This study introduces a quantitative risk assessment (QRA) model aimed at evaluating the risk of invasive listeriosis linked to the consumption of ready-to-eat (RTE) smoked and gravad fish. The QRA model, based on published data, simulates the production process from fish harvest through to consumer intake, specifically focusing on smoked brine-injected, smoked dry-salted, and gravad fish. In a reference scenario, model predictions reveal substantial probabilities of lot and pack contamination at the end of processing (38.7% and 8.14% for smoked brined fish, 34.4% and 6.49% for smoked dry-salted fish, and 52.2% and 11.1% for gravad fish), although the concentrations of L. monocytogenes are very low, with virtually no packs exceeding 10 CFU/g at the point of sale. The risk of listeriosis for an elderly consumer per serving is also quantified. The lot-level mean risk of listeriosis per serving in the elderly population was 9.751 × 10−8 for smoked brined fish, 9.634 × 10−8 for smoked dry-salted fish, and 2.086 × 10−7 for gravad fish. Risk reduction strategies were then analyzed, indicating that the application of protective cultures and maintaining lower cold storage temperatures significantly mitigate listeriosis risk compared to reducing incoming fish lot contamination. The model also addresses the effectiveness of control measures during processing, such as minimizing cross-contamination. The comprehensive QRA model has been made available as a fully documented qraLm R package. This facilitates its adaptation for risk assessment of other RTE seafood, making it a valuable tool for public health officials to evaluate and manage food safety risks more effectively.

Salmonellosis is globally recognized as one of the leading causes of acute human bacterial gastroenteritis resulting from the consumption of animal-derived products, particularly those derived from the poultry and pig industry. Salmonella spp. is generally associated with self-limiting gastrointestinal symptoms, lasting between 2 and 7 days, which can vary from mild to severe. The bacteria can also spread in the bloodstream, causing sepsis and requiring effective antimicrobial therapy; however, sepsis rarely occurs. Salmonellosis control strategies are based on two fundamental aspects: (a) the reduction of prevalence levels in animals by means of health, biosecurity, or food strategies and (b) protection against infection in humans. At the food chain level, the prevention of salmonellosis requires a comprehensive approach at farm, manufacturing, distribution, and consumer levels. Proper handling of food, avoiding cross-contamination, and thorough cooking can reduce the risk and ensure the safety of food. Efforts to reduce transmission of Salmonella by food and other routes must be implemented using a One Health approach. Therefore, in this review we provide an update on Salmonella, one of the main zoonotic pathogens, emphasizing its relationship with animal and public health. We carry out a review on different topics about Salmonella and salmonellosis, with a special emphasis on epidemiology and public health, microbial behavior along the food chain, predictive microbiology principles, antimicrobial resistance, and control strategies.

Aquaculture is becoming a strategic sector for many national economies to supply the increasing demand for fish from consumers. Fish culture conditions and processing operations can lead to an increase in microbial contamination of farmed fish that may shorten the shelf-life of fish products and byproducts, and ready-to-eat fishery products. The objective of this study was to evaluate the hygienic-sanitary status of water, environment, and processing of fresh-farmed rainbow trout (Oncorhynchus mykiss) fillets produced in a local fish farm in Andalusia, Spain. To achieve this, a longitudinal study was carried out by collecting environmental (air and food-contact surfaces), water from fish ponds, and rainbow trout samples. Thereby, seven sampling visits were performed between February 2021 and July 2022, where foodborne pathogens and spoilage microorganisms, together with physicochemical parameters, were analysed in the collected samples. Further, microbial identification of microbiota was achieved through a culture-dependent technique using blast analysis of 16S RNA gene sequencing. The results showed that Listeria monocytogenes and Salmonella were not detected in the analysed samples. Regarding the hygienic-sanitary status of the fish farm, the slaughtering bath, the eviscerating machine and the outlet water from fish ponds presented the highest counts of coliforms, Enterobacteriaceae, and Aerobic Mesophilic Bacteria. Staphylococcus aureus and sulphite-reducing Clostridium were identified in the conveyor belts, fish flesh, and viscera. The 16S RNA identification confirmed the presence of viable spoilage bacteria such as Citrobacter gillenii, Macrococcus caseolyticus, Hafnia paralvei, Lactococcus lactis, Lactococcus cremoris, Klebsiella, Escherichia coli, Morganella morganii, and Shewanella. Three of these genera (Citrobacter, Hafnia, and Pseudomonas) were present in all types of samples analysed. The results evidenced potential transmission of microbial contamination from contaminated packaging belts and boxes, evisceration and filleting machines to flesh and viscera samples, thus the establishment of control measures should be implemented in fish farm facilities to extend the shelf-life of farmed fishery products.

A biodegradable packaging film containing cellulose nanofibers from olive tree pruning, a by-product of olives production, was obtained using a solvent casting method. Nanocellulose was added to polyvinyl alcohol (PVA) to enhance the technological properties of the composite film as food packaging material. Nanocellulose was obtained from unbleached and bleached pulp through a mechanical and TEMPO pretreatment. Crystalline and chemical structure, surface microstructure, UV and gas barrier, optical, mechanical and antioxidant properties, as well as thermal stability were evaluated. Regarding optical properties, the UV barrier was increased from 6% for the pure PVA film to 50% and 24% for unbleached and bleached nanocellulose, respectively. The antioxidant capacity increased significantly in unbleached mechanical nanocellulose-films (5.3%) compared to pure PVA film (1.7%). In terms of mechanical properties, the tensile strength of the 5% unbleached mechanical nanocellulose films was significantly improved compared to the pure PVA film. Similarly, the 5% nanocellulose films had increased the thermal stability and improved barrier properties, reducing water vapor permeability by 38–59% and presenting an oxygen barrier comparable to aluminum layer and plastic films. Our results support the use of the developed films as a green alternative material for food packaging.

