Input parameters for decision support tools are comprised of, amongst others, knowledge of the associated factors and the extent of those associations with the animal-level feature of interest. The objective of the present study was to quantify the association between animal-level factors with primal cut yields in cattle and to understand the extent of the variability in primal cut yields independent carcass weight. The data used consisted of the weight of 14 primal carcass cuts (as well as carcass weight, conformation, and fat score) on up to 54,250 young cattle slaughtered between the years 2013 and 2017. Linear mixed models, with contemporary group of herd-sex-season of slaughter as a random effect, were used to quantify the associations between a range of model fixed effects with each primal cut separately. Fixed effects in the model were dam parity, heterosis coefficient, recombination loss, a covariate per breed representing the proportion of Angus, Belgian Blue, Charolais, Jersey, Hereford, Limousin, Simmental, and Holstein–Friesian and a three-way interaction between whether the animal was born in a dairy or beef herd, sex, and age at slaughter, with or without carcass weight as a covariate in the mixed model. The raw correlations among all cuts were all positive varying from 0.33 (between the bavette and the striploin) to 0.93 (between the topside and knuckle). The partial correlation among cuts, following adjustment for differences in carcass weight, varied from −0.36 to 0.74. Age at slaughter, sex, dam parity, and breed were all associated (P < 0.05) with the primal cut weight. Knowledge of the relationship between the individual primal cuts, and the solutions from the models developed in the study, could prove useful inputs for decision support systems to increase performance.

The objective of the present study was to quantify the genetic and non-genetic contributors to variability in both carcass dressing percentage and dressing difference (i.e., the difference between carcass weight and live weight immediately prior to slaughter) in young animals and cows. The datasets contained 18,479 young animals from 653 herds, and 2,887 cows from 665 herds. Live weight records within 7 d of slaughter and associated carcass weight were available for all animals. Association analyses were undertaken using linear mixed models with fixed effects for the model of young animals consisting of animal breed, days between the date of last recorded live weight and slaughter date, heterosis and recombination loss coefficients, dam parity, a 3-way interaction between whether the animal originated in a dairy or beef herd, animal sex, and age at slaughter, as well as a 2-way interaction between calendar year of slaughter and month of slaughter; contemporary group was included as a random effect. Fixed effects in the cow model were cow breed, the number of days between the date of last recorded live weight and slaughter date, heterosis and recombination loss coefficients, the number of days postcalving, parity of the cow, and a 2-way interaction between calendar year of slaughter and month of slaughter; contemporary group was included as a random effect. The mean dressing percentage (phenotypic standard deviation in parentheses) and dressing difference in young animals were 55.86% (3.21%) and 280.03 kg (41.44 kg), respectively. Steers had the heaviest dressing difference at 34.18 and 60.44 kg heavier than a 16-mo old bull and 22-mo old heifer, respectively. Dressing difference for 30-mo old Simmental steers (breed with heaviest dressing difference) was 41.66 kg heavier than 30-mo old Belgian Blue steers (breed with lightest dressing difference). The heritability of dressing percentage (0.48) and dressing difference (0.35) in young animals was relatively similar to each other, in contrast to dressing percentage (0.08) in cows which was considerably lower than dressing difference (0.28). Considerable genetic variability existed in dressing difference amongst young animals (genetic standard deviation of 15.03 kg), despite the near unity genetic correlation (0.93) between carcass weight and live weight. This therefore indicates that genetic selection for increased saleable product can be achieved by selecting for increased carcass weight while concurrently selecting for lighter animals although the opportunity is limited by the strong part-whole relationships that exists between carcass weight, live weight, and dressing difference.

The objective of this study was to enhance estimates of additive, dominance, and epistatic effects of marker polymorphisms on beef carcass and quality traits. Myostatin (MSTN) F94L SNP and the µ-calpain (CAPN1) 316 and 4751 SNP haplotype have previously been associated with fat and muscle traits in beef cattle. Multiyear selection in a composite population segregating these polymorphisms increased minor allele (F94L L) and chosen haplotype (CAPN1 CC and GT) frequencies to intermediate levels resulting in more precise estimates of additive and nonadditive genetic effects. During the 3 yr after selection, 176 steers were evaluated for growth, carcass, meat quality, tenderness (n = 103), and meat color traits. The statistical model included year, age of dam, age of the steer, and genotype in a random animal model. The 9 genotypes (3 CAPN1 diplotypes × 3 F94L genotypes) affected marbling score, ribeye area, adjusted fat thickness, vision yield grade (all P < 0.001), slice shear force (P = 0.03), and CIE L* reflectance (P = 0.01). Linear contrasts of the 9 genotypes estimated additive, recessive, and epistatic genetic effects. Significant additive effects of the F94L L allele decreased marbling score, adjusted fat thickness, vision yield grade, and slice shear force; and increased ribeye area and CIE L* reflectance. The homozygous F94L FF and LL genotypes differed by 1.3 to 1.9 phenotypic SD for most carcass traits and by 0.8 to 0.9 SD for slice shear force and CIE L* reflectance but carcass weight differed by only 3 kg (0.1 SD). The L allele was partially recessive to F for ribeye area (P = 0.02) and the heterozygous FL means tended to be closer to the FF genotype than the LL genotype for other carcass traits but differences from additive were not significant. The CAPN1 additive × F94L additive effect on slice shear force was the only significant epistatic estimate. The F94L L allele is prevalent in Limousin but nearly absent in other U.S. purebreds. This allele had about half of the effects on birth weight, muscle, and fat traits reported for severe MSTN mutations in Belgian Blue and Piedmontese breeds. The interaction between MSTN and CAPN1 genotypes may reflect the strong additive effects of MSTN F94L L allele on fat and muscle traits interfering with the phenotypic effect of CAPN1 genotype on meat tenderness.

The segregation of the causal mutation () in the muscular hypertrophy gene in dual-purpose Belgian Blue (dpBB) cattle is considered to result in greater calving difficulty (dystocia). Establishing adapted genetic evaluations might overcome this situation through efficient selection. However, the heterogeneity of dpBB populations at the locus implies separating the major gene and other polygenic effects in complex modeling. The use of mixed inheritance models may be an interesting option because they simultaneously assume both influences. A genetic evaluation in dpBB based on a mixed inheritance model was developed for birth and conformation traits: gestation length (GL), calving difficulty (CD), birth weight (BiW), and body conformation score (BC). A total of 27,362 animals having records were used for analyses. The total number of animals in the pedigree used to build the numerator relationship matrix was 62,617. Genotypes at the locus were available for 2,671 animals. Missing records at this locus were replaced with genotype probabilities. A total of 13,221 (48.3%) were registered as dpBB, 1,287 (4.7%) as beef Belgian Blue, and 12,854 (47.0%) were unknown. From those 13,221 dpBB animals, 650, 849, and 534 had double or single copies or no copy, respectively, of the causal mutation () in the muscular hypertrophy gene, whereas 11,188 had missing genotypes. This heterogeneity at the locus may be the reason for high variability in the studied traits, that is, high heritability estimates of 0.33, 0.30, 0.38, and 0.43 for GL, CD, BiW, and BC, respectively. In general, additive ( < 0.05) and dominance ( < 0.001) allele substitution for calves and dams had significant impact for all traits. The moderate coefficient of genetic variation (27.80%) and high direct heritability (0.28) for CD suggested genetic variability in dpBB and possible genetic improvement through selection. This variability has allowed dpBB breeders to successfully apply mass selection in the past. Genetic trend means from 1988 to 2016 showed that sire selection for CD within genotype was progressively applied by breeders. The selection intensity was more important for CD in double-muscled lines than in segregated lines. Our study illustrated the possible confusion caused by the use of major genes in selection and the importance of fitting appropriate models such as mixed inheritance models that combine polygenic and gene content information.

