, it is very important to find out the protection of products of natural origin as an alternative to synthetic fungicides. The promising alternative is the use of the essential oils (EOs). Essential oils from plants have great potential as a new source of fungicide to control the pathogenic fungi. The main objective of this study was evaluation of the antifungal activity of lemon (Citrus lemon L.), eucalyptus (Eucalyptus globulus LABILL.), thyme (Thymus vulgaris L.), oregano (Origanum vulgare L.) sage (Salvia officinalis L.) and lavender (Lavandula angustifolia MILLER.) EOs against Aspergillus niger and Aspergillus tubingensis isolated from grapes and their ability to affect the growth. It was tested by using the vapor contact with them. At first both tested isolates were identified by using PCR method. Sequence data of 18S rRNA supported the assignment of these isolates to the genus Aspergillus and species A. niger (ITS region: KT824061; RPB2: KT824060) and A. tubingensis (ITS region: KT824062; RPB2: KT824059). Second, EO antifungal activity was evaluated. The effect of the EO volatile phase was confirmed to inhibit growth of A. niger and A tubingensis. EOs were diluted in DMSO (dimethyl sulfoxide) final volume of 100 μL. Only 50 μL this solution was distributed on a round sterile filter paper (1 × 1 cm) by micropipette, and the paper was placed in the center of the lid of Petri dishes. Dishes were kept in an inverted position. The essential oils with the most significant activity were determined by method of graded concentration of oils - minimum inhibitory doses (MIDs). The most effective tested EOs were oregano and thyme oils, which totally inhibited growth of tested isolates for all days of incubation at 0.625 μL.cm-3 (in air) with MFDs 0.125 μL.cm-3 (in air). Lavender EO was less active aginst tested strains (MIDs 0.313 μL.cm-3). The results showed that the tested EOs had antifungal activity, except lemon and eucalyptus. Sage EO was the only one which decelerated the radial growth of colony of both tested strains after all days of cultivation in comparison with a control sets. The aim of this study was to evaluated antifungal and antitoxigenic properties of essential oils (EOs) in vapor phase. In vitro antifungal activity of essential oils against three fungal strains (Aspergillus flavus (MC1, MC4, and MC33) was evaluated by microatmosphere method and their ability to affect production of mycotoxins by thin-layer chromatography (TLC) method. Each fungus was inoculated in the center on Czapek Yeast Autolysate Agar (CYA) Ø 90 mm dishes. Dishes were incubated for fourteen days at 25 ± 1 °C (three replicates were used for each treatment). The best result were shown by Origanum vulgare L. (MFC 6% (6/94; v/v) against all of the strains, followed by Thymus vulgaris L. > Syzygnium aromaticum L. > Levadula angustifolia MILLER > Mentha piperita L. > Salvia officinalis L. > Eucalyptus globulus LABILL. After 14 days of incubation with EOs (100%) with control sets, they were screened for a production of mycotoxins. Result showed, that some of the tested EOs affected mycotoxins production. In conclusion, volatile substances from tested essential oils in this work had a potential antifungal activity against A. flavus and their production of mycotoxins, and they should find a practical application in food. Dishes were tightly sealed with parafilm and incubated for fourteen days at 25 ? 1 ?C (three replicates were used for each treatment). Volatile phase effect of 50 ?l of the essential oils was found to inhibit on growth of Penicillium spp.. Fungicidal and fungistatic concentracions (MFC) were determined by microathmosphere method. Complete growth inhibition of the isolates by EOs of thyme and clove was observed. The most sensitive isolate was P. crustosum (P4) (P < 0.05) The essential oils (EOs) of basil and rosemary had antifungal effect on growth of P. citrinum (P1 - P2) after 3 day of the incubation at concentration 100% of EOs. The most resistant isolates were P. expansum (P5 - P6). Growth of these isolates was inhibited by thyme and clove EOs (100%), like each other tested isolates, but with effective MFC concentration of 30% (30/70; v/v) after all days of cultivation. Data were evaluated statistically by 95.0% Tukey HSD test. In this stud, we also tested potential effect of EOs to affect production of mycotoxins of tested Penicillium isolates which are potential toxigenic fungi. After 14 days of incubation with EOs (100%) with control sets, they were screened for a production of mycotoxins by TLC chromatography. Oils exhibited a various spectrum of fungal toxicity inhibit all tested species except the jasmine EO. The present study demonstrated the potential food preservative ability of the thyme, clove, basil, jasmine and rosemary EOs. The jasmine EO has none antifungal or anti - toxic activity. Traditionally, chemical pesticides have played a central role in food protection, forcing trends towards reduction of using chemicals in agriculture leads to call for the development of new strategies of protection agricultural product. Antimicrobial volatile substances from plants have become known as a suitable alternative to synthetic pesticides and food preservatives. In this study, we explored the potential of six essential oils retrieved from cinnamon ( Cinnamomum zeylanicum Nees.), thyme ( Thymus vulgaris L.), oregano ( Origanum vulgare L.), clove ( Syzygium aromaticum L.), lemongrass ( Cymbopogon citratus [DC] Stapf.) and ginger ( Zingiber officinale Rosc.) essential oils. Inhibitory activity of essential oils were assessed against three strains of postharvest pathogens of the Aspergillus parasiticus, A. flavus and A. clavatus isolated from oats. In continue, the effect of the essential oils treatment on the sensory profile of the product was evaluated. The results indicated that the essential oils of lemongrass, clove, oregano and thyme have strong antifungal activity; however, only treatment with the oil of lemongrass is acceptable by consumers. The major objective of this study was to determine the antifungal, anti-toxicogenic and anti-sporulation effect of selected essential oils in the control growth of Aspergillus spp. by contact vapour method in in vitro and in situ condition. In continue, the effect of the essential oils treatment on the sensory profile of the bread was evaluated. In this study, ten essential oils (EOs), namely: thyme, clove, laveder, cumin, oregano, cinnamon, basil, rosemary, sage and lemongrass were tested against four strains of Aspergillus [ Aspergillus flavus (SLO-B-201), Aspergillus parasiticus (SLO-B-219), Aspergillus ochraceus (SLO-B-245) and Aspergillus westerdijkiae (SLO-B-249)] isolated from bread samples. The Aspergillus strains were tested for potential production of mycotoxins by thin layer chromatography (TLC). The chemical composition of all tested EOs was identified by GC-MS and by gas chromatography with flame ionization detector (GC-FID). The antifungal activity, the minimum inhibitory doses (MIDs), anti-toxicogenic and antisporulation effect of the selected EOs were investigated by gas diffusion method in both, in vitro and in situ analyses. The results indicated that the thyme, clove, oregano, cinnamon and lemongrass were highly effective against tested toxigenic Aspergillus species in vapour phase. A treated bread sample with EOs does not have negative effect on the sensory properties of the breads, with exception of oregano and lemongrass.
