Purpose – The paper focuses on the profile of chefs, whose job is considered as one of the most challenging professions as it involves scientific mastery, as well as creativity, and innovation. Design – Based on a sample of 264 individuals (both starred Italian chefs listed on Michelin Red Guide and students from six Italian culinary high schools), the study assesses which factors affect chefs’ innovative performance. Findings – Results show that success in haute cuisine depends on several factors, which involve chef’s creativity, culinary innovation process, and the restaurant service offering (restaurantscape). The differences between chefs in training and top chefs in terms of creativity are underlined. The study offers suggestions on chefs’ innovative process and provides a better understanding of how success in the chef profession is influenced by both individual features and environmental/social characteristics. Furthermore, results indicate which capabilities chefs in training should possess in order to succeed and, in turn, which capabilities should be developed by professional high schools of cooking in order to stimulate innovativeness in their educational programs. Originality of the research – This research contributes to the literature by suggesting which key factors promote creativity and innovation and a continuous flow of innovative ideas in haute cuisine

This paper is focused on the concept of business ecosystem, which is a relatively new field in management research. Furthermore, there is a second emerging research approach in social sciences named “complexity theory” that considers ecosystems, and business ecosystems, as complex adaptive systems. The main aim is to connect both by bringing new insights under the basis of a smart vision of tourism. In particular, we propose a theoretical discussion of the aforementioned concepts by applying them to the specific context of Industrial Heritage Management. The Industrial Heritage (i.e.: mining sites, old infrastructures, museums and historic places related to industry…) is chosen because it appears well representative: it is characterized by a complex and dynamic structure which consists of an interconnected population of stakeholders and several tangible and intangible resources to recover, organize and then manage. It follows that the management of this ecosystem should take into account many factors simultaneously. Based also on the emergent initiative of Smart Tourism, a conceptual model is presented, in which each component is explained and the focal complexity aspects appearing in this business ecosystem are highlighted. We conclude with a set of propositions for recommending new paths for future studies.

Il presente contributo analizza l’IHM inteso come nuovo modo per generare sviluppo turistico, sociale e territoriale, basato sul recupero, la gestione e la valorizzazione del patrimonio industriale. La letteratura in merito, pur evidenziando un accresciuto interesse, si presenta piuttosto disarticolata e senza tentativi di sintesi relativi agli aspetti salienti e alle principali questioni ad esso collegate. Al fine di comprendere meglio il fenomeno e tentare di fornire un contributo al dibattito accademico, è stata svolta una meta analysis conducendo una specifica review su riviste internazionali di lingua inglese con lo scopo di esplorare il concetto dell’IHM e valutare lo state of the art in letteratura. La revisione di quest’ultima ha determinato interessanti risultati sia in generale, sia in riferimento agli aspetti più propriamente manageriali. Le conclusioni, infine, offrono alcuni spunti di riflessione e possibili implicazioni per il contesto italiano. This paper analyzes the IHM interpreted as a new way to generate touristic, social and territorial development, based on the recovery, management and valorization of the industrial heritage. The literature on the subject, although showing an increased interest, appears disarticulated and without a clear understanding of the main aspects and issues related to it. In order to better understand the phenomenon and try to make a contribution to the academic debate, it has been conducted a meta-analysis through a specific review of international journals in English language, with the aim to explore the IHM concept and assess the state of the art in literature. The literature review determined interesting results both in general and also in relation to the managerial issues. Conclusions offer some highlights useful to deepen the knowledge of specific implications for the Italian context.

Even if events can represent important drivers for local development, it is possible to have a genuine economic and social contribution only when the event is undertaken within a paradigm that emphasizes the importance of complex interactions between the event’s proposer and its stakeholders. Inside the event sector, festivals represent a specific sub-field that share time similarities and peculiarities as compared to other typologies. This paper analyzes the Italian context of music festivals and deepens the relationships between the festival organizer and public and private actors using stakeholder management approach. Findings suggest that Italian festivals have a reasonable level of entrepreneurship since the analysis reveals a good predisposition for the use of management practices.

A pesar de que los eventos puedan representar una contribución importante al desarrollo económico y social, esto sólo es posible cuando el evento se realiza bajo un paradigma que haga hincapié en la importancia de las complejas relaciones entre el proponente del evento y laspartes interesadas. Dentro del sector de los eventos, los festivales representan un sub-campo que comparte similitudes y particularidades, en contraste con otros tipos de evento. Este trabajo analiza el contextoitaliano de los festivales de música y profundiza en las relaciones entre el organizador del festival y los actores públicos y privados, utilizando un enfoque de gestión de partes interesadas. Los resultados sugieren que los festivales italianos tienen un nivel razonable de iniciativa empresarial ya que el análisisrevela una buena predisposición para el use de prácticas de gestión.

La presente investigación pretende analizar las organizaciones regionales de turismo, centrándose en el caso de «Abruzzo Promozione Turismo», organización que gestiona y promociona el turismo en la Región Abruzzo (Italia), debido al reciente cambio en la legislación italiana que amplia de forma importante las competencias de estas organizaciones. El estudio comenta las funciones de esta organización, así como sus líneas de actuación centradas en dos ejes principales: promoción del destino (exterior e interior) y desarrollo de recursos locales. Así mismo, se estudia el funcionamiento de «Abruzzo Promozione Turismo», analizándose los indicadores de control empleados por esta organización (actuales y futuros) y el proceso de evaluación y retroalimentación. Además, se señalan algunos factores clave de éxito señalados por los expertos como críticos para el éxito de una organización regional de destino. Finalmente, este trabajo pretende servir de modelo comparativo para otras organizaciones regionales de destino, así como explicar algunas de las diferencias entre estos organismos existentes en Italia.