Muscle fiber development during gestation determines the muscle structure at birth and establishes the conditions for muscle development in growing cattle. Differences in muscle structure among beef cattle breeds and between beef and dairy cattle are obvious already shortly after birth. The objective of the study was to investigate the development of muscle fibers and muscle fiber bundle structure in semitendinosus muscle of divergent cattle breeds from 3 mo of gestation until birth. Fetuses of German Angus (GA), Galloway (GW), Belgian Blue (BB), and Holstein Friesian (HF) were harvested at 3, 4.5, 6, or 9 mo of gestation. Muscle sections were analyzed for fiber size and types as well as for bundle structure. The results confirmed that primary muscle fiber development occurs mainly during the first trimester of gestation. All fibers were initially positive for fetal fast myosin. Slow myosin as a marker for fiber maturation was detected in primary fibers at 3 mo of gestation showing a weak immunostaining. During the second trimester, the intensity of immunostaining strongly increased indicating increased slow myosin protein expression. Concurrently, the shape of primary fibers changed from myotubes to myofibers whereas the size stayed nearly constant. The main increase in muscle mass during the second trimester was caused by secondary fiber development. As an example, the ratio between secondary and primary fibers increased in Holstein Friesian fetuses from 5.9 at 4.5 mo of gestation to 21.6 at 6 mo of gestation. Primary and secondary fibers continued to growth during the third trimester. Regional differences in the density of slow muscle fibers were detected leading to greater variation within the muscle than among breeds. Structural organization of muscle fibers in muscle fiber bundles developed early in fetal life. At first, large main bundles were visible. Smaller structural units defined as primary bundles were measurable at 6 mo of gestation when most fibers were developed. The size of primary bundles nearly doubled from 6 mo of gestation to birth in all breeds. In summary, differences among breeds in the early fetal muscle fiber development were detected in contractile differentiation and partly in muscle fiber bundle structure. A prolonged secondary fiber generation and altered contractile differentiation may be involved in breed differences of postnatal muscle development.

Bovine skeletal muscle is a tissue of significant value to the beef industry and global economy. Proteomic analyses offer the opportunity to detect molecular mechanisms regulating muscle growth and intramuscular fat accumulation. The current study aimed to investigate differences in protein abundance in skeletal muscle tissue of cattle from two breeds of contrasting maturity (early vs. late maturing), adiposity, and muscle growth potential, namely, Belgian Blue (BB) × Holstein Friesian and Aberdeen Angus (AA) × Holstein Friesian. Twenty AA (n = 10) and BB (n = 10) sired steers, the progeny of sires of either high or low genetic merit, expressed as expected progeny difference for carcass weight (EPDcwt), and bred through AI, were evaluated as 4 genetic groups, BB-High, BB-Low, AA-High, and AA-Low (n = 5 per treatment). Chemical composition analysis of M. longissimus lumborum showed greater protein and moisture and decreased lipid concentrations for BB-sired compared with AA-sired steers. To investigate the effects of both sire breed and EPDcwt on M. longissimus lumborum, proteomic analysis was performed using 2-dimensional difference gel electrophoresis followed by mass spectrometry. Proteins were identified from their peptide sequences, using the National Center for Biotechnology Information (NCBI) and Swiss-prot databases. Metabolic enzymes involved in glycolysis (glycogen phosphorylase, phosphoglycerate mutase) and the citric acid cycle (aconitase 2, oxoglutarate dehydrogenase) were increased in AA- vs. BB-sired steers. Expression of proteins involved in cell structure, such as myosin light chain isoforms and troponins I and T, were also altered due to sire breed. Furthermore, heat shock protein β-1 and peroxiredoxin 6, involved in cell defense, had increased abundance in muscle of AA-sired relative to BB-sired steers. Protein abundance of glucose-6-phosphate isomerase, enolase-3, and pyruvate kinase was greater in AA-sired animals of High compared with Low EPDcwt. Changes in the expression of these proteins were supported by gene expression analysis using quantitative real-time PCR. This information will aid in our understanding of genetic infl uences controlling muscle growth and fat accumulation and could contribute to future breeding programs to increase lean tissue gain of beef cattle.

The somatotropic axis plays an important role in postnatal growth, development, and differentiation of skeletal muscle. The aim of this study was to examine the effect of sire breed and sire EPD for carcass weight (EPD(cwt)) on the expression of components of the somatotropic axis in LM of beef cattle at slaughter. Crossbred Aberdeen Angus (AA; n = 17) and Belgian Blue (BB; n = 16) steers born to Holstein-Friesian dams and sired by bulls with either high (H) or low (L) EPD(cwt) were used in the study. Thus, there were 4 genetic groups [i.e., BBH (n = 8), BBL (n = 8), AAH (n = 8), and AAL (n = 9)]. Blood samples were collected via jugular venipuncture at regular intervals for analysis of plasma concentrations of IGF-1 and insulin. Total RNA was isolated from LM collected at slaughter, and the mRNA expression of IGF-1, IGF-2, their receptors (IGF-1R; IGF-2R), 6 IGFBP, acid labile subunit (ALS), and GH receptor (GHR) was measured by real-time reverse-transcription quantitative PCR. There was no effect of either sire breed or EPD(cwt) on concentrations of circulating IGF or insulin (P > 0.05). Gene expression of IGF-1R and IGFBP3 was upregulated in AA (P < 0.001) compared with BB, whereas IGF-1 was upregulated in H compared with L animals (P < 0.01). Correlation analysis indicated moderate positive associations between gene expression of IGFBP3 and IGF-1 (r = 0.54; P < 0.001) and IGF-1R (r = 0.48; P < 0.01). In addition, correlation analysis revealed that mRNA expression of IGFBP3 was moderately negatively associated with LM area per kilogram of carcass weight (r = -0.40; P < 0.05). Greater gene expression of IGF-1 and reduced transcript abundance of IGFBP3 in muscle may have a role in increased muscle growth potential in steers during the finishing period. These data will contribute to a better understanding of the molecular control of muscle growth at a tissue level in cattle.

