Cellulose has been widely explored as a sustainable alternative to synthetic polymers in industrial applications, thanks to its advantageous properties. The introduction of chemical modifications on cellulose structure, focusing on cationic and hydrophobic modifications, can enhance its functionality and expand the range of applications. In the present work, cationization was carried out through a two-step process involving sodium periodate oxidation followed by a reaction with the Girard T reagent, yielding a degree of substitution for cationic groups (DScationic) between 0.3 and 1.8. Hydrophobic modification was achieved via esterification with fatty acids derived from commercial plant oils, using an enzyme-assisted, environmentally friendly method. Lipase-catalysed hydrolysis, optimised at 0.25% enzyme concentration and with a 1 h reaction time, produced an 84% yield of fatty acids, confirmed by FTIR and NMR analyses. The degree of substitution for hydrophobic groups (DShydrophobic) ranged from 0.09 to 0.66. The molecular weight (MW) of the modified cellulose derivatives varied from 1.8 to 141 kDa. This dual modification strategy enables the creation of cellulose-based polymers with controlled electrostatic and hydrophobic characteristics, customisable for specific industrial applications. Simple Summary: Metabolites and microorganisms in the rumen affect host muscle fatty acid deposition. By analyzing the correlations between ruminal microbes and metabolites and multiple fatty acids in goat muscle, we identified several ruminal metabolites and microorganisms that could potentially influence fatty acid deposition in muscle. These results provide data to support the development of targeted feeding management strategies to improve the quality of goat meat. In this study, the fatty acid composition in the muscles of Hechuan white goats was correlated with the metabolome and metagenome of their rumen contents, and potential effects of the metabolites and microorganisms in the rumen on host muscle fatty acid deposition were analyzed. The results of the correlation analysis between the rumen content's metabolome and muscle fatty acid content showed that vitamin-B-related metabolites were significantly correlated with fatty acid content (p < 0.05). Most of these metabolites were positively correlated with stearic acid and negatively correlated with palmitic acid. In accordance with the level of fatty acid content, significant differences were found in the microbial species and abundance among groups at the species level. An abundance of Bacteroides, Ruminococcaceae P7, Eubacterium ruminant, and Prevotella in the rumen was significantly correlated with fatty acid content. Simple Summary: Boar sperm demonstrate significant sensitivity to the conditions during cryopreservation, with various factors, and show a reduction in their fertilization capacity due to damaging effects on sperm cell membranes. We investigated the effects of crude garden cress seed oil (CGCSO) on sperm viability, motility, acrosome integrity, mitochondrial function, and antioxidant activity in frozen boar semen. CGCSO improved post-thawed semen qualities such as the total motility, progressive motility, viability, acrosome integrity, and mitochondrial function as well as reduced lipid peroxidation. As a result, we suggested that 1% CGCSO in the freezing extender diminished the oxidative damage caused by cryopreservation and led to improved sperm quality after thawing. This study aimed to examine the effects of crude garden cress seed oil (CGCSO) on frozen–thawed boar sperm qualities. Semen ejaculates (n = 12) were collected and further divided into six equal aliquots based on CGCSO concentrations (0, 0.5, 1, 1.5, 2, and 2.5% v/v) in the freezing extender. Semen samples were processed and cryopreserved utilizing the traditional liquid nitrogen vapor technique. Subsequently, semen samples were thawed in a thermos with warm water at 50 °C for 12 s and evaluated for sperm morphology using scanning electron microscopy, sperm motility using a CASA, sperm viability, acrosome integrity, mitochondrial function, MDA level, total antioxidant capacity (TAC), glutathione peroxidase (GSH-Px), and catalase (CAT) activity. The results indicated that 1% CGCSO resulted in superior post-thaw sperm characteristics, including enhanced sperm morphology, motility, viability, acrosome integrity, and mitochondrial function. Particularly, the total motile sperm increased by 16.5%, progressive motile sperm increased by 13.0%, viability improved by 15.1%, acrosome integrity increased by 14%, and mitochondrial function improved by 14.1% compared to the control group. CGCSO treatment at 1% and 1.5% exhibited the lowest level of MDA (45.73 ± 11.2 and 45.73 ± 11.3 µmol/L, respectively) compared to the other groups. Simple Summary: Natural bioactive compounds with high potential to enhance performance of animals are required to provide strategies to advance animal production. The current study evaluated synergistic effects of mannan oligosaccharide (MOS) and onion peel (OP) in two dairy dietary substrates. Results showed improvement in fermentation parameters and modulation of fiber degradability. Combining MOS and OP was better than their individual administration. The current study evaluated the effect of combining mannan oligosaccharide (MOS) and onion peel (OP) on ruminal in vitro total gas (GP), greenhouse gas emissions, dry matter and fiber fraction digestibility, partitioning factor (PF24; mg degradable DM per mL gas), microbial mass, and volatile fatty acids using two dietary substrates: high forage (HF) and high concentrate (HC) diets. The study was arranged as a 2 × 2 × 6 factorial design with two dietary substrates, two time points (6 and 24 h), and six treatments. The treatments included a control group with no MOS or OP administration and groups administered with 2% of a mixture containing MOS and OP in the following ratios: 1:0 (MOS), 0:1 (OP), 1:1 (MOS:OP), 1:2 (MOS:2OP), and 1:3 (MOS:3OP). No significant diet × treatment interactions were observed for any of the measured parameters. However, treatments decreased (p < 0.05) the undegraded portion of HC, and treatment × substrate interactions were significant (p < 0.05) for PF24 and microbial mass. The treatments in the HC diet produced higher GP (p < 0.001) at 6 h compared to the treatments in the HF diet. Administration of MOS:2OP to the HC diet increased GP at 24 h of incubation, while the lowest GP was observed with the OP in the HF diet. The administration of MOS, OP, and MOS:2OP to the HC diet decreased methane production at 24 h of incubation. Additionally, MOS:2OP and MOS:3OP increased (p < 0.001) degradable acid detergent fiber (dADF) in the HC diet at 6 h of incubation. Both OP and MOS:3OP decreased the degradability of acid detergent lignin in the HC diet (p < 0.001). The OP also resulted in the lowest DM disappearance (p < 0.001) at 24 h of incubation in the HF diet, while the MOS:3OP had the highest dADF. At the end of incubation, the highest productions of total volatile fatty acids and acetate were observed (p = 0.002) with the MOS:OP administration in the HC diet, whereas the lowest values were observed with MOS and OP administration to the HF diet. The inclusion of mannan oligosaccharide and onion peel combinations as additives improved substrate (HC and HF) fermentation, leading to higher GP and volatile fatty production, and modulated fiber degradability by improving the breakdown of acid detergent fiber and acid detergent lignin. Reducing the time before the flowering stage in coconut (Cocos nucifera L.) trees greatly influences yield, yet the mechanisms driving the switch from vegetative to reproductive growth are not well understood, especially the role of phosphorus in this transition. In this study, dwarf coconut plants of the same cultivation age were selected and categorized into the vegetative phase (VP) or the reproductive phase (RP). By examining the phenotypic traits, nutrient variations in the roots and soil, and the transcriptional expression of relevant genes in the roots across both phases, we investigated the potential mechanisms driving the transition from the VP to the RP in coconuts. The shoots of coconuts in the RP were significantly taller compared to those in the VP. Moreover, the phosphorus concentration in the roots of coconuts during the RP was 1.31 times higher than in the VP, which may be linked to the significant upregulation of the PT1 genes AZ11G0219160 and AZ02G0034860 in the roots of coconuts in the RP. In addition, all phosphorus-containing metabolites in the roots during the RP showed a significant increase, particularly those related to long-chain fatty acids and ribonucleotide metabolites. This suggests that coconut roots may facilitate the progression from vegetative to reproductive growth by enhancing phosphorus uptake via PT1s and promoting the synthesis and accumulation of phosphorus-containing metabolites. Background/Objectives: Ulcerative colitis (UC) is a chronic inflammatory bowel disease with limited effective treatments, prompting the need for investigation of novel therapeutic approaches. Eicosapentaenoic acid (EPA) and gamma-linolenic acid (GLA) have demonstrated potential anti-inflammatory properties, but their combined effects on UC have not been thoroughly investigated. This study aimed to evaluate the effect of the combined