Objective: To investigate the influence of different fermentation conditions on the total flavonoids content, total polyphenol content and vitro hypoglycemic activities from mulberry leaves. Method: The influence of solid-state fermentation and submerged fermentation conditiongs was investigated for the total flavonoids content and tal polyphenol content of mulberry leaf extractions, and the vitro hypoglycemic active substance screening models of α-glucosidase and α-amylase were established so as to screen the best fermentation condition. Results: The 70% ethanol extraction by submerged fermented 7 d showed the highest α-glucosidase inhibitory activity which was 92.79%; and the water extraction of non-fermentation had higher α-amylase inhibitory activity which was 63.68%than the 70%ethanol extraction by submerged fermented 7 d which was 54.81%. At the same time, they were all higher than that of acarbose when the drug concentration was 10 mg∙mL-1. Conclusion: Fermentation by eurotimcristatum can change the vitro hypoglycemic activity of extract frommulberry leaves, which povides a feasible way for the development of drugs for diabetes.