The objective of this study was to eval- uate the growth curves of females to determine if ma- ture size and relative rates of maturation among breeds differed. Body weight and hip height data were fitted to the nonlinear function BW = f(age) = A − Be k×age , where A is an estimate of mature BW and k determines the rate that BW or height moves from B to A. Cows represented progeny from 28 Hereford, 38 Angus, 25 Belgian Blue, 34 Brahman, 8 Boran, and 9 Tuli sires. Bulls from these breeds were mated by AI to Angus, Hereford, and MARC III composite (1/4 Angus, 1/4 Hereford, 1/4 Red Poll, and 1/4 Pinzgauer) cows to produce calves in 1992, 1993, and 1994. These matings resulted in 516 mature cows whose growth curves were subsequently evaluated. Hereford-sired cows tended to have heavier mature BW, as estimated by parameter A, than Angus- (P = 0.09) and Brahman-sired cows (P = 0.06), and were heavier than the other breeds (P < 0.001). Angus-sired cows were heavier than Bo- ran- (P < 0.001) and Tuli-sired cows (P < 0.001), and tended to be heavier than Belgian Blue-sired cows (P = 0.097). Angus-sired cows did not differ from Brah- man-sired cows (P = 0.94). Brahman-sired cows had a heavier mature BW than Boran- (P < 0.001), Tuli- (P < 0.001), and Belgian Blue-sired cows (P < 0.04). Angus-sired cows matured faster (k) than cows sired by Hereford (P = 0.03), Brahman (P < 0.001), Boran (P = 0.03), and Tuli (P < 0.001) sires, but did not differ from Belgian Blue-sired (P = 0.13) cows. Brahman- sired cows took longer to mature than Boran- (P = 0.03) or Belgian Blue-sired cows (P = 0.003). Belgian Blue-sired cows were faster maturing than Tuli-sired cows (P = 0.02). Brahman-sired cows had reached a greater proportion of their mature BW at puberty than had Hereford- (P < 0.001), Tuli- (P = 0.003), and Bel- gian Blue-sired cows (P = 0.001). Boran-sired cows tended to have reached a greater proportion of their mature BW at puberty than had Angus-sired cows (P = 0.09), and had reached a greater proportion of their mature BW at puberty than had Hereford- (P < 0.001), Tuli- (P < 0.001), and Belgian Blue-sired cows (P < 0.001). Within species of cattle, the relative range in proportion of mature BW at puberty (Bos taurus 0.56 through 0.58, and Bos indicus 0.60) was highly conserved, suggesting that proportion of mature BW is a more robust predictor of age at puberty across breeds than is absolute weight or age.

The objective of this study was to characterize breeds representing diverse biological types for birth and weaning traits in crossbred cattle. Gestation length, calving difficulty, percentage of unassisted calving, percentage of perinatal survival, percentage of survival from birth to weaning, birth weight, BW at 200 d, and ADG were measured in 2,500 calves born and 2,395 calves weaned. Calves were obtained by mating Hereford, Angus, and MARC III (one-fourth Hereford, one-fourth Angus, one-fourth Pinzgauer, and one-fourth Red Poll) mature cows to Hereford or Angus (British breed), Brahman, Tuli, Boran, and Belgian Blue sires. Calves were born during the spring seasons of 1992, 1993, and 1994. Sire breed was significant for all traits (P < 0.002). Offspring from British breeds and the Belgian Blue breed had the shortest gestation length (285 d) when compared with progeny from other sire breeds (average of 291 d). Calving difficulty was greater in offspring from Brahman sires (1.24), whereas the offspring of Tuli sires had the least amount of calving difficulty (1.00). Offspring from all sire breeds had similar perinatal survival and survival from birth to weaning (average of 97.2 and 96.2%, respectively), with the exception of offspring from Brahman sires, which had less (92.8 and 90.4%, respectively). Progeny of Brahman sires were heaviest at birth (45.7 kg), followed by offspring from British breed, Boran, and Belgian Blue sires (average of 42.4 kg). The lightest offspring at birth were from Tuli sires (38.6 kg). Progeny derived from Brahman sires were the heaviest at 200 d (246 kg), and they grew faster (1.00 kg/d) than offspring from any other group. The progeny of British breeds and the Belgian Blue breed had an intermediate BW at 200 d (238 kg) and an intermediate ADG (average of 0.98 kg/d). The progeny of Boran and Tuli sires were the lightest at 200 d (227 kg) and had the least ADG (0.93 kg/d). Male calves had a longer gestation length, had a greater incidence of calving difficulty, had greater mortality to weaning, were heavier, and grew faster than female calves. Sire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

A decision support tool for predicting subcutaneous fat depths called BeefSpecs, based on the Davis growth model (DGM), has been developed by the Cooperative Research Centre for Beef Genetic Technologies. Currently, the DGM predicts 12th-rib fat thickness (RFT, mm). To allow predictions of fat thickness at the P8 rump (P8FT, mm) site, the standard carcass fat measurement in the Australian beef industry, a relationship was developed between ultrasound RFT and P8FT in steers and heifers from temperate (Angus, Hereford, Shorthorn, and Murray Grey) and tropical (Brahman, Belmont Red, and Santa Gertrudis) breed types. Model development involved fitting various combinations of sex, breed type (BrT), BW, age, and RFT to produce 6 models. The models were challenged with data from 3 independent data sets: 1) Angus steers from 2.4 generations of divergent selection for and against residual feed intake; 2) 2 tropically adapted genotypes [Brahman and tropically adapted composites (combinations of Belmont Red, Charbray, Santa Gertrudis, Senepol, and Brahman breeds)]; and 3) a study using sires from Charolais, Limousin, Belgian Blue, and Black and Red Wagyu breeds and 3 genetic lines of Angus to create divergence in progeny in terms of genetic potential for intramuscular fat percent and retail beef yield. When challenged with data from Angus cattle, the mean biases (MB, mm) for models A to F were -1.23, -0.56, -0.56, -0.02, 0.14, and 0.04, and the root mean square errors of predictions (mm) were 1.53, 0.97, 0.97, 0.92, 0.93, and 0.91, respectively. When challenged with data from Brahman cattle, MB were 0.04, -0.22, -0.14, 0.05, -0.11, and 0.02 and root mean square errors of predictions were 1.30, 1.29, 1.27, 1.23, 1.37, and 1.29, respectively. Generally, model accuracy indicated by MB tended to be less for model E, which contained age rather than BW as a covariate. Models B and C were generally robust when challenged with data from Angus, Brahman, and Tropical Composite cattle as well as crossbred cattle with temperate sires. Model D, which did not contain age, performed the most consistently and was selected for inclusion in the DGM: P8FT, mm = -3.6 (+/-0.14) + 1.3 (+/-0.13) x sex + 0.11 (+/-0.13) x BrT + 0.014 (+/-4.8E(-4)) x BW + 0.96 (+/-0.01) x RFT - 0.73 (+/-0.08) x sex x BrT - 3.8E(-3) (+/-4.2E(-4)) x sex x BW - 0.09 (+/-0.01) x sex x RFT + 1.3E(-3) (+/-3.7E(-4)) x BrT x BW + 0.24 (+/-0.01) x BrT x RFT (adjusted R(2) = 0.86; SE = 0.013). Model D has been implemented in BeefSpecs to predict P8FT.

The objective of this study was to estimate genetic parameters for the weights of different wholesale cuts, using an experimental and a commercial data set. The experimental and commercial data sets included 413 and 635 crossbred Belgian Blue, Charolais, Limousin, Angus, Holstein, and Simmental animals, respectively. Univariate analyses using a mixed linear animal model with relationships were undertaken to estimate the heritability of cold carcass weight, carcass conformation and fat, and the cut weights, whereas a series of bivariate analyses was used to estimate the phenotypic and genetic correlations between carcass weight, carcass conformation, carcass fat, and the major primal cuts. Heritability estimates for cold carcass weight in both data sets were moderate (>0.48), whereas heritability estimates for carcass conformation and fat grading were greater in the commercial data set (>0.63) than in the experimental study (>0.33). Across both data sets, heritability estimates for wholesale cut weight in the forequarter varied from 0.03 to 0.79, whereas heritability estimates of carcass cut weight in the hindquarter varied from 0.14 to 0.86. Heritability estimates for cut weights expressed as a proportion of the entire carcass weight varied from 0.04 to 0.91. Genetic correlations were strong among the different carcass cut weights within the experimental and the commercial studies. Genetic correlations between the weights of selected carcass cuts and carcass weight were moderate to high (minimum 0.45; maximum 0.88) in both data sets. Positive genetic correlations were observed in the commercial data set between the different wholesale cut weights and carcass conformation, whereas these were positive and negative in the experimental data set. Selection for increased carcass weight will, on average, increase the weight of each cut. However, the genetic correlations were less than unity, suggesting a benefit of more direct selection on high value cuts.

