Abstract

Physics of the Dark Universe 22, 38 - 47 (2018). doi:10.1016/j.dark.2018.08.002, Clusters of galaxies are the largest known gravitationally bound structures in the Universe, with masses around $10^{15}M_{\odot}$, most of it in the form of dark matter. The ground-based Imaging Atmospheric Cherenkov Telescope MAGIC made a deep survey of the Perseus cluster of galaxies using almost 400 h of data recorded between 2009 and 2017. This is the deepest observational campaign so far on a cluster of galaxies in the very high energy range. We search for gamma-ray signals from dark matter particles in the mass range between 200 GeV and 200 TeV decaying into standard model pairs. We apply an analysis optimized for the spectral and morphological features expected from dark matter decays and find no evidence of decaying dark matter. From this, we conclude that dark matter particles have a decay lifetime longer than $\sim 10^{26}$ s in all considered channels. Our results improve previous lower limits found by MAGIC and represent the strongest limits on decaying dark matter particles from ground-based gamma-ray instruments., Published by Elsevier, Amsterdam [u.a.]

Abstract

Extreme High-frequency BL~Lacs (EHBL) feature their synchrotron peak of the broadband spectral energy distribution (SED) at $\nu_{\rm s} \geq $10$^{17}$\,Hz. The BL~Lac object 1ES~2344+514 was included in the EHBL family because of its impressive shift of the synchrotron peak in 1996. During the following years, the source appeared to be in a low state without showing any extreme behaviours. In August 2016, 1ES~2344+514 was detected with the ground-based $\gamma$-ray telescope FACT during a high $\gamma$-ray state, triggering multi-wavelength (MWL) observations. We studied the MWL light curves of 1ES~2344+514 during the 2016 flaring state, using data from radio to VHE $\gamma$ rays taken with OVRO, KAIT, KVA, NOT, some telescopes of the GASP-WEBT collaboration at the Teide, Crimean, and St. Petersburg observatories, \textit{Swift}-UVOT, \textit{Swift}-XRT, \textit{Fermi}-LAT, FACT and MAGIC. With simultaneous observations of the flare, we built the broadband SED and studied it in the framework of a leptonic and an hadronic model. The VHE $\gamma$-ray observations show a flux level of 55\% of the Crab Nebula flux above 300\,GeV, similar to the historical maximum of 1995. The combination of MAGIC and \textit{Fermi}-LAT spectra provides an unprecedented characterization of the inverse-Compton peak for this object during a flaring episode. The $\Gamma$ index of the intrinsic spectrum in the VHE $\gamma$-ray band is $2.04\pm0.12_{\rm stat}\pm0.15_{\rm sys}$. We find the source in an extreme state with a shift of the position of the synchrotron peak to frequencies above or equal to $10^{18}$\,Hz, Comment: Accepted in MNRAS. Corresponding authors: M. The paper points out the challenges and problems faced by media literacy as an educational and generally public strategic concept, with a focus on the use of the term itself and certain terminological ambiguities, then on reductionist practices in the implementation of media literacy training, and the political and ideological instrumentalization of the idea. The challenge before media literacy is the reality determined by technological development and the tendency to quantify, schematize and automate media literacy skills so that they take on computer logic, without being grounded in critical thinking.

8. Comparison of dark and milk cocoa toppings produced by a five-roll mill and a ball mill

Abstract

Chocolate toppings are confectionery products comprised of non-fat dark cocoa solids and sugar particles dispersed in cocoa butter, as a continual matrix. On the other hand, dark cocoa toppings contain cocoa powder and sugar dispersed in vegetable fat that is cheaper than cocoa butter, but with adequate characteristics. Also, with the addition of a 7% non-fat milk fraction, this product is regarded as a milk cocoa topping. This kind of product, dark and milk cocoa toppings, does not demand long-term conching or tempering. This study aimed to determine and compare the impact of the production process on rheology, particle size distribution and content of moisture, fats, sucrose and lactose. Based on the rheology properties, it was found that the values of the Casson and linear viscosity of the samples produced using a five-roll mill and conching were lower compared to those produced using a ball mill. Regarding particle size distribution, the results showed that the volume-weighted mean parameter D (4,3) was lower for the milk and dark cocoa confectionery topping produced in the ball mill. Additionally, the values of the yield stress in samples produced in the ball mill were 2-fold higher for the milk cocoa topping and 4.5-fold higher for the dark cocoa topping compared with the values of the samples produced using the five-roll mill and conching. The near-infrared spectroscopy (NIRS) analysis did not show any significant difference among the samples. It can be concluded that the difference between the samples produced in the ball mill and the five-roll mill and conching exists and that the ball mill can be used for the production of high-quality cocoa toppings thus providing a shorter time of production.

