Apple pomace, a by-product that remains after extraction of juice from fruit, is a good source of dietary fibre, minerals and different phytochemicals such as phenolic acids. Although the valorization of apple pomace as a bakery ingredient was performed by several authors, there is a lack of information on attempts of incorporation of apple by-products in the form of coextrudates with corn grits (CAPCG). In this study, sponge cakes were created with apple pomace coextruded with corn grits in the ratio of 45:55 by partial replacing wheat flour with coextrudate in the formulation at 10%, 20% and 30% level. With the increase in the proportion of coextruded particles, the farinographic characteristics of dough samples showed an increase in water absorption and dough development time due to larger particles of coextrudates, and loss of dough elasticity. Consequently, the cake specific volume decreased over the range between 3.6 - 14.2%, but only the substitution level of 30% yielded an increase in cake firmness after 1 h of cooling and after 24 h of storage. The estimation of sponge cake sensory properties using the hedonic scale from 1 to 9 showed that the most acceptable texture was found in the control sample, whereas all sponge cakes with CAPCG had significantly higher acceptance of odour and taste in comparison to the control cake. From the nutritional point of view, sponge cakes substituted with CAPCG showed higher total dietary fibre content than the control wheat sponge cake.

Brewer's spent grain (BSG) is a by-product generated during the brewing process. It is a rich source of dietary fibre and proteins, with great potential to increase nutritional value of food products. In this research different quantities of fresh (non-dried and non-milled) brewer's spent grain (15, 25 and 50%) were added to wheat flour on a replacement basis in order to evaluate its effect on fibre and protein content, instrumental parameters of colour, microbial stability and sensory characteristics of cookies. Protein and fibre content of cookies increased following the addition of BSG from 7.55% to 9.69% and 6.8 to 15.55%, respectively. Considering the colour characteristics, addition of BSG decreased L*and b* values, while a*values increased. Enterobacteriaceae, Escherichia coli, Clostridium spp., yeasts and moulds were not detected in cookie samples, while the Enterobacteriaceae were detected (40 cfu/g) in fresh BSG. The addition of 25% of BSG resulted in best sensory characteristics of cookies in terms of surface appearance, hardness, grittiness and flavour. The results have shown that fresh BSG has a potential to increase nutritional value of the cookies without negative influence on cookie sensory characteristics and microbiological stability.

The aim of this study was to determine the effect of the main milling variables, i.e., agitator shaft speed (50, 75 and 100%, which is 25, 37.5 and 50 rpm) and milling time (30, 45 and 60 min) on physical and sensory properties of fat filling, as well as on energy consumption during the production in a laboratory ball mill. Within the response surface method, the face centered central composite design is used. A response surface regression analysis for responses was performed and a full quadratic model was fitted to the experimental data. It is shown that agitator shaft speed had the most significant influence on physical properties (particle size distribution, rheological and textural propertes) and sensory characteristics of fat filling, while the milling energy consumption is highly influenced by milling time with contribution 55.4%, followed by agitator shaft speed (40.04%). The model obtained by regression analyses was used to perform the optimization of processing parameters in order to provide the combination of agitator shaft speed and milling time that cost less energy while at the same time do not compromise the quality of the fat filling. Optimization of production of fat filling in a laboratory ball mill would imply the maximum agitator shaft speed and 30-min milling time.

One of the potential raw materials which could be used for production of food with added nutritional value is tomato pomace, a by-product from tomato processing. On the other hand, requirements of consumers for diverse food with potential for health benefits impose the need for creation of products made from different cereals. In this respect, the aim of this study was to evaluate the influence of addition of dried tomato pomace on the physical and sensory properties of whole grain rye flour cookies. The whole grain rye flour was substituted with tomato pomace powder in two levels (15% and 25%) in the standard formulation of short-dough cookie. The quality of final products was evaluated by instrumental and sensory methods. The results clearly demonstrated that redness (+a*) and yellowness (+b*) were highly influenced by level of tomato pomace in the cookie formulations due to its content of carotenoid pigments. The spread factor of the cookies made with addition of tomato pomace powder was higher than the control sample. Hardness of the cookie samples decreased for approximately 50% for the cookie sample with 25% tomato pomace level substitution when compared with control sample. According to the results of sensory analysis, substitution level of 15% caused decrease of surface roughness, fracturability, and granularity, as well as increase of caramel flavour intensity. Substitution level of 25% caused higher degree of cookie softening and more pronounced tomato flavour.