The aim of this study was to investigate the effect of different breeds and breed crosses on age (AC, d), BW (kg), price (PR, $/kg), and market value (MV, $/calf) of purebred and crossbred calves sold for veal and beef production. The Kovieh wholesale cattle organization (Bolzano, Italy) grouped calves from sev- eral dairy herds located in the Trentino-Sudtirol region in Italy and sold them by public auctions. Data on AC, BW, PR, and MV from 96,458 calves were recorded from January 2003 to December 2007 and consisted of 4 pure breeds (2 dairy, Brown Swiss (BS) and Holstein- Friesian (HF); and 2 dual-purpose, Simmental (SI) and Alpine Grey (AG)), and 8 crossbreds by crosses of Limousin (LI) and Belgian Blue (BB) with the 4 dam breeds. Least squares means for AC, BW, PR, and MV were calculated for breeds and breed crosses with a model that included fixed effects of herd of birth, age (except for AC), sex, and breed of the calf, year and season of auction, and interactions between the main effects. The coefficients of determination of the mod- els were 0.41, 0.51, 0.84, and 0.82 for AC, BW, PR, and MV, respectively. Sex, age, and breed were the most relevant sources of variation for BW (P < 0.001), whereas breed and sex were the most important sources of variation for AC, PR, and MV (P < 0.001). Also, PR and MV were significantly influenced (P < 0.01) by all the effects included in the model, except for sea- son × age interaction in the case of MV. Market value of male was greater (P < 0.001) than that of female calves, with the exception of BS (−$28.76/calf) and HF (−$20.70/calf) purebred males. Dual-purpose pure- bred calves presented greater (P < 0.001) PR and MV than dairy purebreds (MV of $426.97/calf and $307.96/ calf for SI and AG, and $256.24/calf and $275.65/calf for BS and HF, respectively). Calves from SI and AG dams had greater (P < 0.001) BW, PR, and MV than calves from BS and HF dams. Calves from SI cows had greater (P < 0.001) BW, PR, and MV than calves from AG cows. Crossbreeding with beef bulls increased (P < 0.001) BW, PR, and MV of calves from dairy and dual- purpose dams. Crossbreeding with BB bulls increased PR (+$2.58 ± 0.04/kg; P < 0.001) and MV (+$190.84 ± 3.62/calf; P < 0.001) of calves much more than LI. The use of beef bull semen on dairy herds resulted in an economic revenue from selling crossbred calves.

Steers and heifers were generated from Angus (A) and Belgian Blue (BB) sires mated to Brahman x Hereford (B x H) F(1) cows to characterize their growth, carcass traits, and LM shear force. A total of 120 B x H cows purchased from 2 herds and 35 bulls (14 A and 21 BB) produced calves during the 5-yr project. After the stocker phase, a representative sample of A- and BB-sired heifers and steers were transported to the Iberia Research Station to be fed a high-concentrate diet. The remaining cattle were transported to a commercial feedlot facility. Each pen of cattle from the commercial feedlot was slaughtered when it was estimated that heifers and steers had 10 mm of fat or greater. The BB-sired calves were heavier at birth (P < 0.01) than the A-sired calves. During the feedlot phase, the A-sired calves gained more BW (P < 0.05) than the BB-sired calves. The BB-sired calves had heavier (P < 0.01) carcass weights than the A-sired calves. This was due to a combination of a heavier final BW and greater dressing percent. Because of their greater muscling and reduced (P < 0.01) fat, carcasses from BB-sired calves had greater yield (P < 0.01) compared with carcasses from A-sired calves. Carcasses from A-sired calves had a greater (P < 0.01) marbling score and greater (P < 0.01) USDA quality grade than carcasses from BB-sired calves. Tenderness, as measured by shear force of the steaks aged for 7 d, was similar for A- and BB-sired calves. However, steaks aged for 14 d from the A-sired calves had a reduced shear force (P < 0.01) compared with steaks from the BB-sired calves. Steer calves were heavier (P < 0.01) at birth and weaning, and had more total BW gain in the feedlot, which resulted in a heavier final BW and HCW compared with the heifers. Steer carcasses also had greater marbling scores and quality grades, whereas the heifer carcasses had larger LM area per 100 kg of carcass weight. In conclusion, the BB-sired calves had heavier carcass weights and greater cutability, whereas the A-sired calves had a greater degree of marbling and greater quality grade, and steaks from carcasses of A-sired calves were more tender as measured by shear force at 14 d.

The objective of this study was to detect QTL associated with the incidence of multiple patho- genic diseases in offspring from half-sib bovine families. Four F1 sires were used to produce offspring: Brahman × Hereford (BH; n = 547), Piedmontese × Angus (PA; n = 209), Brahman × Angus (n = 176), and Belgian Blue × MARC III (n = 246). Treatment records for bovine respiratory disease, infectious keratoconjunctivitis (pinkeye), and infectious pododermatitis (footrot) were available for all of the offspring from birth to slaughter. The incidences of these 3 microbial pathogenic diseases were combined into a single binary trait to represent an overall pathogenic disease incidence. Offspring di- agnosed and treated for 1 or more of the previously mentioned pathogenic diseases were coded as a 1 for affected. Cattle with no treatment record were coded as 0 for healthy. A putative QTL for pathogenic disease incidence was detected in the family derived from the BH sire at the genome-wise suggestive level. This was supported by evidence, in the same chromosomal re- gion, of a similar QTL in the family derived from the PA sire. The maximum F-statistic (F = 13.52; P = 0.0003) was located at cM 18. The support interval of the QTL spanned from cM 9 to 28. Further studies should ex- plore this QTL by using other bovine populations to further confirm the QTL and refine the QTL support interval. Offspring inheriting the Hereford allele, in the family from the BH sire, and the Angus allele, in the family from the PA sire, were less susceptible to incidence of pathogenic diseases, when compared with those inheriting the Brahman allele and Piedmontese allele, from the BH and PA sires, respectively.