9. Impact of whey bioactive hydrolysates on the quality of fat fillings for confectionery products

Abstract

Whey protein hydrolysates can be used in a wide range of applications because they offer numerous advantages compared to non-hydrolysed whey proteins. They are more heat stable, with improved foaming and emulsifying properties due to the presence of bioactive peptides of lower viscosity. Whey hydrolysates have improved absorption, digestibility, excellent nutritional and functional properties, and the ability to extend the shelf life of food products. Due to the large differences in the technological and other physicochemical properties of hydrolysates, the addition of whey protein hydrolysates into confectionery products is much more complicated. This research aims to determine the possibilities of enriching filled confectionery products with whey peptides obtained in two ways: through enzymatic hydrolysis of whey protein concentrate and fermentation (using microorganism Lb. rhamnosus ATCC 7469). Peptides were added to a fatty milk cream at a 5% concentration. The study was focused on assessing antioxidant activity, physical, rheological, textural, and sensory properties of three fat fillings: C (control without whey peptides), EWP (5% peptides from enzymatic hydrolysis), and MWP (5% peptides from whey fermentation). The Enzymatic hydrolysates increased DPPH radical inhibition by 32%, and fermented hydrolysates by 19%. Enzymatic hydrolysates also demonstrated superior inhibition of lipid peroxidation (IC50 value of 811.54 mg mL-1) compared to fermented hydrolysates (IC50 value of 178.36 mg mL-1). EWP showed the highest antioxidant activity. The addition of enzymatic hydrolysates increased filling firmness by 2.5 times, while fermented hydrolysates had reduced firmness compared to the control. Both types of hydrolysates did not adversely affect the size or distribution of the particles in the fat cream. Thixotropic properties of the fat filling remained unchanged post-incorporation. MWP exhibited the most optimal rheological characteristics with the lowest yield stress. The best sensory characteristics (better than the control sample) were found in the EWP.

Abstract

International audience; Long-duration γ-ray bursts (GRBs) are the most luminous sources of electromagnetic radiation known in the Universe. They arise from outflows of plasma with velocities near the speed of light that are ejected by newly formed neutron stars or black holes (of stellar mass) at cosmological distances 1$^{,}$2 . Prompt flashes of megaelectronvolt-energy γ-rays are followed by a longer-lasting afterglow emission in a wide range of energies (from radio waves to gigaelectronvolt γ-rays), which originates from synchrotron radiation generated by energetic electrons in the accompanying shock waves 3$^{,}$4 . Although emission of γ-rays at even higher (teraelectronvolt) energies by other radiation mechanisms has been theoretically predicted 5$^{–}$8 , it has not been previously detected 7$^{,}$8 . Here we report observations of teraelectronvolt emission from the γ-ray burst GRB 190114C. γ-rays were observed in the energy range 0.2–1 teraelectronvolt from about one minute after the burst (at more than 50 standard deviations in the first 20 minutes), revealing a distinct emission component of the afterglow with power comparable to that of the synchrotron component. The observed similarity in the radiated power and temporal behaviour of the teraelectronvolt and X-ray bands points to processes such as inverse Compton upscattering as the mechanism of the teraelectronvolt emission 9$^{–}$11 . By contrast, processes such as synchrotron emission by ultrahigh-energy protons 10$^{,}$12$^{,}$13 are not favoured because of their low radiative efficiency. These results are anticipated to be a step towards a deeper understanding of the physics of GRBs and relativistic shock waves.

