Neutron stars are remnants of gravitational-core collapse supernovae and provide a uniqueopportunity to explore matter under extreme conditions not reproducible on Earth. In particular,neutron stars are expected to contain nuclear superfluids in their interior. The presence ofsuch phases is supported by observations of pulsar frequency glitches, rapid decline in luminosityof the Cassiopeia A remnant and crust cooling in transiently accreting systems. Nuclearsuperfluidity presents a complex multifluid hydrodynamics. In this work, the influence of temperatureand currents in hot neutron-proton superfluid mixtures is studied within the nuclearenergy-density functional theory. Numerical computations using the Brussels-Montreal functionalsare performed, and the accuracy of several approximations is assessed. The physicalmeaning of the different velocities and momentum densities appearing in superfluid mixturesis clarified. The disappearance of superfluidity is also investigated and reveals the presence of adynamical “gapless" regime. The absence of an energy gap leads to the appearance of a normalfluid of quasiparticle excitations (whose properties are investigated) and also affects considerablythe nucleon specific heat, which is drastically enhanced compared to that obtained in theclassical BCS regime. General approximate analytical formulas for the nucleon specific heat arederived to facilitate their implementation in neutron-star cooling simulations. The implicationsfor the cooling of the crust of transiently accreted neutron stars is discussed. Focusing on twoparticular cases, for which the interpretation of their cooling has been challenged, cooling simulationsare performed accounting for neutron diffusion and allowing for gapless superfluidity.The results suggest that gapless superfluidity plays a key role and reconciles astrophysical observationswith microscopic theories of superfluidity. Les premières détections d’ondes gravitationnelles émises par la coalescence de trous noirs, et plus récemment par celle d’étoiles à neutrons, ont marqué la naissance d’une nouvelle astronomie. Les interféromètres LIGO et Virgo ont notamment permis de suivre l'évolution d'un couple d'étoiles à neutrons lors des dernières orbites de la phase spiralante, fournissant la première mesure de la déformabilité de marée d'une étoile à neutrons. Dans cette thèse, nous étudions les effets de marée et les oscillations dans les astres compacts incluant non seulement les étoiles à neutrons mais également les naines blanches et des astres plus exotiques contenant un cœur de matière de quarks. Tout d’abord, nous montrons que le second coefficient de déformabilité observable d'une étoile à neutrons est pratiquement insensible à la présence de l'écorce ainsi qu'à la présence d'élasticité dans cette dernière. Le rôle des propriétés de la matière dense sur les coefficients de déformabilité gravito-électriques et gravito-magnétiques d’ordres supérieurs est également étudié. Nous montrons que ces coefficients sont sensibles à la raideur de l’équation d’état de la matière pure de neutrons. En revanche, une variation de l’énergie de symétrie de la matière nucléaire n’affecte pas ces résultats. Les conclusions sont identiques concernant l’impact des effets de marée sur le signal gravitationnel. Ensuite, l’impact de la cristallisation du coeur d'une naine blanche sur sa déformabilité est étudiée en relativité générale. Nous montrons que le cœur solide réduit systématiquement et de façon non-négligeable la déformabilité de l’étoile. Le cas des binaires excentriques de naines blanches est investigué. Dans ce cadre, nous montrons que la non prise en compte de l’élasticité peut induire d’importantes erreurs sur les masses individuelles déduites. A long-standing scientific puzzle has been to explain the origin of the heaviest elements in the Universe and, more particularly, the production of the elements heavier than iron up to uranium. The rapid neutron capture process (or r-process) is known to synthesize about 50% of these heavy elements and the long-lived actinides observed in our solar system and so-called metal-poor r-process-enhanced stars. This thesis aims to study the r-process nucleosynthesis and some of the uncertainties that still govern our predictions, namely, nuclear yields and heating rates.Our focus will be on the r-process in neutron star (NS) mergers, which is in the spotlight after recent “multi-messenger” observations, including the combined detection of gravitational waves from a NS-NS merger event and its subsequent electromagnetic counterpart. In this work, we base our nucleosynthesis calculations on hydrodynamical simulations of NS merger systems, which estimate the amount of ejected mass and its properties during ejection. Through our r-process calculations, we estimate the composition of this gravitationally unbound material, which can contribute to the r-process enrichment of the Galaxy.This work is divided into two studies, each addressing a remaining open question regarding the r-process nucleosynthesis. First, a coherent study of the impact of neutrino interactions on the r-process element nucleosynthesis and the heating rate produced by the radioactive decay of nuclei synthesized in the dynamical ejecta of NS-NS mergers is presented. We have studied the material ejected from four NS-NS merger systems based on hydrodynamical simulations, which handle neutrino effects in an elaborate way by including neutrino equilibration with matter in optically thick regions and re-absorption in optically thin regions. The existence of dark matter is now well