Transportation causes stress in cattle that may alter numerous physiological variables with a negative impact on production and health. The objectives of the current study were to investigate the physiological effects of truck transportation and to characterize a pattern of phenotypes in the circulation that may aid in the early identification of stress-susceptible animals that often succumb to severe respiratory disease. Thirty-six young beef bulls (Aberdeen Angus, n = 12; Friesian, n = 12; and Belgian Blue x Friesian, n = 12) were subjected to a 9-h truck transportation by road. Blood (10 mL) was collected at -24, 0, 4.5, 9.75, 14.25, 24, and 48 h relative to the initiation of transportation (0 h). Plasma was collected for the assay of various metabolic, inflammatory, and steroid variables, and total leukocyte counts were determined in whole blood at each time point. Body weight and rectal temperature were recorded at -24, 9.75, and 48 h. Transportation decreased measures of protein metabolism in the plasma, including albumin (P = 0.002), globulin (P < 0.001), urea (P = 0.006), and total protein (P < 0.001), and increased creatine kinase (P < 0.001). The energy substrate beta-hydroxybutyrate was not changed (P = 0.27). Acute phase proteins haptoglobin and fibrinogen were both decreased (P < 0.001), whereas total leukocyte counts were elevated (P = 0.002). Circulating steroid concentrations were altered, because a classical acute increase in plasma cortisol was observed with the onset of transit (P < 0.001), in association with a decrease in dehydroepiandrosterone (P = 0.07), resulting in a profound increase in cortisol:dehydroepiandrosterone ratio (P < 0.001). Plasma testosterone was decreased, whereas plasma progesterone was increased (P < 0.001) in association with the increase in cortisol (P < 0.001). There was also an effect of breed for all variables except plasma urea, creatine kinase, and testosterone, perhaps indicating that a genetic component contributed to the physiological response to transportation stress, although without any clear trend. Taken together, this profile of physiological variables in the circulation of transportation-stressed bulls may aid in the future detection of disease-susceptible cattle after transportation. Further research to validate these potential biomarkers is necessary.

Accuracy and bias of EBV are important measures of the quality of genetic evaluations. A sampling method that accounts for the uncertainty in the estimation of genetic group effects was used to calculate accuracy and bias of estimated effects. The method works by repeatedly simulating phenotypes for multiple traits for a defined data and pedigree structure. These simulated values are analyzed using BLUP with genetic groups in the relationship matrix. Accuracies and biases are then calculated as correlations among and differences between true and estimated values across all replicates, respectively. The method was applied to the Irish beef production data set for 15 traits and with 15 genetic groups to account for differences in breed means. Accuracy and bias of estimated genetic group effects, estimated comparisons between genetic group effects, EBV within genetic group, and EBV across genetic group were calculated. Small biases were detected for most estimated genetic group effects and most estimated comparisons between genetic group effects. Most of these were not important relative to the phenotypic SD of the traits involved. For example, a bias of 0.78% of the phenotypic SD was detected for carcass conformation in Aberdeen Angus. However, one trait, calf quality, which had few performance records in the data set, displayed larger bias, ranging from -10.31 to 5.85% of the phenotypic SD across the different estimated genetic group effects. Large differences were observed in the accuracies of genetic group effects, ranging from 0.02 for feed intake in Holstein, which had no data recorded, to >0.97 for carcass conformation, a trait with large amounts of data recorded in the different genetic groups. Large differences were also observed in the accuracies of the comparisons among genetic group effects. The accuracies of the EBV within genetic group and EBV across genetic group were sometimes different; for example, carcass conformation in Belgian Blue had an average accuracy within genetic group of 0.69 compared with an average accuracy across genetic group of 0.89. This suggests that the accuracy of genetic groups should be taken into account when publishing EBV across genetic groups.

Two trials were conducted to evaluate the effect of rumen-degradable protein balance (OEB) deficit on voluntary intake (trial 1), microbial protein synthesis, and N metabolism (trial 2) in growing double-muscled Belgian Blue bulls. In trial 1, six bulls (339 +/- 26 kg of initial BW) were used in a replicated 3 x 3 Latin square and received a diet of 60% corn silage and 40% concentrate with ad libitum intake (DM basis). Three concentrates were formulated by adding urea at the expense of barley to give similar dietary contents of intestinal digestible proteins, NE for fattening, and fermentable OM, but with different levels of OEB. Thus, 2 levels of OEB deficit (-23.7 and -9.2 g of OEB/kg of DM) were compared with a diet providing a slight OEB surplus (5.3 g of OEB/kg of DM). Voluntary DMI decreased linearly (P = 0.02) with decreasing rumen-degradable protein balance. This decrease in intake could explain the linear decrease in ADG observed when negative OEB diets were fed. In trial 2, six bulls (304 +/- 12 kg of initial BW) with cannulas in the rumen and proximal duodenum were used in a replicated 3 x 3 Latin square and fed diets similar to those used in trial 1 at an intake level of 85 g of DM/kg of BW(0.75). Diurnal variations of ruminal NH(3)-N and plasma urea-N concentrations were greatly influenced by the level of OEB in the diet. No differences in NDF and starch degradation in the rumen, microbial N flow at the duodenum, or efficiency of microbial protein synthesis in the rumen were noted among the levels of OEB in diets. The reductions of the OEB value from 5.3 g/kg of DM to -9.2 g/ kg of DM and -23.7 g/kg of DM were associated with reductions of 26.5 and 48.8% in urinary N output. Absolute amounts of N retained by the bulls increased significantly with the level of OEB in diets. Indeed, 51.4% of the incremental supply of N was excreted between -23.7 and -9.2 g of OEB/kg of DM diets, and 74.6% of the incremental supply of N was excreted between -9.2 and 5.3 g of OEB/kg of DM diets. Feeding diets characterized by an adequate intestinal digestible protein supply and a OEB close to -10 g of OEB/kg of DM could be a feeding strategy to reduce N losses from the farm with little effect on the animal performance and voluntary intake. Reduced OEB may reduce N excretion in the environment but may also result in decreased N retention.

The objective of this study was to investigate the changes in muscle fiber bundles of cattle of different breeds during growth. Different numbers of muscle fibers are surrounded by connective tissue to form bundles macroscopically visible as meat fibers or meat grain, a common meat quality trait. To determine the influence of breed and age on morphological characteristics of muscle fiber bundles, 4 cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus, a typical beef cattle; Galloway, a smaller beef type; Holstein Friesian, a dairy type; and double-muscled Belgian Blue, an extreme type for muscle growth, were used. Between 5 and 15 bulls of each breed were slaughtered at 2, 4, 6, 12, or 24 mo of age, and slices of semitendinosus muscle were removed. Muscle structure characteristics were determined by computerized image analysis. During growth, the muscle cross-sectional area enlarged (P or = 0.15) in bulls of German Angus and Galloway in all age groups and was doubled (P 0.05) during growth. This supports the existing view that the structure of the muscle is already fixed in prenatal life. The double-muscled Belgian Blue bulls showed a more than 2.5-fold greater (P < 0.001) number of muscle fibers per primary bundle compared with the other breeds investigated. The larger muscle fiber bundles led to a smaller amount of connective tissue per muscle area in double-muscled cattle. The coarser grain of meat in double-muscled Belgian Blue bulls and in older animals was not related to greater shear force values.

