Abstract

The Food Resource Equity and Sustainability for Health ("FRESH") study is an Indigenous-led intervention to increase vegetable and fruit intake among Native American children. As part of this study, we developed a hybrid (online and in-person) food sovereignty and nutrition education curriculum for the parents of these children. This 16-week curriculum was developed to promote household- and community-level healthy eating and food sovereignty practices to parents of preschool-aged children residing in Osage Nation, Oklahoma. A total of 81 parent/caregivers participated in the curriculum component of the FRESH study, with a median age of 34 years (range: 23-54 years). Most study participants were female (88.9%) and less than half (45.7%) had an annual household income of more than US$50,000. Abstract

ObjectiveTo increase vegetable and fruit intake, reduce body mass index (BMI), and improve parental blood pressure among American Indian families.DesignRandomized, wait-list controlled trial testing a multi-level (environmental, community, family, and individual) multi-component intervention with data collection at baseline and 6 months post-intervention.SettingTribally owned and operated Early Childhood Education (ECE) programs in the Osage Nation in Oklahoma.ParticipantsAmerican Indian families (at least one adult and one child in a ECE program). A sample size of 168 per group will provide power to detect differences in fruit and vegetable intake.InterventionThe 6-month intervention consisted of a (1) ECE-based nutrition and gardening curriculum; (2) nutrition education and food sovereignty curriculum for adults; and (3) ECE program menu modifications.Main outcome measuresThe primary outcome is increase in fruit and vegetable intake, assessed with a 24-h recall for adults and plate weight assessments for children. Secondary outcomes included objective measures of BMI among adults and children and blood pressure among adults.

Introduction/Rationale Type II Diabetes (T2D) is a growing worldwide concern and a leading cause of cardiovascular disease and associated morbidities (World Health Organization, 2014). Physical activity (PA) has been identified [...], Novel approaches are needed to improve health outcomes among adults with Type II Diabetes. This study reports the results of a process evaluation of a 12-week intervention administered to university faculty and staff aimed at 1) increasing walking and 2) interrupting sedentary time. The intervention was implemented as planned with 16 participants receiving all components of the program and completing pre and post measures. Response rates to weekly emails and compliance with weekly activity logs decreased as the program progressed. Participants who interrupted sedentary time with moderate walking had lower sat if act ion and adherence compared to the standard walking group. Abstract

INTRODUCTION Since the 1960s, several government programs and policies have been implemented in the United States to enable consumers to make healthful dietary choices. The 1990 Nutrition Labeling and Education [...], The purpose of this study was to assess the association between maternal participation in the Supplemental Nutrition Assistance Program (SNAP) and the use of food labels to purchase various types of beverages, and whether home availability of beverages differed by SNAP participation. Low-income mothers (n = 250) of preschool children were surveyed. Food label use to purchase beverages and home availability of beverages were analyzed using adjusted multivariate logistic regression and iteratively reweighted with least squares regression. SNAP participants were approximately 50% less likely to use the food label to purchase beverages for the home than non-participants. SNAP homes also had significantly higher availability of fruit juice (192 oz vs. 128 oz), juice drinks (192 oz vs. 128 oz), regular soda (156 oz vs. 135 oz), and low-calorie beverages (469 oz vs. 243 oz) than non-SNAP homes (p < 0.05). Further research is needed to understand the attitudes and group-specific characteristics associated with food label use and beverage availability among low-income families.