administration of EPA and GLA on clinical and histopathologic features of experimental UC models. Methods: Thirty-six male Wistar rats were randomized in three groups (DSS group, Ensure Plus group, and Oxepa group), with twelve rats in each group. Experimental colitis was induced by administrating dextran sulfate sodium (DSS) 8%. The DSS group received tap water, the Ensure Plus group was given a high caloric diet, and the Oxepa group received a special diet containing high levels of EPA and GLA. Disease activity index (DAI) and microscopic activity index (MAI) were measured. Inflammatory markers were calculated both in blood and large intestine, liver, spleen, and lung tissue samples. Neutrophil and macrophage populations were assessed with immunohistochemistry. Results: No significant differences in the DAI index were found between the groups, but the MAI revealed statistically significant differences (p < 0.001). While no significant differences were observed in tumor necrosis factor-alpha (TNF-α) levels, interleukin-17 (IL-17) levels in the large intestine showed statistically significant differences (p = 0.05), with the Ensure Plus and Oxepa groups displaying lower levels compared to the DSS group (p = 0.021 and p = 0.043, respectively). Significant differences in neutrophil infiltration were found in both the large intestine (p < 0.001) and lungs (p = 0.002), with the Oxepa group showing fewer cells. Similarly, significant differences in macrophage infiltration were observed in the large intestine (p = 0.038) and spleen (p < 0.001), with the Oxepa group having lower macrophage counts. Featured Application: This work shows that it is possible to predict the fatty acid profile of Iberian ham, which is one of the most important quality characteristics of these premium products, by using miniaturized devices. This article also identifies the most suitable equipment and the optimal area for spectral recording, which depends on the device, to achieve optimal analytical performance. Iberian ham is a highly valued product, and considerable efforts have been made to characterize it quickly and accurately. In this scenario, portable NIR devices could provide an effective solution for the assessment of its attributes. However, the calibration quality of NIR equipment is directly influenced by the relevance of the used spectral region. Therefore, this study aims to evaluate the suitability of different NIR spectrometers, including four portable and one benchtop instrument, with varying spectral working ranges for quantifying the fatty acid composition of Iberian ham. Spectral measurements were carried out on both the muscle and the fat of the ham slices. The results showed that 24 equations with an RSQ > 0.5 were obtained for both the muscle and fat for the NIRFlex N-500 benchtop instrument, while 19 and 14 equations were obtained in the muscle and 16 and 10 equations in the fat for the Enterprise Sensor and MicroNIR, respectively. In general, more fatty acids could be calibrated when the spectra were taken from lean meat, except with the SCiO Sensor. Measurements performed in the lean and fat zones delivered complementary information. These initial findings indicate the suitability of using miniaturized NIR sensors, which are faster, are less expensive, and enable on-site measurements, for analyzing fatty acids in Iberian ham. Walnuts are highly valued for their rich nutritional content, but their quality degrades during storage due to oxidation and other quality reducing processes. This study investigated the use of bioactive compounds extracted from walnut pomace, a by-product of walnut oil production, to develop an edible coating that extends the shelf life of 'Milotai 10' walnut kernels. Walnut kernels were stored for eight months in four different packaging materials (PE, PP, MPP, PLA) and three treatments were used (air or without treatment, nitrogen gas, and walnut pomace extract coating). The effects of these combinations on walnut quality parameters, including polyphenol content, vitamin E, fatty acids, peroxide value, and color, were analyzed. The results show that the combination of metallized polypropylene packaging under nitrogen treatment or with atmospheric air and walnut pomace extract (MPP-A-E+) best preserves walnut quality, making it a promising option for extending shelf-life. Parkia biglobosa (PB) is among the various underexploited nutritious plants. A comparative study was conducted on the effect processing PB has on the amino and fatty acid composition. Fermented (FPB), defatted (DPB), and protein isolates (PI) samples were prepared from Parkia biglobosa seeds using various processing methods, and evaluated using standard analytical protocols. The PI showed the highest significant total non-essential amino acids, essential amino acids, and conditionally essential amino acids when compared with FPB and DPB. In addition, the PI showed the highest significant (p < 0.05) total neutral amino acids, basic amino acids, total aromatic amino acids, and the lowest percentage cystine ratio of total sulphur amino acids and total amino acids in comparison with FPB and DPB. The PI also showed a better-predicted protein efficient ratio, essential amino acid index, biological value, protein content, and nutritional index than FPB and DPB. Furthermore, PI amino acid composition was compared favourably with the reference scores for a whole hen's egg, preschool child, and provisional scoring pattern. Arginine and histidine values of PI were higher than the recommended values. The FPB (42.29%) showed the highest polyunsaturated fatty acids compared with the DPB (41.94%) and PI (26.7%). The dominant saturated, monounsaturated, and polyunsaturated fatty acids were stearic acid (15.1 DPB), linoleic acid (42.29 DPB), and oleic acid (14.05 PI). The DPB (1.84) showed a better polyunsaturated to saturated (P:S) ratio than FPB (1.74) and PI (0.91). The results revealed that the processing methods improved the relative amino acid composition, whereas the fatty acid composition improved in DPB. Sorghum is a self-pollinating species belonging to the Poaceae family characterized by a resistance to drought higher than that of corn. Sorghum (Sorghum bicolor L. Moench) has been grown for centuries as a food crop in tropical areas where it has an increasing importance, particularly as a cereal option for people with celiac disease. Over the past fifty years, food-grade varieties and hybrid seeds with white pericarp have been developed, particularly in the United States, to maximize sorghum food quality. Nutrient composition, including moisture, protein, carbohydrates, dietary fiber, fat content, fatty acid composition, and mineral content, was determined for nine inbred varieties with a stabilized food-grade sorghum genotype selected in the USA and grown under typical Mediterranean conditions. Differences in these nutritional components were observed among the varieties considered. Notable differences were found for monounsaturated and polyunsaturated fats, while saturated fatty acids were similar in all varieties. Oleic, linoleic, and palmitic acids were the most abundant fatty acids in all nine lines. Differences were also noted in mineral content, particularly for K, Mg, Al, Mn, Fe, Cu, Zn, and Ba. Enzyme-linked immunosorbent assays (ELISAs) demonstrated the absence of gliadin-like peptides in all the sorghum varieties analyzed, confirming, thus, that these analyzed varieties are safe for consumption by celiac patients. The chemical composition of raw oat grain is responsible for the high dietary value and health-promoting properties of oat products. This article presents the results of a study investigating the biofortification of grain in two oat genotypes—hulless and hulled—through agronomic treatments: chemical plant protection against weeds and fungi and mineral nitrogen fertilization. The applied agronomic treatments induced different changes in the fatty acid profiles, content of tocopherols, macronutrients, and micronutrients in the grain of hulled and hulless oats. Plant health contributed to higher concentrations of unsaturated fatty acids and potassium in oat grain. In turn, nitrogen fertilization decreased the content of unsaturated fatty acids, potassium, and copper and increased the content of saturated fatty acids, calcium, and manganese in oat grain. At the same time, agronomic treatments reduced the tocopherol content of the grain, which implies that the nutritional value of oats increases in the absence of chemical plant protection agents. The correlations between the content of desirable chemical compounds and agronomic treatments were stronger in hulless oat grain, which may suggest that the agronomic modification of oat-based foods is more effective in this genotype. The content of exogenous alpha-linoleic acid C18:3 n-3 and alpha-tocopherol was higher in grain harvested from the control treatment (without chemical plant protection), whereas grain harvested from fully protected treatments accumulated more essential gamma-linolenic acid C18:3 n-6. This study aimed to analyze the physicochemical properties and nutritional quality of oil extracted from the camelina seed genotypes NS Zlatka and NS Slatka, grown in Serbia, using both Soxhlet extraction with n-hexane and the cold-pressing technique. Extraction technique did not have an effect on oil yield. Camelina oils exhibited