The article focuses on food security in Africa through the use of extrusion technology (ET), especially for legumes and cereals. It discusses advantages of ET such as enhanced digestibility, deteriorative enzymes' inactivation and of natural toxicants' destruction. It mentions that products based on cereals and legumes can be produced using low-cost extrusion equipment and ET can help in sustainability. It highlights that research efforts due to ET can help in reduction of poverty.
