Strongyle infection is an important issue in horse breeding. It impairs horse health and performance, with young horses being the most sensitive. Strongyle control has long relied on the systematic use of chemical treatments. However, expanding anthelmintic resistance among strongyles calls for alternative options. Mixed grazing is assumed to reduce strongyle load on the pasture as the result of a dilution effect. This has been shown in small ruminants grazing with cattle, but the putative benefits of co-grazing between horses and cattle have not yet been evaluated. Here, we conducted field surveys and face-to-face interviews on 44 farms from two contrasted saddle-horse production areas, Normandy and northern Massif Central, to compare equine strongyle management practices between specialized systems and mixed horse-cattle systems. Our goals were (i) to quantify breeders’ awareness of the putative benefits associated with the co-grazing of horses and cattle, (ii) to establish whether mixed farming was associated with different strongyle management strategies and (iii) to test whether strongyle egg excretion was reduced in horses grazed with beef cattle. Every breeder relied on systematic calendar treatments, and only 8 out of the 23 mixed breeders were aware that co-grazing of horses with cattle could be used as part of their strongyle control strategy. Management practices were similar across both systems in Normandy. In Massif Central, mixed breeders formed a distinct cluster from their specialized counterparts: deworming was less frequent and stocking density was higher in mixed farms, while specialized breeders seemed more willing to integrate herd and plot management into control strategies. Faecal egg counts measured in horses from Massif Central were significantly reduced when horses were grazed with cattle. This was the result of an increased reliance on macrocyclic lactones in mixed farms (P < 0.01) and a significant dilution effect (P < 0.01). When considering a subsample of horses treated with macrocyclic lactones only, young horses grazed with cattle had 50% fewer strongyle eggs excreted in their faeces than horses grazed in equine-only pastures (P < 0.01). This is the first evidence of the benefits of mixed grazing with cattle as an alternative to control strongyle infection in horses, although this promising alternative remains largely unknown by horse breeders.

Livestock is a major driver in most rural landscapes and economics, but it also polarises debate over its environmental impacts, animal welfare and human health. Conversely, the various services that livestock farming systems provide to society are often overlooked and have rarely been quantified. The aim of analysing bundles of services is to chart the coexistence and interactions between the various services and impacts provided by livestock farming, and to identify sets of ecosystem services (ES) that appear together repeatedly across sites and through time. We review three types of approaches that analyse associations among impacts and services from local to global scales: (i) detecting ES associations at system or landscape scale, (ii) identifying and mapping bundles of ES and impacts and (iii) exploring potential drivers using prospective scenarios. At a local scale, farming practices interact with landscape heterogeneity in a multi-scale process to shape grassland biodiversity and ES. Production and various ES provided by grasslands to farmers, such as soil fertility, biological regulations and erosion control, benefit to some extent from the functional diversity of grassland species, and length of pasture phase in the crop rotation. Mapping ES from the landscape up to the EU-wide scale reveals a frequent trade-off between livestock production on one side and regulating and cultural services on the other. Maps allow the identification of target areas with higher ecological value or greater sensitivity to risks. Using two key factors (livestock density and the proportion of permanent grassland within utilised agricultural area), we identified six types of European livestock production areas characterised by contrasted bundles of services and impacts. Livestock management also appeared to be a key driver of bundles of services in prospective scenarios. These scenarios simulate a breakaway from current production, legislation (e.g. the use of food waste to fatten pigs) and consumption trends (e.g. halving animal protein consumption across Europe). Overall, strategies that combine a reduction of inputs, of the use of crops from arable land to feed livestock, of food waste and of meat consumption deliver a more sustainable food future. Livestock as part of this sustainable future requires further enhancement, quantification and communication of the services provided by livestock farming to society, which calls for the following: (i) a better targeting of public support, (ii) more precise quantification of bundles of services and (iii) better information to consumers and assessment of their willingness to pay for these services.

Livestock farming is criticized for negatively impacting the environment, concerns about animal welfare and the impact of excessive meat consumption on human health. However, livestock farming provides other underappreciated and poorly communicated benefits to society in terms of employment, product quality, cultural landscapes and carbon storage by grasslands. Few attempts have been made so far to simultaneously consider the services and impacts provided by livestock production. Here, we propose an integrated graphical tool, called the ‘barn’ to explicitly summarize the synergies and trade-offs between services and impacts provided by livestock farming. It illustrates livestock farming interacting with its physical, economic and social environment along five interfaces: (i) Markets, (ii) Work and employment, (iii) Inputs, (iv) Environment and climate, (v) Social and cultural factors. This graphical tool was then applied by comparing two contrasting livestock production areas (high livestock density v. grassland-based), and the dominant v. a niche system within a crop-livestock area. We showed the barn could be used for cross-comparisons of services and impacts across livestock production areas, and for multi-level analysis of services and impacts of livestock farming within a given area. The barn graphically summarizes the ecological and socio-economic aspects of livestock farming by explicitly representing multiple services and impacts of different systems in a simple yet informative way. Information for the five interfaces relies on available quantitative assessments from the literature or data sets, and on expert-knowledge for more qualitative factors, such as social and cultural ones. The ‘barn’ can also inform local stakeholders or policy-makers about potential opportunities and threats to the future of livestock farming in specific production areas. It has already been used as a pedagogical tool for teaching the diversity of services and impacts of livestock systems across Europe and is currently developed as a serious game for encouraging knowledge exchange and sharing different viewpoints between stakeholders.

The spread of anthelmintic resistance in equine strongyle nematodes has become a major problem, advocating for the development of alternative control for strongyles. Our study consisted of both in vivo and in vitro experiments. We investigate for the first time the efficacy of a short-term consumption of tannin-rich sainfoin (Onobrychis viciifolia) or extra proteins in naturally infected horses. We used 30 horses allocated into three groups of 10 individuals that received for 18 days either (i) a tannin-rich diet with 70% DM sainfoin pellets (Sd), (ii) a protein-rich diet with 52% DM Italian rye-grass pellets and 18% DM grinded linseed expeller (Pd), or (iii) a control diet with 45% DM barley and 25% DM cereal-based pellets (Cd). The three diets were isoenergetic, covering 94% of animal energy requirements on average, and the Sd and Pd diets were isoproteic and provided extra proteins (227% of protein requirements v. 93% for the Cd diet). Pd and Cd were compared to test for benefits of receiving extra proteins, while Sd and Pd were compared to account for the effect of sainfoin secondary metabolites. There were no between-diet differences in faecal egg counts (FEC) or in worm burden evaluated from worm counts in faeces of drenched horses at the end of the experiment. However, coprocultures from the faeces collected in each group at the beginning and at the end of the experiment suggested a lower rate of strongyle larval development in the Sd group at the end of the experiment (Sd=8.1%, Pd=30.5%, Cd=22.6%). In vitro tests using sainfoin solutions evidenced the influence of sainfoin on strongyle larval development: adding 29% of sainfoin pellets to faeces reduced the strongyle egg development into infective larvae by 82% (P