accepted in view of the wide variety of observations that have led to its postulate. Presently, the main objective of dark matter experiments is to identify the nature of this non-visible matter. Assuming that dark matter is composed of massive particles that interact weakly with matter, it is predicted that dark matter will produce Standard Model particles when annihilating or decaying. These Standard Model particles could, in turn, produce stable charged particles found in cosmic radiation, as well as gamma-rays and neutrinos. The Milky Way is expected to be immersed in a dark matter halo with an enhanced density towards its centre. This over density would amplify the probability of dark matter particles to annihilate, making the Galactic Centre an ideal target for indirect dark matter searches. In this thesis, two indirect searches for dark matter annihilation in the Galactic Centre using data collected by two neutrino telescopes are presented.The first analysis is a combined dark matter search using the ANTARES and the IceCube neutrino detectors. By combining a total of ~ 5.8 years and ~ 2.8 years of data collected respectively by ANTARES and IceCube, no neutrino excess was found in the direction of the Galactic Centre and limits on the dark matter annihilation cross-section were set. The limits thus obtained show a considerable improvement compared to the previous results derived separately by the two telescopes, for dark matter masses ranging from 50 GeV to 1 TeV. In order to carry out this first joint analysis, the analysis method as well as the parameters of the different models have been unified, providing a benchmark for future similar searches.In the second analysis, a total of ~ 8.03 years of DeepCore data are used to search for neutrinos coming from dark matter annihilation in the centre of the galaxy at lower dark matter masses. About half of the stars in our Galaxy are born with a companion forming so-called binary systems. In these systems, the two stellar components are gravitationally bound and orbit each other during their evolution, which can be strongly affected by interaction with the companion, especially when one of the stars evolves to giant dimensions. Binary interactions also affect the evolution of the period and the eccentricity of the orbit. Many aspects of interaction physics in binaries are not understood yet, and investigating the products that result from interacting systems is crucial to unravelthe physical mechanisms involved. These statements are applicable to binaries of all masses, but this thesis focuses on low- and intermediate-mass systems, with components with initial masses between one and five times the mass of the Sun (Msun).Among the prototypical families of post-interaction binary systems in this mass range, one must mention Barium (Ba) stars. Ba stars are main-sequence or giant stars which show an enhancement of chemical elements that should not yet be overabundant at these evolutionary stages. Currently it is widely accepted that these chemicals were transferred from a more evolved companion during a phase of mass transfer in the system, and that this companion evolved into a cool white dwarf, which is too dim to be directly detected. However, the motion of the Ba star and its white-dwarf companion orbiting each other is detectable, and understanding the observed orbital properties of Ba-star systems, as well as the stellar properties of the Ba star and its polluter, is a key to the system’s interaction history. Moreover, identifying the mechanisms that impact the formation of Ba stars will teach us about binary evolution and interaction physics.This thesis presents observational and theoretical efforts made to contribute to a better understanding of the properties of Ba stars. Les étoiles Ba sont des étoiles géantes ou de la séquence principale (Ba naines) qui sont caractérisées par une sur-abondance en éléments chimiques, tel le baryum, qui ne peut provenir de l'étoile elle-même. Cette pollution chimique résulte d'un transfert de matière antérieur entre l'étoile initialement la plus massive et son compagnon. L'étoile à l’origine de la pollution est maintenant au stage naine blanche. Cool giant and supergiant stars are among the largest and most luminous stars in the Universe and, therefore, dominate the integrated light of their host galaxies. These stars were extensively studied during last few decades, however their relevant properties like photometric variability and mass loss are still poorly constrained. Understanding of these properties is crucial in the context of a broad range of astrophysical questions including chemical enrichment of the Universe, supernova progenitors, and the extragalactic distance scale. Atmospheres of giant and supergiant stars are characterized by complex dynamics due to different interacting processes, such as convection, pulsation, formation of molecules and dust, and the development of mass loss. Current 1D/3D dynamical model atmospeheres are able to simulate these processes and produce a good agreement with the observed spectral features of evolved stars. However, the models lack constraints and need to be confronted to observables. Dynamical processes in stellar atmospheres impact the formation of spectral lines producing their asymmetries and Doppler shifts. Thus, by studying the line-profile variations on spatial and temporal scales it is possible to reconstruct atmospheric motions in evolved stars. As will be shown in this thesis, a tomographic method is an ideal technique for this purpose. The tomographic method is based on construction and