This study evaluates the antimicrobial efficacy of chitosan nanoparticles (CNPs), varying in size, against clinical isolates of Mycobacterium tuberculosis (MTB), E. coli, S. aureus, E. faecalis, and C. albicans, as well as the antimicrobial effects of aqueous extracts and lyophilized powders of Allium (garlic) species. CNPs were synthesized through ionotropic gelation and characterized by Z potential, hydrodynamic diameter (dynamic light scattering, DLS), and SEM. Aqueous garlic extracts were prepared via decoction. We assessed antimicrobial activity using disk diffusion and broth microdilution methods; in addition, a modified agar proportion method in blood agar was used for antimicrobial activity against MTB. CNPs inhibited MTB growth at 300 μg for 116.6 nm particles and 400 μg for 364.4 nm particles. The highest antimicrobial activity was observed against E. faecalis with nanoparticles between 200 and 280 nm. Allium sativum extract produced inhibition for C. albicans at 100 μg. The results indicate that CNPs possess significant antimicrobial properties against a range of pathogens, including MTB, at high concentrations. On the other hand, aqueous Allium sativum extracts exhibited antimicrobial activity. Nonetheless, due to their instability in solution, the use of lyophilized Allium sativum powder is preferable.

The health properties of garlic (Allium sativum L.) are attributed to thiosulfinates, flavonoids, phenols, and bioactive polysaccharides. These compounds, however, can degrade during processing methods. As hot air-drying is a commonly used preservation method due to its relatively simple operation, this study investigated the effects of garlic slices dried at various temperatures (50, 70, and 90 °C) on the growth kinetic parameters of model strain Escherichia coli ATCC 25922, the total thiosulfinate content (TTC), and the total phenolic content (TPC). Observations showed that the concentration of garlic extracts was a significant factor influencing the kinetics of bacterial growth, while the garlic drying temperature appeared to have no effect on E. coli activity. Analysis of TTS in fresh and dried garlic did not reveal statistically significant differences in their levels. However, hot air drying at 50 °C significantly reduced the TPC by nearly 25%, whereas drying garlic at higher temperatures (70 °C and 90 °C) did not lead to a significant loss in TPC compared to the raw samples. The determined growth kinetic parameters of the tested E. coli strain could serve as a basis for selecting optimal drying process conditions and extract concentrations when designing garlic products with enhanced antimicrobial properties.

Breast cancer includes tumor subgroups with morphological, molecular, and clinical differences. Intrinsic heterogeneity especially characterizes breast tumors with a triple negative phenotype, often leading to the failure of even the most advanced therapeutic strategies. To improve breast cancer treatment, the use of natural agents to integrate conventional therapies is the subject of ever-increasing attention. In this context, garlic (Allium sativum) shows anti-cancerous potential, interfering with the proliferation, motility, and malignant progression of both non-invasive and invasive breast tumor cells. As heterogeneity could be at the basis of variable effects, the main objective of our study was to evaluate the anti-tumoral activity of a garlic extract in breast cancer cells with a triple negative phenotype. Established triple negative breast cancer (TNBC) cell lines from patient-derived xenografts (PDXs) were used, revealing subtype-dependent effects on morphology, cell cycle, and invasive potential, correlated with the peculiar down-modulation of Akt signaling, a crucial regulator in solid tumors. Our results first demonstrate that the effects of garlic on TNBC breast cancer are not unique and suggest that only more precise knowledge of the mechanisms activated by this natural compound in each tumor will allow for the inclusion of garlic in personalized therapeutic approaches to breast cancer.

