Inflammation and oxidative stress play significant roles in the development of chronic kidney disease (CKD). Given the recognized antioxidant properties of vitamin C, our study aimed to explore the correlation between CKD and serum vitamin C levels. Data were gathered from the 2017–2018 National Health and Nutrition Examination Survey. Participants below 18 years of age, pregnant individuals, those lacking essential data for CKD diagnosis, or individuals with incomplete serum vitamin C data were excluded. Subgroup and weighted multivariable logistic regression analyses were performed to assess the potential correlation between serum vitamin C and CKD. Our study comprised 4969 participants, revealing an overall CKD prevalence of 15.0%. The results indicated that individuals with reduced serum vitamin C levels were more likely to be male, possess lower educational attainment, have a diminished poverty-income ratio, engage in heavy drinking, and be current smokers. Additionally, they exhibited a higher prevalence of obesity and diabetes. Significantly, participants in the third quartile group experienced a 37.0%, 47.0%, and 46.6% decrease in the risk of developing albuminuria, low estimated glomerular filtration rate (eGFR), and CKD, respectively. Subgroup analysis demonstrated that individuals between 65 and 80 years of age showed a statistically reduced risk of developing CKD and low eGFR when their serum vitamin C levels fell in the third and fourth quartile groups. Our findings reveal a correlation between elevated serum vitamin C levels and a decreased risk of developing albuminuria, low eGFR, and CKD. In the current study, the effects of enhancing semen quality, brain neurotransmitters, and antioxidant status in rabbits under heat stress with acacia gum, vitamin C, and lycopene as dietary supplements were estimated in vitro and in silico. A total of 40 males from New Zealand White rabbits aged 3 months were equally divided into four groups (n = 10). The first group was a control. The other three groups were the heat stress group (oral acacia gum, 100 mg/kg body weight), the ascorbic acid group (30 mg/kg body weight), and the lycopene group (50 mg/kg body weight). All semen showed physical characteristics in terms of increasing sperm motility, motility index, sperm normality, and live sperm as compared to the control group. On the other hand, sperm abnormalities, and dead sperm significantly (p < 0.001) decreased compared with the control group. It is of interest to show that most semen traits were significantly (p < 0.001) better for acacia gum than vitamin C and lycopene. The expression of neurotransmitters (5-HT, DA, Glu, Asp) was enhanced in all treatments compared to the control. The results of acacia gum were better (p < 0.001) than those obtained with vitamin C and lycopene. The acacia gum treatment had a lower plasma semen MDA and NO (p < 0.001) and higher GSH, TAC, SOD, CAT, L-Car, Na+-K+ ATPase, ATP, and total calcium content (p < 0.001) than in other treatments and controls. These results were confirmed by the prediction of the binding energy, several conventional and carbon H-bonds, hydrophobicity, and SAS through the in silico docking analysis results. It can be concluded that acacia gum, vitamin c, and lycopene are used for enhancing semen quality, brain neurotransmitters, and the antioxidant status of rabbits under heat stress. Plant chemodiversity is a helpful tool for disease prevention and a basis for adjuvant treatments to conventional therapies. In this regard, the extract of Polypodium leucotomos rhizomes, PLE, has shown benefits fighting inflammation and recurrent infections but its molecular mechanism is poorly undersood. This work shows that Plesinox 3A, containing PLE, Vitamins A, C, and selenium, helps modulate the initial inflammatory response triggered by bacterial LPS through the upregulation of IL8 and IL10, together with downregulation of COX2, IL1B and TNF, in a more efficient manner than PLE alone. Additionally, this formulation enhances the antiviral response through the upregulation of MX1, IFNA1 and IFNG in different cell types. Finally, the addition of vitamins and selenium to PLE in Plesinox 3A greatly boosts the anti-bacterial properties of PLE alone. Overall, these findings support the combined use of PLE, vitamins, and selenium, in the form of Plesinox 3A as an immune booster to prevent recurrent infections, highlighting a gene set potentially involved in its beneficial effect, as well as showing its direct anti-bacterial properties, which are greater than those of PLE alone. Ultraviolet B (UVB) exposure is reported to cause cataract formation by inducing excessive reactive oxygen species (ROS) and apoptosis in human lens epithelial cells (HLECs). Sodium-dependent Vitamin C transports-2 (SVCT2) is a ascorbic acid (AsA) transporter for that can protect cells and tissues from oxidative stress. Here, we focus on the functional characterization and mechanism analysis of SVCT2 in UVB-treated HLECs. The results showed a significant reduction of SVCT2 expression in HLECs treated with UVB. SVCT2 abated apoptosis and Bax expression and increased Bcl-2 expression. Moreover, SVCT2 decreased ROS accumulation and MDA level, but increased the activities of antioxidant enzymes (SOD and GSH-PX). NF-κB inhibitor (PDTC) alleviated ROS production and apoptosis, and promoted SVCT2 expression in UVB-treated HLECs. Additionally, ROS inhibitor (NAC) suppressed oxidative stress, apoptosis, and induced SVCT2 expression in UVB-treated HLECs, while these effects were significantly abated due to the activation of NF-κB signaling. Furthermore, SVCT2 facilitated 14C-AsA absorption in UVB-treated HLECs. Together, our findings demonstrated that UVB exposure-induced ROS generation, which further activated NF-κB signaling to down-regulate SVCT2 expression in HLECs. Then, downregulated SVCT2 promoted ROS accumulation and induced apoptosis by decreasing AsA uptake. Background: Home isolation has been proposed for coronavirus disease 2019 (COVID-19) patients with mild symptoms to avoid hospital overcrowding. This study aimed to describe the drug-related problems (DRPs) and the pharmaceutical care of home-isolating COVID-19 patients in Thailand. Methods: Our cross-sectional study was undertaken from July 1 to September 30, 2021, at the King Chulalongkorn Memorial Hospital, Thailand. Patients who were ≥ 18 years old, were diagnosed with mild COVID-19 by real-time polymerase chain reaction (RT-PCR), and were able to isolate at home while receiving an antiviral agent and standard symptomatic treatment were enrolled. Infectious disease pharmacists provided a telepharmacy service on days 1 and 3 after the COVID-19 diagnosis. Results: A total of 197 patients met the study criteria. Their median age was 45 years, and their most common underlying disease was hypertension (44.29%). All patients exhibited excellent anti-COVID-19 drug adherence. We identified 125 DRPs, including adverse reactions (68%), and the unnecessary use of products (62.40%). Moreover, 91 patients (46.19%) reported the use of supplements or herbs, with vitamin C being the main supplement (37.36%). Pharmacists provided 36 recommendations and received 33 questions from COVID-19 patients. In this investigation, the drying of Stevia rebaudiana leaves was carried out in a lab scale convective hot-air dryer at a varying temperature of 30–80°C to analyze the drying behavior, fit mathematical, Artificial Neural Networks (ANNs), and Adaptive Neuro-Fuzzy System (ANFIS) models to predict the drying kinetics of leaves. Further, dried leaf powders were analyzed for color properties, ascorbic acid and total phenol contents, antioxidant activity, water activity (aw), water solubility index (WSI), hygroscopicity (HG), density (bulk, tapped, and particle), bulk porosity, and flowability indices (Hausner ratio (HR), Carr index (CI), and angle of repose (α)). The results showed that ANFIS model with R2 of 0.9998, offers a more accurate forecast of the drying kinetics of leaves dried in a convective hot-air dryer in comparison to mathematical and ANN modeling. The convective drying significantly (p <.05) effected the L*, a*, b*, hue angle and chroma values of dried leaves. Increase in the drying temperature from 30 to 80°C resulted in a decrement of 50.90% in aw, 10.10% in tapped density, while enhancement of 23.26% in WSI, 32.93% in HG, 54% in particle density, and 10.59% in bulk porosity of dried leaf powder. Notably, ascorbic acid and antioxidant activity decreased with rising