Chocolate is a two-phase rheological system. The solid phase, consisting of non-fat cocoa particles, sugar and soy milk is wrapped in a fat phase - cocoa butter. Physical, thermal, textural and organoleptic properties of chocolate depend on the composition of the ingredients, manufacturing process and a properly conducted pre-crystallization phase. For this study, two chocolate masses were produced in a ball mill: one with 15% of soy milk powder (R1) and the other with 20% of soy milk powder (R2). The chocolate mass was produced at different milling times (30, 60 and 90 min), and pre-crystallization temperature (26, 28 and 30oC). The aim of the study was to evaluate the changes caused by different amounts of soy milk powder on the quality of the chocolate. The quality of chocolate was evaluated by comparing the nutritional composition, hardness, thermorheological and thermal properties of the chocolate mass. The results show that chocolate mass R2, due to the presence of higher amounts of soy milk proteins, should be milled longer, and also needs lower temperatures for pre-crystallization. Growing demand for better quality and cheaper products put on the need to industry to balance between the two kinds of needs, which are the reduction of production costs and to ensure a high quality product. This is the case with dried sugar beet pulp as a byproduct of sugar refining process. One of the possibilities to reduce energy consumption is savings in the process of thermal dehydration in the process of the conventional drying of pulp. Pulp drying is one third of total energy consumption in the sugar factory. Acidification of water extraction result in pulp that could be pressed better and in other hand in the juice with less non-sucrose compounds. Keeping the extraction process under certain conditions, directly affects on the quality of the extracted pulp and on effects of their further processing. This paper examines the impact of the extraction parameters of sugar from sugar beet and agents of acidification for water extraction (sulphurous acid, hydrogen peroxide) on the quality of dried sugar beet pulp. Extraction of sugar from sugar beet cossettes by hydrogen peroxide at pH 5.5 to 8.5 does not cause changes in mechanical properties of sugar beet cossettes and in water retention coefficient, but increases the brightness of dried sugar beet pulp for about 5-7 units, which solubility in water does not depend on the applied concentration of extracting agents, but increases in dependence on the duration of the extraction. Sugar beet pulp extracted at pH 11.0 has reduced strength, they are highly hydrated, and under the force they lose their shape, binding a larger amount of water thus reducing the effect of their pressing. The changes in microstructure were probably accompanied by segmenting the linear parts of macromolecules and are reflected in the increase of water retention capacity and increase the solubility of dried sugar beet pulp for two to three times. Under the same conditions of extraction, sulphurous acid produces similar but relatively mild changes in the characteristics of extracted and dried sugar beet pulp compared to conditions when hydrogen peroxide is used. From the point of the quality of the product of extraction, the most favorable results are obtained when the extraction is carried on at pH 5.5 for a period of 1 h at 70 °C, using water for extraction with sulphourus acid with the addition of 5% hydrogen peroxide. Under these conditions no significant degradation of sugar beet tissue is detected, do not change the physical, chemical and mechanical properties of the extracted pulp. But there is an average increase of lightness of dried noodles for about 7 units, which represents a significant improvement of their quality, since there is difficult to sell on the market the dried sugar beet pulp with increased colour.

A laboratory ball mill consisting of vertical cylinder, equipped with a rotating shaft with arms, and filled with steel balls as a grinding medium has been used in the experiments. The aim of the study was to examine the effect of agitator shaft speed and amount of grinding media (steel balls) on power requirements and energy consumption of a ball mill. With constant mass of the steel balls (20 kg, 30 kg and 40 kg), the agitator shaft speed was increased from 10% to 100% of the maximum speed which corresponds to a speed of 50 rpm. The power consumption (W) was recorded upon which milling energy consumption (J/kg) has been calculated. The results were statistically analyzed using ANOVA. The increase of the agitator shaft speed, in steps of 10% to the maximum speed of 50 rpm, led to a statistically significant increase in milling energy consumption. At low agitator shaft speed (10%), increase in the mass of the steel balls had no influence on the power requirements. Power requirements for the grinding runs using 30 kg and 40 kg are similar and higher compared to power requirement in trial with 20 kg, as agitator shaft speed increases from 20% to 70%. At high agitator shaft speeds (≥80%), increase in steel balls mass led to the significant increase in power requirements of the ball mill.