Agroecology uses natural processes and local resources rather than chemical inputs to ensure production while limiting the environmental footprint of livestock and crop production systems. Selecting to achieve a maximization of target production criteria has long proved detrimental to fitness traits. However, since the 1990s, developments in animal breeding have also focussed on animal robustness by balancing production and functional traits within overall breeding goals. We discuss here how an agroecological perspective should further shift breeding goals towards functional traits rather than production traits. Breeding for robustness aims to promote individual adaptive capacities by considering diverse selection criteria which include reproduction, animal health and welfare, and adaptation to rough feed resources, a warm climate or fluctuating environmental conditions. It requires the consideration of genotype×environment interactions in the prediction of breeding values. Animal performance must be evaluated in low-input systems in order to select those animals that are adapted to limiting conditions, including feed and water availability, climate variations and diseases. Finally, we argue that there is no single agroecological animal type, but animals with a variety of profiles that can meet the expectations of agroecology. The standardization of both animals and breeding conditions indeed appears contradictory to the agroecological paradigm that calls for an adaptation of animals to local opportunities and constraints in weakly artificialized systems tied to their physical environment.

Agroecology uses ecological processes and local resources rather than chemical inputs to develop productive and resilient livestock and crop production systems. In this context, breeding innovations are necessary to obtain animals that are both productive and adapted to a broad range of local contexts and diversity of systems. Breeding strategies to promote agroecological systems are similar for different animal species. However, current practices differ regarding the breeding of ruminants, pigs and poultry. Ruminant breeding is still an open system where farmers continue to choose their own breeds and strategies. Conversely, pig and poultry breeding is more or less the exclusive domain of international breeding companies which supply farmers with hybrid animals. Innovations in breeding strategies must therefore be adapted to the different species. In developed countries, reorienting current breeding programmes seems to be more effective than developing programmes dedicated to agroecological systems that will struggle to be really effective because of the small size of the populations currently concerned by such systems. Particular attention needs to be paid to determining the respective usefulness of cross-breeding v. straight breeding strategies of well-adapted local breeds. While cross-breeding may offer some immediate benefits in terms of improving certain traits that enable the animals to adapt well to local environmental conditions, it may be difficult to sustain these benefits in the longer term and could also induce an important loss of genetic diversity if the initial pure-bred populations are no longer produced. As well as supporting the value of within-breed diversity, we must preserve between-breed diversity in order to maintain numerous options for adaptation to a variety of production environments and contexts. This may involve specific public policies to maintain and characterize local breeds (in terms of both phenotypes and genotypes), which could be used more effectively if they benefited from the scientific and technical resources currently available for more common breeds. Last but not least, public policies need to enable improved information concerning the genetic resources and breeding tools available for the agroecological management of livestock production systems, and facilitate its assimilation by farmers and farm technicians.

Livestock farming systems provide multiple benefits to humans: protein-rich diets that contribute to food security, employment and rural economies, capital stock and draught power in many developing countries and cultural landscape all around the world. Despite these positive contributions to society, livestock is also the centre of many controversies as regards to its environmental impacts, animal welfare and health outcomes related to excessive meat consumption. Here, we review the potentials of sustainable intensification (SI) and agroecology (AE) in the design of sustainable ruminant farming systems. We analyse the two frameworks in a historical perspective and show that they are underpinned by different values and worldviews about food consumption patterns, the role of technology and our relationship with nature. Proponents of SI see the increase in animal protein demand as inevitable and therefore aim at increasing production from existing farmland to limit further encroachment into remaining natural ecosystems. Sustainable intensification can thus be seen as an efficiency-oriented framework that benefits from all forms of technological development. Proponents of AE appear more open to dietary shifts towards less animal protein consumption to rebalance the whole food system. Agroecology promotes system redesign, benefits from functional diversity and aims at providing regulating and cultural services. We analyse the main criticisms of the two frameworks: Is SI sustainable? How much can AE contribute to feeding the world? Indeed, in SI, social justice has long lacked attention notably with respect to resource allocation within and between generations. It is only recently that some of its proponents have indicated that there is room to include more diversified systems and food-system transformation perspectives and to build socially fair governance systems. As no space is available for agricultural land expansion in many areas, agroecological approaches that emphasise the importance of local production should also focus more on yield increases from agricultural land. Our view is that new technologies and strict certifications offer opportunities for scaling-up agroecological systems. We stress that the key issue for making digital science part of the agroecological transition is that it remains at a low cost and is thus accessible to smallholder farmers. We conclude that SI and AE could converge for a better future by adopting transformative approaches in the search for ecologically benign, socially fair and economically viable ruminant farming systems.

L’élevage représente une activité majeure dans nombre de territoires ruraux européens. Au-delà des controverses sur les conséquences environnementales de l’élevage, et sur les conditions de vie et d’abattage des animaux, il rend différents services à la société qu’il convient de révéler, et si possible de quantifier. Le cadre conceptuel des bouquets de services permet de considérer la coexistence d’effets positifs et négatifs de l’élevage à un instant donné sur un territoire. L’augmentation d’un service impliquant en général la diminution d’autres, ce cadre permet d’identifier les compromis à considérer au sein des territoires. Aux échelles larges (de la petite région agricole à l’Europe), on constate souvent un antagonisme entre production et emploi d’une part, services environnementaux et culturels d’autre part. Les cartographies de services révèlent l’effet des systèmes dominants dans les territoires, mais ne prennent pas en compte la coexistence avec des systèmes de niche, dont les contributions positives sont largement masquées. Une analyse à des échelles plus fines (bassin versant, canton, exploitation) montre qu’il est possible de dépasser ces antagonismes en prenant en compte les temporalités, l’hétérogénéité spatiale, et les interactions techniques ou organisationnelles entre différents types de systèmes d’élevage (et de cultures) d’un même territoire. Des modélisations aux échelles larges permettent de simuler de manière prospective les conséquences du changement climatique et d’évolutions plus tranchées des modes de production et de consommation. L’alimentation humaine – au travers de la part des protéines d’origine animale – et l’alimentation animale – du fait de son impact sur l’usage des terres – ont un poids décisif dans ces scénarios. Nous concluons en proposant des pistes de recherches à approfondir afin de mieux valoriser la diversité des services fournis par l’élevage.