temperatures, while total phenols enhanced up to 50°C. The bulk density of dried samples remained largely unchanged with increasing temperature, while the flowability of the Stevia powder improved. This study investigates the impact of thermal and high-pressure processing on the quality indicator of orange juice and its storage stability. The pressure was applied at 400 MPa and 600 MPa for 3, 6, and 9 min to process the juice and evaluate the quality of orange juice during 60 days of storage with every 30-day interval. HPP conditions (400 MPa and 600 MPa for 3, 6, and 9 min) did not significantly change the ascorbic acid content of orange juice, in contrast to thermal processing where a crucial decrease in ascorbic content was observed. Ascorbic acid content increased non-significantly from 40.03 to 40.69 (mg/100 g) and 40.79 when applied for 3 and 6 min, respectively, while thermal processing reduced its content up to 33.45 (mg/100 g). Ascorbic acid at 600 MPa was observed at 41.19 (mg/100 g) when treated for 6 min. Carotenoid content was increased when HPP was from 8.6 to 9.14 (mg/100 ml) during 400 MPa for 9 min and 11.65 (mg/100 ml) for 6 min at 600 MPa compared to the corresponding untreated sample and thermally treated sample. The total soluble solids, pH, and acidity of the orange showed stability after HPP and during 60 days of storage. The natural microbiological load (yeast and mold, E-Coli log CFU/ml) was observed below 1 log reduction at 30 days of storage and 2 log reduction during days of storage. In the current study, the most effective concentrations of moringa leaf extract (MLE), aloe vera gel (AV gel), ascorbic acid (1 mM) and oxalic acid (5 mM) were used. Physically mature fruits harvested from a commercial orchard were dipped in aqueous solutions of different edible coatings and kept at ambient conditions (25±2ºC & 55-60% RH) for evaluation of the quality and enzymatic parameters on daily basis till marketability. Current results revealed that 5 mM ascorbic acid treatment resulted in 57% reduced fruit weight loss; while 20% AV gel coating increased firmness by 60% over a 5-day ambient storage period. Application 6% MLE exhibited 50.7% and 49.7% reduced respiration rate and ethylene production respectively. Fruit biochemical quality parameters were also improved with the lowest accumulation of total soluble solids as a result of slow respiration, higher titratable acidity, ascorbic acid contents, carotenoids and anthocyanin contents in all treated fruit. While, total phenolic contents and total antioxidants along with superoxide dismutase, catalase, peroxidase, and anthocyanins were higher in ascorbic acid treated fruits. The activity of poly phenol oxidase enzyme was lowest in fruits treated with 5 mM ascorbic acid solution. Conclusively, the application of different edible coatings was proved to be beneficial as numerous fruit biochemical and antioxidative attributes were improved by ascorbic acid treatment; furthermore, MLE, AV gel and oxalic acid treatments were also helpful in maintaining fruit quality of strawberry fruits over a 5-days ambient storage period. Tomato is considered the world's most important crop owing to its high nutritional profile and flavor. However, its limited shelf life and post-harvest losses impact its marketing. The present study investigated the impact of aloe vera gel-based edible coating on tomato's post-harvest quality under storage at 8°C for 12 days. The aloe vera-based coating solutions were made with varying concentrations of extracted gel that varied from 0 to 60% with inclusion of chitosan (0.5 to 2%). Physiological, chemical, nutritional, and microbiological analysis of coated and uncoated tomatoes was carried out during storage. It was found that uncoated (control) tomatoes showed maximum weight loss (5.85%), total soluble solids (5.3 ± 0.20 0Brix), change in pH (5.6 ± 0.26), microbial count (3.57 ± 0.12 log cfu/g), decrease in ascorbic acid content (19.23 ± 0.92 mg/100 g), and acidity (0.54 ± 0.01%) as compared to aloe vera-based coatings. However, the coating formulation comprising aloe vera gel (60%) + chitosan (2%) performed much better than other prepared coatings in delaying the weight loss (2.1%), total soluble solid (3.7 ± 0.16 0Brix), change in pH (4.6 ± 0.21), ascorbic acid value (30.47 ± 1.31 mg/100 g), acidity (0.83 ± 0.04%), and microbial load (1.6 ± 0.08 log cfu/g). In addition, it also maintained firmness and color of tomatoes during storage of 12 days. This research studies the impacts of microcrystalline cellulose (MCC) concentrations on the physicochemical properties of spray-dried water-in-oil-in-water (W/O/W) vitamin C double emulsion powder Four MCC concentration (1%, 1.5%, 2%, and 2.5%) were used to produce the vitamin C double emulsion powder. The results of the emulsion's creaming index, flow behaviour index, zeta value, and particle size indicated that these parameters decreased when the MCC concentration increased. Scanning electronic microscopy (SEM) analysis showed that the higher MCC concentration resulted in a smoother surface In general, the MCC concentration increased, the particle size, hygroscopicity, solubility, water content, and water activity of the double emulsion powder decreased. Double emulsion powder containing 2% MCC presented the highest level of antioxidant activity and was mostly stable after storage for 56 days. Before and after drying, transmission electron microscope (TEM) analysis of the morphological characteristics of the liquid emulsion showed that the concentration of 2% MCC in the emulsion could form a W/O/W double emulsion structure. Fungi can thrive in strawberries, mainly Botrytis cinerea, which causes relevant fruit losses. Moreover, thermal preservation results in phytonutrient losses. This study evaluated the effects of high hydrostatic pressure (HHP, 0, 400, and 600 MPa/5 min) processing with potassium sorbate (PS) or avocado seed acetogenins (ASA) on the nutritional, microbiological, and physicochemical properties of strawberry puree inoculated with Botrytis cinerea. Sole inoculation reduced L-ascorbic acid (L-AA, 84%) and total ascorbic acid (TAA, 38%). Instrumental color Hue angles were reduced from 35.0 to 29.4°, likewise the contents of pelargonidin−3-glucoside (25%) and ellagic acid (38%). Both HHP-PS treated samples contained no viable conidia and high TAA; the no-preservative and HHP-ASA (661 µg/mL, 400 MPa/5 min) purees contained high TAA but had viable conidia, which can induce further phytonutrient losses. Mahonia jaunsarensis Ahrendt is a narrow endemic wild edible fruit-bearing species found in Uttarakhand Himalaya and has the potential of breeding compatibility with economically important Mahonia and Berberis species. Berry fruits of the species were explored for nutritional, phytochemical and antioxidant potential among three sampling locations. Fresh berries appeared a good source of diverse nutrients (carbohydrate 1.07–1.25 g/100 g, protein 0.97–1.13 g/100 g, non-reducing sugar 3.38–3.92 mg/g, and total sugar 9.86–12.87 mg/g); minerals (e.g. sodium 0.56–0.65 mg/100 g and potassium 0.99–1.14 mg/g); and vitamins (ascorbic acid 3.87–4.49 mg/g, thiamine 9.97–11.57 µg/g and carotenoids 1.67–1.94 mg/g). Similarly, phytochemicals (total anthocyanin 18.93–22.12 mg/g, phenolics 1.56–1.80 mg GAE/g, flavonoids 1.49–1.73 mg QE/g, flavonols 4.88–5.66 mg CE/g, and tannins 6.53–7.58 mg TAE/g) and in vitro antioxidant capacity (measured by ABTS assay, DPPH assay, OH· radical scavenging activity and FRAP assays) varied significantly (p <.05) among localities. Various phenolic compounds (particularly, chlorogenic acid 9.93–13.77 mg/g; caffeic acid 0.32–0.65 mg/g; syringic acid 0.30–0.47 mg/g fw) present in the methanolic extract also varied significantly among the localities. Thus, this phytonutrient- and antioxidant-rich genetic resource can be utilized for health-promoting functional foods. This study aims to biosynthesize zinc oxide nanoparticles using aqueous leaf extracts of Cnidoscolus aconitifolius and investigate their biological activities. UV–Vis Spectroscopy, FT-IR, SEM and TEM were used for characterization. The antioxidant properties were determined using H2O2, NO, ABTS, FRAP and DPPH scavenging assays. For anti-inflammatory activities, membrane stabilization, albumin denaturation and proteinase inhibitory activity were assayed. The antibacterial effect was tested using well diffusion method. Statistical analyses were done using ANOVA. Synthesized nanoparticles showed an intensity peak at 378 nm in UV–Vis