The aim of this paper was to examine the impact of the manufacturing process on the textural characteristics and sensory properties of milk chocolate. The research was conducted on the samples of chocolate produced in a ball mill during 30, 60 and 90 minutes of refining, each of them being pre-crystallized at 26, 28 and 30°C. A chocolate mass of identical ingredient composition was also produced using a standard manufacturing process at the same pre-crystallization temperatures. Chocolate hardness was examined using a piece of equipment called Texture Analyser, measuring the stress intensity which leads to chocolate crushing. Sensory analysis was performed using the point scoring method. The new manufacturing process, i.e. the manufacturing of chocolate in a ball mill improves sensory properties and hardness of milk chocolate. [Projekat Ministarstva nauke Republike Srbije, br. The subject of the work is the possibility of applying microfiltration through a ceramic tubular membrane with 100 nm pore sizes to the steepwater obtained in the production process of corn starch. The dry matter content should be reduced in the steepwater permeate. Thus the consumption of the process water would be reduced, the nutrients from the steepwater could be exploited as feed and the wastewater problem would consequently be solved. The objective of the work was to examine the influence of the operating parameters on the permeate flux during steepwater microfiltration. The parameters that vary in the course of microfiltration, were the transmembrane pressur and flow rate, while the permeate flux and dry matter content of the permeate and retentate were the dependent parameters, constantly monitored during the process. Another objective of this study was to investigate the influence of static turbulence promoter on the permeate flux during steepwater microfiltration. Static mixers enhance permeate flux, thus the microfiltration can be performed longer. As a result of the statistical analysis, the optimal conditions for steepwater microfiltration were determined. The maximum value of the permeate flux without mixer (25 lm-2h-1) was achieved at a pressure of 2 bars and a flow rate around 100 lh-1. With the use of static mixer the flux is 2,5 times higher compared to the one obtained without the mixer. The dry matter content of the permeat after 2.5 hours of mucrofiltration was lowered by 40%.

The rheological and physical properties of the chocolate mass depend on the ingredient composition as well as the manufacturing process. For the purpose of this work, a milk chocolate mass of identical composition and raw materials was manufactured by using the two different manufacturing processes: a standard manufacturing process (SM) in five-roller mills including conching, and an unconventional manufacturing process in a ball mill (R1). The quality of both milk chocolate masses was examined by the comparison of thermal (differential scanning calorimetry analysis), textural properties (texture analysis), and the content of hard triglycerides (nuclear magnetic resonance spectroscopy). The main goal of this work was to determine whether chocolate can be produced in a ball mill, using the manufacturing process which results in significant savings, without causing drastic changes to the chocolate physical properties. The new manufacturing process rationalises the standard method by combining two phases, namely conching, and refining into a single one. This results in reduced initial and maintenance costs, as well as costs of workforce and fuel, etc. The results have shown that the new chocolate manufacturing process has a positive impact on texture and thermal properties, while the content of hard triglycerides remains the same.

Spreads are confectionery products based on sugar, vegetable fat, cocoa powder, milk powder and other ingredients. Basic properties of these products are good spreadability in wide temperature range (from ambience to fridge temperature), rich creamy chocolate taste, and homogenous smooth structure without oil phase migration. Undesirable attribute of these products is their relatively high energy value (2300 kJ/100 g). In recent years, cocoa cream products with reduced energy values have become very popular among consumers and today they are present in the assortment of many confectionery manufacturers. One way to produce spreads with reduced energy value is the replacement of sugar (sucrose) with adequate sweetener. Maltitol is a low-energy poliol capable to qualitatively and quantitatively replace sucrose. Cocoa spreads with maltitol and with the combination of maltitol and sucrose (produced at different temperatures and mixer rotation speeds) have similar texture and rheological properties compared to the spreads with sucrose. The spreads with maltitol have about 15% lower energy value in comparison to the same product with sucrose.