satisfactory physicochemical characteristics, which were influenced by the extraction methods. The oils were rich in polyunsaturated fatty acids, with α-linolenic acid being the most abundant. They were characterized by a balanced ω-6 to ω-3 ratio (0.5), low atherogenicity index and thrombogenicity index values, and a relatively high hypocholesterolemic/hypercholesterolemic ratio. Cold-pressed oils contained significantly higher amounts of α- and γ-tocopherols and showed greater oxidative stability at moderate temperatures, as confirmed by the Schaal oven test. Despite this, their oxidative stability decreased at elevated temperatures (Rancimat test) compared to solvent-extracted oils. Conversely, solvent-extracted oils had higher levels of β-carotene and showed superior resistance to high-temperature conditions. Due to its unique characteristics, nutritional properties, and health-promoting attributes, cold-pressed camelina oil presents significant potential for application in food, nutraceutical, feed, and cosmetic industries. The EU market offers different types of milk, distinguished by origin, production method, processing technology, fat content, and other characteristics, which are often detailed on product labels. In this context, ensuring the authenticity of milk is crucial for maintaining standards and preventing fraud. Various food authenticity techniques have been employed to achieve this. Among them, near-infrared (NIR) spectroscopy is valued for its non-destructive and rapid analysis capabilities. This study evaluates the effectiveness of a miniaturized NIR device combined with support vector machine (SVM) algorithms and LDA feature selection to discriminate between four commercial milk types: high-quality fresh milk, milk labeled as mountain product, extended shelf-life milk, and TSG hay milk. The results indicate that NIR spectroscopy can effectively classify milk based on the type of milk, relying on different production systems and heat treatments (pasteurization). This capability was greater in distinguishing high-quality mountain and hay milk from the other types, while resulting in less successful class assignment for extended shelf-life milk. Quinoa is an annual pseudocereal highly adapted to extreme environments and has become, at this point in time, an extremely popular food due to its exceptional and high nutritional quality. This study aims to investigate the association of quinoa salt tolerance at an early developmental stage with its grain nutritional value under the effect of severe climatic hurdles. The current findings revealed a significant variability between genotypes in salt response attributes at the first development stage, where genotypes Amarilla Sacaca (thereafter, A. Sacaca) and QQ57 exhibited high salt tolerance thresholds with a low salt sensitivity index (SI), and a high capacity for Na+ sequestration into vacuoles. A significant positive association was detected between salt tolerance degree and yield parameters, saponins (SAPs), and minerals contents, where genotype A. Sacaca exhibited the highest SAP content with 3.84 mg.g−1 and the highest amounts of K, Ca, P, and Fe. The analysis of fatty acid composition demonstrated a high significant negative correlation between crude fat content and salt SI, and between yield parameters. Despite its low harvest index (HI) and low seed oil content, the salt-tolerant genotype A. Sacaca showed a high nutritional quality for seed oil according to its lowest ω6/ω3 ratio (5.6/1) and lowest level of atherogenicity index (AI). The genotype 115R, defined as the most sensitive to salt stress, exhibited a high seed oil quality due to its low lipid peroxidation susceptibility as reflected by its oxidative susceptibility and peroxidizability indexes. The significance of this study includes the identification of valuable quinoa genotypes showing high efficiency in growth and yield under severe stress accompanied by a high nutritional value satisfying the market requirements for healthy, nutritious, and safe food products. In recent years, the interest in lipids present in wines has increased, because these natural components, even at low or very low concentrations, play an important role in wine evolution and quality and contribute substantially to the taste and mouthfeel of wines. Herein, we present a liquid chromatography–high-resolution mass spectrometry (LC-HRMS) method for the profiling of free fatty acids (FFAs) in wines. The method is fast and allows the simultaneous determination of twenty-seven saturated and unsaturated FFAs in wine samples, avoiding any prior derivatization step. After validation, a variety of white and rose commercial wine samples from the Greek market, either sparkling or non-sparkling, were analyzed by the present method. The majority of wine FFAs are saturated long aliphatic, in particular palmitic (C16:0) and stearic (C18:0) acids, followed by myristic (C14:0) and pentadecanoic (C15:0) acids, while oleic (C18:1), palmitoleic (C16:1) and linoleic (C18:2) acids were quantified among the unsaturated FAs. Fatty acid composition and its proportions are critical to the nutritional value and storage quality of rice (Oryza sativa L.) as the third major nutrient component in this staple food. This study involved crossing an indica rice variety, Huazhan (HZ), as the male parent, with a japonica variety, Nekken2, as the female parent, to produce the F1 generation. Subsequently, a population of 120 recombinant inbred lines (RILs) was developed through multiple generations of self-breeding. By utilizing a high-density molecular genetic linkage map and phenotypic data of four fatty acid components, we identified a total of 14 quantitative trait loci (QTLs) related to fatty acid composition across chromosomes 1, 3, 4, 6, 8, and 9. These included two QTLs for C14 content, three for C16:0 content, six for C18:1 content, and three for C18:2 content. Notably, the QTL qCOPT4.2 exhibited a high LOD score of 5.22. Within QTL intervals, genes such as OsACX3 and SLG affecting grain length were identified. The expression of candidate genes within these intervals was assessed and further analyzed by using quantitative real-time PCR. Genes such as LOC_Os01g15000, LOC_Os04g47120, LOC_Os04g49194, LOC_Os06g22080, LOC_Os06g23870, LOC_Os06g24704, LOC_Os06g30780, LOC_Os08g44840, and LOC_Os09g36860 were found to regulate fatty acid synthesis or metabolic pathways, potentially enhancing fatty acid content in rice. These QTLs are indispensable for breeding rice varieties with improved fatty acid profiles, offering new genetic resources for enhancing the nutritional and storage qualities of rice. Field studies suggest that NO3− photolysis may play a more significant role than previously thought. In this study, we concurrently measured HONO, NO2, and NO2− in situ to gain a deeper understanding of the photogenerated HONO transfer to air and to better constrain the rate constants of NO3− photolysis. The presence of fatty acids (e.g., nonanoic acid, NA), which are naturally present in the environment, significantly increases the production of photogenerated HONO and NO2. With an increase in oxygen percentage, the release rate of photoinduced HONO slowed, while the release rate of NO2 accelerated. The measured J N O 3 − value averaged 1.65 × 10−5 s−1, which is two orders of magnitude higher than values reported in similar systems. The HONO transfer rate from the solutions increased from 2.3 × 10−4 s−1 to 5.6 × 10−4 s−1 as the NA concentration increased from 0.1 to 20 mM. This can be attributed to the accumulation of NO2− induced by NA at the interface. Within this interfacial region, NO2− in the solutions becomes more prone to transfer into gaseous HONO, suggesting that photogenerated NO2− hosted in atmospheric droplets may serve as a temporary reservoir of atmospheric HONO without illumination, influencing the atmospheric oxidizing capacity in the region for hours. Therefore, simultaneous measurements of both gas and particle phase photoproducts are recommended to better constrain the rate constants of NO3− photolysis, thereby enhancing the accuracy of predicting the photochemical production of HONO in the atmosphere. A novel bacterial strain, designated 24SJ04S-52T, was isolated from bank-side soil in the Osucheon Stream of the Seomjin River, Republic of Korea. This strain is aerobic, Gram-stain-positive, and short-rod-shaped, with optimal growth observed at 30 °C, pH 7, and 0% salinity, and growth occurring across a temperature range of 15–37 °C, pH 5–9, and salinity of 0–4%. Phylogenetic analysis of the 16S rRNA gene showed that strain 24SJ04S-52T shares 98.3% sequence similarity with Oryzobacter terrae PSGM2-16T. However, the average nucleotide identity (ANI) and digital DNA–DNA hybridization (dDDH) values were 85.0% and 50.1%, respectively, which are well below the species delineation thresholds of 95–96% for ANI and 70% for dDDH, confirming the novelty of this species. Genomic analysis identified a genome size of 3.98 Mb with a G+C content of 72.9 mol%. Functional annotation revealed various genes involved in amino acid, carbohydrate, and protein metabolism, suggesting metabolic versatility that may support adaptation to nutrient-variable environments. Chemotaxonomic analyses revealed distinctive profiles, including major fatty acids such as C17:1 ω8c, iso-C16:0, and iso-C14:0, with MK-8(H4) as the predominant menaquinone. The