Helicobacter pylori is considered as the main risk factor in the development of gastric cancer. In the present study, anti- H. pylori activity of Lactobacillus fermentum GBF and its fermented antimicrobial products of fermented skimmed bovine milk were investigated. The whey containing Lb. fermentum and its products after skimmed bovine milk fermentation showed powerful antimicrobial activity against H. pylori. In addition, micro filtered soluble peptides of skimmed bovine milk fermented by Lb. fermentum GBF achieved powerful H. pylori inhibitory effect at different concentrations with the highest Minimum Bactericidal concentration (MBC) observed at 1:8 soluble peptides dilution when compared with Lb. fermentum GBF fermented MRS and unfermented skimmed bovine milk. The results demonstrated that fermented bovine milk with Lb. fermentum GBF is a very good candidate as a prophylactic for the protection of humans against H. pylori infections. This study was conducted to evaluate the quality of raw cow milk at the farm level which considered the first step for production of safe and high quality milk. A total of 150 raw cow milk samples were collected from governmental and private farms at Alexandria Governorate, Egypt. The samples were analyzed for bacteriological properties. The mean values of TBC, coliforms,Staphylococcus aureus and Aeromonas hydrophila count in positive samples were 3.22 x 104 ± 7.28 x 10³, 1.4 x 10³ ± 3.9 x 10², 5.26 x10² ± 8.1 x 10 and 6.4 x10 ± 1.3 x 10 in examined raw cow milk collected from governmental farms while the respective counts in raw cow milk collected from private farms were 1.51 x 105 ± 2.59 x 104, 3.28 x 10² ± 4.7 x 10, 2.95 x 10² ± 7.7 x 10 and 6.8 x10 ± 4.1 x 10. Also prevalence of some pathogens as E. coli,Salmonellae and Yersinia enterocolitica organisms were detected .The hygienic as well as the public health significance of raw milk were discussed.