Olea europaea L. leaves constitute a source of bioactive compounds with recognized benefits for both human health and technological purposes. In the present work, different extracts from olive leaves were obtained by the application of two extraction methods, Soxhlet and microwave-assisted extraction (MAE), and six solvents (distilled water, ethanolic and glycerol mixtures solvents). MAE was applied under 40, 60 and 80 °C for 3, 6.5 and 10 min. The effect of the extraction method, solvent and treatment factors (the latter in MAE) on the total phenol content (TPC), the antioxidant activity (AA) and the phenolic profile of the extracts were all evaluated. The extracts showed high values of TPC (up to 76.1 mg GAE/g DW) and AA (up to 78 mg TE/g DW), with oleuropein being the most predominant compound in all extracts. The Soxhlet extraction method exhibited better yields in TPC than in MAE, although both methods presented comparable AA values. The water MAE extract presented the strongest antimicrobial activity against five foodborne pathogens, with minimum inhibitory concentration (MIC) values ranging from 2.5 to 60 mg/mL. MAE water extract is proposed to be exploited in the food and nutraceutical industry in the frame of a sustainable economy.

Increasing consumption of blueberries is associated with appreciation of their organoleptic properties together with their multiple health benefits. The increasing number of outbreaks caused by pathogenic microorganisms associated with their consumption in the fresh state and the rapid spoilage of this product which is mainly caused by moulds, has led to the development and evaluation of alternatives that help mitigate this problem. This article presents different strategies ranging from chemical, physical and biological technologies to combined methods applied for microbial decontamination of fresh blueberries and derived products. Sanitizers such as peracetic acid (PAA), ozone (O3), and electrolyzed water (EOW), and physical technologies such as pulsed light (PL) and cold plasma (CP) are potential alternatives to the use of traditional chlorine. Likewise, high hydrostatic pressure (HHP) or pulsed electrical fields (PEF) successfully achieve microbial reductions in derivative products. A combination of methods at moderate intensities or levels is a promising strategy to increase microbial decontamination with a minimal impact on product quality.

With the aim of identifying new sources to produce cellulose nanofibers, olive tree pruning biomass (OTPB) was proposed for valorization as a sustainable source of cellulose. OTPB was subjected to a soda pulping process for cellulose purification and to facilitate the delamination of the fiber in the nanofibrillation process. Unbleached and bleached pulp were used to study the effect of lignin in the production of cellulose nanofibers through different pretreatments (mechanical and TEMPO-mediated oxidation). High-pressure homogenization was used as the nanofibrillation treatment. It was observed that for mechanical pretreatment, the presence of lignin in the fiber produces a greater fibrillation, resulting in a smaller width than that achieved with bleached fiber. In the case of TEMPO-mediated oxidation, the cellulose nanofiber characteristics show that the presence of lignin has an adverse effect on fiber oxidation, resulting in lower nanofibrillation. It was observed that the crystallinity of the nanofibers is lower than that of the original fiber, especially for unbleached nanofibers. The residual lignin content resulted in a greater thermal stability of the cellulose nanofibers, especially for those obtained by TEMPO-mediated oxidation. The characteristics of the cellulose nanofibers obtained in this work identify a gateway to many possibilities for reinforcement agents in paper suspension and polymeric matrices.

Desarrollar e intentar alcanzar una elevada calidad en el servicio prestado por los profesionales de enfermería de los centros geriátricos mediante la implantación de sistemas de gestión de calidad es tema de actualidad, hecho este probado ya en otros trabajos. Es por esta razón que el objetivo general de este estudio se haya centrado en analizar los efectos más relevantes que surten de la instauración de una forma de gestionar la calidad basada en la Norma UNE EN ISO 9001:2008 en el área de enfermería de cuatro residencias de ancianos. Se ha llevado a cabo un análisis de más de 200 encuestas de satisfacción respecto del servicio de enfermería de cuatro residencias de personas mayores, así como una revisión bibliográfica de los resultados obtenidos tras la implantación de un sistema de gestión de calidad en el área de enfermería de residencias geriátricas. Apreciamos resultados muy positivos en el desarrollo diario de las funciones de enfermería de las residencias geriátricas derivados de la utilización de un sistema de gestión de calidad, pues ha mejorado considerablemente la calidad en la práctica clínica. El estudio muestra que la implantación de un sistema de gestión de calidad proporciona una herramienta útil al servicio de enfermería en residencias de personas mayores evidenciándose los efectos positivos que resultan de dicha implantación mediante encuestas de satisfacción e indicadores sanitarios.

Los ancianos son más vulnerables y determinados condicionantes socioculturales hacen que el maltrato sea poco evidenciado y por ello, poco abordado. Dentro del segmento poblacional de personas mayores, se dan las circunstancias concretas para que se dé el maltrato. Nuestra aportación a la hora de abordar esta cuestión ha sido conocer el número y tipo de casos de maltrato que los ancianos que viven en residencias y que sufren por agentes ajenos a la organización de la misma, tales como la familia, otros residentes y amigos. Para este estudio se ha elaborado un breve cuestionario en una hoja de Excel para la recogida de datos, que ha sido pasado a las trabajadoras sociales de 4 residencias de personas mayores, en el ámbito geográfico de la Región de Murcia. Los datos recogidos corresponden al periodo de tiempo comprendido entre enero y diciembre de 2013. Los resultados obtenidos nos llevan a pensar que los principales factores de riesgos asociados a este tipo de maltrato es ser mujer, viuda y con una edad de aproximadamente 80 años. El maltrato psicológico ejercicio sobre todo por familiares es el más frecuente.
