Dairy products that are contaminated by pathogenic microorganisms through unhygienic farm practices, improper transportation, and inadequate quality control can cause foodborne illness. Furthermore, inadequate storage conditions can increase the microflora of natural spoilage, leading to rapid deterioration. Ultrasound processing is a popular technology used to improve the quality of milk products using high-frequency sound waves. It can improve food safety and shelf life by modifying milk protein and fats without negatively affecting nutritional profile and sensory properties, such as taste, texture, and flavor. Ultrasound processing is effective in eliminating pathogenic microorganisms, such as Salmonella, Escherichia coli, Staphylococcus aureus, and Listeria monocytogenes. However, the efficiency of processing is determined by the type of microorganism, pH, and temperature of the milk product, the frequency and intensity of the applied waves, as well as the sonication time. Ultrasound processing has been established to be a safe and environmentally friendly alternative to conventional heat-based processing technologies that lead to the degradation of milk quality. There are some disadvantages to using ultrasound processing, such as the initial high cost of setting it up, the production of free radicals, the deterioration of sensory properties, and the development of off-flavors with lengthened processing times. This study aimed to devise a novel fermentation unit for yogurt production utilizing phase change materials (PCM) and primarily powered by solar energy. The unit comprises a solar flat plate collector (FPC), PCM cells, and a fermentation cabinet equipped with trays. High-density polyethylene (HDPE) cylindrical cells were employed to contain paraffin wax for thermal energy storage. The performance of the integrated solar system for the fermentation process was assessed across different air velocities (1.2 to 1.8 m/s), with the most rapid temperature rise observed at 1.8 m/s. The PCM-based thermal storage exhibited an impressive capability of releasing heat autonomously for 6 hours without sunlight, eliminating the need for external energy sources. PCM's capacity to store and release thermal energy ensures fermentation stability, even without solar radiation. This innovative approach offers a compelling environmentally friendly solution with significant implications for sustainable yogurt production, paving the way for industrial integration. The objective of this research was to check the effect of prebiotics extracted from citrus peels on the growth of both probiotic bacteria i.e. Lactobacillus reuteri and Bifidobacterium and enteric bacteria i.e. Escherichia coli in a milk-based model. For this purpose, the prebiotic from citrus peels was extracted using ultrasound-assisted extraction and their prebiotic activity scores were calculated for two probiotic bacterial strains i.e. Lactobacillus reuteri and Bifidobacterium. Afterwards, their growth patterns were studied in a milk-based model in different concentrations of prebiotics in individual and co-culture systems of both probiotic and enteric bacteria. The results showed significant effect of prebiotic concentration on the growth of bacteria supporting the growth of beneficial bacteria and hindering the growth of E. coli. This effect was more pronounced when enteric bacteria (E. coli) were co-cultured with probiotic bacteria i.e. L. reuteri and Bifidobacterium. Similarly, the growth of E. coli was hindered when grown in co-culture of L. reuteri, Bifidobacterium and E. coli. Conclusively, the citrus peel prebiotic was found to modulate the growth of probiotic bacteria while hindering the growth of enteric bacteria. [ABSTRACT FROM AUTHOR]

The citrus processing industry generates around 50% fruit waste, encompassing peels, pulp, seeds, and other residues. Citrus peel, among these by-products, contains significant amounts of bioactive compounds, representing a sustainable and renewable source of phenolics. In this context, the present study was conducted to probe phytochemical profile and antioxidant potency of orange peel extracts. Moreover, the quantification of hesperidin and nobiletin was carried out using HPLC. The extracts were obtained using water and 50% aqueous-methanol and aqueous-ethanol, separately alongside varying time intervals, i.e. 30, 45 and 60 min. The obtained extracts were then investigated for their phytochemical and antioxidant profile. Afterwards, three best treatments, one from each extracts (aqueous-ethanol, methanol, and water), were chosen based on their phytochemical profiling. The phytochemical analyses and in vitro antioxidant assays showed the highest total phenolics (2010 mg GAE/100 g), flavonoids (90 mg/100 g), and flavonols (2.2 mg/100 g) in methanolic extracts obtained at 60 min. Likewise, the highest DPPH (60.55%), antioxidant activity (51.7 %), FRAP (13.6 mg TE/g), and ABTS (7.4 µmol TE/g) were also attributed to methanolic extract of orange peel obtained at 60 min except for antioxidant activity which was obtained at 30 min. Likewise, HPLC analysis depicted maximum content of hesperidin and nobiletin (133.70 and 8.50 mg/g) in methanol extract as compared to ethanol (98.80 and 5.50 mg/g) and water (61.90 and 1.25 mg/g), correspondingly. It was concluded that aqueous-methanol could be used as solvent of choice for isolation of orange