This article deals with results of the experiments conducted on the drying of apricot. The research were conducted to study the product yield during drying of apricot varieties and the properties of the final product after drying in three different ways. It also checks drying time. According to results of the experiments, conclusions with scientific bas were made. Dried foods are used in many cases because of their taste, nutritious, lightness of weight, and storage simplicity. The needed energy to make dried food is less than frozen or canned ones. Dried fruits make a high-energy snack. The light and compact nature of dried foods makes them ideal for hiking and camping trips. [ABSTRACT FROM AUTHOR]
