The purpose of this study was to determine the morphometric and meristic characteristics of mackerel the Sunda Strait. The method used was the survey method. A simple random sampling technique was used to determine the sample. The morphometric characteristics measurements covered the length, snout, dorsal fin, and tail. The meristic measurements covered the number of fish body parts, namely the spines on the fins. The data obtained in this study were analyzed using a t-test to find out the real differences in each morphometric and meristic character with different body weights and sexes. The results showed that the weight affects the morphometric size of a fish where the studied samples had the same meristic characteristics.Analisis Karakter Morfologi Ikan Tenggiri (Scomberomorus commerson Lac., 1800) di Perairan Selat SundaAbstrak: Tujuan penelitian ini adalah untuk mengetahui karakter morfometrik dan meristik pada ikan tenggiri di Perairan Selat Sunda. Metode yang digunakan dalam penelitian ini adalah metode survei. Teknik pengambilan sampel yang digunakan adalah simple random sampling. Pengukuran karakter morfometrik meliputi panjang standar, moncong, sirip punggung, dan ekor. Pengukuran meristik meliputi jumlah bagian tubuh ikan yaitu jari-jari serta duri pada sirip. Data yang didapatkan dari penelitian ini dianalisis dengan uji untuk mengetahui perbedaan yang nyata pada setiap karakter morfometrik dan meristik dengan bobot tubuh dan jenis kelamin yang berbeda. Hasil penelitian diperoleh bahwa bobot berpengaruh terhadap ukuran morfometrik suatu ikan dan sampel yang diteliti memiliki karakter meristik yang sama.

Fish is one of the fishery food ingredients that are needed by humans, because in the fish meat there are compounds needed by the body. Such as the content of protein compounds, fats, carbohydrates, vitamins and mineral salts. Sorong in the city of mackerel is one of the fish that are of interest to the community, and its availability is abundant at the fish auction place in the city of Sorong. But in general the consumption of mackerel has not been tested either chemically or microbiologically based on the background of the purpose of this study is to determine the total microbial plate count in fresh mackerel (Rastelliger sp.) In Sorong City, West Papua. The method in this research was descriptive method, which is drawing the number of microbes through the test of the total number of microbial plates (ALT). Based on the results of the study which stated the average of the five samples approved were in sample A and sample B the amount of ALT was 3.7 x 104cFU/mL, sample C and sample D were 1.02 x 105cFU/mL, and sample E as much as 2.7 x 105cFU/mL. The total number of microbial total plates (ALT) or the number of microbial total plates (TPC) in fresh mackerel (Rastrelliger sp.) in the Sorong TPI city does not exceed the maximum Indonesian national standard (SNI), and it is concluded that the fish can be consumed.

Fish is a nutritionally rich food which is more prone to spoilage. It harbours variety of pathogens. Mustard is medicinally important spice. Isolation of Mackerel fish pathogens was done using selective and differential media. Nutritional characterization of mustard was carried out with respect to carbohydrate, protein and fat content. Antimicrobial activity of mustard against fish pathogen was studied using mustard paste and various mustard extracts. The optimum concentration of the extracts to be used for fish preservation was determined by agar cup diffusion method. Mustard crude oil extract prepared using chloroform and methanol mixture showed prominent antimicrobial activity. Marination effect of mustard paste, mustard crude oil extract and mustard oil revealed the preservative effect of mustard. Thus, the present study promotes the use of mustard as a natural preservative agent for seafood industry.