peel flavonoids with extraction duration of 60 min. Foods with higher bioactive activities are being sought as a potential tool to prevent lifestyle-related disorders. In this context, germinated foods are preferred over conventional foods as they are rich in health promoting moieties. The current research was planned to assess the germination-induced modifications in physicochemical and bioactive profile of black chickpea (Cicer arietinum). For this purpose, black chickpeas (desi) were soaked for 12 h and germinated. The germinated black chickpeas were recovered after 24, 48, 72, 96, and 120 h of germination, separately, and their physicochemical and antioxidant profiles were studied. The phytochemical profiling of the germinated black chickpea revealed that germination time significantly influenced the chemical composition of black chickpea. It was observed that the phytochemical contents of the germinated chickpeas increased with an increase in germination time. However, the flavonoids such as rutin, luteolin, kaempferol, and quercetin were decreased, but isorhamnetin was increased as the germination time was extended. Moreover, the antioxidant capacity quantified by DPPH and ABTS activity of germinated chickpeas also increased with an increase in germination time. The highest content of DPPH antioxidant activity was observed at the 72 h of germination, while the highest concentration of ABTS was observed at the fourth day of germination. Conclusively, extended germination for 120 h can negatively influence the phytochemical and antioxidant profile of black chickpea, whereas optimum germination for 72 h was found satisfactory. Microbial spoilage is a major cause of degradation of the quality characteristics of products, such as meat and dairy products or fruits and vegetables. There is a need for eco-friendly practices that prevent microbial growth, while preserving the nutritional value of these products during processing and transportation to the consumer. Traditional food preservation methods, being thermal or chemical techniques, often have a negative impact on the sensory, quality and textural characteristics of the food product. Ozonation is of interest for the food industry using the antimicrobial properties of ozone. It is important for various food products to control the oxidation of lipids. The effects of ozone treatment on lipid oxidation in foods are evaluated in this review. The mechanisms of lipid ozone oxidation are discussed, and the results of different studies are analyzed. It also examines the factors that can affect the efficacy of ozone treatment and the possible risks associated with this technology. Ozone treatment prolongs shelf life, while maintaining product quality and is cost-effective in terms of energy use. It has been shown to inhibit the formation of volatile compounds in some food products, and reduce the occurrence of reactions that reduce the overall quality characteristics of the food, such as lipid oxidation. The objective of this study was to detect the changes in physicochemical and functional properties of raw and processed divergent honey varieties after adulterating with different sugar syrups. Specifically, when 25% to 55% cane syrup was added to raw Acacia honey, the HMF content increased from 46.25 to 101.6 mg/kg. In processed honey that contained 55% cane syrup, HMF content was even higher, reaching up to 402.47 mg/kg. The reported values for HMF (>80 mg/kg) content and DN (>8 DN) were above the described quality evaluation standard of honey. The results indicated that adulterating Acacia honey with up to 55% corn and corn syrup caused a reduction in diastase content to below 3.5 DN, and an increase in HMF content above 93.28 mg/kg. Similarly, adding 10% corn syrup to raw Ziziphus honey resulted in a decrease in both DPPH and ABTS+ values from 83.16% and 88.58%, respectively, to 72.83% and 76.97%. The findings in this study demonstrated that the addition of malt syrup (55%) to raw Trifolium honey resulted in an increase in the phytochemical content, with the TPC value reaching 805.15 mg GAE/100 g. However, processing Trifolium honey caused a significant decrease in TPC content to 505.15 mg GAE/100 g. This work highlights the need for more research into unexplored honey varieties and adulteration methods to improve quality evaluation standards and mitigate authenticity issues. Laboratory selection of stress-related traits in adult flies of Drosophila melanogaster has resulted in contrasting phenotypes but coevolution of larval traits has received lesser attention. The hypothesis whether laboratory selection of adult body melanization to derive dark and light body color lines exhibit covariation of larval behavioral traits of D. melanogaster was tested. The larvae of selected light lines showed longer foraging path, higher relative feeding rate, and lower pupation height whereas opposite trend values were observed for the larvae of selected dark lines. The larvae of dark lines stored significantly higher level of carbohydrates while light lines stored lipids. Larval pupating behavior of selected dark and light lines also showed divergence. For water balance-related traits, significantly higher trait values in the larvae of selected darker lines were found while lighter body color lines showed greater starvation resistance. Using two sibling species, Drosophila jambulina and