Several agro-industrial residues (beet wastes, tomato pomace, sunflower straw, wheat straw and rice peel) were used to develop liquid cultures of Basidiomycetes, allowing the production of innovative protein-polysaccharide compounds (Arteiro, et al. 2012, Salvador, et al. 2012). These complexes show no toxicity in Artemia salina after 24 hours of incubation and caused no hepatotoxicity in in vivo assays using Wistar rats. The biochemical serum parameters, including transaminases (ALT and AST), alkaline phosphatase (ALP), and gamma-glutamyl transferase (γ-GT) were quantified and the results showed that oral administration of the polysaccharide-protein complexes caused no significant changes in the level of hepatic serum enzymes. The positive results of these tests associated with the non-toxicity of the compounds make them very attractive and their production an important procedure to the valorization of agro-industrial wastes.
