Hyssop is a medicinal plant species with multidirectional properties; it is also used as a spice. In Poland, Hyssop is grown on plantations. Essential oil is a dominating group of biologically active substances. The aim of present study was to evaluate the chemical composition of essential oil from Hyssop grown in south-eastern Poland. The Hyssop herb was collected in two dates: at the beginning of July and at the end of August. Essential oil was achieved by means of steam distillation for 3 hours. Diverse weather conditions during the study had no effects on the content and chemical composition of essential oil. Oil from Hyssop contained 52 compounds, including 1 unidentified. Main components of Hyssop essential oil were: isopinocamphone (22.53-28.74%), pinocamphone (11.41-17.99%), β-pinene (6.69-12.01%), elemol (5.02-7.57%), germacrene D (3.14-6.98%), and bicyclogermacrene (2.55-4.36%).