Abstract

Astronomy and astrophysics 620, A181 (2018). doi:10.1051/0004-6361/201833704, A multiwavelength campaign was organized to take place between March and July of 2012. Excellent temporal coverage was obtained with more than 25 instruments, including the MAGIC, FACT and VERITAS Cherenkov telescopes, the instruments on board the Swift and Fermi spacecraft, and the telescopes operated by the GASP-WEBT collaboration. Mrk 501 showed a very high energy (VHE) gamma-ray flux above 0.2 TeV of $\sim$0.5 times the Crab Nebula flux (CU) for most of the campaign. The highest activity occurred on 2012 June 9, when the VHE flux was $\sim$3 CU, and the peak of the high-energy spectral component was found to be at $\sim$2 TeV. This study reports very hard X-ray spectra, and the hardest VHE spectra measured to date for Mrk 501. The fractional variability was found to increase with energy, with the highest variability occurring at VHE, and a significant correlation between the X-ray and VHE bands. The unprecedentedly hard X-ray and VHE spectra measured imply that their low- and high-energy components peaked above 5 keV and 0.5 TeV, respectively, during a large fraction of the observing campaign, and hence that Mrk 501 behaved like an extreme high-frequency- peaked blazar (EHBL) throughout the 2012 observing season. This suggests that being an EHBL may not be a permanent characteristic of a blazar, but rather a state which may change over time. The one-zone synchrotron self-Compton (SSC) scenario can successfully describe the segments of the SED where most energy is emitted, with a significant correlation between the electron energy density and the VHE gamma-ray activity, suggesting that most of the variability may be explained by the injection of high-energy electrons. The one-zone SSC scenario used reproduces the behaviour seen between the measured X-ray and VHE gamma-ray fluxes, and predicts that the correlation becomes stronger with increasing energy of the X-rays., Published by EDP Sciences, Les Ulis

Abstract

The lower content of phenolic compounds in white chocolate makes this confectionery product unhealthier and, thus, adequate for enrichment compared to other types of chocolates like dark or milk. Less phenolics in white chocolate is due to absence of dark cocoa solids, abundant in these compounds. This study aimed to develop a new product with a higher nutritional value than regular white chocolate by enriching white chocolate with blueberry juice as a natural source of polyphenols. Since phenolic compounds are highly sensitive to heat, light, oxygen, and pH, encapsulated form of blueberry juice was used to increase their stability in the product. Blueberry juice was encapsulated on maltodextrin (B/M) and added to white chocolate at 80 g/kg and 100 g/kg concentrations. Enrichment significantly (p0.05) except for the sweetness. The enriched chocolate samples were less sweet. The results of this study indicate the potential of maltodextrin as a carrier of sensitive bioactive compounds for the enrichment of products like white chocolate.

Abstract

The aim of this study was to examine the bioactive potential of hydrolysate powders produced by enzymatic and microbial hydrolysis of whey proteins followed by spray drying, in order to reveal which one of these processes result in a product with significantly improved functional properties. Hydrolysate powders produced by the two different biotechnological processes were compared based on their antioxidant (DPPH and FTC), antibacterial as well as erythrocyte membrane stabilizing activities. The performed tests revealed that the concentration of at least 178.4 mg mL-1 of the whey protein hydrolysate powder, produced by tryptic digestion, could inhibit the process of lipid peroxidation by 50 %, suppress the microbial contamination caused by S. aureus ATCC25923, B. cereus ATCC 11778 and L. monocytogenes, and provide the antioxidant and membrane stabilizing activities greater than 50 %. On the other hand, the hydrolysate powder obtained by whey fermentation at the concentration of at least 811.5 mg mL-1 achieved 50 % of all tested bioactivities, with the emphasis on the significantly more pronounced antibacterial activity against all tested strains. In that sense, tryptic hydrolysis could be highlighted as an optimal process that provides production of the whey hydrolysate with pronounced bioactive properties that could be considered as a very promising natural food supplement.