L’élevage dans les espaces urbains et périurbains trouve actuellement un net regain d’intérêt en Europe du fait de l’intérêt croissant des consommateurs autour du « produire local » et du besoin de « nature » des citadins. Notre objectif est ici de synthétiser une littérature souvent fragmentaire et de structurer cette analyse grâce au cadre des bouquets de services. Pour les espaces périurbains, la littérature scientifique traite en priorité des enjeux d’aménagement pour répondre à l’approvisionnement alimentaire des villes. L’élevage en ville est bien moins étudié, ce qui nous a conduits à utiliser quelques travaux hors Europe et à consulter les sites internet de communautés urbaines et des sites associatifs. Les bouquets de services rendus par l’élevage et les freins à son développement sont très différents entre ces deux types d’espaces. Dans les villes d’Europe de l’Ouest le service d’approvisionnement reste minoritaire. La réintroduction des animaux en ville est largement motivée par une volonté de créer du lien social et constitue un facteur de réinsertion et d’éducation des citadins vis-à-vis de l’origine des produits qu’ils consomment. Les principaux freins sont liés aux nuisances et aux risques épidémiologiques occasionnés par les animaux. Dans les espaces périurbains, la contribution de l’élevage au service d’approvisionnement est plus importante et dynamisée par la vente directe. L’élevage d’herbivores maintient des prairies qui fournissent différents services de régulation et répondent aux attentes des citadins pour des espaces récréatifs à proximité immédiate des villes. Le développement de l’élevage est principalement contraint par la forte pression foncière qui s’exerce sur ces espaces. Nous concluons en proposant quelques pistes de recherches.

Dix années après la publication du rapport de la FAO « Livestock’s long shadow », qui fait toujours référence dans les débats sur les impacts de l’élevage et la part des produits animaux dans notre alimentation, quels sont les nouveaux résultats de recherche qui affinent ce panorama mondial ? Pour répondre à cette question, les ministères français en charge de l’Environnement et de l’Agriculture ainsi que l’ADEME ont sollicité l’INRA pour synthétiser les connaissances scientifiques disponibles sur les rôles, impacts et services issus des élevages en Europe. L’exercice, qui a pris la forme d’une Expertise scientifique collective (ESCo), s’est donc intéressé aux différentes fonctions et conséquences de la production et de la consommation de produits animaux sur l’environnement et le climat, l’utilisation des ressources, les marchés, le travail et l’emploi, et les enjeux sociaux et culturels. L’expertise s’est centrée sur les services et impacts des principaux animaux d’élevage « terrestres », bovins laitiers ou allaitants, petits ruminants, porcs et volailles, et de leurs filières à l’échelle européenne. Le terme « services » renvoie à la fourniture d’un avantage marchand ou non marchand issu des activités d’élevage et/ou de l’usage de produits d’origine animale, soit une acceptation plus large que celle des services écosystémiques fournis par les agroécosystèmes. Nous utilisons l’expression « services et impacts » car les deux termes sont spontanément complémentaires, les services étant en général connotés de manière positive tandis que les impacts le sont négativement. Associer ces deux termes conduit à considérer les différents effets de l’élevage conjointement, et à souligner les complémentarités et antagonismes qui résultent des interactions entre les processus écologiques, biotechniques et économiques mis en jeu. La notion de « bouquets de services » constitue aujourd’hui un front de science dynamique dont nous avons cherché à extraire ce qui est spécifique à l’élevage. L’analyse a mis l’accent sur la variabilité des bouquets de services fournis par l’élevage selon les territoires. Une expertise scientifique consiste en un état des lieux critique des connaissances disponibles à partir d’une analyse exhaustive de la littérature scientifique. L’objectif est de dégager les acquis sur lesquels peut s’appuyer la décision publique, et de pointer les controverses, incertitudes ou lacunes du savoir scientifique. Placée sous la responsabilité scientifique de Bertrand Dumont, zootechnicien et écologue (INRA), et de Pierre Dupraz, économiste (INRA) celle-ci a réuni, pendant deux ans, vingt-six experts1 issus de différentes disciplines et institutions, et travaillant dans différents contextes afin que la diversité des résultats et des arguments scientifiques soit prise en compte. Le collectif d’experts a bénéficié de l’encadrement méthodologique de la Délégation à l’expertise, à la prospective et aux études (Depe) qui a assuré la coordination du projet, l’appui documentaire (avec la contribution des départements Phase et SAE2) et l’analyse cartographique. Le travail a abouti à la rédaction d’un rapport principal de plus de mille pages présenté publiquement en novembre 2016, d’une synthèse de 126 pages et d’un résumé en français et en anglais de huit pages. Ce numéro spécial s’appuie principalement sur les éléments développés dans les chapitres 2, 6 et 7 du rapport. Le regard critique des relecteurs et le travail de réécriture des auteurs y apportent une réelle plus-value. Le premier article, coordonné par Michel Duru, présente le cadre conceptuel que nous avons proposé à partir de la littérature sur les systèmes socio-écologiques, afin de représenter de manière structurée la diversité des services et impacts rendus par les systèmes d’élevage (et de polyculture-élevage) dans les territoires. Le deuxième article coordonné par Jonathan Hercule et Vincent Chatellier établit une typologie des territoires d’élevage européens qui repose sur deux critères simples et disponibles dans les bases de données : la part des prairies permanentes dans la Surface Agricole Utile (SAU) et la densité animale par hectare de SAU. En croisant ces deux variables, nous distinguons six types de territoires que nous avons cartographiés à l’échelle européenne. Dans les cinq articles qui suivent, nous décrivons les bouquets de services rendus par l’élevage dans les territoires où il est bien représenté, le sixième type correspondant aux zones de grandes cultures. Nous analysons la variabilité qui existe autour du bouquet de services propre à chaque type, et la dynamique d’évolution de l’élevage selon les territoires. Nous traitons ainsi des territoires à haute densité animale qui concentrent 29% du cheptel européen sur seulement 10% du territoire (Dourmad et al), des territoires herbagers à haute (Delaby et al), moyenne (Vollet et al) ou faible densité animale (Lemauviel-Lavenant et Sabatier), et des territoires de polyculture-élevage (Ryschawy et al). Les deux articles qui suivent s’attachent à des configurations qui ne sont pas représentées sur la carte européenne, mais sont potentiellement présentes dans chaque catégorie de notre typologie. Nous analysons comment certaines filières s’adaptent à des attentes sociétales accrues en matière d’alimentation (produits de qualité, circuits courts) et de qualité de la vie. Marc Benoit et Bertrand Méda abordent cette question à partir d’une analyse croisée des systèmes ovins en Agriculture Biologique et poulets Label Rouge, Claire Delfosse et al en synthétisant la littérature encore fragmentaire sur l’élevage urbain et périurbain. L’article conclusif, coordonné par Bertrand Dumont, porte au débat les enseignements tirés des cartographies de services, et des modélisations et scénarios prospectifs globaux. Il propose différentes pistes pour mieux valoriser la diversité des services fournis par l’élevage. Les différents articles de ce numéro illustrent ainsi le large panorama des services et impacts de l’élevage européen. Nous espérons qu’ils donnent à voir non seulement le rôle de l’élevage vis-à-vis de la production de denrées alimentaires, de l’emploi, des dynamiques territoriales et de la construction des paysages, mais aussi comment l’élevage pourrait mieux répondre aux attentes légitimes de nos concitoyens en matière de préservation de l’environnement, de bien-être animal et de traçabilité des circuits alimentaires. Notre ambition est d’aider à sortir d’un débat qui ne considère trop souvent qu’une partie de ces effets. L’intérêt pédagogique de la grange et de la typologie des territoires d’élevage européens a déjà été largement souligné. Gageons qu’il confère à ce numéro spécial un intérêt particulier pour l’enseignement agronomique et le développement agricole. En 2008, l’Irlande a connu une crise économique et financière violente qui l’a contraint de mettre en place une stratégie de reconquête basée sur ses atouts et richesses naturelles. L’élevage bovin et ovin est alors devenu un secteur d’avenir, compte tenu notamment de sa vocation exportatrice historique. Ainsi, 80 à 90% de la production de lait ou de viande est exporté sur un marché mondial très concurrentiel. Avec un territoire agricole composé à 92% de prairies, l’élevage de ruminants irlandais est basé sur la valorisation de l’herbe par le pâturage. Ce système lui permet d’obtenir des coûts de production modérés et fournit grâce à la prairie différents services environnementaux. Alors que l’abandon des quotas laitiers et la forte demande alimentaire mondiale stimule le développement de l’élevage irlandais, ce dernier devra s’appuyer sur une intensification contrôlée pour ne pas dégrader les atouts environnementaux et l’image positive associée à la prairie.

