Sprouts are nutritious food, easy to produce even in extra-terrestrial platforms, where the exposure to ionising radiation can alter their morpho-anatomical traits and phytochemical content. The aim of this study was to evaluate whether sprout production under specific light wavelengths can mitigate the negative effects of radiation and/or stimulate the induction of hormesis. Germinated seeds, with actively proliferating cells, of mung bean were irradiated with increasing X-ray doses (0–20 Gy) and then incubated in controlled conditions under four different light regimes: dark (D), white light (W), red light (R), red-blue light (RB). Morpho-anatomical development of the sprouts was investigated through light-microscopy and their content of flavonoids and isoflavones was quantified by HPLC. Two significant conclusions emerged: 1) RB wavelength induces hormesis by stimulating the production of antioxidant compounds; 2) R wavelength offsets the harmful effects of radiation on morpho-anatomical traits, even at the highest X-ray dose.

The contamination of environments by heavy metals has become an urgent issue causing undesirable accumulations and severe damages to agricultural crops, especially cadmium and lead which are among the most widespread and dangerous metal pollutants worldwide. The selection of proper species is a crucial step in many plant-based restoration approaches; therefore, the aim of the present work was to check for early morphophysiological responsive traits in three cultivars of Cynara cardunculus (Sardo, Siciliano, and Spagnolo), helping to select the best performing cultivar for phytoremediation. For all three tested cultivars, our results indicate that cardoon displays some morphophysiological traits to face Cd and Pb pollution, particularly at the root morphology level, element uptake ability, and photosynthetic pigment content. Other traits show instead a cultivar-specific behavior; in fact, stomata plasticity, photosynthetic pattern, and antioxidant power provide different responses, but only Spagnolo cv. achieves a successful strategy attaining a real resilience to metal stress. The capacity of Spagnolo plants to modify leaf structural and physiological traits under heavy metal contamination to maintain high photosynthetic efficiency should be considered an elective trait for its use in contaminated environments. Simple Summary Water scarcity is one of the main threats for the future of agriculture and the worldwide population. Improving the ability of crop species to grow and survive with less water is therefore essential. A fundamental goal of most scientists working in this area is to understand the mechanisms plants must potentiate to better survive under reduced water availability. Here we provide evidence that accumulation of anthocyanins, a major player in red leaf color, may fulfil two important functions. First, they serve as a filter for protecting plants against excessive sunlight; second, they control plant water loss by reducing stomatal transpiration and density. Since excessive sunlight and temperature, associated with climate change, come along with water shortage, these pigments may protect and help plants to survive throughout hot and dry seasons. Our results have important social implications for people living in areas where rising temperatures and water shortages are already critical. Breeding programs to obtain crops with these stress tolerance traits can be specifically designed for these environments. Abstract Abiotic stresses will be one of the major challenges for worldwide food supply in the near future. Therefore, it is important to understand the physiological mechanisms that mediate plant responses to abiotic stresses. When subjected to UV, salinity or drought stress, plants accumulate specialized metabolites that are often correlated with their ability to cope with the stress. Among them, anthocyanins are the most studied intermediates of the phenylpropanoid pathway. However, their role in plant response to abiotic stresses is still under discussion. To better understand the effects of anthocyanins on plant physiology and morphogenesis, and their implications on drought stress tolerance, we used transgenic tobacco plants (AN1), which over-accumulated anthocyanins in all tissues. AN1 plants showed an altered phenotype in terms of leaf gas exchanges, leaf morphology, anatomy and metabolic profile, which conferred them with a higher drought tolerance compared to the wild-type plants. These results provide important insights for understanding the functional reason for anthocyanin accumulation in plants under stress.

In the last decades, there has been a growing interest in the production of sprouts, since they are a highly nutritious food, particularly suitable for indoor farming in urban areas. Achieving sprout production in indoor systems requires an understanding of possible alterations induced by the microclimate. The aim of this study was to analyze the combined effect of presence/absence of light and high/low air relative humidity (RH) on mung bean sprouts. Morpho-anatomical development and functional anatomical traits in hypocotyl were quantified. The content of antioxidants, soluble sugars, and starch were measured for nutritional and functional purposes. Different RH regimes mainly induced morpho-anatomical modifications, while the presence/absence of light changed the content of antioxidant compounds. Increments in stele diameter at high RH suggest a higher water uptake and conductivity, compared to the low RH treatment, low RH and light induced anatomical traits improving plant water transport (reduced number of cortical layers) and increased the production of antioxidants. The overall results suggested that RH and light, already at the early stages of development, affect the plant&rsquo, s nutritional value. Therefore, the combination of light and low RH allows the production of antioxidant-rich mung bean sprouts to be used as a food supplement.

In Mediterranean ecosystems, some natural areas are exposed to severe anthropogenic impact. Especially in summer, the considerable number of tourists visiting such areas, often with vehicles, causes deposition of dust over the vegetation due to formation of powder clouds, also favoured by wind erosion, high temperature, low precipitation and incoherent soil structure. The main aim of this study was to analyse whether the deposition of dust can induce changes in leaf anatomical functional traits and in the efficiency of photosynthetic apparatus in Centranthus ruber, a species widespread in Mediterranean ecosystems. Leaf morpho-functional traits were quantified in plants growing at sites characterised by high (HD) and low (LD) dust deposition, in periods with high anthropogenic impact. Analyses included quantification of chlorophyll fluorescence emission parameters, photosynthetic pigment concentration as well as stomatal size and frequency, leaf lamina thickness, quantification of intercellular spaces and phenolics in the mesophyll through microscopy. The overall analysis suggested that the different conditions of dust deposition induced different adjustment of morpho-functional traits in leaves of C. ruber. High dust deposition shielded the leaf lamina, protecting the photosynthetic apparatus from excess light and favoured plant photochemical efficiency. Leaves exposed to low dust deposition showed higher accumulation of phenolic compounds, protecting chloroplast membranes and characterised by high thermal dissipation of excess light. Such adaptive phenomena can affect vegetation dynamics due to possible different species-specific plant responses, resulting in different plant competitiveness under the limiting conditions of Mediterranean environments.