The enhancement of the plant seed yield and quality represents the basis of the successful productivity of the deriving crop. The effect of single and combined foliar treatments of lettuce plants with sodium selenate and garlic bulb extract on seed yield and quality and on mature plant biochemical characteristics was investigated using four lettuce cultivars (Bouquet, Picnic, Moskovsky parnikovy and Cavalier). The seed production of plants treated with Se increased by 20–41%, compared to the untreated control plants, while the augmentation was as much as 10–23% and 17–27% under garlic extract and the joint application of Se and garlic, respectively. Garlic extract stimulated the accumulation of Se in lettuce seeds, which rose by 1.21–1.29 times compared to the Se-treated plants. The proline levels in lettuce seeds exceeded the corresponding values recorded in the control ones by 1.32–1.64 times in the case of the Se supply, 1.10–1.47 times upon garlic extract application and 1.09–1.31 times under the combined Se/garlic treatment. All the treatments given to lettuce plants increased the leaf weight by 1.10–1.30 times, compared to the untreated control. The seed Se levels positively correlated with the leaf weight (r = 0.621; p < 0.005), chlorophyll (r = 0.672, p < 0.002) and total antioxidant activity (AOA; r = 0.730, p < 0.001) of plants grown from these seeds. Positive correlations were also recorded between the seed proline content and lettuce plant leaf weight, chlorophyll and AOA (r = 0.868, 0.811 and 0.815, respectively, at p < 0.001). Lettuce yield was positively correlated with the leaf AOA, chlorophyll and ascorbic acid content (r = 0.942, 0.921 and 0.665, respectively, at p < 0.001). The results indicate high prospects of Na2SeO4 and garlic extract application to seed-addressed lettuce plants, to improve seed productivity and quality, as well as lettuce yield and quality.

Despite the broad research available in the literature dealing with garlic health benefits, little information is found regarding the functional properties of garlic components. The aim of this study was to evaluate the emulsification properties of garlic water-soluble compounds (GWSC), encompassing proteins, saponins, and carbohydrates, after heat treatment (10 min at 95 °C) or pH adjustments (2.5, 3.5, and 7.8). After the various treatments, the extracts were used as such or filtrated (0.45 µm), and 10% soybean oil-in-water emulsions were prepared using low (0.48%) or high (6.55% wt/wt) extract concentrations. Results showed that whereas at low GWSC concentrations, both heating and acidifying resulted in the formation of bigger oil droplet sizes (i.e., from d32 = 0.36 µm using unmodified extract to d32 = 7–22 µm at pH 2.5 with or without extract filtration), the effects were opposite at the highest GWSC concentration. In the latter, heat treatment clearly reduced the droplet size as observed from the micrographs as well as the degree of creaming, though the occurrence of depletion and/or bridging flocculation was still strong. The acidification of the extract at this high GWSC concentration significantly reduced the droplet size, as observed from the micrographs; however, a strong flocculation was observed. Removal of protein aggregates, and possibly also saponin micelles, from the extract resulted in an obvious increase in emulsion droplet size. This research brings valuable insights on this study and utilisation of novel natural food emulsifiers from plant sources.

The present work studies the influence of pH on the stability of thiosulfinates, compounds responsible for the bacteriostatic properties shown by ethanolic and acetonic garlic extracts (EGE and AGE) against the in vitro growth of Helicobacter pylori (Hp), a bacterium which is implicated in the etiology of diverse gastrointestinal diseases. The influence of pH and time on the stability of thiosulfinates and the microbiological activities of EGE and AGE has been evaluated at human body temperature (37 °C) and in a pH range of 0.9–4.7. A marked decrease in thiosulfinate concentration was observed in a relatively short time at pH values below 2.0. However, at pH values over 2.0, the samples maintained 70% of thiosulfinate concentration for 12 h. The inhibition halo diameters showed a maximum value at pH 2.50, with an inhibition halo of 28.94 ± 0.61 mm. The reduction in the activity at pH values below 2.0 was particularly remarkable. These results suggest that, for medical application, the pH of the selected extracts must only be maintained above 2 to maintain a high level of antibacterial activity. This fact would overcome the need for proton pump inhibitors and/or antibiotics during the treatment of Hp infections in human patients.