Spectroscopy. FT-IR shows the presence of O-H stretching, C = C bending, O-H bending and C–N stretching functional groups of the stabilizing action of the plant extract on the surface of the nanoparticles. NPs were shown to be spherical by SEM analysis, and the sizes were 100 nm by TEM analysis. The antioxidant properties of ZnO NPs compared to ascorbic acid standard showed significant antioxidant potential in H2O2, NO, ABTS, FRAP and DPPH scavenging assays. ZnO NPs showed excellent anti-inflammatory activity with the synthesized ZnO NPs performing better in membrane stabilization. Clinical pathogens were inhibited by ZnO NPs when compared with Cefuroxime, a standard drug. These efficient biological activities could be utilized in several biological applications. A study was conducted to assess the impact of different blanching methods and blanching time on the quality of dried pear slices. Pears are only available seasonally, making the production of high-quality dried slices a valuable commodity. The pears were prepared and sliced before being blanched using three different methods: traditional blanching with hot water, blanching with steam, and microwave blanching for varying lengths of time. After blanching, the slices were cooled and then placed on filter papers to dry. The dried slices were then evaluated for chemical properties, such as sugars, total soluble solids, titratable acidity, ascorbic acid, Brix/acid ratio, ash content, and moisture content. Sensory properties such as color, taste, texture, and overall acceptability were also evaluated using a 9-point hedonic scale. The data generated were analyzed using a two-way analysis of variance (ANOVA) to determine the significant differences between variables. The results showed that the blanching method used had a non-significant effect (p <.05) on the chemical properties of the pear slices, such as total sugars (reducing and non-reducing), total soluble solids, titratable acidity, ascorbic acid, Brix/acid ratio, ash content, and moisture content. However, there was no significant effect on the sensory properties of color, texture, taste, and overall acceptability. In conclusion, blanching is an effective technique for preventing microbial growth and chemical and enzymatic reactions that can lead to the deterioration of dried pear slices. Obesity is one of the major causes of non-communicable diseases (NCDs) associated with a dietary pattern rich in saturated fat. The present study utilized roasted and germinated chickpeas (Cicer arietinum) flour (RCPF and GCPF) as a replacement for fat in biscuits, known to have nutraceutical properties. The fat content was modified using the following ratios: 10%, 20%, and 30% (w/w) of RCPF/GCPF. Based on the physicochemical analysis, increased concentrations of RCPF and GCPF in the flour blends resulted in higher levels of protein, ash, and crude fiber contents. GCPF was found to contain higher levels of protein (20.20%), ash (4.86%), and crude fiber (3.64%) compared to RCPF. Increased RCPF and GCPF levels resulted in reduction of gluten content, which indicated weak gluten network. Scanning electron micrographs (SEM) of biscuit samples further supported these observations. The farinograph properties showed significant increase (P<0.05) in water absorption and dough development time. Furthermore, when RCPF and GCPF were added to flour blends and biscuits samples, significant increase (P<0.05) in antioxidant activity, total phenolic content, and total flavonoid content was observed. These trends were observed to be more prominent with higher quantities of RCPF and GCPF. Notably, the antioxidant properties of chickpeas were found to be significantly improved (P<0.05) by the process of germination compared to roasting. Moreover, improvements in antioxidant activity might be caused by the increased levels of phenolic compounds and ascorbic acid due to the actions of endogenous hydrolytic enzymes during germination. The dimensional, textural, and sensory properties indicated that RCPF 20% and GCPF 10% can effectively serve as an organic fat substitute in bakery products with enhanced concentrations of proteins, fibers, antioxidants, and bioactive compounds with nutraceutical properties. Ber (Ziziphus mauritiana), also known as "Chinese date" or "jujube," belongs to the Rhamnaceae family. The current research was designed to assess the effect of storage temperatures (5°C and 15°C) on ascorbic acid content, reducing sugar content, and titratable acidity of four ber (Z. mauritiana) varieties, i.e. Karela, Aakash, Pak white, and Dil-Bahar. For this purpose, fresh ber (Z. mauritiana) varieties were acquired from the Regional Agriculture Research Institute (RARI), Bahawalpur. In the first phase, these ber (Z. mauritiana) varieties were subjected to proximate analysis of reducing sugar contents, titratable acidity, antioxidant activity, and total phenolic contents. Maximum total phenolic content (144.38 ± 0.03 mgGAE/100 g) and antioxidant activity (39 ± 0.06%) were observed in Dil-Bahar variety. In the second phase, stored ber (Z. mauritiana) varieties were subjected to a storage study at 0, 7th, and 14th days for comparative evaluation based on titratable acidity, reducing sugar content, and ascorbic acid content. The results showed that the fruits stored at 5°C showed a maintained level of ascorbic acid content (31.26 ± 0.02 mg/100 g), reducing sugars (41.25 ± 0.02%), and titratable acidity (3.36 ± 0.01%) in Karela. On the contrary, Karela stored at 15°C showed a reduction in ascorbic acid content (28.12 ± 0.02 mg/100 g) and titratable acidity (1.21 ± 0.01%) and an increase in reduced sugar content (46.48 ± 0.03%). Moreover, Dil-Bahar variety showed higher ascorbic acid content (51.69 ± 0.05 mg/100 g), titratable acidity (3.51 ± 0.02%), and reducing sugar content (33.29 ± 0.01%) at 5°C. This study was designed to determine the nutritional composition and bioactive compounds in four selected wild potato varieties. Moisture content in wild potato varieties ranged between 70.92 ± 0.29 to 73.82 ± 0.64 g/100 g sample. Shimul Alu has the highest amount of ash (1.01 g/100 g sample). The range of 3.2–4.10 g/100 g sample was the range where the protein content changed substantially. Jam Alu had the highest protein content (4.10 g/100 g sample), whereas lal parki had the lowest value (2.2 g/100 g sample). Shimul Alu provided the highest crude fiber concentration (0.55 g/100 g sample), whereas lal parki presented the lowest crude fiber content (0.43 g/100 g sample). Shimul Alu had the highest levels of starch and reducing sugar. In comparison to widely grown types, wild potato varieties showed increased antioxidant activity. Jam Alu had the most antioxidant activity, with 148.83 mol of ascorbic acid per gram, whereas commonly consumed potato, lal parki, had the lowest antioxidant activity, with 91.57 mol of ascorbic acid per gram. The phenolic content of the dry sample ranged from 1.01 to 2.85 mg GAE. Jam alu, one of the potato cultivars, had the greatest phenolic content. The range of the total flavonoid concentration in grams was 18.04–41.38 mg of quercetin equivalents (QE). Shil bilati, a wild kind of potato, had the highest flavonoid content, whereas lal parki, a commonly consumed potato, had the lowest. Germination of seeds is a complex process linked to various molecular and biochemical changes that increase the nutritional value. This research has studied the impact of germination on the enzymatic and non-enzymatic antioxidant activities of five domestic staple legumes from Pakistan: chickpea, mung bean, soybean, lentil, and peanut. The maximum moisture content was recorded for chickpea, i.e., 11.7 ± 0.05 g 100 g−1 followed by lentil, soybean, peanut, and mung bean as 9.65 ± 0.02, 8.07 ± 0.01, 7.6 ± 0.01, and 7.31 ± 0.01 g 100 g−1, respectively. The overall augmentation in catalase activity during germination (days 1 to 4) was maximum for lentils, i.e., 76.22%, and ascorbate peroxidase activity for peanuts, i.e., 62.09%. The soybean showed a clear difference from the 1st to 4th days of germination for peroxide activity among all selected legumes with a 37.29% increase. A maximum change in superoxide dismutase was noticed in mung bean. The mung bean also had the highest variation in total flavonoid contents, while total phenolic contents were higher in the chickpea. The radical scavenging activity varied higher in peanuts, while the ascorbic acid content was maximum for soybeans. Among all selected legumes, non-germinated chickpeas showed a lower DPPH