D. punjabiensis, interspecific crossabilty were examined in natural as well as laboratory conditions. Collection record showed that hybrids are found only in specific hybrid zone having higher temperature variation suggesting an increased fitness in hybrid zone. In laboratory condition, plastic effects on thermo-tolerance traits (heat knockdown and cold recovery) were investigated by growing parental species [D. jambulina and D. punjabiensis at four growth temperatures (17 to 28 °C)] and their hybrids at six growth temperatures (15 to 31 °C). Hybrids showed higher plasticity for melanization (~ 58%) and thermo-tolerance traits (CV = 39.14 for heat resistance and CV = 43.15 for cold resistance) at different growth temperatures. Acclimation effects were also significant in hybrids (F = 47.89 for heat resistance and F = 56.87 for cold resistance) suggesting an adaptive potential. Results of this study imply that hybridization increases genetic variation which in turn leads to adaptation to new environments. The genetic data obtained in this study would be useful not only for testing basic predictions about evolution but also for understanding the evolutionary significance of hybrids. Larvae of three latitudinally different populations of Drosophila jambulina belonging to the montium subgroup were tested for pupation site preference in relation to temperature. At 30 °C, larvae preferred to pupate on food whereas at 21 °C pupation occurred on the cotton. Genetic basis of larval pupation behavior was studied by conducting reciprocal crosses for 30 generations on food-selected and on cotton-selected pupae. Results from genetic analysis between food-selected and cotton-selected strains indicated a single gene responsible for the pupation site preference, with F1 progeny pupated on cotton and F2 (F1 × F1) larvae pupated on both food as well as on cotton. Although we found no change in morphological traits in food vs cotton selected populations, significantly different growth rate (body weight) between the two strains was observed. AbstractVibrational spectroscopy is a nondestructive analysis technique that depends on the periodic variations in dipole moments and polarizabilities resulting from the molecular vibrations of molecules/atoms. These methods have important advantages over conventional analytical techniques, including (a) their simplicity in terms of implementation and operation, (b) their adaptability to on-line and on-farm applications, (c) making measurement in a few minutes, and (d) the absence of dangerous solvents throughout sample preparation or measurement. Food safety is a concept that requires the assurance that food is free from any physical, chemical, or biological hazards at all stages, from farm to fork. Continuous monitoring should be provided in order to guarantee the safety of the food. Regarding their advantages, vibrational spectroscopic methods, such as Fourier-transform infrared (FTIR), near-infrared (NIR), and Raman spectroscopy, are considered reliable and rapid techniques to track food safety- and food authenticity-related issues throughout the food chain. Furthermore, coupling spectral data with chemometric approaches also enables the discrimination of samples with different kinds of food safety-related hazards. This review deals with the recent application of vibrational spectroscopic techniques to monitor various hazards related to various foods, including crops, fruits, vegetables, milk, dairy products, meat, seafood, and poultry, throughout harvesting, transportation, processing, distribution, and storage. AbstractFoodborne illnesses occur due to the contamination of fresh, frozen, or processed food products by some pathogens. Among several pathogens responsible for the illnesses, Listeria monocytogenes is one of the lethal bacteria that endangers public health. Several preexisting and novel technologies, especially non-thermal technologies are being studied for their antimicrobial effects, particularly toward L. monocytogenes. Some noteworthy emerging technologies include ultraviolet (UV) or light-emitting diode (LED), pulsed light, cold plasma, and ozonation. These technologies are gaining popularity since no heat is employed and undesirable deterioration of food quality, especially texture, and taste is devoided. This review aims to summarize the most recent advances in non-thermal processing technologies and their effect on inactivating L. monocytogenes in food products and on sanitizing packaging materials. These technologies use varying mechanisms, such as photoinactivation, photosensitization, disruption of bacterial membrane and cytoplasm, etc. This review can help food processing industries select the appropriate processing techniques for optimal benefits, in which the structural integrity of food can be preserved while simultaneously destroying L. monocytogenes present in foods. To eliminate Listeria spp., different technologies possess varying mechanisms such as rupturing the cell wall, formation of pyrimidine dimers in the DNA through photochemical effect, excitation of endogenous porphyrins by photosensitizers, generating reactive species, causing leakage of cellular contents and oxidizing proteins and lipids. These technologies provide an alternative to heat-based sterilization technologies and further development is still required to minimize the drawbacks associated with some technologies.