cross-correlation of spectral templates (masks) with observed or synthetic stellar spectra in order to recover velocity fields at different optical depths in the stellar atmosphere.The first part of the thesis further improves the original implementation of the tomographic method. This improvement involves the computation of the contribution function in order to correctly determine an optical depth of formation of spectral lines. English Version: When humans started looking out at a starry night, astronomy was born. Photons emitted by stars travel up to sometimes billions of light years to reach our eyes, and by studying the properties of this photon flux we are able to infer properties of the star itself. Instead of photons, the IceCube Observatory, located at South Pole, aims at detecting neutrinos and hopes to shed some light on the still unsolved mystery of cosmic-ray acceleration and production mechanisms, and on the most energetic phenomena of the Universe. At the time of this writing, IceCube has proven the existence of an astrophysical neutrino flux with a significance exceeding seven sigmas. Nevertheless, the observed astrophysical neutrino flux shows no significant directional clustering nor a clear association with any known source class so far. Also the latest results given by IceCube’s point source analysis show no significant clustering as well. It is therefore important to widen the search to different source topologies to maximize the discovery potential. In the first part of this work we present an extended source analysis with seven years of IceCube data, adding three years of data to the previous published work and implementing a novel likelihood formulation. Since the extensions of any potential sources are not known a priori, five different extensions have been considered, from 1° to 5°. No significant clustering is observed in any of the maps. The ability of IceCube to establish neutrino astronomy by finding neutrino sources is limited by the number of cosmic neutrinos measured. Despite the aforementioned discovery of an astrophysical flux, detailed spectral studies and searches for specific source locations in this signal remain a challenge with the event sample sizes available from the IceCube instrument. We study the motion of giant stars in the Solar neighbourhood and what they tell us about the dynamics of the Galaxy: we thus contribute to the huge project of understanding the structure and evolution of the Galaxy as a whole. We present a kinematic analysis of 5952 K and 739 M giant stars which includes for the first time radial velocity data from an important survey performed with the CORAVEL spectrovelocimeter at the Observatoire de Haute Provence. Parallaxes from the Hipparcos catalogue and proper motions from the Tycho-2 catalogue are also used.A maximum-likelihood method, based on a bayesian approach, is applied to the data, in order to make full use of all the available stars, and to derive the kinematic properties of the subgroups forming a rich small-scale structure in velocity space. Isochrones in the Hertzsprung-Russell diagram reveal a very wide range of ages for stars belonging to these subgroups, which are thus most probably related to the dynamical perturbation by transient spiral waves rather than to cluster remnants. A possible explanation for the presence of young group/clusters in the same area of velocity space is that they have been put there by the spiral wave associated with their formation, while the kinematics of the older stars of our sample has also been disturbed by the same wave. The emerging picture is thus one of "dynamical streams" pervading the Solar neighbourhood and travelling in the Galaxy with a similar spatial velocity. The term "dynamical stream" is more appropriate than the traditional term "supercluster" since it involves stars of different ages, not born at the same place nor at the same time. We then discuss, in the light of our results, the validity of older evaluations of the Solar motion in the Galaxy. We finally argue that dynamical modeling is essential for a better understanding of the physics hiding behind the observed kinematics. Parallaxes from the Hipparcos catalogue and proper motions from the Tycho-2 catalogue are also used.A maximum-likelihood method, based on a bayesian approach, is applied to the data, in order to make full use of all the available stars, and to derive the kinematic properties of the subgroups forming a rich small-scale structure in velocity space. Isochrones in the Hertzsprung-Russell diagram reveal a very wide range of ages for stars belonging to these subgroups, which are thus most probably related to the dynamical perturbation by transient spiral waves rather than to cluster remnants. A possible explanation for the presence of young group/clusters in the same area of velocity space is that they have been put there by the spiral wave associated with their formation, while the kinematics of the older stars of our sample has also been disturbed by the same wave. The emerging picture is thus one of "dynamical streams" pervading the Solar neighbourhood and travelling in the Galaxy with a similar spatial velocity. The term "dynamical stream" is more appropriate than the traditional term "supercluster" since it involves stars of different ages, not born at the same place nor at the same time. We then discuss, in the light of our results, the validity of older evaluations of the Solar motion in the Galaxy. We finally argue that dynamical modeling is essential for a better understanding of the physics hiding behind the observed kinematics.