Abstract

The aim of this study was to determine the effect of the main milling variables, i.e., agitator shaft speed (50, 75 and 100%, which is 25, 37.5 and 50 rpm) and milling time (30, 45 and 60 min) on physical and sensory properties of fat filling, as well as on energy consumption during the production in a laboratory ball mill. Within the response surface method, the face centered central composite design is used. A response surface regression analysis for responses was performed and a full quadratic model was fitted to the experimental data. It is shown that agitator shaft speed had the most significant influence on physical properties (particle size distribution, rheological and textural propertes) and sensory characteristics of fat filling, while the milling energy consumption is highly influenced by milling time with contribution 55.4%, followed by agitator shaft speed (40.04%). The model obtained by regression analyses was used to perform the optimization of processing parameters in order to provide the combination of agitator shaft speed and milling time that cost less energy while at the same time do not compromise the quality of the fat filling. Optimization of production of fat filling in a laboratory ball mill would imply the maximum agitator shaft speed and 30-min milling time.

Abstract

One of the most economical ways of whey processing is the production of beverages, that represents a single process that exploits all the potential of whey as a raw material. Functional and sensory characteristics of whey based beverages are a criterion that is crucial to the marketing of products and win over consumers. The aim of this study was to determine nutritional and functional characteristics of fermented whey beverage with milk and commercial ABY-6 culture. The results showed that the applied starter culture can be used for the production of fermented whey based beverage with satisfactory nutritional properties. Addition of milk was important not only in the nutritional quality of the resulting product, but also improved the taste, the homogeneity and stability. Analysis of the chemical composition of fermented whey based beverage and nutritional information about it indicates that the product is a good source of protein and calcium. Fermented beverage contained 8.07 log (CFU/mL), showed antioxidant activity of at least 38.1% and the titratable acidity of 28.2°SH corresponding to the acidity of the product in this category. Chocolate is a two-phase rheological system. The solid phase, consisting of non-fat cocoa particles, sugar and soy milk is wrapped in a fat phase - cocoa butter. Physical, thermal, textural and organoleptic properties of chocolate depend on the composition of the ingredients, manufacturing process and a properly conducted pre-crystallization phase. For this study, two chocolate masses were produced in a ball mill: one with 15% of soy milk powder (R1) and the other with 20% of soy milk powder (R2). The chocolate mass was produced at different milling times (30, 60 and 90 min), and pre-crystallization temperature (26, 28 and 30oC). The aim of the study was to evaluate the changes caused by different amounts of soy milk powder on the quality of the chocolate. The quality of chocolate was evaluated by comparing the nutritional composition, hardness, thermorheological and thermal properties of the chocolate mass. The results show that chocolate mass R2, due to the presence of higher amounts of soy milk proteins, should be milled longer, and also needs lower temperatures for pre-crystallization. Abstract

Introduction. Internet use has increased rapidly all over the world. Excessive Internet use tends to lead to the creation of a non-chemical addiction, most commonly known as “Internet addiction.” Objective. The aim of this study was an assessment of the prevalence of Internet use and Internet addiction among school children aged 14-18 years in the Municipality of Novi Sad, Serbia, and influence of sociodemographic variables on Internet use. Methods. A cross-sectional study was conducted in Novi Sad among final-year students from elementary and first- and second-year students from high schools. The prevalence of Internet addiction was assessed by using Young’s Diagnostic Questionnaire. Results. Out of 553 participants, 62.7% were females, and the average age was 15.6 years. The sample consisted of 153 elementary school students and 400 high school students. Majority of respondents had a computer in their household. Our study showed widespread Internet use among adolescents. Facebook and YouTube were among most visited web-sites. The main purpose of Internet use was entertainment. Estimated prevalence of Internet addiction was high (18.7%), mostly among younger adolescents (p=0.013). Conclusion. Internet addiction was found in every fifth adolescent. Accessibility and availability of Internet use is constantly growing and therefore it is necessary to define more sensitive diagnostic tools for the assessment of Internet addiction and its underlying causes, in order to implement effective preventive programs.