polar lipids included diphosphatidylglycerol, phosphatidylethanolamine, and phosphatidylinositol, and the peptidoglycan was of type A4γ with meso-diaminopimelic acid as the diagnostic diamino acid. This study investigates the nutritional composition and bioactive properties of Palmaria palmata (dulse), Ascophyllum nodosum (knotted wrack), and Chondrus crispus (Irish moss). Understanding the nutritional values of these seaweeds is very important due to their potential health benefits, especially their antioxidant properties and cytotoxic activities, which point to their ability to inhibit cancer cell proliferation. Comprehensive analyses were conducted to assess protein content, amino acid composition, mineral profile, fatty acids, polyphenols, total carotenoids, antioxidant activity, and cytotoxicity against cervical (HeLa), and colon (HCT-116) cell lines. P. palmata exhibited the highest protein content, while C. crispus was richest in calcium, iron, manganese, and zinc. Amino acid analysis revealed C. crispus as being particularly high in essential and non-essential amino acids, including alanine, glutamic acid, and glycine. A. nodosum and C. crispus were rich in polyunsaturated fatty acids (PUFAs), notably eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA). A. nodosum showed the highest total carotenoid content. Polyphenol analysis highlighted the presence of compounds such as p-coumaric acid, gallic acid, and p-hydroxybenzoic acid across the species. Both the ethanolic and hexane A. nodosum extracts demonstrated the strongest antioxidant potential in DPPH• and ABTS+ assays. The Jiani yak is a nationally renowned species that is known for its meat which is rich in various minerals, amino acids, and proteins. The rumen microbiota plays a critical role in gastrointestinal health and feed degradation, contributing proteins, lipids, and volatile fatty acids (VFAs) essential for milk and meat production. However, there is limited knowledge about the microbiota of free-ranging Jiani yaks, especially those with 15 ribs. Rumen fluid samples were collected from yaks with 14 (PL) ribs and 15 (DL) ribs from a slaughterhouse in Jiani County, China. The total DNA of rumen fluid microorganisms was extracted for microbiota sequencing. Our results revealed 643,713 and 656,346 raw sequences in DL and PL animals, respectively, with 611,934 and 622,814 filtered sequences in these two yak groups. We identified 13,498 Amplicon Sequence Variants (ASVs), with 2623 shared between DL and PL animals. The ratio of Bacteroidota to Firmicutes differed between PL (3.04) and DL (2.35) animals. Additionally, 6 phyla and 21 genera showed significant differences between yaks with 14 and 15 ribs, leading to altered microbiota functions, with 51 and 35 notably different MetaCyc and KEGG pathways, respectively. Hence, the microbiota of yaks with 15 ribs differs from those with 14 ribs. Therefore, these microbiota-related comparative investigations will provide insights into yak husbandry practices and genetic selection strategies for their improved productivity in harsh environments. Frailty in cirrhosis or advanced chronic liver disease (ACLD) is a relevant prognostic factor. In the present study, we aimed to analyze potential biomarkers associated with frailty and its improvement in patients with ACLD. We analyzed the serum of outpatients with ACLD who participated in a previous study (Román, Hepatol Commun 2024) in which frailty was assessed using the liver frailty index (LFI), and patients who were frail or prefrail were randomized to a multifactorial intervention (home exercise, branched-chain amino acids, and probiotics) or control for 12 months. We determined a biomarker battery of inflammation, bacterial translocation, and liver damage in blood and urine and blood metabolomics by 1H-NMR. Thirty-seven patients were included. According to the LFI, 32 patients were frail or prefrail, and 5 were robust. At baseline, LFI correlated with LBP, sCD163, mtDNA, FGF-21, urinary NGAL, urinary claudin-3, and the metabolites mannose, ethanol, and isoleucine. During the study, patients in the intervention group showed an improvement in LFI and a decrease in CRP, LBP, sCD163, and ccK18 compared to the control group. Metabolomics showed a decrease in dimethyl sulfone and creatinine and an increase in malonate, ornithine, isoleucine, and valine in the intervention group. We conclude that frailty in patients with ACLD is associated with biomarkers of systemic inflammation, bacterial translocation, and liver damage, and alterations of amino acid and short-chain fatty acid metabolism. Cow milk is rich in proteins, fats, carbohydrates, and minerals; however, its precise nutrient content varies based on various factors. In the current study, we evaluated the differences in the fatty acid and protein contents of milk and the factors associated with these differences. To achieve this, samples were collected from seven types of cows in different regions. These included samples from three dairy breeds: Chinese Holstein milk from Beijing, China (BH), Chinese Holstein milk (HH) and Jersey milk (JS) from Hebei province, China; and four dairy/meat breeds: Sanhe milk (SH) from Inner Mongolia Autonomous Region, China, Xinjiang brown milk (XH) and Simmental milk (SI) from Xinjiang Uygur Autonomous Region, China, and Shu Xuanhua milk (SX) from Sichuan province, China. Breed significantly affects total fat, fatty acid, and protein contents. Additionally, geographic region significantly affects the contents of different fatty acids, α-lactalbumin, and lactoferrin. JS has the highest total fat and casein contents. XH samples contain significantly higher unsaturated fatty acid content than BH samples and do not differ significantly from JS. Additionally, the low β-lactoglobulin and high lactoferrin contents in XH samples may be favorable for the growth and development of infants. Background: The oils obtained from the seeds of Nigella sativa, also named black cumin, are rich in bioactive compounds that strengthen immunity and support human health. This study aimed to compare Nigella sativa oils pressed from Egyptian (Eg-NSSO), Ethiopian (Et-NSSO), and Syrian (Sy-NSSO) seeds. Methods: The analyzed oils were obtained from a local company. The content of phenolic compounds, tocochromanols, phytosterols, volatile compounds, triglycerides, and fatty acids composition was determined using chromatographic methods. The oxidative stability was determined by Rancimat technique as well as the determination of DPPH and ABTS scavenging activity. As an assessment of bioactivity, the antimicrobial and anti-aflatoxigenic properties of oils were evaluated. Results: Ethiopian oil had highest content of phenolic compounds, flavonoids, phytosterols, and tocochromanols and was characterized by the longest induction period (IP = 7.89 h). The share of thymoquinone was the highest in Ethiopian oil (34.84%), followed by Egyptian (27.36%), then Syrian (22.59%). Ethiopian oil recorded a high antibacterial activity, while Egyptian oil showed a unique antifungal activity against toxigenic fungi. This paper describes the synthesis of two 6-azido-6-deoxy derivatives of phosphatidylinositol (PI), which contained different fatty acid chains. These syntheses, starting from methyl α-d-glucopyranoside, employed multiple regioselective transformations with Ferrier rearrangement as one of the key steps. The PI derivatives contained different fatty acid chains in the lipids and an azido group in the inositol residue to facilitate their further functionalization under bioorthogonal conditions. The potential of the green macroalga Ulva lactuca is increasingly recognized, not only for its environmental benefits, but also for its applications in various industries, including food, pharmaceuticals, and cosmetics. Given this insight, a comprehensive analysis of the chemical profile of U. lactuca from the Adriatic Sea was carried out. The hydrodistillate, rich in (Z,Z,Z)-hexadeca-7,10,13-trienal and hexadecanoic acid, underlines its importance for health-related uses, particularly in lipid metabolism and cellular integrity. Fatty acid analysis showed a predominance of palmitic acid and a favorable n-6/n-3 polyunsaturated fatty acid ratio, suggesting that U. lactuca can make a valuable contribution to a balanced diet. In addition, essential amino acids, including leucine, valine, and isoleucine, support its use as a functional ingredient for muscle repair and metabolic health. The ethanol extract contained 56 compounds, including derivatives of fatty acids, phenolic acids, pigments, flavonoids, and steroids. Despite being a highly nutritious and resilient cereal, pearl millet is not popular among consumers and food industries due to the short shelf-life of flour attributed to rapid rancidity development. The biochemical mechanism underlying rancidity, a complex and quantitative trait, needs to be better understood. The present study aims to elucidate the differential accumulation of metabolites in pearl millet that impact the rancidity process. Metabolite profiling was conducted on ten pearl millet genotypes with varying levels of rancidity—comprising high, low, and medium rancid genotypes—utilizing liquid chromatography and high-resolution mass spectrometry (LC-HRMS) at different accelerated ageing conditions. Through non-targeted metabolomic analysis, crucial metabolites associated with