value, i.e., 1.15 ± 0.03%, whereas the highest DPPH value was observed in lentils (69.84 ± 0.05%). Vitamin C is a compound that is widely used in food processing as a preservative and antioxidant. The weakness of vitamin C is that it is unstable and very reactive to environmental conditions. To maintain the stability of vitamin C during processing and storage, emulsification was carried out with a double emulsion Pickering water in oil in water (W/O/W) system. The research method used was descriptive analysis method which consists of two stages. The first stage was to determine the right amount of emulsifier in the manufacture of W/O emulsion and the second stage is the manufacture of W/O/W emulsion which consists of four different treatments with microcrystalline cellulose (MCC) as the Pickering component. The results showed that the use of 5% sorbitan tristearate produced a stable W/O vitamin C emulsion at 14 days of storage with a coalescence index of 3.2% and a droplet size of 0.698 μm. The combination of polysorbate 80 and MCC produced a W/O/W emulsion with a droplet size of 0.952 μm, creaming index 2.615%, serum index 2.899%, and a lowest increase in IC50 of 0.32 ppm/day. Cashew tree has two parts of food industry and nutrition interest, i.e the nut and the juicy apple. This study aimed to carry out a phytochemical characterization, determine the antioxidant properties and evaluate the influence of temperature on the phytonutrient composition of cashew fruits. The contents of ascorbic acids, phytates, and tannins, of various pigments were determined. Antioxidant activities were determined by four methods using standard methods. The apples presented the best antioxidant activities for FRAP, SOD, and LPO 98.54 ± 5.48, 834.12 ± 13.47, and 84.9 ± 4.15, respectively; while walnuts showed the best antioxidant activities for free radical scavenging which was 26.14 ± 3.21. Tannin, phytate, and anthocyanin contents decreased by more than 50% when increasing temperatures between 50 and 100°C. Ascorbic acid tends to disappear completely in fruit at temperatures of 100°C. Extractable lycopene increased by about 25% with increasing temperature. β-carotene was found to be insensitive to temperature increase. These results provide valuable information that can help in the control of cashew fruit processing in the food industry. Background: Dietary intake of antioxidants such as vitamins C and E protect against oxidative stress, and may also be associated with altered DNA methylation patterns. Methods: We meta-analysed epigenome-wide association study (EWAS) results from 11,866 participants across eight population-based cohorts to evaluate the association between selfreported dietary and supplemental intake of vitamins C and E with DNA methylation. EWAS were adjusted for age, sex, BMI, caloric intake, blood cell type proportion, smoking status, alcohol consumption, and technical covariates. Significant results of the meta-analysis were subsequently evaluated in gene set enrichment analysis (GSEA) and expression quantitative trait methylation (eQTM) analysis. Results: In meta-analysis, methylation at 4,656 CpG sites was significantly associated with vitamin C intake at FDR = 0.05. The most significant CpG sites associated with vitamin C (at FDR = 0.01) were enriched for pathways associated with systems development and cell signalling in GSEA, and were associated with downstream expression of genes enriched in the immune response in eQTM analysis. Furthermore, methylation at 160 CpG sites was significantly associated with vitamin E intake at FDR = 0.05, but GSEA and eQTM analysis of the top most significant CpG sites associated with vitamin E did not identify significant enrichment of any biological pathways investigated. Conclusions: We identified significant associations of many CpG sites with vitamin C and E intake, and our results suggest that vitamin C intake may be associated with systems development and the immune response. Herbal additives and vitamins have gained considerable attention to improve fish health. This study investigates the effects of vitamin C (VC), Thymus vulgaris L. essential oil (TE), and quercetin (QR) supplementation on growth performance, digestive enzyme, body composition, and biochemical parameters of common carp (Cyprinus carpio). Four hundred and twenty fish weighing 20.46 ± 0.07 g were randomly divided into seven experimental treatments in triplicates. Experimental diets were containing as T1 (0, control), T2 (500 mg/kg VC), T3 (1000 mg/kg VC), T4 (1% TE), T5 (2% TE), T6 (200 mg/kg QR), and T7 (800 mg/kg QR). Fish were fed 3% of body weight daily for 60 days. According to the results, the groups fed with experimental diets showed the higher final weight, weight gain (WG), specific growth rate (SGR), and survival rate (SR) and lower feed conversion ratio (FCR) compared to the control group (p <.05). Regarding biochemical indices results, T5, T6, and T7 significantly had the higher serum total protein (TP) than the control (p <.05). Meanwhile, albumin (ALB) showed no significant difference in all groups (p >.05). All the supplemented groups were found to have significantly lower creatinine (CRT), glucose (GLU), and urea (UR) and higher globulin (GLO) content compare to the control (p <.05). Moreover, T3, T4, and T5 showed a significant decrease in triglyceride (TRIG) levels compared to the control (p <.05). Cholesterol (CHOL) activity in T4 supplemented group was significantly lower than the control (p <.05). Also, cortisol (CORT) recorded a significant decrease in T6 and T7 compared to the control (p <.05). Lactate dehydrogenase (LDH) had a significantly lower level in T4, T6, and T7 compared to the control (p <.05). The whole fish body composition was not affected by the feed additives and the control (p >.05). Besides, significant enhancements were observed in cases of intestine protease, amylase, and lipase enzymes in all the supplemented groups compared to the control (p <.05). Gold-coated silver core–shell nanoparticles (Ag@Au NPs) have been widely used for SERS analysis due to plasmon resonance performances. However, it is a great challenge to fabricate Ag@Au core–shell structures with specified morphology. In this paper, the size and shape of Ag NPs (core) were precisely controlled by a seed-mediated approach, and then the gold shell was completely coated on under the strong reduction of ascorbic acid, resulting in Ag@Au NPs with highly regulated morphology. The obtained Ag@Au NPs achieved a similar or even better SERS enhancement factor (EF) (up to 5.7 × 107) compared to Ag NPs, but significantly higher stability. For the rapid SERS detection of nitrofurantoin metabolite AHD, a limit of detection (LOD) as low as 1 × 10−10 M and a wide linear range from 1 × 10−4 to 1 × 10−8 M were obtained. Precision Nutrition makes use of personal information about individuals to produce nutritional recommendations that have more utility than general population level recommendations. In many cases, being able to predict current status is a necessary first step in offering tailored nutritional advice. The objective of this study is to predict plasma vitamin C using machine learning. The NHANES dataset was used to predict plasma vitamin C in a cohort of 2952 American adults using regression algorithms and clustering in a way that a hypothetical health application might. Variables were selected based on a known or hypothesized relationship with plasma vitamin C, and variables that are expensive or difficult to obtain were excluded in order to more closely replicate the situation of a real health application. The best performance was seen with the XGBoost regressor, with random forest performing almost identically. Clustering was also investigated as a means of improving regression accuracy by splitting the data up into smaller yet more homogeneous groups, however, this was not successful. The low R-squared scores obtained by the models are likely to be due to the low resolution of the NHANES data, particularly the dietary data. Eye exposure to hexavalent chromium (Cr(VI)) acid can cause blindness. A 42-year-old man working in a plating operation presented to the emergency department following a workplace incident. He had unintentionally fallen into a tank containing a mixture of 25% Cr(VI) and sulfuric acid (2.0 g/L) at a temperature of approximately 40 °C. The tank dimensions tank were 8 (depth) × 4 (width) × 3 (length) meters. A colleague rescued him from the tank, and he underwent a full body wash at the worksite. Emergency