The objective of this study was to investigate the growth- and breed-related changes of marbling characteristics in cattle. Four cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus, as a typical beef cattle; Galloway, as a smaller, environmentally resistant beef cattle; Holstein-Friesian, as a dairy-type cattle; and double-muscled Belgian Blue, as an extreme type for muscle growth, were used. These 4 breeds were expected to have differences in muscle development and i.m. fat deposition. Between 5 and 15 bulls of each breed were slaughtered at 2, 4, 6, 12, or 24 mo of age. Marbling characteristics were determined and classified in LM and semitendinosus muscle by computerized image analysis. Among breeds, differences appeared in the quantity, structure, and distribution of the marbling flecks in both muscles. The deposition of fat in the double-muscled Belgian Blue bulls remained substantially inferior to that of the other breeds, up to the age of 24 mo. Marbling in German Angus bulls particularly showed larger (P < 0.05) marbling fleck areas. Galloway cattle had the greatest (P < 0.05) number and the most regular (P < 0.05) distribution of the marbling flecks in young animals. Furthermore, for marbling characteristics in Holstein-Friesian animals, a great number and slightly finer structure were observed compared with the other breeds investigated. Postnatal growth-related changes of marbling in LM were characterized by as much as a 40-fold increase in the number of marbling flecks from 2 to 24 mo of age but also by up to a 4-fold enlargement in the area of the marbling flecks. The structure of marbling flecks was determined by 2 development trends. On the one hand, the marbling flecks became larger (P < 0.05), and the structure became coarser, which was reflected by an increasing (P < 0.01) proportion of long marbling flecks as well as an increasing (P < 0.01) maximum skeleton line length. On the other hand, continually new small, round marbling flecks appeared. This caused a decrease (P < 0.01) in the proportion of the 3 largest marbling fleck areas. The distribution of the marbling flecks became more regular (P < 0.05) with increasing proportion and number of marbling flecks. The results suggest that hyperplasia of adipocytes plays an important role in marbling during growth of muscle in cattle.

Seven double-muscled Belgian Blue bulls (initial BW: 341 ± 21 kg) with cannulas in the rumen and proximal duodenum were used in an incom- plete replicated Latin square. The study examined the effect of imbalance between energy and N in the rumen on microbial protein synthesis and N metabolism by giving the same diet according to 3 different feeding patterns. The feed ingredients of the diet were sepa- rated into 2 groups supplying the same amount of fer- mentable OM (FOM) but characterized by different lev- els of ruminally degradable N (RDN). The first group primarily provided energy for the ruminal microbes (12.5 g of RDN/kg of FOM), whereas the second provided greater N (33.3 g of RDN/kg of FOM). These 2 groups were fed to the bulls in different combinations with the aim of creating 3 levels of imbalance (0, 20, and 40 g/ kg of DM) between energy and N supplies in the rumen. Imbalance was measured by the variation of the degrad- able protein balance (OEB value in the Dutch system) of the diet between the 2 meals each a day. Diurnal variations in ruminal NH3-N concentrations and plasma urea concentrations were greatly influenced by the feeding patterns of the diet. Introduction of imbal

The objective of this study was to investigate a potential association of an inactive myostatin allele with early calf mortality, and evaluate its effect on growth and carcass traits in a crossbred population. Animals were obtained by mating F1 cows to F1 (Belgian Blue x British Breed) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC III (1/4 Hereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford, Angus, Tuli, Boran, Brahman, or Belgian Blue sires. Belgian Blue was the source of the inactive myostatin allele. Myostatin genotypes were determined for all animals including those that died before weaning. Early calf mortality was examined in the F2 subpopulation (n = 154), derived from the F1 sires mated to F1 cows from Belgian Blue sires, to evaluate animals with zero, one, or two copies of inactive myostatin allele. An overall 1:2:1 ratio (homozygous active myostatin allele:heterozygous:homozygous inactive myostatin allele) was observed in the population; however, a comparison between calves dying before weaning and those alive at slaughter showed an unequal distribution across genotypes (P < 0.01). Calves with two copies of the inactive allele were more likely (P < 0.01) to die before weaning. Postweaning growth traits were evaluated in the surviving animals (n = 1,370), including birth, weaning, and live weight at slaughter, and postweaning ADG. Carcass composition traits analyzed were hot carcass weight, fat thickness, LM area, marbling score, USDA yield grade, estimated kidney, pelvic, and heart fat, retail product yield and weight, fat yield and weight, bone yield and weight, and percentage of carcasses classified as Choice. Charolais lack the inactive myostatin allele segregating in Belgian Blue; thus, in the population sired by Charolais (n = 645), only animals with zero or one copy of the inactive myostatin allele were evaluated. Animals carrying one copy were heavier at birth and at weaning, and their carcasses were leaner and more muscled. In the population sired by Belgian Blue x British Breed (n = 725), animals with two copies of inactive myostatin allele were heavier at birth, leaner, and had a higher proportion of muscle mass than animals with zero or one copies. Heterozygous animals were heaviest at weaning and had the highest live weight, whereas animals with zero copies had the highest fat content. The use of the inactive myostatin allele is an option to increase retail product yield, but considerations of conditions at calving are important to prevent mortality.

Postweaning growth, feed efficiency, and carcass traits were analyzed on 1,422 animals obtained by mating F1 cows to F1 (Belgian Blue x British breeds) or Charolais sires. Cows were obtained from mating Hereford, Angus, and MARC IIIHereford, 1/4 Angus, 1/4 Pinzgauer, and 1/4 Red Poll) dams to Hereford or Angus (British breeds), Tuli, Boran, Brahman, or Belgian Blue sires. Breed groups were fed in replicated pens and slaughtered serially in each of 2 yr. Postweaning average daily gain; live weight; hot carcass weight; fat depth; longissimus area; estimated kidney, pelvic, and heart fat (percentage); percentage Choice; marbling score; USDA yield grade; retail product yield (percentage); retail product weight; fat yield (percentage); fat weight; bone yield (percentage); and bone weight were analyzed in this population. Quadratic regressions of pen mean weight on days fed and of cumulative ME consumption on days fed were used to estimate gain, ME consumption and efficiency (Mcal of ME/kg of gain) over time (0 to 200 d on feed), and weight (300 to 550 kg) intervals. Maternal grandsire breed was significant (P < 0.01) for all traits. Maternal granddam breed (Hereford, Angus, or MARC III)was significant (P < 0.05) only for fat depth, USDA yield grade, retail product yield, fat yield, fat weight, and bone yield. Sire breed was significant (P < 0.05) for live weight, hot carcass weight, longissimus area, and bone weight. Sex class was a significant (P < 0.001) source of variation for all traits except for percentage Choice, marbling score, retail product yield, and fat yield. Interactions between maternal grandsire and sire breed were nonexistent. Sire and grandsire breed effects can be optimized by selection and use of appropriate crossbreeding systems.

For 1,442 Belgian Blue bulls performance-tested at the Centre de Sélection de la Race Blanc-Bleue Belge, nine traits were observed: height at withers at 7 mo, height at withers at 13 mo, weight at 7 mo, weight at 13 mo, average feed consumption of concentrates, average daily gain, average feed consumption of concentrates per average daily gain, average feed consumption of concentrates per mean metabolic weight, and price per kilogram of live weight. This price is based on muscle conformation and is therefore used as muscle conformation score. Restricted maximum likelihood with a derivative-free algorithm was used to estimate (co)variance components because there were different models and missing values per trait. Estimates of heritabilities were above .50 except for average feed consumption per average daily gain (.16) and average feed consumption per mean metabolic weight (.33). Estimates of genetic and phenotypic correlations between height at withers and weight traits were positive and moderate to high. Average daily gain showed a negative genetic correlation with weight at 7 mo (-.68) but had positive correlations with height at withers at 13 mo and weight at 13 mo (.22 and .43). Muscle conformation expressed as price per kilogram of live weight was related to low average feed consumption per average daily gain. Average feed consumption showed high correlations with weight at 7 mo and weight at 13 mo. Average feed consumption per average daily gain had a high negative genetic correlation with average daily gain (-.89).