Les zones herbagères de moyenne et de haute montagne fournissent un bouquet de services équilibré qui comprend des services d’approvisionnement (produits de qualité et disposant d’une bonne image auprès des consommateurs), des services environnementaux et de vitalité territoriale. Afin d’expliciter les déterminants de cette diversité, quatre études de cas ont été retenues à des échelles géographiques différentes : AOP Cantal et Laguiole dans le Massif central, région de Franche-Comté, alpages suisses. Une même grille d’analyse a été appliquée à chacune de ces études de cas. Le contexte qui conduit à la situation actuelle est présenté dans une perspective historique, avant que soient analysés leurs principaux services d’approvisionnement, environnementaux et de vitalité territoriale. Chaque étude de cas est synthétisée par une formalisation inspirée d’une analyse en termes de système socio-écologique. Nous discutons par la suite des leviers permettant de mieux concilier les performances productives, environnementales et sociales de l’élevage dans ces territoires. Un levier biotechnique majeur est la recherche d’autonomie fourragère qui permet de réduire les coûts de production tout en bénéficiant à la qualité nutritionnelle des laits et des fromages. Il existe par ailleurs des liens forts entre la nature de la gouvernance des filières et le bouquet de services fournis. Une gouvernance territoriale de filières crée de la valeur en valorisant les ressources locales, et en régulant le système de production par des organisations dédiées ; elle bénéficie conjointement aux services de vitalité territoriale et de qualité de l’environnement. A l’inverse, une gouvernance sectorielle apparait moins favorable. Le développement de formes hybrides de gouvernance (par exemple alimentaire territoriale) constitue l’un des leviers importants.

Dans cet article, nous analysons trois territoires à haute densité animale, différentiés par le contexte de production (densité et diversité des élevages), la sensibilité des milieux et les choix stratégiques et technologiques mis en oeuvre pour la gestion des effluents : i) la Bretagne, un territoire de polyculture-polyélevage avec une forte densité d'élevages et des zones particulièrement sensibles sur le plan environnemental, ii) l'Allemagne, avec la particularité d'un très fort développement de la méthanisation à des fins de production d'énergie renouvelable et iii) la Catalogne, un territoire marqué par un développement récent et très rapide de la production porcine dans un milieu où les surfaces agricoles disponibles pour l'épandage sont limitées. Ces systèmes se caractérisent par une production élevée par unité de surface et par unité de travail, à des coûts relativement bas, avec un recours important à des intrants, principalement pour l’alimentation des animaux. Malgré des progrès significatifs, les impacts environnementaux locaux, eutrophisation et acidification, constituent une limite importante dans ces systèmes. À l'inverse, les impacts globaux, comme l'émission de gaz à effet de serre sont faibles par unité de produit, compte tenu du type d'élevage et de l'intensité de production. Ils sont encore réduits avec la méthanisation. Ces systèmes font face à une remise en cause du modèle socio-économique dans lequel ils s’inscrivent avec des questions autour de la faible rémunération des éleveurs et du bien-être animal. Différents leviers d'action spécifiques à ces territoires à haute densité animale ont été identifiés pour mieux gérer les compromis entre les différents services.