services adequately flushed both eyes with a 0.9% saline solution. He had significant corneal injury; however, no other significant injuries occurred. Upon presentation at the emergency department, the patient underwent a whole-body shower, and both eyes were flushed with 0.9% saline solution. As a treatment for acute chromium poisoning, he received dimercaprol and ascorbic acid. Additionally, he received eye drops for chemical corneal injury. The patient later underwent bilateral corneal transplants for chemical corneal injury but remained nearly blind. Vitamins (Vit) C and D are widely used as immunogenic supplements among severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) infected patients. The SAR-CoV-2 virus enters into the pulmonary endothelial cells through attachment to angiotensin converting enzyme 2 receptor (Ace2) and the proteolytic activity of Cathepsin L (Ctsl) and transmembrane serine protease 2 (Tmprss2) enzymes. This study aimed to determine the influence of Vit C and D on the mRNA expression of Ace2, Tmprss2, and Ctsl genes in the mouse lungs. Vitamins C and D were administrated to different groups of mice through intra-peritoneal route in doses equivalent to human for 30 days. Then, the mRNA expression of SARS-CoV-2 entry gene was analyzed using qRT-PCR. It is found that Vit D, but not C, upregulated significantly (P < 0.05) the mRNA expression of Ace2 by more than six folds, while downregulated the expression of Ctsl and Tmprss2 genes by 2.8 and 2.2 folds, respectively. It can be concluded from this study that Vit D alters the mRNA expression of Ace2, Tmprss, and Ctsl genes in the mouse lungs. This finding can help us in understanding, at least in part, the molecular influence of Vit D on genes involved in the entry of SARS-CoV-2 into the cells. [ABSTRACT FROM AUTHOR]

Triptolide (TP) has its unique curative effect in the treatment of rheumatoid arthritis (RA), but its application is limited by the poor water solubility and multi-organ toxicity. We herein developed a novel nanoparticle platform composed of L-ascorbate palmitate (VP, vitamin C derivative) that can deliver TP to synergistically treat arthritis and inhibit the occurrence of oxidative stress. The TP-loaded nanoparticles (termed TP-VP NPs) showed the suitable particle size (about 145 nm) and good physical stability. TP-VP NPs effectively down-regulated IL-1β, IL-6 and TNF-α levels to inhibit the erosion of synovitis and bone tissue, and alleviate the swelling and deformation of CIA mice's feet. Compared to the TP, TP-VP NPs could inhibit effectively the oxidative stress in liver, and alleviate significantly the triptolide-induced toxicity injury in liver, kidney and testicle. The results demonstrated that TP-VP NPs is a promising triptolide delivery system for the treatment of RA, which enhances the water solubility of TP and reduces the toxicity of TP in vivo. Ascorbic acid (vitamin C) is an antioxidant that is widely used in cosmetics in skincare products. Due to the excessive low stability of ascorbic acid in cosmetic formulations, the stabilized ascorbic acid derivative, magnesium ascorbyl phosphate (MAP) was formulated as vesicular carriers; ethosomes and niosomes. The aim was to deliver MAP at the intended site of action, the skin, for sufficient time with enhanced permeation to get an effective response. Ethosomes were formulated using a full 32 factorial design to study ethanol and phospholipid concentration effect on ethosomes properties. Niosomes were formulated using 23 factorial designs to study the effect of surfactant type, surfactant concentration and cholesterol concentration on niosomes properties. The prepared formulations were evaluated for their Entrapment efficiency, particle size, polydispersity index, zeta potential and % drug permeated. The optimized ethosomal and niosomal formulations were incorporated into carbopol gel and evaluated for their permeation, skin retention and stability. A comparative split-face clinical study was done between the ethosomal and niosomal formulations for melasma treatment using Antera 3DVR camera. The optimized ethosomal and niosomal gels showed comparable controlled permeation and higher skin retention over their ethosomes and niosomes formulations respectively. Magnesium ascorbyl phosphate ethosomal gel showed clinically and statistically significant melanin level decrease after one month while MAP niosomal gel showed clinically and statistically significant melanin level decrease after six months. It is unclear whether unintentional ingestion of povidone-iodine following its application to the oropharyngeal space could affect thyroid function. To examine thyroid function among individuals who regularly apply povidone-iodine throat spray for SARS-CoV-2 prophylaxis. We designed a case-control study to compare thyroid function among participants who received povidone-iodine throat spray three times a day for 42 days ('cases') and those who received vitamin C ('controls'). Thyroid function was assessed by profiling serum TSH, free T3, and free T4; iodine status was estimated using serum thyroglobulin level, while infection status was determined by measuring anti-SARS-CoV-2 antibody against the nucleocapsid antigen. All measurements were performed in pairs, at baseline and 42 days later. Pre-post changes in thyroid function were compared between groups, before and after stratification according to baseline TSH quartiles. A total of 177 men (117 cases and 60 controls) (mean age, 32.2 years) were included. Despite comparable demographics and clinical profiles, no clinically or statistically significant differences were observed in thyroid indices between 'cases' and 'controls' before and after stratification according to TSH quartiles. None of the participants developed symptomatic hypo- or hyperthyroidism throughout the study. Post-hoc analysis did not reveal differences in thyroid function according to infection status. Data from this study support the overall safety of povidone-iodine use in the oropharyngeal space for SARS-CoV-2 prophylaxis among individuals with normal thyroid function and subclinical thyroid disease. Beta-carotene (BC) is a nutrient in vegetables and a precursor of vitamin A. BC has been reported to have anticarcinogenic, antiaging, and antioxidation properties and prevents heart diseases. Recently, BC has gained significant attention due to stimulating effect on osteoblast differentiation. Poly(lactic acid)/hydroxyapatite (PLA/HAp) core-shell nanoparticles have been reported earlier with a load capacity of 250% for water-insoluble substances, using a surfactant-free emulsification method. In this work, PLA/HAp core-shell nanoparticles loaded with BC were prepared, and osteoblast differentiation behavior was evaluated. BC was successfully loaded into PLA/HAp core-shell nanoparticles with diameters of approximately 30 nm. BC/loaded PLA/HAp core-shell nanoparticles stimulated osteoblast differentiation by upregulating collagen type I, osteopontin, and osteocalcin expression. In addition, the gene expression levels of these osteoblasts were significantly larger than those stimulated by PLA/HAp core-shell nanoparticles without BC and cultured in a differential medium (with ascorbic acid and β-glycerophosphate). PLA/HAp core-shell nanoparticles showed satisfactory cytocompatibility because they were attached to the osteoblasts. Consequently, BC was effectively delivered to osteoblasts by nanoparticles. Accurate knowledge of particle density is essential for many aspects of aerosol science. Yet, density is often characterized poorly and incompletely for internally mixed particles, particularly for dry particles, with previous studies focused primarily on deliquescent (aqueous) droplets. Instead, densities for dry internally mixed particles are often inferred from mass composition measurements in combination with predictive models assuming ideal mixing, with the accuracy of such models not estimated. We determined particle densities from mobility diameter measurements (using a Scanning Mobility Particle Sizer, SMPS) for dried particles classified by their aerodynamic size (using an Aerosol Aerodynamic Classifier, AAC) for a range of two-component organic-inorganic particles containing known proportions of organic and inorganic species. We examined all permutations of mixing between four different organic (water soluble nigrosin dye, citric acid, polyethylene glycol-400, and ascorbic acid) and three different inorganic (sodium chloride, ammonium sulfate, and sodium nitrate) species. The