The aim of this paper was to examine the impact of the manufacturing process on the textural characteristics and sensory properties of milk chocolate. The research was conducted on the samples of chocolate produced in a ball mill during 30, 60 and 90 minutes of refining, each of them being pre-crystallized at 26, 28 and 30°C. A chocolate mass of identical ingredient composition was also produced using a standard manufacturing process at the same pre-crystallization temperatures. Chocolate hardness was examined using a piece of equipment called Texture Analyser, measuring the stress intensity which leads to chocolate crushing. Sensory analysis was performed using the point scoring method. Abstract

The rheological and physical properties of the chocolate mass depend on the ingredient composition as well as the manufacturing process. For the purpose of this work, a milk chocolate mass of identical composition and raw materials was manufactured by using the two different manufacturing processes: a standard manufacturing process (SM) in five-roller mills including conching, and an unconventional manufacturing process in a ball mill (R1). The quality of both milk chocolate masses was examined by the comparison of thermal (differential scanning calorimetry analysis), textural properties (texture analysis), and the content of hard triglycerides (nuclear magnetic resonance spectroscopy). The main goal of this work was to determine whether chocolate can be produced in a ball mill, using the manufacturing process which results in significant savings, without causing drastic changes to the chocolate physical properties. The new manufacturing process rationalises the standard method by combining two phases, namely conching, and refining into a single one. This results in reduced initial and maintenance costs, as well as costs of workforce and fuel, etc. The results have shown that the new chocolate manufacturing process has a positive impact on texture and thermal properties, while the content of hard triglycerides remains the same.

Abstract

Spreads are confectionery products based on sugar, vegetable fat, cocoa powder, milk powder and other ingredients. Basic properties of these products are good spreadability in wide temperature range (from ambience to fridge temperature), rich creamy chocolate taste, and homogenous smooth structure without oil phase migration. Undesirable attribute of these products is their relatively high energy value (2300 kJ/100 g). In recent years, cocoa cream products with reduced energy values have become very popular among consumers and today they are present in the assortment of many confectionery manufacturers. One way to produce spreads with reduced energy value is the replacement of sugar (sucrose) with adequate sweetener. Maltitol is a low-energy poliol capable to qualitatively and quantitatively replace sucrose. Cocoa spreads with maltitol and with the combination of maltitol and sucrose (produced at different temperatures and mixer rotation speeds) have similar texture and rheological properties compared to the spreads with sucrose. The spreads with maltitol have about 15% lower energy value in comparison to the same product with sucrose.

Abstract

Chocolate manufacture is a complex process which includes a large number of technology operations. One of the obligatory phases is milling, called refining, which aims at obtaining the appropriate distribution of particle size, resulting in the chocolate with optimal physical and sensory characteristics. The aim of this work was to define and optimize the process parameters for the production of milk chocolate by a non-conventional procedure, using the ball mill. The quality of chocolate mass, produced on this way, is determined by measuring the following parameters: moisture, size of the largest cocoa particle, yield flow, and Casson plastic viscosity. A special consideration of this study is the optimization of the types and amounts of emulsifiers, which are responsible for achieving the appropriate rheological and physical characteristics of the chocolate mass. The obtained parameters are compared with those which are typical for the standard procedure.

Chocolate is a complex rheological system in which non-fat cocoa particles and sugar particles are enveloped by crystal matrix of cocoa butter. Physical properties of chocolate depend on ingredient composition, method of production and properly performed pre-crystallization phase. In this work, chocolate was produced in an unconventional way, i.e. in a ball mill applying variable refining time (30, 60 and 90 min) and pre-crystallization temperature in chocolate masses (26, 28 and 30⁰C). Two types of chocolate were produced: chocolate with 20% of powdered cow’s milk (R1) and chocolate with 20% of soya milk powder (R2). The quality of chocolate was followed by comparing nutritive composition, 23 polyphenol content, hardness of chocolate, solid triglyceride content (SFC) and rheological parameters (Casson yield flow (Pa), Casson viscosity (Pas), the area of the thixotropic loop, elastic modulus and creep curves). The aim of this paper is determining changes caused by replacing cow’s milk with soya milk powder in respect of nutritive, rheological and sensory properties, as well as defining optimal parameters: precrystallization temperature and refining time of soya milk chocolate in order to obtain suitable sensory and physical properties identical to those of milk chocolate mass. The results show that replacing powdered cow’s milk with soya milk powder affects the increase in nutritive value of soya milk chocolate. R2 chocolate mass showed the increase in essential amino acids and fatty acids. This chocolate mass also showed the increase in total polyphenols by 28.1% comparing to R1 chocolate mass. By comparing viscosity, yield stress, shear stress and the area of the thixotropic loop, it can be observed that R1 chocolate mass represents a more organized and simpler system than the mass with soya milk (R2), as it shows lower values for all the above mentioned parameters, regardless of the refining time and pre-crystallization temperature. Viscoelastic behavior of R2 is also evident, as a consequence of soya protein presence. In order to maintain optimal hardness as well as melting resistance of chocolate, in case of R2 chocolate mass it is necessary to apply pre-crystallization temperature of 26⁰C, while for the chocolate mass R1 it is 30⁰C.