The aim of this study was to determine the impact of subclinical mastitis treatment in dairy cattle on biomarkers registered with in-line sensors such as milk yield (MY), electric milk conductivity (EC), rumination time (RT), and somatic cell count (SCC). At the start of the experiment, all cows according to SCC level were divided into two groups: healthy cows (n = 30, with SCCs less than 200,000 per mL and without the growth of bacteria in the milk samples) and cows with subclinical mastitis (n = 32), with SCC levels greater than 200,000 per mL and with growth of bacteria. Streptococcus spp. was found in 15 samples, and Strep. uberis was found in 17 samples. Streptococcus spp. and Strep. uberis were sensitive to amoxicillin and calvulanic acid. According to these results, 32 cows with subclinical mastitis were treated with two treatment protocols: one 1 (n = 16) and two (n = 16). In the first protocol, we used SCC boluses and nonsteroidal anti-inflammatory drugs (SCCB and NSAID). The second protocol consists of intramammary antibiotics and anti-inflammatory medications (Synulox LC and NSAIDs). All parameters (MY, EC, RT, and SCC) were recorded with Lely Astronaut® A3 milking robots on the day of mastitis diagnosis (0 day) and 14 days after treatment began. All animal experimental procedures were approved by the ethical committee; the approval number is PK01696. On the basis of our findings, we may infer that SCC boluses and NSAIDs are effective in treating subclinical mastitis. After 14 days of treatment, the electrical conductivity of milk in cows treated with AB and NSAID was also higher in all quarters of the udder compared to cows treated with SCCB + NSAID. The RT of cows on disease diagnosis day of cows treated with AB and NSAID was 11.41% lower compared to cows treated with SCCB and NSAID, while the RT of cows after 14 days treated with AB and NSAID was 7.01% lower compared to cows treated with SCCB and NSAID. On the practical side, for treatment of subclinical mastitis, we recommend using a feed supplement SCC bolus (one per os) with a composition containing Meloxicam 20 mg with a single subcutaneous injection at a dosage of 2.5 mL per 100 kg body weight.

The nematicidal activity of garlic extracts is known on root–knot nematodes but never investigated on the grapevine nematode Xiphinema index. In this study, the nematicidal activity of a commercial garlic extract formulate (GEF) was assessed on X. index, both in vitro and in a pot assay. In the in vitro assays, mixed specimens of X. index were exposed to a 0–4 mL L−1 range of GEF concentrations, checking nematode immotility and mortality after 2, 4 or 8 h. In the experiments on potted grapevines, plants cultivated in soil infested by X. index were irrigated twice at a 15-day interval with 0.05, 0.2 and 0.5 mL L−1 solutions of GEF, including nontreated soil as a control. An almost complete mortality of X. index specimens occurred after a 2 h exposure to a 2 mL L−1 GEF concentration, while an 8 h exposure to even the 0.0312 and 0.0156 mL L−1 solutions resulted in about 50% and 30% mortality, respectively. Soil treatment with a 0.5 mL L−1 GEF solution significantly reduced the population of X. index and increased the grapevine root growth compared to nontreated soil or soil treated with the lower dosages. Results of this study indicated that garlic-based nematicides could be an effective tool for X. index management in organic and integrated vineyards.

Beef is a perishable food product susceptible to deterioration due to microbial growth. Therefore, this study aimed to ascertain how active and intelligent packaging performs by tracking the change in the quality of fresh beef stored at low temperatures. The intelligent packaging method employed indicators with solutions of Bromo Phenol Blue (BPB) and Phenol Red (PR) to monitor the change in beef quality. Additionally, active packaging used garlic extract with various concentrations at 0%, 15%, and 20% to maintain the quality of beef packaged at 10 °C temperatures. The findings illustrated that a packaging indicator label can be implemented to monitor the change in the quality of fresh beef stored at 10 °C temperatures. This was signified by a change in the indicator color from dark yellow to orange and red, fading to purple. Meanwhile, observations on active packaging demonstrated that 15% and 20% of garlic extract were the most effective approaches for preserving beef quality. The correlation level of indicator label color analysis and the effectiveness of active packaging with all beef spoilage metrics demonstrated a positive correlation in preserving quality and identifying the degree of beef damage. Therefore, these active and intelligent packaging indicators can be applied to monitor and retain the quality of packaged beef.