rancidity were identified across various biochemical pathways, including fatty acids, glycerophospholipids, sphingolipids, glycerol lipids, flavonoids, alkaloids, and terpenoids. Notably, metabolites such as fatty aldehydes, fatty alcohols, fatty esters, fatty acyls, fatty esters, and fatty amides were significantly elevated in high rancid genotypes, indicating their involvement in the rancidity process. These fatty acids-related metabolites further break down into saturated and unsaturated fatty acids. Four key fatty acids—stearic, palmitic, linoleic and linolenic acid—were quantified in the ten pearl millet genotypes, confirming their role in rancidity development. In the parent, gestational diabetes mellitus (GDM) causes both hyperglycemia and hyperlipidemia. Despite excess lipid availability, infants exposed to GDM are at risk for essential long-chain polyunsaturated fatty acid (LCPUFA) deficiency. Isotope studies have confirmed less LCPUFA transfer from the parent to the fetus, but how diabetic fuels impact placental fatty acid (FA) uptake and lipid droplet partitioning is not well-understood. We evaluated the effects of high glucose conditions, high lipid conditions, and their combination on trophoblast growth, viability, mitochondrial bioenergetics, BODIPY-labeled fatty acid (FA) uptake, and lipid droplet dynamics. The addition of four carbons or one double bond to FA acyl chains dramatically affected the uptake in both BeWo and primary isolated cytotrophoblasts (CTBs). The uptake was further impacted by media exposure. The combination-exposed trophoblasts had more mitochondrial protein (p = 0.01), but impaired maximal and spare respiratory capacities (p < 0.001 and p < 0.0001), as well as lower viability (p = 0.004), due to apoptosis. The combination-exposed trophoblasts had unimpaired uptake of BODIPY C12 but had significantly less whole-cell and lipid droplet uptake of BODIPY C16, with an altered lipid droplet count, area, and subcellular localization, whereas these differences were not seen with individual high glucose or lipid exposure. These findings bring us closer to understanding how GDM perturbs active FA transport to increase the risk of adverse outcomes from placental and neonatal lipid accumulation alongside LCPUFA deficiency. Viruses are intracellular parasites that utilize organelles, signaling pathways, and the bioenergetics machinery of the cell to replicate the genome and synthesize proteins to build up new viral particles. Mitochondria are key to supporting the virus life cycle by sustaining energy production, metabolism, and synthesis of macromolecules. Mitochondria also contribute to the antiviral innate immune response. Here, we describe the different mechanisms involved in virus–mitochondria interactions. We analyze the effects of viral infections on the metabolism of glucose in the Warburg phenotype, glutamine, and fatty acids. We also describe how viruses directly regulate mitochondrial function through modulation of the activity of the electron transport chain, the generation of reactive oxygen species, the balance between fission and fusion, and the regulation of voltage-dependent anion channels. In addition, we discuss the evasion strategies used to avoid mitochondrial-associated mechanisms that inhibit viral replication. Osteoporosis is a common skeletal disease, primarily associated with aging, that results from decreased bone density and bone volume. This reduction significantly increases the risk of fractures in osteoporosis patients compared to individuals with normal bone density. Additionally, the bone regeneration process in these patients is slow, making complete healing difficult. Along with the decline in bone volume and density, osteoporosis is characterized by an increase in marrow adipose tissue (MAT), which is fat within the bone. In this altered bone microenvironment, osteoblasts are influenced by various factors secreted by adipocytes. Notably, saturated fatty acids promote osteoclast activity, inhibit osteoblast differentiation, and induce apoptosis, further reducing osteoblast formation. In contrast, monounsaturated fatty acids inhibit osteoclast formation and mitigate the apoptosis caused by saturated fatty acids. Leveraging these properties, we aimed to investigate the effects of overexpressing stearoyl-CoA desaturase 1 (SCD1), an enzyme that converts saturated fatty acids into monounsaturated fatty acids, on osteogenic differentiation and bone regeneration in both in vivo and in vitro models. Through this novel approach, we seek to develop a stem cell-based therapeutic strategy that harnesses SCD1 to improve bone regeneration in the adipocyte-rich osteoporotic environment. The study aimed to assess the impact of lactic acid bacteria (LAB) strains on the antioxidant, physico-chemical properties, and microbiological quality of fermented sausages. Five treatments of raw sausages were prepared: two controls without LAB addition (C, P), and three samples with LAB addition (SCH1, BAL6, KL14). Fatty acid composition, cholesterol content, physico-chemical, microbiological tests, and antioxidant assays, were performed at time 0 and after 1 and 2 months of storage. A significantly higher ability to scavenge free radicals of DPPH (2,2-diphenyl-1-picrylhydrazyl) was found in sausages with all LAB strains. In the case of the ABTS (2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)) test, it was noted that KL14 treatment had higher antioxidant activity. The main fatty acids in sausages were monounsaturated and saturated. A significantly lower cholesterol content was observed in sausages with the addition of LAB. Sausages with LAB strains differed significantly in pH value. Water activity decreased significantly during storage. After 2 months of storage, the sausages with BAL6 and KL14 strains were characterized by significantly lower redox potential and a lower TBARS (thiobarbituric acid reactive substances) index. It was found that P sausages had the darkest color. SCH1, BAL6, and KL14 strains were also capable of producing red color. The total number of microorganisms in the sausages was high, which is mainly due to the high LAB content and yeast and mold counts. No spoilage or pathogenic microflora were detected. This study investigated the prevalence and severity of lameness in dairy cow herds, focusing on its relationship with milk traits, metabolic profile, and dry period management. Lameness was evaluated in 4221 multiparous Holstein dairy cows during early lactation (up to 60 days postpartum) using a 1-to-5 scale. The average lameness score was 1.67, with a prevalence of 10.66% (scores 3 to 5) and 4.55% classified as severe (scores 4 to 5). Severe lameness was associated with energy-corrected milk losses of −11.00 kg/day (p < 0.001) and a decrease in milk lactose concentration by −0.16 percentage points (p < 0.001), alongside a rise in somatic cell scores by +0.11. The incidence of cows with a milk fat-to-protein ratio below 1.2 increased by 21.7 percentage points, while those with a ratio above 1.4 rose by 19.1 percentage points as lameness worsened. Additionally, non-esterified fatty acid concentrations increased by 1.46 times as lameness severity intensified (p < 0.001). Cows without lameness had blood cortisol levels 1.86 times lower than affected cows, with cortisol tripling in those with the highest scores. A dry period of 30 to 60 days was correlated with more healthy cows, whereas periods over 90 days resulted in 1.586 times higher odds of lameness (p < 0.05). Protein intake inadequacy has been considered to be one of the major nutritional problems worldwide for many years and it appears that this issue will continue to increase sharply in the coming decades. This deficiency can be partly overcome by the effective use of protein-rich bioresources such as mollusks. In the present study, the oyster Pinctada radiata, collected from the Aegean Sea, is fully nutritionally characterized as a new non-indigenous bioresource concerning mainly its protein, carbohydrate and fat composition during the different seasons of the year. The results showed that the protein content of the pearl oyster is at satisfactory levels, with its maximum value in winter and minimum in summer. On the contrary, its fat and carbohydrates are at low levels, with their maximum values in the summer period. Regarding the profile of fatty acids, polyunsaturated fats are in the highest proportion, which is very encouraging, as a diet rich in this kind of fat is desired. The entire nutritional profile of the studied oyster demonstrates its high nutritional value and supports its possible use as a "new" seafood source for human consumption in the Mediterranean. Aroma plays a pivotal role in defining tea quality and distinctiveness, and tea producers have often observed that specific drought conditions are closely associated with the formation and accumulation of characteristic aroma compounds in tea leaves. However, there is still limited understanding of the differential strategies employed by various tea cultivars in response to drought stress for the accumulation of key volatile aroma compounds in fresh tea leaves, as well as the associated metabolic pathways involved in aroma formation. In this study, two widely cultivated tea cultivars in China, Fuding Dabai (FD) and Wuniuzao (WNZ), were examined to assess the impact of mild field drought stress on the composition