No. of bitstreams: 0 Previous issue date: 2013-10-23 The objective of this study was to evaluate the influence of vitamin C (VC), vitamin E (VE), and two selenium sources on the performance, yield, and composition of Nile tilapia fillet. The experiment was conducted in a completely randomized design consisting of six treatments with the addition of 100, 200, and 400 mg kg-1 VC and VE and 0.1, 0.2, and 0.4 of two sources of selenium. Each treatment had five replicates of 30 fish each. The diet with 200 mg kg-1 VC and VE + 0.2 mg.k-1 organic selenium resulted in weight gain, length gain, and feed conversion ratio similar to that of the treatment with 400 mg kg-1 VC and VE + 0.4 mg kg-1 organic or inorganic selenium. The addition of organic selenium to the diet improved the weight gain and feed conversion ratio in comparison with the addition of inorganic selenium. The diet with 0.2 mg kg-1 organic selenium showed glutathione peroxidase level equal to the diet with 0.4 mg kg-1 of inorganic selenium. Carcass and fillet yields were not affected by treatments; however, there was treatment effect on the fillet's chemical composition. The objective of this study was to evaluate the effects on carcass characteristics and meat quality of growing rabbits fed diets containing two levels of soybean oil and selenium yeast. For this purpose 32 rabbits (12 males and 20 females) of the New Zealand White breed were weaned at 25 days of age, distributed in randomized blocks, arranged in a 2 × 2 factorial scheme (two levels of soybean oil - 1.5% and 3.0% and with two levels of selenium - 0 and 0.150 mg / kg of selenium). The productive performance, carcass characteristics, composition and meat quality parameters were evaluated. The increase in the level of soybean oil promoted an improvement in the productive performance, as well as, promoted a better incorporation of selenium in the meat. In addition, the OS interaction × increased the total lipid content, as the oil level increased in the diet, the treatment without inclusion of selenium obtained greater lipid incorporation. The level with 3% of oil, which improved the fatty acid profile of the meat, promoting a better-saturated / unsaturated ratio and increased deposition of linoleic acid. In turn, this increase in the deposition of linoleic acid causes an increase in the activity of the enzyme desaturase (16 + 18) and formation of eicosanoic acid. The values of malonaldehydes were affected by the time of storage and the addition of selenium in the diet. Thus, it is concluded that higher levels of soybean oil in the diet improves the productive performance, contributes to a better-saturated / unsaturated ratio, which directly influences the meat storage time. Selenium supplementation promotes better activity of the enzyme elongase, aiding in the production of eicosanoic acid, as well as provides reduction of lipid oxidation Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES Objetivou-se avaliar os reflexos sobre as características de carcaça e qualidade da carne de coelhos de corte alimentados com dietas contendo dois níveis de óleo de soja e de selênio levedura. Para tanto foram utilizados 32 coelhos (12 machos e 20 fêmeas) da raça Nova Zelândia Branco, desmamados aos 25 dias de vida, distribuídos em blocos casualizados, dispostos em esquema fatorial 2×2 (dois níveis de óleo de soja – 1,5% e 3,0% e com dois níveis de selênio levedura – 0 e 0,150 mg/kg de ração). Foram avaliados o desempenho produtivo, características de carcaça, composição e parâmetros de qualidade da carne. O aumento do nível de óleo de soja promoveu melhora no desempenho produtivo, assim como, promoveu melhor incorporação de selênio na carne. Além disso, a interação OS×Se incrementou o teor de lipídios totais, à medida que aumentou o nível de óleo na ração, o tratamento sem inclusão de selênio obteve maior incorporação lipídico. O nível com 3% de óleo que propiciou melhora no perfil de ácidos graxos da carne, promovendo uma melhor relação saturado/insaturado e aumento da deposição de ácido linoleico. Por sua vez, este aumento na deposição de ácido linoleico faz com que ocorra aumento da atividade da enzima dessaturase (16+18) e formação de ácido eicosanóico. Os valores de malonaldeídos foram afetados pelo tempo de estocagem e pela adição de selênio na dieta. Com isso, conclui-se que maiores níveis de óleo de soja na dieta melhora o desempenho produtivo, contribui para uma melhor relação saturado/insaturado, que influencia diretamente no tempo de armazenamento da carne. A suplementação de selênio levedura promove melhor atividade da enzima elongase, auxiliando na produção de ácido eicosanoico, assim como proporciona diminuição da oxidação lipídica