Double-muscled fetuses develop more muscle fibers than normal-muscled fetuses. To exam- ine whether serum growth factors modulate muscle development in cattle, twin pregnancies were induced in eight Holstein heifers using embryos from Belgian Blue and Holstein genetics representing heavy (HM) and light (LM) muscled cattle, respectively. Twin combinations were 1) two pairs of Belgian Blue fetuses that were designated as HM (HM), 2) two pairs of Holstein fetuses that were designated as LM (LM), and 3 ) four pairs of mixed fetuses; the four Holstein fetuses were designated as LM (HM) and the four Belgian Blue fetuses were designated as HM (LM). Pregnancies were terminated at 175 rf: 5 d after conception and fetuses, with evidence of vascular anastomosis, were dissected. Carcass weights were greatest (P HM (LM) > LM (HM) = LM ( LM) ( P HM (HM) > LM (HMI = LM (LM) (P < .05). These data show that the presence of a co-twinned fetus with a lower genetic propensity for muscle development reduces the capacity of heavily muscled fetuses to develop muscle mass by 175 d after conception and strongly support the idea that blood-borne factors regulate muscle hypertrophy in fetal cattle.

Growth and testicular development between 7 and 15 mo of age were evaluated in bulls produced by mating sires of six breeds (Hereford, Angus, Belgian Blue, Brahman, Boran, and Tuli) to Angus, Hereford, and MARC III (four-breed composite) cows. At 12 mo of age, Angus- and Hereford-sired bulls had the heaviest body weight (P < 0.08 to 0.001), whereas Brahman- and Belgian Blue-sired bulls were intermediate, and Boran- and Tuli-sired bulls weighed the least. Bulls sired by European breeds grew more rapidly after weaning (P < 0.01) than did Brahman-, Boran-, and Tuli-sired bulls, and these differences in growth rate were maintained through 15 mo of age, indicating that offspring of heat-adapted sire breeds (Brahman, Boran, and Tuli) have lower postweaning rates of gain, particularly during winter months, than do offspring of nonheat adapted sire breeds. Testis size was smaller initially (P < 0.01) and remained smaller in offspring of heat-adapted sire breeds through yearling age. By 15 mo of age, testis size was largest (P < 0.06 to 0.001) in Angus-sired bulls and had become similar among Hereford-, Brahman-, Boran- and Belgian Blue-sired bulls but remained smaller (P < 0.02 to 0.001) in Tuli-sired bulls. Thus, offspring of heat-adapted sire breeds had delayed testicular development compared with that of nonheat adapted sire breeds, particularly through yearling age. At puberty, Angus-sired bulls were 23 to 82 d younger (P < 0.05 to 0.001) than all other sire breeds except Hereford, and Brahman-sired bulls were older at puberty (P < 0.05 to 0.001) than were bulls of all other sire breeds except Boran. Testis size at puberty was quite similar among breeds of bulls (scrotal circumference = 27.9 +/- 0.1 cm) despite large breed differences in age, body weight, and hip height. Thus, measurement of yearling testis size was a reliable indicator of age at puberty among widely divergent breeds of bulls. In addition, the lower postweaning rates of gain and the smaller and slower testicular development in offspring of heat-adapted sire breeds should be noted by cattle producers considering use of such breeds in crossbreeding and breed improvement programs.

The objective of this study was to investigate the growth- and breed-related changes of muscle fiber characteristics in cattle and their importance to meat quality. Four cattle breeds with different growth impetus and muscularity were reared and slaughtered under experimental conditions. German Angus as a beef type, Galloway as a hardy type, Holstein Friesian as a dairy type, and double-muscled Belgian Blue as an extreme type for muscle growth were used. Between 5 and 17 bulls of each breed were slaughtered at 0, 2, 4, 6, 12, 18, and 24 mo of age. Muscle fiber traits were determined and classified by computerized image analysis, and several measures of meat quality were also determined, including shear force value, meat color, and i.m. fat content. The postnatal growth of semitendinosus muscle in cattle was characterized by a nearly 10-fold increase of muscle fiber area from birth to 24 mo of age. In the first few months after birth, a transformation of type IIA fibers into IIB fibers was found, whereas type I fibers were nearly unaffected by age. The apparent total muscle fiber number of semitendinosus muscle did not increase during postnatal life. These results confirm that the fiber number is determined in embryonic development. Throughout the study, the double-muscled Belgian Blue (BBDM) bulls had almost twice the fiber number of the other breeds, emphasizing a more extensive hyperplasia of muscle fibers during embryonic development in BBDM compared with the other three breeds. The apparent number of type I fibers was, however, not affected by breed, which suggests that the additional fibers found in BBDM postnatally were type IIB and IIA fibers. We did not find significant differences in muscle fiber total number, muscle fiber type frequencies, or meat quality characteristics among breeds, with the exception of BBDM. Having pooled the four breeds, paler meat was related to a higher frequency of type IIB fibers, a lower area of type IIA and type I fiber, and a higher total muscle fiber number. These findings based on data of double muscling give us some hints for biological causes for the variation of meat quality. Further investigation, in particular within each breed, is necessary to identify the superior fiber traits for bovine meat production.

The three-step technique was used to determine the requirements of total amino acids (TAA) and the first-limiting amino acid (AA) in growing double-muscled Belgian Blue bulls (BBb). In Exp. 1, three double-muscled BBb weighing initially 306 +/- 28 kg received a basal diet consisting of 30% meadow hay and 70% concentrate that was poor in digestible protein but had adequate NE because of continuous infusion of dextrose into the duodenum. The intestinal apparent digestibility of essential AA (EAA) was defined according to their duodenal and ileal flows. It averaged 72% but varied between 60% for Met and 79% for Arg. In Exp. 2, five double-muscled BBb (334 +/- 22 kg) received the same diet supplemented with duodenal infusions of dextrose and four doses of Na-caseinate (28, 56, 84, and 112% of intestinal digestible dietary AA) in a 4 x 4 Latin square design with one additional animal. Nitrogen retention for the basal diet alone and the four increasing supplements of Na-caseinate reached 49, 61, 70, 80, and 86 g/d, respectively. Nitrogen utilization improved from 34.3% without Na-caseinate supplementation to a maximum of 40.6%, with the third dose supplying 788 g/d of apparently digestible AA. Based on patterns of plasma concentrations, Met, Phe, and Arg were probably the limiting AA when animals optimized N utilization. In Exp. 3, six double-muscled BBb (315 +/- 25 kg) fed the basal diet received duodenal infusions of dextrose and AA, equivalent to the third dose in Exp. 2, except for digestible Met (9.3, 14.4, 18.4, 22.4, 26.4, and 30.4 g/d) in a 6 x 6 Latin square design. The Met requirement was close to 26.4 g/d on the basis of N retention.

We evaluated heifers crossbred from seven breeds of sires (Hereford, Angus, Belgian Blue, Piedmontese, Brahman, Boran, and Tuli) and three breeds of dams (Angus, Hereford, and MARC III [four-breed composite]). Heifers were mated to Red Poll sires to calve at 2 yr of age. Heifers were placed in two treatments from weaning to breeding and raised on a high nutrition level (15.8 Mcal ME/d) or on 80% of the high nutrition level (12.6 Mcal ME/d). Breeds differed in the age of the heifers at parturition (P = .03). Birth weights of calves differed by maternal grandsire (P < .001) but not by heifer treatment (P = .91) or maternal grandam (P = .19). Heifers differed in their postpartum interval to estrus by sire breed (P = .001). Calf age at weaning (P = .02), calf ADG (P < .001), and 205-d weight (P < .001) differed between breeds of maternal grandsires. Milk production from 50 to 200 d of lactation was greatest for heifers of Belgian Blue (1,070 +/- 30 kg) and Brahman (1,029 +/- 38 kg) sires. Milk production did not differ with treatment group (P = .84). This study suggests that over a diverse group of breeds, accelerated rates of gain during the postweaning period within the ranges of this study do not result in increased production efficiency of the cows.