accuracy and precision in our measured particle densities were ∼5% and ∼1%, respectively, for nonvolatile particles. Substantial deviations in particle density from ideal mixing (up to 20%) were observed. We tested descriptions of the non-ideal mixing for our systems by representing the volume change of mixing using Redlich-Kister (RK) polynomials in terms of mass fraction or in terms of mole fraction, with both approaches performing similarly. This study aims to evaluate the phytonutrient composition, antioxidant activity and nutraceutical potential of peels and seeds of two tomato cultivars. Levels of phytonutrients such as phenolic compounds, carotenoids, chlorophyll, salicylic acid and vitamin C were assessed. Potential in vitro antioxidant activities were evaluated. Tomato has quite interesting levels of phenolic compounds such as total phenols and flavonoids, whose contents varied from 78.41 ± 1.52 to 272.17 ± 53 mg GAE/100 g DM and 13.35 to 139.89 mg QE/100 g DM, respectively. They also contained chlorophyll, which was concentrated in the peels (39 to 78 mg/100 g DM). β-carotene and lycopene contents ranged from 4.63 to 105 mg/100 g DM and 7.51 to 32.45 mg/100 g DM, respectively. Vitamin C level was high in peels with an average content of 27.82 mg/100 g DM. Tomato by-products showed high antioxidant activity with 61% DPPH inhibition and 108.55 to 120.86 µg EAA/g with FRAP method. An experiment was conducted to find out the effects of various postharvest treatments on the biochemical and bioactive compounds of custard apple cv. Balanagar fruits. In the present experiment, three chemicals viz. oxalic acid (OA) (2.5 mM, 5.0 mM, 7.5 mM, and 10 mM; salicylic acid (SA) (0.5 mM, 1.0 mM, 1.5 mM, and 2.0 mM) and Sodium Nitro Prusside (SNP) at 0.5 mM, 1.0 mM, 1.5 mM, and 2.0 mM along with control were applied. Fruits were stored at ambient condition (Temp. 25 ± 2°C and relative humidity (RH) 44 ± 2%). Results indicated that fruits treated with SNP (2.0 mM) had significantly (p≤ 0.05) higher total soluble solids (30.80°B), titratable acidity (TA) (0.33%) and retained higher total sugar content (TS) (25.09%) at the end of the 9th day of storage. At the end of storage, the least reduction in total phenol content (TPC) (492.52 mg gallic acid equivalent (GAE)/100 g (11.62%) was found in SNP (2.0 mM) treated fruits. Likewise, SNP (2.0 mM) significantly (p≤ 0.05) retained higher ascorbic acid (AA) (43.20 mg/100 g), antioxidant activity (AOX) (0.92 µmol Trolox Equivalent (TE)/g), total flavonoids (TF) (71.49 µg CE/100 g) and tannin content (TC) (1.28 mg/g) compared to control during 9 days of storage. The quality of sweet cherry fruits decrease rapidly after harvest and in some cases does not reach the consumers properly due to the time require for transferring and market. Therefore, using chemical compounds is essential to increase durability and maintain its quality. This study was conducted to investigate the effects of arginine on postharvest quality of sweet cherry fruits. The sweet cherry fruits (Prunus avium L. cv TakDanehe Mashhad) were sprayed with arginine (0, 200, and 400 μM) one month before harvest. Fruits were harvested at commercial maturity stage according to acceptable color standards. After harvest, the fruits were transferred to the laboratory and immediately kept in cold storage with temperature of 1°C with 90–95% relative humidity (RH) for 20 days. The results showed that in treated fruits, electrolyte leakage, active oxygen production, and lipid peroxidation were decreased. The activity of antioxidant enzymes including ascorbate peroxidase, catalase, and superoxide dismutase was increased compared to control. The treated fruits with arginine 400 µM showed the highest enzymatic activity during cold storage. The percentage of chilling injury and fresh weight loss in treated fruits has decreased comparing control fruits. According to the results lowest amount of pH observed in fruits treated with arginine 400 µM. Arginine increased the amount of titratable acid, soluble solids, and vitamin C, as well the firmness of fruits. The present study aimed to investigate the effects of sugar, pectin, and processing temperature on the qualities of jam developed from pineapple (smooth cayenne). The physico-chemical, and proximate composition of pineapple fruit pulp and jam were studied and the results were reported. The jam quality depended highly on the concentration of sugars, pectin, and the processing temperature. Processing of pineapple fruit pulp into jam resulted in a substantial increase in physicochemical properties such as TSS and TA and showed some loss in the nutritional, vitamin C, and mineral composition of the products compared to fresh fruits. The processing methods showed significant effects on the phytochemical contents of the produced jam. Jam formulated with (45%) sugar, and (5%) pectin and processed at (90°C) temperature are proven as best products in terms of their nutritional composition, color, phytochemicals, and vitamin C. In conclusion, these results indicate that converting fresh pineapple into jam has an enormous potential to reduce the post-harvest loss of fresh pineapple fruits, and value-added product jam provides health-promoting compounds to human health. The aim of this study was to investigate the effects of pre-harvest gibberellic acid (GA3) and calcium chloride (CaCl2) and post-harvest modified atmosphere packaging (MAP) applications on fruit quality of sweet cherry during the cold storage. At the end of the cold storage, GA3+CaCl2 applications in MAP-applied fruit and CaCl2 in non-MAP-applied fruit significantly delayed weight loss compared to the control. During the cold storage, the decay of CaCl2-applied fruit has not been observed. At the end of cold storage, the a* and firmness values of the fruit treated with GA3 and CaCl2 were significantly higher than the control. The CaCl2-applied fruit had less soluble solids than the control, but they had significantly higher acidity compared to other applications. In MAP, GA3- and CaCl2-applied fruit had higher vitamin C and antioxidant activity values than the control fruit, but their total phenolics were higher. However, the total flavonoids of CaCl2-applied fruit were higher than the control. On fruit in non-MAP, with GA3 application, less anthocyanin was obtained compared to the control. As a result, GA3-treated fruit had a relatively lower bioactive compound content compared to the fruit of the CaCl2 and control applications both during the harvest and the cold storage. Reducing post-harvest losses and increasing the shelf life of agricultural products leads to reduced production costs. Edible coatings are used to improve fruit quality and increase the shelf-life of horticultural commodities. Therefore, this study aims to investigate the possible effect of edible coatings, including tragacanth gum (TG), Eremurus extract (EE) and tragacanth+Eremurus at 0, 7.5, 10, and 12.5 g L−1, on the fruit quality of 'Takdaneh Mashhad' sweet cherry cultivar. Fruits were immersed in the treatment solutions for 3 min and air dried. Then after weighing and labeling, they were collected in fruit baskets and transferred to a cold storage at 0 ± 1°C and 85 to 90% relative humidity. These fruits were taken out of the cold storage at the beginning of the experiment and after 15, 30, and 45 days for measuring fruit weight loss, fruit firmness, soluble solids content (SSC), pH, titratable acidity, total phenolic content, polyphenol oxidase enzyme activity, vitamin C, fruit-edible quality, fruit color, and decay index. According to the results, fruits coated with 12.5 g L−1 TG and also 12.5 g L−1 EE coatings individually showed reduction in weight loss compared to the control treatment. These two treatments increased the qualitative appearance of the fruit such as fruit firmness, color and vitamin C compared to the control fruits. All coating treatments reduced decay index. The effect of Aloe vera application (33% and 66% as dipping, AV) on 'Bluecrop' blueberry's (Vaccinium corymbosum) quality properties such as weight loss, respiration rate, fruit color, soluble solids content (SSC), acidity, phytochemical components (vitamin C, total phenolics, and total flavonoids) and antioxidant activity was investigated during the cold storage (at 0 ± 0.5°C and 90 ± 5% RH) for 28 days. During cold storage, significantly lower weight loss was recorded in fruit treated with AV compared to control. At the end of the cold storage, the weight loss was 20% lower in AV treated