In order to increase growth performance and carcass composition, including meat quality, as demanded by modern customers, alternative feed additives are sought after as a result of the withdrawal of antibiotics employed as growth promoters in poultry feeding. Therefore, we conducted a study to see how effective three feed additives added to the diets and water of turkey hens were. The experiment consisted of 200 Big 6 turkey hens divided into two equinumerous groups (C and E), with five subgroups in each. The 14-week-long growth performance study comprised five feeding periods. Both groups of birds were fed complete feed rations with mineral and vitamin supplements. The factor differentiating the groups were effective microorganisms and Humokarbowit added to the birds’ diets and garlic extract added to the drinking water in the experimental group (E) only. It was demonstrated that the included feed additives in the diets and water of turkey hens significantly increased (by 10%) the FBW and decreased (by 14%) the FCR throughout the rearing period. Birds from the E group scored significantly higher (by 3.6%) on the dressing percentage, and their muscularity and fattening grade were improved. Turkey fed rations containing the evaluated feed additives had a smaller share of the gastrointestinal tract in the body weight and a shorter duodenum and caecum (p ≤ 0.05). The muscles of turkey hens from group E featured a lower pH24 and were of lighter colour (p ≤ 0.05). To sum up, the use of effective microorganisms and Humokarbowit in the diets and garlic extract in the drinking water of turkey hens should be recommended in view of improved growth performance and carcass composition.

The purpose of the study was to select an environmentally friendly plant biopesticide to protect seed potatoes against phytopathogens. The scope included the evaluation of the antimicrobial activities of 22 plant water extracts, 22 water-glycol extracts, and 3 subcritical carbon dioxide extracts using the agar diffusion method against 10 potato phytopathogens. For the most effective extracts, minimal inhibitory concentration (MIC), chemical composition analysis by gas chromatography–mass spectrometry and in situ assays on seed potatoes were performed. Garlic water extract was finally selected as the most effective in phytopathogen growth inhibition, both in vitro and in situ, with MIC values ranging between 6.3–25 mg/mL. 5-Hydroxymethylfurfural was determined to be the main component of this extract (33.24%). Garlic water extract was proposed as a potential biopesticide against potato phytopathogens.

Green synthesis of silver nanoparticles (AgNPs) was synthesized from fresh garlic extract coupled with isoniazid hydrazide (INH), a commonly used antibiotic to treat tuberculosis. A molecular docking study conducted with the selected compounds compared with anthranilate phosphoribosyltransferase (trpD) from Mycobacterium tuberculosis. The aqueous extract of garlic was prepared and mixed with silver nitrate (AgNO3) solution for the superfast synthesis of stable AgNPs. INH was then conjugated with AgNPs at different ratios (v/v) to obtain stable INH-AgNPs conjugates (AgNCs). The resulting AgNCs characterized by FTIR spectra revealed the ultrafast formation of AgNPs (

Glycation of various biomolecules contributes to structural changes and formation of several high molecular weight fluorescent and non-fluorescent, advanced glycation end products (AGEs). AGEs and glycation are involved in various health complications. Synthetic medicines, including metformin, have several adverse effects. Natural products and their derivatives are used in the treatment of various diseases due to their significant therapeutic qualities. Allium sativum (garlic) is used in traditional medicines because of its antioxidant, anti-inflammatory, and anti-diabetic properties. This study aimed to determine the anti-glycating and AGEs inhibitory activities of garlic. Biochemical and biophysical analyses were performed for in vitro incubated human serum albumin (HSA) with 0.05 M of glucose for 1, 5, and 10 weeks. Anti-glycating and AGEs inhibitory effect of garlic was investigated in glycated samples. Increased biochemical and biophysical changes were observed in glycated HSA incubated for 10 weeks (G-HSA-10W) as compared to native HSA (N-HSA) as well as glycated HSA incubated for 1 (G-HSA-1W) and 5 weeks (G-HSA-5W). Garlic extract with a concentration of ≥6.25 µg/mL exhibited significant inhibition in biophysical and biochemical changes of G-HSA-10W. Our findings demonstrated that garlic extract has the ability to inhibit biochemical and biophysical changes in HSA that occurred due to glycation. Thus, garlic extract can be used against glycation and AGE-related health complications linked with chronic diseases in diabetic patients due to its broad therapeutic potential.