Abstract

INTRODUCTION Neutrinos are tracers of cosmic-ray acceleration: electrically neutral and traveling at nearly the speed of light, they can escape the densest environments and may be traced back to their source of origin. High-energy neutrinos are expected to be produced in blazars: intense extragalactic radio, optical, x-ray, and, in some cases, γ-ray sources characterized by relativistic jets of plasma pointing close to our line of sight. Blazars are among the most powerful objects in the Universe and are widely speculated to be sources of high-energy cosmic rays. These cosmic rays generate high-energy neutrinos and γ-rays, which are produced when the cosmic rays accelerated in the jet interact with nearby gas or photons. On 22 September 2017, the cubic-kilometer IceCube Neutrino Observatory detected a ~290-TeV neutrino from a direction consistent with the flaring γ-ray blazar TXS 0506+056. We report the details of this observation and the results of a multiwavelength follow-up campaign. RATIONALE Multimessenger astronomy aims for globally coordinated observations of cosmic rays, neutrinos, gravitational waves, and electromagnetic radiation across a broad range of wavelengths. The combination is expected to yield crucial information on the mechanisms energizing the most powerful astrophysical sources. That the production of neutrinos is accompanied by electromagnetic radiation from the source favors the chances of a multiwavelength identification. In particular, a measured association of high-energy neutrinos with a flaring source of γ-rays would elucidate the mechanisms and conditions for acceleration of the highest-energy cosmic rays. The discovery of an extraterrestrial diffuse flux of high-energy neutrinos, announced by IceCube in 2013, has characteristic properties that hint at contributions from extragalactic sources, although the individual sources remain as yet unidentified. Continuously monitoring the entire sky for astrophysical neutrinos, IceCube provides real-time triggers for observatories around the world measuring γ-rays, x-rays, optical, radio, and gravitational waves, allowing for the potential identification of even rapidly fading sources. RESULTS A high-energy neutrino-induced muon track was detected on 22 September 2017, automatically generating an alert that was distributed worldwide within 1 min of detection and prompted follow-up searches by telescopes over a broad range of wavelengths. On 28 September 2017, the Fermi Large Area Telescope Collaboration reported that the direction of the neutrino was coincident with a cataloged γ-ray source, 0.1° from the neutrino direction. The source, a blazar known as TXS 0506+056 at a measured redshift of 0.34, was in a flaring state at the time with enhanced γ-ray activity in the GeV range. Follow-up observations by imaging atmospheric Cherenkov telescopes, notably the Major Atmospheric Gamma Imaging Cherenkov (MAGIC) telescopes, revealed periods where the detected γ-ray flux from the blazar reached energies up to 400 GeV. Measurements of the source have also been completed at x-ray, optical, and radio wavelengths. We have investigated models associating neutrino and γ-ray production and find that correlation of the neutrino with the flare of TXS 0506+056 is statistically significant at the level of 3 standard deviations (sigma). On the basis of the redshift of TXS 0506+056, we derive constraints for the muon-neutrino luminosity for this source and find them to be similar to the luminosity observed in γ-rays. CONCLUSION The energies of the γ-rays and the neutrino indicate that blazar jets may accelerate cosmic rays to at least several PeV. The observed association of a high-energy neutrino with a blazar during a period of enhanced γ-ray emission suggests that blazars may indeed be one of the long-sought sources of very-high-energy cosmic rays, and hence responsible for a sizable fraction of the cosmic neutrino flux observed by IceCube.