fruits and AV concentration was not effective in weight loss. On the contrary, the respiration rate (except for the 7th day) and fruit firmness were higher in these fruit. It was observed that color changes were less in AV-treated fruit during storage. In general, AV-treated fruit had significantly lower SSC, while acidity and vitamin C were higher. Moreover, 66% AV application was more effective in delaying the loss of vitamin C at the end of storage. During cold storage, 33% AV-treated fruit had significantly higher total phenolics (except day 28) and total flavonoids content compared to control. In the last two measurements of the cold storage, it was determined that fruit dipped in AV had higher antioxidant activity (both DPPH and FRAP assays) compared to control fruit. As a result, it was revealed that postharvest AV gel applications can be used as an effective postharvest tool to delay the loss of quality, the loss of phytochemical components and antioxidant activity of the blueberry fruit. Despite Kenya's favorable climate for both exotic and indigenous commercial guava production, neglect has limited research on the fruits' physicochemical and processing qualities. The white-fleshed, red/pink-fleshed guava, and, to a lesser extent, strawberry guavas that grow in different agroecological zones are the most common Kenyan varieties. The purpose of this study was to determine the physicochemical properties and processing qualities of the common Kenyan guava fruits. A completely randomized study design was used to profile the fruits' physicochemical composition and processing qualities. Approximately 1000kg of the red and white-fleshed guava fruits and 150 kg of strawberry guavas were procured in duplicates from randomly selected trees in farms within Taita Taveta and Kitui counties. These were pooled into respective varieties and subjected to triplicate batches for the analysis of physicochemical and processing qualities. The fruits had distinct flesh colors and sizes that varied significantly (p<0.05), with shapes ranging from oval to round to pear-shaped. The chemical composition of the fruits varied significantly (p<0.05), with a PCA biplot explaining approximately 58% of the variability due to intra (61%) and inter (39%) varietal differences. The strawberry guava's vitamin C levels were significantly (p=0.0001) lower than the red and white guavas', at 164.11±11.85, 1365.15± 50.56 and 1665.56±126.50 mg100−1g, respectively. The white-fleshed guavas, on the other hand, were low in β-carotenes (0.04±0.06 mg100−1g) in comparison to the red-fleshed (1.98±0.62mg100−1g) and strawberry guava (1.55 ± 0.30mg100−1g). The strawberry guavas had significantly (p<0.05) higher mineral and total flavonoids contents whereas the total phenolics (1649.14±329.70mgGAE100−1g) and antioxidant activities (1989.14±383.47µMTE100−1g) were significantly (p=0.048) higher in the red-fleshed guava. While strawberry production would be a processing constraint, the red-fleshed guavas had significantly (p<0.05) higher beta-carotene, phytochemicals, and minerals than the white, and therefore best suited for processing. The current study investigates the effects of humic acid concentration, its application methods as well as nitrogen ratios on the morphological, yield and biochemical characteristics of strawberry cv. Paros, during 2014–2015 in Ardabil Province, Iran. The study has been conducted within the framework of a double split plot randomized complete block design with three replications and density of 10 plants per replications. Different nitrogen levels (50, 100 and 150 kg ha−1) were examined in the main plots while application methods of humic acid (foliar and soil) and its different concentrations (0, 2, 4 and 6 kg ha−1) were considered in the subplots and sub-sub plots, respectively. The results of the analysis of variance (ANOVA) indicated that the interaction effects of different concentrations of nitrogen, humic acid and its application methods are significant on most of the measured variables at 5% probability level. Mean comparisons showed that the highest values for the leaf area, fruit yield, chlorophyll a, carotenoids and titratable acidity are associated with the combined treatments of nitrogen and humic acid with concentrations of 100 kg ha−1 and 4 kg ha−1, respectively. In three-way interactions, the highest shoot and root biomass and total chlorophyll content were obtained from the application of 100 kg ha−1nitrogen and 4 kg ha−1 foliar humic acid, while the highest nitrogen and protein contents of leaf and root were achieved upon applying 2 kg ha−1 foliar humic acid and 150 kg ha−1 nitrogen. Moreover, the highest amounts of ascorbic acid and total soluble solids were found at a concentration level of 100 kg ha−1 nitrogen along with applying 2 and 6 kg ha−1 foliar and soil humic acids, respectively. Consumer demand for higher-quality fruit juices has resulted in the development of non-thermal processing to extend the shelf life of fruit juices. Ozonation is a novel technique, involving the production of volatile oxygen atoms capable of destroying an extensive range of microorganisms and lengthening the shelf stability of fruit juices. The purpose of this research was to examine the influence of ozonation on the physicochemical, bioactive components, and microbial properties of kinnow juice. Kinnow juice was exposed to ozone gas with fixed concentration 150 mg/h for 5, 10, and 15 minutes. Then, kinnow juice was filled in a plastic bottle and kept at 4 ± 2°C for 3 months. The mentioned parameters were examined after 30 days, 60 days, and 90 days. It was found that ozonation had shown a significant influence on nutritional characteristics of kinnow juice as it increased (p ≤.05) the acidity, total soluble content, total phenolics content, flavonoids content, and antioxidant potential of kinnow juice and diminished the microbial activity, increasing ozone time from 5 to 15 minutes. OZ-15 (15 minutes of ozonation) showed the maximum value of total soluble content (14.70 ± 0.10 °Brix), titrable acidity (0.179 ± 0.10%), total flavonoid content (244.44 ± 3.70 mg equivalent of catechin/100 mL), and total antioxidant activity (305.95 ± 2.70 µg/g equivalent of ascorbic acid of juice), but it presented the least total mold counts (1.49 ± 0.02 colony forming unit/mL) and plate counts (1.53 ± 0.03 colony forming unit/mL). It was suggested that the ozonation could be used as an alternative to the traditional pasteurization and chemical preservatives on kinnow juice to retain quality characteristics. Ottelia acuminata (O. acuminata) is an edible and medicinal submerged plant endemic to southwestern China, yet there is little information available concerning its nutritional or bio-active composition. This study aimed to evaluate in detail the nutritional profile and phenolic composition of O. acuminata (inflorescence, peduncle, and leaf) and investigate a protective activity in phenolic extracts on DNA damage induced by •OH and ROO• radicals. O. acuminata was excellent sources of protein (17.7–24 g/100 g DW), TPC (11.43–19.00 mg GAE/g DW), ascorbic acid, and minerals (especially potassium, calcium, and iron). Interestingly, the protein contained a high amount of EAA with a ratio (EAA11/TAA) in the range of 47.79–50.93%, BCAA and MSG-like AA. The inflorescences and leaves of O. acuminata contained abundant UFA with a ratio of UFA/TFA more than 50%. Five phenolic compounds, with a predominance of luteolin, luteolin-7-O-glucoside and chlorogenic acid, were identified by HPLC. Phenolic extracts of O. acuminata displayed a significant protective effect on DNA damage, which effect was comparable to that of the positive control (trolox). Bilberry (Vaccinium myrtillus L.) is a medicinal fruit known for its high content of anthocyanins, flavonoids, vitamins, ascorbic acid, carotenoids, tocopherols and phenolic acid. Bilberry has long been used in oriental medicine for the prevention and treatment of various diseases, such as visual acuity, hyperglycemia, dyslipidemia, diabetes, cancer, obesity, inflammatory and cardiovascular diseases. In this study, we investigated using the antioxidant and anti-inflammatory of 70% ethanol extracts of bilberry in vitro. Antioxidant activities were measured with total phenolic, flavonoid and ascorbic acid contents. The bilberry extract (BE) showed significant free radical scavenging activities and inhibited oxidation of linoleic acid in a dose-dependent manner. BE also suppressed nitric oxide (NO) generation and reversed pro-inflammatory cytokines such as iNOS, COX-2, TNF-α and IL-6 in LPS-induced RAW 264.7 cells. From these results, we suggest that BE is a natural powerful antioxidant, and the anti-inflammatory agent being a rich source of anthocyanins. [ABSTRACT FROM AUTHOR]