To the best of our knowledge, this is the first study demonstrating the efficiency of Allium sativum hydro-alcoholic extract (ASE) againstFigure growth, biofilm development, and soluble factor production of more than 200 biodeteriogenic microbial strains isolated from cultural heritage objects and buildings. The plant extract composition and antioxidant activities were determined spectrophotometrically and by HPLC–MS. The bioevaluation consisted of the qualitative (adapted diffusion method) and the quantitative evaluation of the inhibitory effect on planktonic growth (microdilution method), biofilm formation (violet crystal microtiter method), and production of microbial enzymes and organic acids. The garlic extract efficiency was correlated with microbial strain taxonomy and isolation source (the fungal strains isolated from paintings and paper and bacteria from wood, paper, and textiles were the most susceptible). The garlic extract contained thiosulfinate (307.66 ± 0.043 µM/g), flavonoids (64.33 ± 7.69 µg QE/g), and polyphenols (0.95 ± 0.011 mg GAE/g) as major compounds and demonstrated the highest efficiency against the Aspergillus versicolor (MIC 3.12–6.25 mg/mL), A. ochraceus (MIC: 3.12 mg/mL), Penicillium expansum (MIC 6.25–12.5 mg/mL), and A. niger (MIC 3.12–50 mg/mL) strains. The extract inhibited the adherence capacity (IIBG% 95.08–44.62%) and the production of cellulase, organic acids, and esterase. This eco-friendly solution shows promising potential for the conservation and safeguarding of tangible cultural heritage, successfully combating the biodeteriogenic microorganisms without undesirable side effects for the natural ecosystems.

Diabetes mellitus is a severe health problem in Mexico, and its prevalence is increasing exponentially every year. Recently, DPP-4 (dipeptidyl peptidase-4) inhibitors have become attractive oral anti-hyperglycemic agents to reduce the pathology of diabetes. Gliptin’s family, such as sitagliptin, vildagliptin, and alogliptin, are in clinical use to treat diabetes mellitus but possess side effects. Therefore, there is a specific need to look for new therapeutic scaffolds (biomolecules). Garlic bulb is widely used as a traditional remedy for the treatment of diabetes. The garlic extracts are scientifically proven to control glucose levels in patients with diabetes, despite the unknown mechanism of action. The aim of the study is to investigate the antidiabetic effects of ultrasonication assisted garlic bulb extract. To achieve this, in-vitro assays such as DPP-4 inhibitory and antioxidant activities were investigated. Further, functional group analysis using FTIR and identification of phytochemicals using mass spectrometry analysis was performed. The results showed that 70.9 µg/mL of garlic bulb extract inhibited 50% DPP-4 activity. On top of that, the garlic extract exhibited a 20% scavenging activity, equivalent to 10 µg/mL of ascorbic acid. Molecular docking simulations on identified phytochemicals using mass spectrometry revealed their potential binding at the DPP-4 druggable region, and therefore the possible DPP-4 inhibition mechanism. These results suggest that prepared garlic extract contains phytochemicals that inhibit DPP-4 and have antioxidant activity. Also, the prepared extract induces skeletal muscle cell proliferation that demonstrates the antidiabetic effect and its possible mechanism of action.