L’élevage et les produits animaux sont souvent examinés par domaine (environnement, économie) ou par niveau d’organisation (exploitation agricole, filière, territoire, pays) si bien qu’il est difficile d’évaluer simultanément la diversité des services et impacts issus de l’élevage dans les territoires. En cohérence avec la littérature scientifique sur les systèmes socio-écologiques, nous avons représenté l’élevage et ses produits à l’interaction de trois systèmes (écologique, technique et social). Ceci permet d’identifier la diversité des facteurs (interactions biotiques, pratiques, modes d’organisation) à l’origine des impacts et des services rendus par l’élevage. Nous en avons ensuite dérivé une représentation simplifiée, « la grange » qui permet de visualiser l’élevage (l’usage des terres, les animaux…) et ses impacts ou services sur cinq interfaces (les intrants, l’environnement et le climat, les marchés, le travail et l’emploi, et les enjeux sociaux et culturels), et les synergies/antagonismes entre services au sein d’un territoire. Nous définissons ensuite différentes formes d’élevage afin de représenter la diversité de l’élevage entre territoires, et d’identifier différentes voies d’innovation pour augmenter ses services et réduire ses impacts. Celles-ci se distinguent par l’insertion des élevages dans les systèmes alimentaires (mondialisés vs territorialisés), ainsi que par l’autonomie en intrants pour l’alimentation des animaux. Cette classification est mobilisée pour introduire les différents cas d’études analysés dans ce numéro spécial.

Cet article propose une typologie qui décrit la diversité des territoires d’élevage européens, en s’appuyant sur deux critères simples et disponibles : la part des prairies permanentes dans la surface agricole utile (SAU) et la densité animale exprimée en Unité de Gros Bétail (UGB) par hectare de SAU. Appliquée aux données de l’Enquête sur la Structure des Exploitations Agricoles, cette typologie distingue six types de territoires d’élevage, que nous avons projeté sur une carte de l’Union européenne. En utilisant les données du Réseau d’Information Comptable Agricole (RICA), nous mettons en évidence la forte diversité des exploitations européennes d’élevage (en termes de structures, de niveau d’intensification, de productivité, de dépendance aux aides directes…) entre territoires et au sein de chacun d’eux. Ce travail apporte des éléments de cadrage aux autres articles publiés dans ce même numéro de la revue et ciblés sur des territoires ou des types d’élevage particuliers.

L’agro-écologie utilise les processus naturels et les ressources locales plutôt que des intrants chimiques pour assurer la production tout en limitant l’impact environnemental de l’agriculture. A cette fin, des innovations en génétique sont nécessaires pour disposer d’animaux productifs et adaptés à des contextes locaux variés. Pour toute filière d’élevage, réorienter les programmes de sélection actuels semble plus utile que développer des programmes spécifiques qui peineront à être efficaces en termes de coûts et de progrès génétiques attendus. Améliorer la robustesse des animaux vise à promouvoir leurs capacités d’adaptation en intégrant de nombreux critères de sélection, en particulier de reproduction, santé, et d’adaptation à des ressources alimentaires peu digestibles et au changement climatique. Cela amène à considérer les interactions génotype-environnement dans la prédiction des valeurs génétiques et à évaluer les performances des animaux dans des systèmes à bas intrants pour sélectionner ceux qui sont adaptés à des conditions limitantes. La standardisation tant des animaux que des conditions d’élevage paraît antinomique avec les principes de l’agro-écologie prônant une adaptation des animaux aux ressources et contraintes locales dans des systèmes peu artificialisés et très liés à leur environnement physique. Il n’y a donc pas UN animal type agro-écologique, mais DES animaux aux profils variés permettant de répondre aux attentes de l’agro-écologie. Face à la diversité des milieux et des systèmes d’élevage, il faut conserver une diversité génétique importante intra-race, mais aussi préserver la diversité génétique entre races. Cela nécessite une caractérisation phénotypique et génétique des races locales. Enfin, il s’agit de favoriser l'appropriation par les éleveurs et les techniciens d’élevage des outils et des ressources génétiques disponibles pour répondre à leurs besoins.

Ruminant production systems have been facing the sustainability challenge, namely, how to maintain or even increase production while reducing their environmental footprint, and improving social acceptability. One currently discussed option is to encourage farmers to follow agroecological principles, that is, to take advantage of ecological processes to reduce inputs and farm wastes, while preserving natural resources, and using this diversity to increase system resilience. However, these principles need to be made more practical. Here, we present the procedure undertaken for the collaborative construction of an agroecological diagnostic grid for dairy systems with a focus on the mountain farming relying on the use of semi-natural grasslands. This diagnosis will necessarily rely on a multicriteria evaluation as agroecology is based on a series of complementary principles. It requires defining a set of criteria, based on practices to be recommended, that should be complied with to ensure agroecological production. We present how such agroecological criteria were identified and organized to form the architecture of an evaluation model. As a basis for this work, we used five agroecological principles already proposed for animal production systems. A group of five experts of mountain production systems and of their multicriteria evaluation was selected, with a second round of consultation with five additional experts. They first split up each principle into three to four generic sub-principles. For each principle, they listed three to eight categories of state variables on which the fulfilment of the principle should have a positive impact (e.g. main health disorders for the integrated health management principle). State variables are specific for a given production, for example, dairy farms. Crossing principles with state variables enabled experts to build five matrices, with 75 cells relevant for dairy systems. In each cell, criteria are specific to the local context, for example, mountain dairy systems in this study. Finally, we discuss the opportunities offered by our methodology, and the steps remaining for the construction of the evaluation model.

Agroecology offers a scientific and operational framework for redesigning animal production systems (APS) so that they better cope with the coming challenges. Grounded in the stimulation and valorization of natural processes to reduce inputs and pollutions in agroecosystems, it opens a challenging research agenda for the animal science community. In this paper, we identify key research issues that define this agenda. We first stress the need to assess animal robustness by measurable traits, to analyze trade-offs between production and adaptation traits at within-breed and between-breed level, and to better understand how group selection, epigenetics and animal learning shape performance. Second, we propose research on the nutritive value of alternative feed resources, including the environmental impacts of producing these resources and their associated non-provisioning services. Third, we look at how the design of APS based on agroecological principles valorizes interactions between system components and promotes biological diversity at multiple scales to increase system resilience. Addressing such challenges requires a collection of theories and models (concept–knowledge theory, viability theory, companion modeling, etc.). Acknowledging the ecology of contexts and analyzing the rationales behind traditional small-scale systems will increase our understanding of mechanisms contributing to the success or failure of agroecological practices and systems. Fourth, the large-scale development of agroecological products will require analysis of resistance to change among farmers and other actors in the food chain. Certifications and market-based incentives could be an important lever for the expansion of agroecological alternatives in APS. Finally, we question the suitability of current agriculture extension services and public funding mechanisms for scaling-up agroecological practices and systems.