Chocolate is a complex rheological system in which non-fat cocoa particles and sugar particles are enveloped by crystal matrix of cocoa butter. Physical properties of chocolate depend on ingredient composition, method of production and properly performed pre-crystallization phase. In this work, chocolate was produced in an unconventional way, i.e. in a ball mill applying variable refining time (30, 60 and 90 min) and pre-crystallization temperature in chocolate masses (26, 28 and 30⁰C). Two types of chocolate were produced: chocolate with 20% of powdered cow’s milk (R1) and chocolate with 20% of soya milk powder (R2). The quality of chocolate was followed by comparing nutritive composition, 23 polyphenol content, hardness of chocolate, solid triglyceride content (SFC) and rheological parameters (Casson yield flow (Pa), Casson viscosity (Pas), the area of the thixotropic loop, elastic modulus and creep curves). The aim of this paper is determining changes caused by replacing cow’s milk with soya milk powder in respect of nutritive, rheological and sensory properties, as well as defining optimal parameters: precrystallization temperature and refining time of soya milk chocolate in order to obtain suitable sensory and physical properties identical to those of milk chocolate mass. The results show that replacing powdered cow’s milk with soya milk powder affects the increase in nutritive value of soya milk chocolate. R2 chocolate mass showed the increase in essential amino acids and fatty acids. This chocolate mass also showed the increase in total polyphenols by 28.1% comparing to R1 chocolate mass. By comparing viscosity, yield stress, shear stress and the area of the thixotropic loop, it can be observed that R1 chocolate mass represents a more organized and simpler system than the mass with soya milk (R2), as it shows lower values for all the above mentioned parameters, regardless of the refining time and pre-crystallization temperature. Viscoelastic behavior of R2 is also evident, as a consequence of soya protein presence. In order to maintain optimal hardness as well as melting resistance of chocolate, in case of R2 chocolate mass it is necessary to apply pre-crystallization temperature of 26⁰C, while for the chocolate mass R1 it is 30⁰C.

The sunflower kernel is rich in valuable nutritive compounds so it is suitable as a raw material for production of confectionery products. In this paper we evaluated the technological characteristics of the confectionery sunflower kernel with the aim of obtaining dragee products, and determining the final product quality and shelf life. The dragee product was obtained by panning sunflower kernel with savory powder mixture of spices in a dragee pan. The used sunflower seed has an even distribution of linear size and satisfactory dehulling characteristics. The savoury dragee product was in excellent category of sensory quality and showed stable colour and good shelf life in the period of three months.

Sensory evaluation of chocolate, as a complex multicompound system, is one of the ways to define and control its physico-chemical characteristics, i.e. quality. Chocolate quality depends on structure and ingredients percentage that influence its appearance, taste and behaviour in the production processes and storage. The aim of this work was to compare certain quality factors of laboratory-made chocolate with added emulsifier-blooming inhibitor, determinated by sensory and instrumental analyses. Sensory evaluation of chocolate samples was made according to ISO 6685:1985 method (total score system). This ISO standard method was supplemented with QDA method for determination of mouth feel. The results of colour sensory evaluation showed good agreement with whiteness obtained on a MOM Colour 100 instrument by Hunter system evaluation. This showed that the sensory analysis, in comparison with instrumental determination of some quality factors, is an objective method.

• More than 93% protein extracted by alkali after treatment with arabinofuranosidase (ARA) • Antioxidant activity after cellulase and xylanase (Cel + Xyn) treatment enhanced by 110% • Water holding capacity increased by 130% with both ARA and (Cel + Xyn) treatments. • Protein pattern and structural features differed between isolates. Functional properties and antioxidant activity of protein isolates extracted by alkali from chickpea seed after treatment with cellulase and xylanase cocktail and individual arabinofuranosidase were evaluated. Both enzymatic treatments improved recovery of protein by more than 30%, moreover, arabinofuranosidase enabled higher extraction efficiency - above 93%. Protein extracted after treatment with enzyme cocktail showed improved solubility and oil holding capacity by 14% and 80%, respectively, while water holding capacity was increased by 130% after both applied enzymatic pretreatments. The action of enzyme cocktail was more beneficial for improving emulsifying activity and stability of alkaline isolate by 22% and 31%, respectively. Whipping properties of alkaline protein isolate were significantly improved when both enzymatic pretreatments were applied with foam stability increased by 150%. Protein from extractions with arabinofuranosidase and enzyme cocktail expressed enhanced antioxidant activity by 70% and 110%, respectively.