Novel bovine serum albumin (BSA)-gold nanoclusters with garlic extract modifications (mw_G-BSA-AuNCs) were prepared through microwave-assisted rapid synthesis. The modified nanoclusters were characterized and used for the simple and sensitive detection of Pb2+ ions. Both turn-on and turn-off methods were used and compared for Pb2+ ion detection. For Pb2+ ions, the preparation time for the modified nanoclusters was 10 min, and the detection time for the nanoclusters was 6 min. The modified nanoclusters were stable, and their fluorescence intensities changed by less than 10% in 60 days. The detection limit and linear range for the “off-on” method of mw_G-BSA-AuNCs for Pb2+ ion detection were 0.28 and 1−20 nM, respectively. The recoveries of the mw_G-BSA-AuNCs probe used for the detection of the Pb(II) ion in tap water ranged from 93.8% to 102.2%, with an average of 97.1%. The “off-on” method of mw_G-BSA-AuNCs can provide a lower detection limit, higher selectivity, and better recovery than the commonly used “turn-off” methods of mw_BSA-AuNCs for Pb2+ ion detection. The proposed method is superior to other methods proposed from 2018 to 2019 because it can provide a shorter preparation time and a lower detection limit with good selectivity. The microwave-assisted novel compound, mw_G-BSA-AuNCs, can be rapidly synthesized in a green manner and can provide a low detection limit, good selectivity, and a simple and fast reaction for Pb2+ ion detection.

Natural antimicrobials, such as grape seed extract (GSE) and garlic extract (GE), are often used as (a part of) novel food preservation technologies, especially due to their antilisterial effect. However, little is known on the extent of sublethal injury (SI) these extracts cause to Listeria monocytogenes, possibly leading to overestimated efficacies for such novel technologies. The influence of both extracts on the sublethal injury of L. monocytogenes strain LMG23775 was investigated, also using propidium iodide staining to investigate the nature of the injury. Minimum inhibitory concentrations were 500 mg gallic acid equivalents (GAE)/L and 7.5 μg allicin/mL for GSE and GE, respectively. These concentrations slowed down the growth of L. monocytogenes, while only causing a significant amount of SI for GSE. Pure extracts caused inactivation of the cells, with GSE being the most effective. Sublethal injury from pure GSE was mainly caused by membrane damage. In pure GE, a significant amount of SI, not caused by membrane damage, was also present, albeit less pronounced than in pure GSE. In conclusion, both extracts cause a significant amount of sublethal injury to L. monocytogenes, which is not taken into account in relevant studies investigating novel food preservation applications involving natural plant extracts.

Results showed that whereas at low GWSC concentrations, both heating and acidifying resulted in the formation of bigger oil droplet sizes (i.e., from d 32 = 0.36 µm using unmodified extract to d 32 = 7-22 µm at pH 2.5 with or without extract filtration), the effects were opposite at the highest GWSC concentration. In the latter, heat treatment clearly reduced the droplet size as observed from the micrographs as well as the degree of creaming, though the occurrence of depletion and/or bridging flocculation was still strong. The acidification of the extract at this high GWSC concentration significantly reduced the droplet size, as observed from the micrographs; however, a strong flocculation was observed. Removal of protein aggregates, and possibly also saponin micelles, from the extract resulted in an obvious increase in emulsion droplet size. This research brings valuable insights on this study and utilisation of novel natural food emulsifiers from plant sources.

The present work studies the influence of pH on the stability of thiosulfinates, compounds responsible for the bacteriostatic properties shown by ethanolic and acetonic garlic extracts (EGE and AGE) against the in vitro growth of Helicobacter pylori (Hp), a bacterium which is implicated in the etiology of diverse gastrointestinal diseases. The influence of pH and time on the stability of thiosulfinates and the microbiological activities of EGE and AGE has been evaluated at human body temperature (37 °C) and in a pH range of 0.9-4.7. A marked decrease in thiosulfinate concentration was observed in a relatively short time at pH values below 2.0. However, at pH values over 2.0, the samples maintained 70% of thiosulfinate concentration for 12 h. The inhibition halo diameters showed a maximum value at pH 2.50, with an inhibition halo of 28.94 ± 0.61 mm. The reduction in the activity at pH values below 2.0 was particularly remarkable. These results suggest that, for medical application, the pH of the selected extracts must only be maintained above 2 to maintain a high level of antibacterial activity. This fact would overcome the need for proton pump inhibitors and/or antibiotics during the treatment of Hp infections in human patients.