Agroecology opens up new perspectives for the design of sustainable farming systems by using the stimulation of natural processes to reduce the inputs needed for production. In horse farming systems, the challenge is to maximize the proportion of forages in the diet, and to develop alternatives to synthetic chemical drugs for controlling gastrointestinal nematodes. Lactating saddle mares, with high nutritional requirements, are commonly supplemented with concentrates at pasture, although the influence of energy supplementation on voluntary intake, performance and immune response against parasites has not yet been quantified. In a 4-month study, 16 lactating mares experimentally infected with cyathostome larvae either received a daily supplement of barley (60% of energy requirements for lactation) or were non-supplemented. The mares were rotationally grazed on permanent pastures over three vegetation cycles. All the mares met their energy requirements and maintained their body condition score higher than 3. In both treatments, they produced foals with a satisfying growth rate (cycle 1: 1293 g/day; cycle 2: 1029 g/day; cycle 3: 559 g/day) and conformation (according to measurements of height at withers and cannon bone width at 11 months). Parasite egg excretion by mares increased in both groups during the grazing season (from 150 to 2011 epg), independently of whether they were supplemented or not. This suggests that energy supplementation did not improve mare ability to regulate parasite burden. Under unlimited herbage conditions, grass dry matter intake by supplemented mares remained stable around 22.6 g DM/kg LW per day (i.e. 13.5 kg DM/al per day), whereas non-supplemented mares increased voluntary intake from 22.6 to 28.0 g DM/kg LW per day (13.5 to 17.2 kg DM/al per day) between mid-June and the end of August. Hence total digestible dry matter intake and net energy intake did not significantly differ between supplemented and non-supplemented mares during the second and third cycles. In conclusion, supplementing lactating mares at pasture should not be systematic because their adaptive capacities enable to increase herbage intake and ensure foal growth. Further research is needed to determine the herbage allowance threshold below which supplementation is required.

Animal sociability measurements based on inter-individual distances or nearest-neighbour distributions can be obtained automatically with telemetry collars. So far, all the indices that have been used require the whole group to be observed. Here, we propose an index of the variability in affinity relationships in groups of domestic herbivores, whose definition does not depend on group size and that can be used even if some data are missing. This index and its estimators are based on a function that measures how frequently an animal is closer than another one from a third animal. When no data are missing, we show that our estimator and the variance of the sociability matrixsensu Sibbald (considered as the reference method) are strongly correlated. We then consider two cases of missing data. In the first case, some animals are randomly missing, that is, to account for random breakdown of telemetry collars. Our estimator is unbiased by such missing data and its variance decreases as the number of observation dates increases. In the second case, the same animals are missing at all observation dates, that is, in large herds where there are more individuals to be observed than available telemetry collars. Our estimator of affinity variance within a group is biased by such missing data. Thus, it requires changing animals equipped with telemetry collars regularly during the experiment. Conversely, the estimator remains unbiased at the population level, that is, if several independent groups are being analysed. We finally illustrate how this estimator can be used by investigating changes in the variability of affinities according to group size in grazing heifers.

Agroecology and industrial ecology can be viewed as complementary means for reducing the environmental footprint of animal farming systems: agroecology mainly by stimulating natural processes to reduce inputs, and industrial ecology by closing system loops, thereby reducing demand for raw materials, lowering pollution and saving on waste treatment. Surprisingly, animal farming systems have so far been ignored in most agroecological thinking. On the basis of a study by Altieri, who identified the key ecological processes to be optimized, we propose five principles for the design of sustainable animal production systems: (i) adopting management practices aiming to improve animal health, (ii) decreasing the inputs needed for production, (iii) decreasing pollution by optimizing the metabolic functioning of farming systems, (iv) enhancing diversity within animal production systems to strengthen their resilience and (v) preserving biological diversity in agroecosystems by adapting management practices. We then discuss how these different principles combine to generate environmental, social and economic performance in six animal production systems (ruminants, pigs, rabbits and aquaculture) covering a long gradient of intensification. The two principles concerning economy of inputs and reduction of pollution emerged in nearly all the case studies, a finding that can be explained by the economic and regulatory constraints affecting animal production. Integrated management of animal health was seldom mobilized, as alternatives to chemical drugs have only recently been investigated, and the results are not yet transferable to farming practices. A number of ecological functions and ecosystem services (recycling of nutrients, forage yield, pollination, resistance to weed invasion, etc.) are closely linked to biodiversity, and their persistence depends largely on maintaining biological diversity in agroecosystems. We conclude that the development of such ecology-based alternatives for animal production implies changes in the positions adopted by technicians and extension services, researchers and policymakers. Animal production systems should not only be considered holistically, but also in the diversity of their local and regional conditions. The ability of farmers to make their own decisions on the basis of the close monitoring of system performance is most important to ensure system sustainability.

Grasslands being used in sheep farming systems are managed under a variety of agricultural production, recreational and conservational objectives. Although sheep grazing is rarely considered the best method for delivering conservation objectives in seminatural temperate grasslands, the literature does not provide unequivocal evidence on the impact of sheep grazing on pasture biodiversity. Our aim was therefore to review evidence of the impacts of stocking rate, grazing period and soil fertility on plant communities and arthropod populations in both mesotrophic grasslands typical of agriculturally improved areas and in native plant communities. We therefore conducted a literature search of articles published up to the end of the year 2010 using ‘sheep’ and ‘grazing’ as keywords, together with variables describing grassland management, plant community structure or arthropod taxa. The filtering process led to the selection of 48 articles, with 42 included in the stocking rate dataset, 9 in the grazing period dataset and 10 in the soil fertility dataset. The meta-analysis did not reveal any significant trends for plant species richness or plant community evenness along a wide stocking rate gradient. However, we found frequent shifts in functional groups or plant species abundance that could be explained by the functional properties of the plants in the community. The meta-analysis confirmed that increasing soil fertility decreased plant species richness. Despite the very limited dataset, plant species richness was significantly greater in autumn-grazed pastures than in ungrazed areas, which suggests that choosing an appropriate grazing period would be a promising option for preserving biodiversity in sheep farming systems. Qualitative review indicated that low grazing intensity had positive effects on Orthoptera, Hemiptera (especially phytophagous Auchenorrhyncha) and, despite a diverse range of feeding strategies, for the species richness of Coleoptera. Lepidoptera, which were favoured by more abundant flowering plants, also benefited from low grazing intensities. Spider abundance and species richness were higher in ungrazed than in grazed pastures. In contrast, there are insufficient published studies to draw any firm conclusions on the benefits of late grazing or stopping fertilization on insect diversity, and no grounds for including any of this information in decision support tools at this stage.

