The article discusses a collaborative study which aimed to determine the protein content of raw and processed meat products using the CEM Corporation's Sprint Rapid Protein Analyzer. Sprint uses a protein-tagging and colorimetric technique to determine protein content and results are displayed and reported on the device in terms of percentage weight of protein. CEM Corp.'s Focused Microwave platform technology offers a robust platform to enhance the identification of proteins by enzymatic digestion and peptide mass fingerprinting. The use of fully controllable, programmable and focused microwave energy provides means to accelerate enzymatic digestions while maintaining enzyme integrity, limiting the introduction of unwanted reaction artifacts and reducing the number of missed cleavages. The methodology has proven effective for digestions performed in gel plugs as well as in free solutions.

The Odyssey System is a microwave-enhanced peptide synthesizer from CEM Corp. Microwave-enhanced peptide synthesis is 10 to 20 times faster than traditional methods and produces cleaner peptides with higher yields. The unit costs roughly half as much as a conventional peptide synthesizer, according to the manufacturer. The instrument allows peptide synthesis in 2 hours, with cycle times of less than 10 minutes. Manual and automated systems are available, including systems with the capability to synthesize up to 12 different peptides. The systems can perform automated resin cleavage and can synthesize peptides through a wide range, from .05 to 5 mmol.

PowerMAX is a breakthrough in microwave synthesis technology that stimulates direct molecule activation of the reactants, while simultaneously controlling the temperature of the reaction. The technology has been shown to greatly increase yields in many reactions, such as in the open vessel Diels-Alder reaction. PowerMAX forces compressed gas into the reaction cavity, as the gas expands, it cools the atmosphere inside the cavity. Microwave energy is transferred kinetically, not thermally. Thus, greater amounts of constant energy can be applied to the reaction. More of the reacting molecules are forced to a higher energy state, resulting in fewer side reactions and greater product yield.