The nematicidal activity of garlic extracts is known on root-knot nematodes but never investigated on the grapevine nematode Xiphinema index . In this study, the nematicidal activity of a commercial garlic extract formulate (GEF) was assessed on X. index , both in vitro and in a pot assay. In the in vitro assays, mixed specimens of X. index were exposed to a 0-4 mL L -1 range of GEF concentrations, checking nematode immotility and mortality after 2, 4 or 8 h. In the experiments on potted grapevines, plants cultivated in soil infested by X. index were irrigated twice at a 15-day interval with 0.05, 0.2 and 0.5 mL L -1 solutions of GEF, including nontreated soil as a control. An almost complete mortality of X. index specimens occurred after a 2 h exposure to a 2 mL L -1 GEF concentration, while an 8 h exposure to even the 0.0312 and 0.0156 mL L -1 solutions resulted in about 50% and 30% mortality, respectively. Soil treatment with a 0.5 mL L -1 GEF solution significantly reduced the population of X. index and increased the grapevine root growth compared to nontreated soil or soil treated with the lower dosages. Results of this study indicated that garlic-based nematicides could be an effective tool for X. index management in organic and integrated vineyards.

Beef is a perishable food product susceptible to deterioration due to microbial growth. Therefore, this study aimed to ascertain how active and intelligent packaging performs by tracking the change in the quality of fresh beef stored at low temperatures. The intelligent packaging method employed indicators with solutions of Bromo Phenol Blue (BPB) and Phenol Red (PR) to monitor the change in beef quality. Additionally, active packaging used garlic extract with various concentrations at 0%, 15%, and 20% to maintain the quality of beef packaged at 10 °C temperatures. The findings illustrated that a packaging indicator label can be implemented to monitor the change in the quality of fresh beef stored at 10 °C temperatures. This was signified by a change in the indicator color from dark yellow to orange and red, fading to purple. Meanwhile, observations on active packaging demonstrated that 15% and 20% of garlic extract were the most effective approaches for preserving beef quality. The correlation level of indicator label color analysis and the effectiveness of active packaging with all beef spoilage metrics demonstrated a positive correlation in preserving quality and identifying the degree of beef damage. Novel bovine serum albumin (BSA)-gold nanoclusters with garlic extract modifications ( mw &#95;G-BSA-AuNCs) were prepared through microwave-assisted rapid synthesis. The modified nanoclusters were characterized and used for the simple and sensitive detection of Pb 2+ ions. Both turn-on and turn-off methods were used and compared for Pb 2+ ion detection. For Pb 2+ ions, the preparation time for the modified nanoclusters was 10 min, and the detection time for the nanoclusters was 6 min. The modified nanoclusters were stable, and their fluorescence intensities changed by less than 10% in 60 days. The detection limit and linear range for the "off-on" method of mw &#95;G-BSA-AuNCs for Pb 2+ ion detection were 0.28 and 1-20 nM, respectively. The recoveries of the mw &#95;G-BSA-AuNCs probe used for the detection of the Pb(II) ion in tap water ranged from 93.8% to 102.2%, with an average of 97.1%. The "off-on" method of mw &#95;G-BSA-AuNCs can provide a lower detection limit, higher selectivity, and better recovery than the commonly used "turn-off" methods of mw &#95;BSA-AuNCs for Pb 2+ ion detection. The proposed method is superior to other methods proposed from 2018 to 2019 because it can provide a shorter preparation time and a lower detection limit with good selectivity. The microwave-assisted novel compound, mw &#95;G-BSA-AuNCs, can be rapidly synthesized in a green manner and can provide a low detection limit, good selectivity, and a simple and fast reaction for Pb 2+ ion detection.