and accumulation of key volatile aroma compounds in fresh leaves using headspace gas chromatography–ion mobility spectrometry (HS-GC-IMS) and headspace solid phase micro-extraction gas chromatography–mass spectrometry (HS-SPME-GC-MS) technologies. Results revealed that drought stress led to a substantial increase in the diversity of volatile compounds (VOCs) in FD, while WNZ exhibited a notable rise in low-threshold VOC concentrations, amplifying sweet, floral, fruity, and earthy aroma profiles in post-drought fresh leaves. Through partial least squares discriminant analysis (PLS-DA) of HS-GC-IMS and HS-SPME-GC-MS data, integrating variable importance projection (VIP) scores and odor activity values (OAVs) above 1, 9, and 13, key odor-active compounds were identified as potential markers distinguishing the drought responses in the two cultivars. These compounds serve as crucial indicators of the aromatic profile shifts induced by drought, providing insights into the differential metabolic strategies of the cultivars. Additionally, KEGG enrichment analysis revealed 12 metabolic pathways, such as terpenoid biosynthesis, fatty acid synthesis, cutin, suberine, and wax biosynthesis, and phenylalanine metabolism, which may play crucial roles in the formation and accumulation of VOCs in tea leaves under drought stress. This study examined the levels of major flavonoids, nutritional components, total secondary metabolite contents, and antioxidant activities in 136 mung bean accessions and statistically analyzed the effect of seed weight difference on each. Vitexin and isovitexin were detected in all the mung bean accessions, with isovitexin being in a higher concentration regardless of seed weight difference. The contents of total protein and total starch were in the ranges of 22.01–28.96 and 32.62–49.03 g/100 g, respectively. Five fatty acids were detected by GC–FID analysis in all mung bean accessions, with linoleic acid being the most dominant (37.96–50.71 g/100 g). Total saponin content (TSC), total phenol content (TPC), DPPH• scavenging activity, ABTS•+ scavenging activity, and ferric reducing antioxidant power (FRAP) showed more than five-fold differences. Analysis of variance supported by multivariate analysis demonstrated that seed weight difference had a significant effect on total starch, all individual fatty acids except for stearic acid and oleic acid, TSC, and all antioxidant activities except for ABTS•+ scavenging activity. On the other hand, vitexin, isovitexin, total protein, total phenol, and total fatty acid contents remained unaffected by seed weight difference. Overall, this study showed the diversity of key flavonoids, nutritional components, total secondary metabolite contents, and antioxidant activities in mung bean genetic materials. Moreover, the study unveiled how seed weight affects the analyzed parameters in mung beans for the first time. This study presents the development and characterization of medium-chain fatty acid (MCFA)-loaded bigels, using coconut oil as the MCFA source. The bigels exhibited high oil binding capacity, ranging from 87% to 98%, effectively retaining MCFAs within the matrix, with lauric acid (C12) being the main component detected within the bigels at 178.32 ± 0.10 mg/g. Physicochemical analysis, including FTIR and scanning electron microscopy, confirmed stable fatty acid incorporation and a cohesive, smooth structure. The FTIR spectra displayed O-H and C=O stretching vibrations, indicating hydrogen bonding within the matrix, while the SEM images showed uniform lipid droplet distribution with stable phase separation. Thermal stability tests showed that the bigels were stable for 5 days at 50 °C, with oil retention and structural integrity unchanged. Rheological testing indicated a solid-like behavior, with a high elastic modulus (G′) that consistently exceeded the viscous modulus (G″), which is indicative of a strong internal structure. In simulated gastrointestinal digestion, the bigels achieved significantly higher MCFA retention than the pure oil, particularly in the gastric phase, with recovery percentages of 38.1% for the bigels and 1.7% for the oil (p < 0.05), suggesting enhanced bioavailability. Cell-based cytotoxicity assays showed low cytotoxicity, and permeability testing in a co-culture Caco-2/HT29-MTX model revealed a controlled, gradual MCFA release, with approximately 10% reaching the basolateral side over 6 h. These findings highlight MCFA-loaded bigels as a promising platform for nutraceutical applications; they provided stability, safety, and controlled MCFA release, with significant potential for functional foods aimed at enhancing fatty acid bioavailability. A pink-pigmented, ovoid-rod-shaped, Gram-negative bacterial strain ML10T was previously isolated in a study of a meromictic lake in British Columbia, Canada. It produces bacteriochlorophyll a, which is incorporated into the reaction center and light harvesting I complexes. This alongside no anaerobic or photoautotrophic growth supports the designation of the strain as an aerobic anoxygenic phototroph. The cells produce wavy polar flagellum and accumulate clear, refractive granules, presumed to be polyhydroxyalkanoate. Sequence of the 16S rRNA gene identified close relatedness to Salinarimonas rosea (97.85%), Salinarimonas ramus (97.92%) and Saliniramus fredricksonii (94.61%). The DNA G + C content was 72.06 mol %. Differences in cellular fatty acids and some physiological tests compared to Salinarimonadaceae members, as well as average nucleotide identity and digital DNA-DNA hybridization, define the strain as a new species in Salinarimonas. Background: Previous studies have reported associations between fatty acids and the risk of pre-eclampsia. However, the causality of these associations remains uncertain. This study postulates a causal relationship between specific plasma fatty acids and pre-eclampsia or other maternal hypertensive disorders (PE-HTPs). To test this hypothesis, two-sample bidirectional Mendelian randomization (MR) analyses were employed to determine the causality effects. Methods: Single-nucleotide polymorphisms associated with PE-HTPs and fatty acids were obtained from a genome-wide association study (GWAS) of European ancestry. Bidirectional MR analyses were conducted using methods such as inverse variance weighted, MR-Egger, weighted median, simple mode, and weighted mode. Sensitivity analyses, including tests for heterogeneity, horizontal pleiotropy, and co-localization, were conducted to assess the robustness of MR results. Results: The analyses revealed causal relationships between PE-HTPs and several fatty acids, including monounsaturated fatty acid (MUFA), omega-6 fatty acid (n-6 FA), linoleic acid (LA), docosahexaenoic acid (DHA), and the PUFA/MUFA ratio. Genetically predicted higher risk of PE-HTPs was significantly associated with lower plasma n-6 FA (OR = 0.96, 95% CI: 0.93–0.99), particularly LA (OR = 0.95, 95% CI: 0.92–0.98). Conversely, increased DHA (OR = 0.86, 95% CI: 0.78–0.96) and a higher PUFA/MUFA ratio (OR = 0.86, 95% CI: 0.76–0.98) were associated with a reduced risk of PE-HTPs. Elevated MUFA levels (OR = 1.12, 95% CI: 1.00–1.25) were related to an increased risk. Conclusions: This study provides robust genetic evidence supporting bidirectional causal relationships between PE-HTPs and specific plasma fatty acids, underscoring the critical role of fatty acid metabolism in maternal hypertensive disorders. Background/Objectives: Fatty acids are involved in some hepatic disorders. The proprotein convertase subtilisin kexin 9 (PCSK9) inhibits the uptake of low-density lipoproteins (LDLs), which contain lipids, into the liver and may thus be associated with nonalcoholic fatty liver disease (NAFLD), a cardiovascular disorder (CVD) risk. Statins reduce blood LDL–cholesterol (LDL-C) levels and CVD risk and can attenuate the development of NAFLD while increasing blood PCSK9 levels. Methods: We investigated the correlation between PCSK9 and liver conditions in patients with familial hypercholesterolemia (FH), a CVD risk population with elevated blood LDL-C levels, under statin treatment. Blood tests for lipids, PCSK9, and liver function (aspartate aminotransferase [AST] and alanine aminotransferase [ALT]) were performed in patients with FH taking statins (n = 25, mean age = 57 years, 12% of males). The ALT:AST ratio was used as a marker of NAFLD risk. Results: The mean LDL-C level was 3.38 mmol/L, and the median PCSK9 level was 312 ng/mL. The median ALT:AST ratio was 0.88. A significant negative correlation was observed between the PCSK9 and ALT:AST ratio (β = −0.67, p < 0.05). Conclusions: Their negative correlation might give a hypothetical insight into the effect of statin treatment on the development of NAFLD, in relation to PCSK9 behavior, in patients with FH. The present study examines the tribological behavior of an EN AW-4006 aluminum alloy subjected to two innovative hard anodizing processes involving the sealing of anodic oxide pores with Ag+ ions and tested in lubricated conditions. Four plant-based lubricants with different concentrations of fatty acids were considered. Wear tests were conducted using a ball-on-disk tribometer, employing a constant frequency oscillatory motion at 2 Hz and a maximum linear speed of 0.1 m/s. The investigation explores the influence of applied loads (5 N, 10 N, and 15 N) on the resulting coefficient