Group-living animals travel together to collectively exploit the resources of their environment. This study investigates how social relationships and individual temperament traits affect movement orders in domestic cattle and sheep. We analysed spontaneous group movements occurring at pasture after a resting period in a group of 15 18-month-old Charolais heifers and a group of 19 1-year-old Romane ewe-lambs. For each species, animals had similar social experience and no kinship ties. Before that, animals were observed within the group to establish their social status (e.g. dominance and preferential relationships, and sociability), then in individual tests in order to assess their emotional traits. In both species, most individuals could initiate a group movement but some individuals were more successful than others in recruiting the rest of the group. Ewe-lambs, and to a lesser extent heifers, held preferential positions during travel. We did not find any significant correlations in either species between animal order and their position in the dominance hierarchy (heifers: P = 0.438; ewe-lambs: P = 0.574) while individuals linked by preferential bonds frequently followed each other during group movements (heifers: P < 0.001; ewe-lambs: P < 0.001). With regard to social traits, heifers with a low cohesion index, and with a lower number of partners with whom they develop frequent affinitive interactions, acted more frequently as ‘first movers’ (P = 0.040 and 0.023, respectively), as well as did ewe-lambs with a high spatial independency index (P = 0.002). Ewe-lambs with the highest cohesion indices were more frequently observed in front of the group while moving halfway between departure and arrival (P = 0.028). We did not find significant correlations between individual positions during group movements and emotional traits such as reactivity, boldness and fearfulness. We conclude that preferential bonds and individual traits related to social dependence were more influential in spontaneous group movements at pasture than were emotional traits and dominance status.

Although stocking rate is a key management variable influencing the structure and composition of pastures, only few studies have simultaneously analysed the seasonal patterns of pasture use by cattle, and the adjustments the animals make to maintain intake of a high-quality diet over the grazing season. Therefore, over a 3-year study, we recorded diet selection, plot use and impact of heifers on sward structure and quality under three different stocking rates (0.6, 1.0 and 1.4 livestock units (LU) per ha) in a species-rich mountain pasture of central France. Measurements were made on three occasions between early June and the end of September each year. Overall, heifers selected for bites dominated by legumes or forbs, and against reproductive grass, whatever the stocking rate or season. Selection for tall mixed (P < 0.05), short mixed (P < 0.05) and short pure grass bites (P < 0.01) was more pronounced in plots grazed at the lowest stocking rate. Although heifers’ selection for short patches decreased at the end of the season (P < 0.001), they continued to graze previously grazed areas, thus exhibiting a typical ‘patch grazing’ pattern, with the animals that grazed at the lowest stocking rate tending to better maintain their selection for short patches in September (treatment × period: P = 0.078). Neither diet quality nor individual animal performance were affected by the different stocking rate treatments despite high variability in the quantity and quality of herbage offered and differences in diet selection. However, at the 1.4 LU per ha stocking rate, the quantity of forage available per animal at the end of the season, 0.79 t dry matter (DM) per ha of green leaves with the median of sward height at 4.6 cm, approached levels limiting cattle’s ability to compensate for the effects of increasing stocking rate. In plots grazed at 0.6 LU per ha, the total herbage biomass remained higher than 3 t DM per ha with more than 30% of plot area still covered by reproductive grass patches at the end of the grazing season, which in the medium term should affect the botanical composition of these pastures. Sward heterogeneity was high in plots grazed at 1.0 LU per ha, with sufficient herbage availability (1.1 t DM per ha of green leaves) to maintain animal performance, and more than 15% of plot area was kept at a reproductive stage at the end of the grazing season. Hence, it could represent the optimal balance to satisfy both livestock production and conservation management objectives.

L’agro-écologie et l’écologie industrielle, qui mobilisent les concepts de l’écologie, sont deux approches complémentaires pour répondreaux enjeux économiques et environnementaux auxquels sont confrontés les systèmes d’élevage. L’agro-écologie cherche à amplifier les processus naturels pour promouvoir des systèmes productifs moins dépendants des intrants, valorisant la diversité animale et végétale et produisant différents services écosystémiques. L’écologie industrielle explore le bouclage des cycles (matière, énergie) pour économiser les ressources nécessaires à la production, et diminuer les pollutions dans des systèmes très contrôlés et ayant un faible lien au sol. Jusqu’ici, les systèmes d’élevage ont été largement écartés des démarches agro-écologiques. Nous proposons et analysons cinq principes agro-écologiques applicables à l’élevage : i) développer des pratiques de gestion intégrée pour améliorer la santé animale, ii) utiliser des ressources naturelles et des coproduits pour diminuer les intrants nécessaires à la production, iii) optimiser le fonctionnement des systèmes d’élevage pour réduire les pollutions, iv) valoriser la diversité dans les élevages pour renforcer leur résilience, et v) adapter les pratiques d’élevage pour préserver la biodiversité dans les agro-écosystèmes et les services écosystémiques associés. A partir de quatre études de cas, nous décrivons comment ces principes se combinent et permettent d’atteindre de meilleures performances économiques et environnementales. Les opportunités et freins actuels pour le développement de systèmes relevant de l’agroécologie ou de l’écologie industrielle sont ensuite discutés en évoquant la motivation des éleveurs à développer des systèmes autonomes et la réorganisation du travail nécessaire pour que s’opèrent de tels changements.

Les systèmes d’élevage extensifs de ruminants reposent largement sur l’exploitation de l’herbe. Leur objectif est de produire tout en maintenant des coûts de production à un faible niveau (recours limité aux intrants et à la complémentation). Or, dans de tels systèmes les ressources alimentaires pâturées (disponibilité et qualité) sont caractérisées par leur grande variabilité spatiale et temporelle et leur sensibilité aux aléas climatiques. Le milieu d’élevage étant faiblement contrôlé par l’éleveur, c’est sur l’animal et sur ses capacités adaptatives que reposent en grande partie la pérennité du troupeau et sa productivité. En particulier, la collecte de la ressource alimentaire étant principalement confiée à l’animal, celui-ci doit être capable d’assurer au mieux sa ration quotidienne par le pâturage et doit être capable de subir des périodes de sous-alimentation plus ou moins longues et intenses. Dans cette synthèse, nous montrons que pour faire face à de telles contraintes de l’environnement, les herbivores sont capables de développer des réponses adaptatives qui mettent en œuvre des ajustements physiologiques et comportementaux. Ces réponses, lorsqu’elles sont analysées sur le long terme, révèlent des stratégies d’adaptation différentes entre races. Ces stratégies sont analysées du point de vue de leur efficacité et de leur aptitude à soutenir des priorités orientées vers la survie et le développement de l’organisme ou privilégiant l’investissement reproductif et maternel.