A locus near the centromere of bovine chromosome 2 is responsible for muscle hypertrophy (mh) in cattle. The objectives of this study were to refine the genomic region in which the locus resides and to assess the effects of a single copy of the mh allele on carcass and birth traits. Two half-sib families were developed using a Belgian Blue x MARC III (n = 246) or a Piedmontese x Angus (n = 209) sire. Traits analyzed were calving ease (CE), birth weight (BWT, kg), longissimus rib eye area (REA), retail product yield (RPYD), USDA yield grade (YG), marbling (MAR), fat thickness (FAT), estimated kidney, pelvic, and heart fat (KPH), and longissimus tenderness measured as Warner-Bratzler shear force at 3 (S3) and 14 (S14) d postmortem. Six microsatellites were used to determine the presence or absence of the mh allele and to confirm the location of the locus affecting the traits, which was assessed to be 4 cM from the beginning of the linkage group, with the 95% confidence interval between 2 and 6 cM. Cattle with an mh allele had increased (P.01) REA, RPYD, and BWT and decreased MAR, YG, FAT, and KPH, compared with those without the allele. The effects of the mh allele (mh/+ vs +/+) were 1.35, 1.6, .41, -1.01, -1.42, -.84, and -.86 residual standard deviations, respectively. There were no effects (P.10) for CE, S3, and S14. Allelic differences due to the mh locus were similar for both sources (Belgian Blue or Piedmontese). Individuals inheriting a single mh allele had a leaner, more heavily muscled carcass compared with those inheriting the alternative allele. Thus, mating schemes that maximize production of mh/+ genotypes provide a viable approach for improving carcass composition.

Heifers produced from sires of seven breeds (Hereford, Angus, Belgian Blue, Piedmontese, Brahman, Boran, and Tuli) and Angus, Hereford, and MARC III (four-breed composite) cows were evalu- ated. Weaned heifers were placed in three treatment groups of moderate nutrition (15.8 Mcal ME/d), 80% of moderate nutrition (12.6 Mcal ME/d), or fed as a mixed-breed group (16.3 Mcal ME/d). Average daily gain (ADG) from 228 d of age through breeding was measured. There was a sire breed × group interaction ( P < .0001) for ADG in the drylot. Sire breeds differed in their 365-d BW ( P < .0001), and 365-d BW of heifers in the low group (315 ± 4 kg) were lighter ( P < .0001) than those of heifers in the high group (346 ± 4 kg). During breeding, heifers that had been in the low group in the drylot had a higher ADG (.58 ± .02 kg/d) than heifers in the high group (.39 ± .03 kg/d). Age of heifers at puberty did not differ ( P = .06) between the low (362 ± 5 d) and high groups (357 ± 5 d). Heifers from MARC III (358 ± 5 d) and Angus (358 ± 6d ) dams reached puberty at a younger age than did heifers with Hereford dams (380 ± 9 d). Age at which puberty was expressed differed with sire breed ( P < .001). The proportion of heifers that were pregnant at palpation (.90) did not differ between sire breeds ( P = .24), dam breeds ( P = .40), or group ( P = .56). Breed differences in postweaning ADG and in the manner in which the population expresses puberty allow for selection of breed types that will optimize cow herd performance.

Carcass (n = 854) and longissimus thoracis palatability (n = 802) traits from F 1 steers obtained from mating Hereford, Angus, and MARC III cows to Hereford or Angus (HA), Tuli (Tu), Boran (Bo), Brahman (Br), Piedmontese (Pm), or Belgian Blue (BB) sires were compared. Data were adjusted to constant age (444 d), carcass weight (333 kg), fat thickness (1.0 cm), fat trim percentage (21%), and marbling (Small 00 ) end points. Results presented in this abstract are for age-constant data. Carcasses from BB- and HA-sired steers were heaviest (P < 0.05) and carcasses from Bo- and Tu-sired steers were lightest (P < 0.05). Adjusted fat thickness was greatest (P < 0.05) on carcasses from HA-sired steers and least (P < 0.05) on carcasses from BB-and Pm-sired steers. Numerical USDA yield grades were lowest (P < 0.05) for carcasses from Pm- and BB-sired steers and highest (P < 0.05) for carcasses from HA- and Br-sired steers. Marbling scores were highest (P < 0.05) for carcasses from HA- and Tu-sired steers and lowest (P < 0.05) for carcasses from Br-, BB-, and Pm-sired steers. Longissimus thoracis from carcasses of HA-, Pm-, and Tu-sired steers had the lowest (P < 0.05) 14-d postmortem Warner-Bratzler shear force values. Carcasses from HA-sired steers had longissimus thoracis with the highest (P < 0.05) tenderness ratings at 7 d postmortem. Longissimus thoracis from carcasses of Br- and Bo-sired steers had the highest (P < 0.05) Warner-Bratzler shear forces and the lowest (P < 0.05) tenderness ratings at 7 d postmortem. Adjustment of traits to various slaughter end points resulted in some changes in sire breed differences for carcass traits but had little effect on palatability traits. Carcasses from BB- and Pm-sired steers provided the most desirable combination of yield grade and longissimus palatability, but carcasses from HA-cross steers provided the most desirable combination of quality grade and longissimus palatability. Tuli, a breed shown to be heat-tolerant, had longissimus tenderness similar to that of the non-heat-tolerant breeds and more tender longissimus than the heat-tolerant breeds in this study.

Six Holstein (light-muscled type) and six Belgian Blue bulls (double-muscled type) were fed a finishing diet. Average daily gain was 1.36 kg for the Holstein bulls vs 1.24 kg for the Belgian Blue bulls (P less than .05). Holstein bulls consumed more feed (2.3 vs 1.8 kg/100 kg body weight, P less than .001) than the Belgian Blue bulls. The dressing percentage (55.4 vs 65.8%, P less than .001) and the proportion of muscle (56.1 vs 71.3%, P less than .001) in the carcass were less, whereas the proportions of adipose tissue (28.3 vs 15.4%, P less than .001) and bone (15.7 vs 13.4%, P less than .05) were higher in the Holstein bulls. Plasma creatinine determined in samples obtained once a week was lower (11.0 vs 20.3 mg/liter, P less than .001) in the Holstein bulls. In contrast, Holstein bulls tended to produce more triiodothyronine (2.3 vs 1.8 nM, P less than .10), tetraiodothyronine (71.9 vs 54.7 nM, P less than .10) and insulin-like growth factor I (IGF-I; 340 vs 205 ng/ml, P less than .20) than the Belgian Blue bulls. Growth hormone, insulin, IGF-I and testosterone were measured at 20-min intervals during two 24-h periods. In wk 6, Holstein bulls tended to produce more growth hormone than the Belgian Blues, as indicated by higher total peak area (3,185 vs 2,431 ng), peak amplitude (34.1 vs 22.6 ng/ml, P less than .10) and baseline (4.6 vs 3.3 ng/ml, P less than .20).