of friction. Through a Design of Experiments methodology, the most influential factors affecting the coefficient of friction are identified. The results indicate that hard anodizing processes and applied load affect the coefficient of friction during wear testing as the main factor of influence. High values of the Unsaturation Number led to a high coefficient of friction at 5 N. Background: Glyoxal has been implicated as a significant contributor to the formation of secondary organic aerosols, which play a key role in our ability to estimate the impact of aerosols on climate. Elevated concentrations of glyoxal over remote ocean waters suggests that there is an additional source, distinct from urban and forest environments, which has yet to be identified. Herein, we demonstrate that the ocean can serve as an appreciable source of glyoxal in the atmosphere due to microbiological activity. Methods and Results: Based on mass spectrometric analyses of nascent sea spray aerosols and the sea surface microlayer (SSML) of naturally occurring algal blooms, we provide evidence that during the algae death phase phospholipids become enriched in the SSML and undergo autoxidation thereby generating glyoxal as a degradation product. Objectives: The aim of this study was to investigate the effects of acorn diets on the composition of fatty acid (FA) and the intramuscular fat (IMF) content in Yuxi black pigs. Methods: Ninety Yuxi black pigs with similar body weight (99.60 ± 2.32 kg) were randomly divided into five groups. The control group was fed a basal diet, and the AD20, AD30, AD40, and AD50 groups were fed experimental diets which contained 20%, 30%, 40%, and 50% acorns, respectively. The feeding experiment lasted for 120 days. Results: The results showed that compared with the control group, the content of SFA in longissimus dorsi and biceps femoris tissues in the AD30 group decreased by 8.57% and 20.10%, and the content of MUFA increased by 5.40% and 15.83%, respectively, while the PUFA content of biceps femoris increased by 5.40% (p < 0.05). Meanwhile, the IMF content of the AD30 group was significantly higher than that of the control group in the longissimus dorsi and biceps femoris. In addition, the mRNA expression levels of the ATGL, PPARγ, and FABP4 genes in longissimus dorsi (p < 0.05) were up-regulated, and HSL were down-regulated (p < 0.05) in the AD30 group. In the biceps femoris of the AD30 group, it was observed that the expression levels of the ACC and FAS genes were up-regulated (p < 0.05), while HSL and ATGL genes were down-regulated (p < 0.05). Enhancing microalgal growth and bioactive compound production is becoming a duty for improving photosynthetic microorganisms. In this study, the growth, carotenoid, and fatty acid profiles of Conticribra weissflogii were studied under four different silicate concentrations and silicate-deficient conditions in an f/2 medium with continuous aeration, light intensity (30 ± 2 µmol m−2 s−1), salinity (25 ± 2‰), pH (8), and temperature (25 ± 2 °C). At the end of the experiment, we observed that a silicate concentration of 120 mg L−1 produced the maximum biomass dry weight (0.86 g L−1), carotenoid content (1.63 µg mL−1), and fucoxanthin content (1.23 mg g−1) in C. weissflogii. The eicosapentaenoic acid (EPA) (11,354.37 µg g−1), docosahexaenoic acid (DHA) (2516.16 µg g−1), gamma-linolenic acid (C18:3n6) (533.51 µg g−1), and arachidonic acid (C20:4n6) (1261.83 µg g−1) contents were significantly higher at Si 120 mg L−1. The results further showed the maximum fatty acid content in C. weissflogii at Si 120 mg L−1. However, the silicate-deficient conditions (Si 0 mg L−1) resulted in higher levels of saturated fatty acids (38,038.62 µg g−1). This study presents a practical approach for the large-scale optimization of biomass, carotenoid, fucoxanthin, and fatty acid production in C. weissflogii for commercial purposes. Acne vulgaris, a high-prevalence skin condition afflicting people, persists as a significant challenge in the absence of effective treatments and emerging antibiotic resistance. To address this pressing concern, exploration of innovative approaches is of the utmost importance. Asparagopsis armata, an invasive red seaweed renowned for its diverse array of bioactive compounds, emerges as a promising candidate. This study seeks to elucidate the potential utility of A. armata biomass in the treatment of acne vulgaris. Crude extracts were obtained through solid–liquid extraction, and fractions were obtained using liquid–liquid extraction. The analyzed bioactivities included antioxidant, antimicrobial, and anti-inflammatory. Also, chemical characterization was performed to identify free fatty acids and compounds through LC-MS and elements. The present findings unveil compelling attributes, including anti-Cutibacterium acnes activity, cytotoxic and non-cytotoxic effects, antioxidant properties, and its ability to reduce nitric oxide production with consequent anti-inflammatory potential. Additionally, chemical characterization provides insights into its mineral elements, free fatty acids, and diverse compounds. The observed antimicrobial efficacy may be linked to halogenated compounds and fatty acids. Cytoprotection appears to be associated with the presence of glycerolipids and glycosylated metabolites. Furthermore, its antioxidant activity, coupled with anti-inflammatory properties, can be attributed to phenolic compounds, such as flavonoids. This study underscores the potential of A. armata as a natural ingredient in skincare formulations, offering an important contribution to the ongoing battle against acne vulgaris. Few investigations have been carried out into the members of the genus Thermoanerobacter for protein and amino acid metabolism compared to carbohydrates, mostly due to the intense interest in bioethanol and biohydrogen in recent decades. The present study investigates the biotechnological potential of Thermoanaerobacter mathranii (DSM 11426) in terms of its ability to produce high-energy alcohols from amino and fatty acids. End product formation from glucose (in the presence and absence of butyrate) as well as from selected proteins and amino acids were analyzed. T. mathranii did not degrade any of the proteins tested to a large extent but degraded several amino acids, namely serine and the branched-chain amino acids (leucine, isoleucine, valine) when cultivated in the presence of thiosulfate. The main end products from the branched-chain amino acids were a mixture of their corresponding branched-chain fatty acids and alcohols, with the strain producing a concentration of the corresponding branched-chain alcohol between 1.0 and 1.7 mM and 8.2–10.9 mM of the corresponding fatty acid. 13C2-labeled leucine revealed that the strains degraded the amino acid in the presence of thiosulfate, producing 3-methyl-1-butyrate, which was then used as an electron acceptor which led to the accumulation of 3-methyl-1-butanol. The strain is highly ethanologenic, producing more than 1.2 mol of ethanol per mol of glucose degraded. The strain was able to reduce volatile fatty acids during glucose fermentation to their corresponding alcohol, further suggesting this strain may be of greater biotechnological value beyond bioethanol production. This study investigated the characterization of a novel multifunctional enzyme, RuXyn394, derived from the metagenome of beef cattle rumen, and its impact on the in vitro microbial fermentation of wheat straw. RuXyn394, a member of the glycosyl hydrolase 11 family, displayed optimal activity under diverse pH and temperature conditions: xylanase at pH 5.5 and 50 °C, acetyl esterase at pH 6.5 and 60 °C, exoglucanase at pH 7.0 and 50 °C, and endoglucanase at pH 6.0 and 50 °C. The enzyme's xylanase, endoglucanase, and exoglucanase activities exhibited remarkable pH stability across the range of pH 3–8 and maintained a relatively stable performance at temperatures from 20 to 50 °C, 20 to 60 °C, and 20 to 70 °C, respectively. The xylanase function, with the highest kcat/Km ratio, was identified as the predominant activity of RuXyn394. The enzyme's various functions responded uniquely to metal ions; notably, the addition of 5 mM K+ significantly boosted the activities of xylanase, exoglucanase, and endoglucanase by 55.5%, 53.5%, and 16.4%, respectively, without affecting its acetyl esterase activity. Over the course of three time points (30 min, 60 min, 120 min), the degradation products of wheat straw xylan, including xylopentaose, xylotetraose, xylotriose, xylobiose, xylose, and total xylooligosaccharides, constituted an average of 18.4%, 33.7%, 20.6%, 22.9%, 4.3%, and 95.7% of the total products, respectively. RuXyn394 effectively hydrolyzed wheat straw, resulting in augmented volatile fatty acid production and ammonia-N levels during in vitro microbial fermentation. These findings indicate the potential of RuXyn394 as a novel and highly efficient enzyme preparation, offering promising prospects for the valorization of wheat straw, an agricultural by-product, in ruminant diets. Acidogenic fermentation (AF) of wastes provides a biological route to volatile fatty acids (VFA) production as an alternative to fossil hydrocarbons. As VFA are acidic in nature, the pH in AF typically drops, affecting the fermentation performance. The effect of different alkaline substances such as urea, NaOH, or CaCO3 on AF of organic residual solids (ORS), a food waste-rich fraction of municipal solid waste (MSW), was studied. Enzymes were used as an additive in simultaneous hydrolysis and fermentation (SHF) experiments. Use of urea (66 mg Urea g−1 TS) in SHF resulted in a VFA yield of 0.14 g VFA g−1 VS after 6 days, 177% higher than the control (no urea addition). pH and ammonia concentrations significantly influenced the bacterial population distribution. In SHF using NaOH/CaCO3, added alkalinity of 11 g CaCO3 L−1 did not influence VFA yields or pH control with NaOH addition at pH 7 or higher. This study demonstrates that, while increasing pH up to 8.5 using different alkaline substances improves VFA production, higher pH is detrimental to SHF due to enzyme inhibition. Finally, the use of urea as an alkaline source must be considered carefully as the acidic pH naturally reached by AF can inhibit urea hydrolysis. [ABSTRACT FROM AUTHOR]