L-Ascorbic acid (LAA) is considered a powerful antioxidant that protects skin from premature aging. Maintaining the stability of vitamin C remains the biggest challenge in cosmeceuticals. Our main aim is the entrapment of high dose of vitamin C in spanlastic vesicles to provide maximum stability and efficacy. LAA-loaded spanlastics were prepared by ethanol injection method and were characterized for entrapment efficiency (EE%), particles size (PS), polydispersity index (PDI), zeta potential, deformability index (DI) and in vivo skin permeation. Selected spanlastics formula composed of span 60 and tween 60 (5:1) showed highest EE% of 89.77 ± 3.61% (w/w), high deformability of 11.13 ± 1.145 as well as good physical and chemical stability for 6months. Improved drug penetration into stratum corneum (SC) was obtained from spanlastics compared to topical LAA solution. Quantitative real time PCR revealed that MMP2 and MMP9 levels were significantly suppressed in response to LAA spanlastics treated rats by 30.4% and 65.3%, respectively, when compared to the control group after exposure to UV irradiation. Results were confirmed by western blot analysis. Histopathological study of rat skin after UV irradiation revealed that application of LAA-loaded spanlastics provided the highest skin protection compared to UVB and LAA solution treated group which was evident by the normal thick epidermal morphology and the densely arranged dermal collagen fibers. This study was conducted to investigate the effects of dietary supplemental vitamin C and zinc sulfate on performance, egg quality characteristics and blood parameters of laying hens reared under cold stress condition. A total of 144 Lohmann-LSL Lite laying hens (65 weeks old) were allotted to 24 groups. Based on a 2 × 2 factorial arrangement, four corn-soybean-based diets (2750 kcal/kg ME and 14.69% CP) including two levels of vitamin C (0, 240 mg/kg) and two levels of zinc sulfate (0, 40 mg/kg) were assigned to hens with six replicate cages (n = 6) during 3-month experimental period. The data were analysed in a completely randomized design using GLM procedure of SAS. Increased egg weight (EW), egg mass (EM) and albumin weight egg and heterophil to lymphocyte ratio, and reduced FCR were observed in hens fed the zinc-included diet (P < 0.05). Supplementing the diet of laying hens, with zinc sulfate increased egg mass and improved FCR. Significant interaction between supplemental vitamin C and zinc sulfate was detected on egg Haugh unit and shell thickness, so that the best results were observed when the diet of laying hens was supplemented by 240 mg/kg vitamin C. Epigallocatechin-3-gallate (EGCG) is unstable and easily oxidized, which limits its applications. Ascorbic acid (Vc) is a natural antioxidant. The effects of EGCG combined with Vc and glycerol on stability and uric acid-lowering activity of EGCG were examined. EGCG (aqueous solution), EGCG + Vc (aqueous solution), EGCG (glycerol solution) and EGCG + Vc (glycerol solution) were prepared and incubated under different conditions in vitro. The recovery rate of EGCG was calculated by HPLC. Kunming mice were randomly divided into normal control group, model group, allopurinol (5 mg/kg), EGCG (10 mg/kg), EGCG + Vc (both 10 mg/kg), EGCG (10 mg/kg) + glycerol (60%), and EGCG (10 mg/kg) + Vc (10 mg/kg) + glycerol (60%) (n = 6). Allopurinol was injected intraperitoneally to mice, others were administered intragastrically to (2 cases) mice. All mice were continuously administrated for 7 days, once a day. EGCG recovery rates of EGCG group and EGCG + Vc + glycerol group respectively reached to 32.34 ± 1.86% and 98.90 ± 0.64% when they were incubated for 4 h at 80 °C. EGCG recovery rates reached to 91.82 ± 5.13% (incubated for 6 h at pH 8) and 88.85 ± 2.63% (incubated for 4 h in simulated intestinal fluid) when EGCG incubated with Vc and glycerol. Compared with the model group, UA values of EGCG + Vc + glycerol group reduced by 43.49% while EGCG group reduced by 25.63%. The activities of xanthine oxidase (XOD, 31.41 U/gprot) and adenosine deaminase (ADA, 10.05 U/mgprot), and the mRNA expression levels of glucose transporter 9 (GLUT9, 1.03) and urate transporter 1 (URAT1, 0.44) in EGCG + Vc + glycerol group were notably lower than those of EGCG group (38.12 U/gprot, 13.16 U/mgprot, 1.54, and 0.55). The mRNA expression levels of ATP-binding cassette superfamily G member 2 (ABCG2, 1.39) and organic anion transport 1/2 (OAT1/2, 2.34, 2.53) in EGCG + Vc + glycerol group were notably higher than those of EGCG group (0.57, 1.13, and 1.16). Our findings suggest that when EGCG used in combination with Vc and glycerol could effectively increase its biology activities and can be generalized to the broader pharmacological studies. Greenlandic traditional nutrition was an almost exclusive meat dietary pattern. Høygaard et al. stayed in East-Greenland between August 1936 and August 1937. The four members of the expedition resided in Tasisaq and recorded nutritional intake by residing in families. However, data were analysed on a household level. The aim of the present study is to reanalyse the Høygaard et al. data according to modern scientific standards. In total 21 males and 14 females participated. Median (IQR) vitamin C intake was 79 (77) mg.day−1 for males and 59 (56) mg.day−1 for females. Consumption of meat and organs from seals gave 21 mg.d−1 vitamin C, comparable to vitamin C from algae. Narwhal skin and eyes had a marginal contribution to the vitamin C consumption. The number of adults consuming algae during the research days was 67% for males and 71% for females, this was 24% and 21% for narwhal skin. The main conclusions of the present study are the important role of algae consumption in Greenlandic traditional dietary pattern to avoid scurvy, and that foods traditionally seen as important sources of vitamin C like eyes from seals and narwhal skin, played a minor role in meeting the vitamin C requirements. Background: In this study, we investigated the effects of supplementation and exercise on the expression of genes associated with inflammation like CCL2, CRP, IL1, IL6, IL10 mRNA in elderly women. Methods: Twenty four participants divided randomly into two groups were subjected to 6 weeks of the same health training program (three times per week). SUP group (supplemented, n = 12, mean age 72.8 ± 5.26 years and mean body mass 68.1 ± 8.3 kg) received 1000 mg of Vitamin C/day during the training period, while CON group (control, n = 12, mean age 72.4 ± 5.5 years and body mass 67.7 ± 7.5 kg) received placebo. Results: No significant changes in IL-1, IL-6, IL-10 and CRP mRNA were observed within and between groups. However, there was a clear tendency of a decrease in IL-6 (two-way ANOVA, significant between investigated time points) and an increase in IL-10 mRNA noted in the supplemented group. A significant decrease in CCL2 mRNA was observed only in the CON group (from 2^0.2 to 2^0.1, p = 0.01). Conclusions: It can be concluded, that 6 weeks of supplementation and exercise was too short to obtain significant changes in gene expression in leukocytes, but supplementation of 1000 mg vitamin C positively affected IL-6 and IL-10 expression – which are key changes in the adaptation to training. However, changes in body mass, IL1 and CCL2 were positive in CON group. It is possible that Vitamin C during 6 weeks of supplementation could have different effects on the expression of individual genes involved in the immune response. In plant production that produces high-value products, biostimulants are gaining more and more importance. Research hypothesis; biostimulants can contribute to the change of vitamin C content in edible potato tubers. This hypothesis was verified in a three-year field experiment. The effect of four variants of the use of biostimulators: BrownBio Gold (auxin and cytokinin), GreenOk (humic substances), Kelpak SL (Ecklonia maxima), Titanit (titanium) in tubers of three potato cultivars on the content of vitamin C. The applied biostimulants had a significant impact on the content of vitamin C. The highest increase of this component was found in tubers harvested from the plots sprayed with BrownBio Gold. Vitamin C content under the influence of biostimulants was on average 205.0 mg·kg−1 of fresh weight.
