Abstract

The article discusses a gourmet specialty known as corn smut, a type of fungus which grows on corn. Though sometimes regarded as a disease, it is edible, and prized by chefs for its distinctive flavor when sauteed. The smut grows best on heirloom, open-pollinated varieties of corn, and the efforts of local Canadian farmers to preserve and promote such specialties are described.