Dans un contexte agricole favorable au développement de systèmes herbagers durables, les équidés ont un rôle majeur à jouer dans l’entretien de l’espace et la préservation de la biodiversité prairiale. Les effectifs de chevaux augmentent fortement en France comme dans le reste de l’Europe. Pourtant la filière équine est confrontée à un manque de références et d’appuis techniques vis-à-vis de l’alimentation des chevaux à partir des ressources pâturées, dans un contexte où on sait que «l’herbe» permet de couvrir les besoins nutritionnels des animaux et que sa gestion a des conséquences sur la dynamique des couverts. L’objectif de cette synthèse est de faire le point sur les connaissances relatives aux déterminants de l’ingestion et des choix alimentaires des chevaux au pâturage, la confrontation de ces résultats avec ceux acquis chez les ruminants contribuant à mettre en avant les spécificités des stratégies d’alimentation adoptées par les équidés. Les chevaux sont capables de réguler leur comportement alimentaire (temps de pâturage, vitesse d’ingestion, choix de sites d’alimentation) en réponse à des variations de disponibilité et de qualité du couvert végétal. Ils entretiennent des zones d’herbe rase au sein du couvert qu’ils retournent pâturer préférentiellement. Ce comportement accroît l’hétérogénéité structurale de la végétation qui est susceptible de favoriser la coexistence de plusieurs espèces au sein des communautés végétales et animales prairiales. Les travaux futurs devront préciser les effets de caractéristiques des animaux et de différents modes de conduite, afin de permettre aux éleveurs de piloter le pâturage équin au mieux de leurs attentes.

Chez les herbivores domestiques, l’organisation sociale interfère largement avec le comportement alimentaire au pâturage. Ce texte présente comment les relations sociales au sein du groupe influencent les stratégies individuelles pour le choix des aliments, l’exploitation des sites alimentaires et la distribution spatiale au pâturage. La vie en groupe offre au jeune individu des modèles sociaux, d’abord sa mère puis ses pairs, qui facilitent l’acquisition de préférences et d’évitements alimentaires plus efficacement que l’apprentissage individuel par essai-erreur. Le groupe facilite également la découverte de nouveaux sites alimentaires puisque l’animal bénéficie de ceux trouvés par ses congénères. En revanche, les animaux qui s’alimentent en groupe doivent faire face à une plus forte compétition du fait de la diminution plus rapide de la ressource. Les conséquences de cette compétition varient selon le rang hiérarchique de l’individu, les animaux subordonnés étant les plus pénalisés. La vie en groupe induirait également pour l’individu un coût au moment de l’abandon du site alimentaire.

Mieux comprendre la relation animal-végétation est nécessaire pour développer des systèmes de gestion qui favorisent le maintien par le pâturage d’une ressource suffisamment riche et abondante. Dans ces conditions, l’animal peut couvrir ses besoins nutritionnels et assurer une productivité suffisante, tout en participant à l’entretien du milieu. L’article fait le point, à partir d’un grand nombre de travaux expérimentaux, sur les facteurs qui influencent la sélection et l’utilisation des sites et stations alimentaires par les herbivores. La première partie est consacrée au cadre théorique dans lequel sont discutées les observations expérimentales. Le contexte général de la Théorie de l’Alimentation Optimale (TAO) et ses prédictions, sont décrits. L’’applicabilité’, l’utilité et la validité des modèles d’optimisation dans l’étude du comportement alimentaire des herbivores sont tout particulièrement considérées. Ensuite, est étudiée l’influence des différents facteurs, trophiques (quantité et qualité des ressources fourragères, espèce végétale), environnementaux (topographie, distance aux points d’eau, présence d’abris et risques de prédation) et animaux (capacités cognitives et organisation sociale) sur la sélection et l’utilisation des sites et des stations alimentaires par les herbivores. La TAO permet d’expliquer les stratégies alimentaires des herbivores. Cependant, les choix des animaux ne sont en général pas aussi absolus que ceux prédits. En conditions naturelles, les animaux répondent non seulement à la ressource alimentaire, mais aussi à différentes contraintes externes (environnement non alimentaire) et internes (mémoire, discrimination). D’autres approches complémentaires, telles l’’hédonisme’ et la ’sagesse nutritionnelle’, susceptibles d’influencer les choix des animaux, sont brièvement analysées.

L’animal exprime ses préférences alimentaires quand il se trouve dans une situation de choix non contraignante. En pratique, une telle situation existe rarement dans les conditions habituelles du pâturage. On mesure alors la sélection alimentaire qui correspond à ce que l’animal prélève. La connaissance des préférences alimentaires des herbivores devrait aider à mieux comprendre les choix que ceux-ci réalisent dans la situation complexe du pâturage. Il est possible de les mesurer quand, expérimentalement, les animaux ont le choix entre des micro-placettes ou entre des couverts homogènes adjacents. Un certain nombre d’expériences a récemment été réalisé ainsi et cet article a pour premier objectif de rassembler et de discuter leurs résultats. Ensuite nous montrons comment, au pâturage, les contraintes liées à la structure de la végétation et aux limites des aptitudes des animaux influencent ce qu’ils sélectionnent.

L’objectif d’entretien d’espaces par le pâturage nécessite de mieux comprendre les règles qui président aux choix alimentaires des herbivores. Les études dans ce domaine se sont longtemps articulées autour de l’Optimal Foraging Theory, qui postule que les décisions des animaux sont dictées par la volonté de maximiser leur bilan énergétique. Cependant, afin de mieux rendre compte de la diversité des régimes observés, d’autres approches ont été proposées, inspirées pour une large part par les contraintes nutritionnelles que subissent les herbivores. Il semble clair que les caractéristiques morpho-physiologiques des animaux expliquent largement les différences de choix entre espèces. En revanche, au sein de chaque espèce, les expériences alimentaires dans le jeune âge, l’apprentissage avec la mère et la reconnaissance des conséquences post-ingestives des choix réalisés jouent un rôle dans l’acquisition d’habitudes alimentaires et expliquent à la fois une certaine "sagesse nutritionnelle" et la plasticité des comportements observés.