Asterarcys quadricellularis strain AQYS21, a green microalga isolated from the brackish waters near Manseong-ri Black Sand Beach in Korea, shows considerable potential as a source of bioactive compounds and biofuels. Therefore, this study analyzed the morphological, molecular, and biochemical characteristics of this strain; optimized its cultivation conditions; and evaluated its suitability for biodiesel production. Morphological analysis revealed characteristics typical of the Asterarcys genus: spherical to ellipsoidal cells with pyrenoid starch plates and mucilage-embedded coenobia. Additionally, features not previously reported in other A. quadricellularis strains were observed. These included young cells with meridional ribs and an asymmetric spindle-shaped form with one or two pointed ends. Molecular analysis using small-subunit rDNA and tufA sequences confirmed the identification of the strain AQYS21. This strain showed robust growth across a wide temperature range, with optimal conditions at 24 °C and 88 µmol m−2s−1 photon flux density. It was particularly rich in ω-3 α-linolenic acid and palmitic acid. Furthermore, its biodiesel properties indicated its suitability for biodiesel formulations. The biomass of this microalga may serve as a viable feedstock for biodiesel production and a valuable source of ω-3 fatty acids. Background/Objectives: Lipid metabolism and adiponectin modulate erythropoiesis in vitro and in general population studies and may also affect responsiveness to erythropoietin in patients undergoing haemodialysis (HD). However, little is known about the impact of lipid-associated biomarkers on reticulocyte production and erythropoietin resistance index (ERI) in patients undergoing HD. Therefore, we aimed to investigate their impacts in 167 stable patients undergoing HD. Methods: Pre-dialysis blood samples were collected and analysed for reticulocyte counts and serum lipid profiles by routine analyses and serum carnitine profiles (C0–C18) by LC-MS/MS. ERI was calculated as erythropoietin dose/kg/week normalized for haemoglobin levels. Results: The independent positive determinants of reticulocyte count were log [Triglyceride (TG)] and logC18:1. A large proportion of longer-chain acylcarnitines was positively correlated with reticulocyte counts, possibly resulting from the accumulation of acylcarnitines in mitochondria undergoing fateful exocytosis from reticulocytes. These results indicate a possible association between reticulocyte formation and reduced β-oxidation, which occurs during the peripheral phase of erythroblast enucleation. Total cholesterol (TC) and log [C2/(C16 + C18:1)] as a putative marker of β-oxidation efficiency were negative independent determinants of ERI. Moreover, acyl chain length had a significantly positive impact on the correlation coefficients of individual acylcarnitines with ERI, suggesting that enhanced β-oxidation may be associated with reduced ERI. Finally, adiponectin had no independent association with reticulocyte counts or ERI despite its negative association with HDL-C levels. Conclusions: Enhanced fatty acid β-oxidation and higher TC levels may be associated with lower ERI, whereas higher TG levels and longer acylcarnitines may be related to the latest production of reticulocytes in stable patients undergoing HD. "Bubblegum" acyl-CoA synthetase (ACSBG1) is a pivotal player in lipid metabolism during mouse brain development, facilitating the activation of long-chain fatty acids (LCFA) and their incorporation into lipid species that are crucial for brain function. ACSBG1 converts LCFA into acyl-CoA derivatives, supporting vital metabolic processes. Fruit fly mutants lacking ACSBG1 exhibited neurodegeneration and had elevated levels of very long-chain fatty acids (VLCFA), characteristics of human X-linked adrenoleukodystrophy (XALD). To explore ACSBG1's function and potential as a therapeutic target in XALD, we created an ACSBG1 knockout (Acsbg1−/−) mouse and examined the effects on brain FA metabolism during development. Phenotypically, Acsbg1−/− mice resembled wild type (w.t.) mice. ACSBG1 expression was found mainly in tissue affected pathologically in XALD, namely the brain, adrenal gland and testis. ACSBG1 depletion did not significantly reduce the total ACS enzyme activity in these tissue types. In adult mouse brain, ACSBG1 expression was highest in the cerebellum; the low levels detected during the first week of life dramatically increased thereafter. Unexpectedly, lower, rather than higher, saturated VLCFA levels were found in cerebella from Acsbg1−/− vs. w.t. mice, especially after one week of age. Developmental changes in monounsaturated ω9 FA and polyunsaturated ω3 FA levels also differed between w.t. and Acsbg1−/− mice. ACSBG1 deficiency impacted the developmental expression of several cerebellar FA metabolism enzymes, including those required for the synthesis of ω3 polyunsaturated FA, precursors of bioactive signaling molecules like eicosanoids and docosanoids. These changes in membrane lipid FA composition likely affect membrane fluidity and may thus influence the body's response to inflammation. We conclude that, despite compelling circumstantial evidence, it is unlikely that ACSBG1 directly contributes to the pathology of XALD, decreasing its potential as a therapeutic target. Simple Summary: Obesity increases the risk of several cancers, including breast cancer. With global obesity rates rising, it is important to understand how excess fat accumulation influences cancer development and progression. This study examined how overweight/obesity affects the breast adipose tissue around triple-negative breast cancer (TNBC), a particularly aggressive type of breast cancer. Therefore, tissue samples from overweight/obese and normal weight patients with TNBC were compared. We found that overweight/obese TNBC patients had larger fat cells, more immune cells that could support cancer growth, and fewer cells related to new blood vessel formation in the tumor-surrounding environment. Overweight/obese patients also showed higher numbers of special fibroblast cells with potential tumor-promoting functions. Moreover, tumor cells at the invasive front, which are in close contact with fat cells, showed higher levels of proteins that metabolize fatty acids, suggesting altered lipid handling in cancer cells in overweight/obese TNBC patients. Together, these findings imply that obesity is associated with distinct changes in the tumor-adjacent adipose tissue in TNBC, potentially affecting cancer aggressiveness. Understanding these changes may help to develop more effective treatment strategies for obese TNBC patients, which may improve their prognosis and overall health outcomes. In this study, we aimed to histologically characterize the adipose tissue of the tumor microenvironment (TME) of triple-negative breast cancer (TNBC) in overweight/obese versus normal-weight patients. Methods: TNBC tissue sections from normal-weight (BMI<25) and overweight/obese patients (BMI≥25) were stained with antibodies against CD68, CD163, CD31, CD34, and vimentin. At the invasive tumor front, positive cells were counted in tumor adjacent adipose tissue (AT) and within cancer tissue (CT). Further, the size of the tumor-adjacent and distant mammary adipocytes was determined in perilipin stained sections. Expression of ANGPTL4, CD36 and FABP4, proteins involved in fatty acid metabolism, was analyzed in marginal tumor cells using an immune reactive score. Results: Overweight/obese TNBC patients had significantly larger adipocytes, higher numbers of CD163+ macrophages (BMI<25: 2.80 vs. BMI≥25: 10.45; p = 0.011) and lower numbers of CD31+ (BMI<25: 4.20 vs. BMI≥25: 2.40; p = 0.018) and CD34+ (BMI<25: 14.60 vs. BMI≥25: 5.20; p = 0.045) cells as markers of angiogenesis in the AT as well as a higher frequency of cancer-associated-fibroblast-like cells in the AT and CT (BMI<25: 7.60 vs. BMI≥25: 25.39 in total; p = 0.001). Moreover, expression of CD36 (BMI<25: 2.15 vs. BMI≥25: 2.60; p = 0.041) and ANGPTL4 (BMI<25: 6.00 vs. BMI≥25: 9.80; p = 0.026) was elevated in the TNBC cells of overweight/obese patients. Conclusions: Our data suggest BMI-related changes in the TME of overweight/obese TNBC patients, including hypertrophied adipocytes, reduced vascularization, more M2-like macrophages and CAF-like cells, and an increase in the expression of fatty acid metabolizing proteins in marginal tumor cells, all contributing to a more tumor-promoting, immunosuppressive environment.
