Teff (Eragrostis tef (Zuccagni) Trotter) is one of the underutilized crops that can contribute to food security with distinct nutritional values. The present study was aimed to determine the total phenolic content, total fat content, and fatty acid profiles and evaluate the nutritional values of the white and brown Injera (ready‐to‐eat food) using UV‐Vis and GC‐MS methods. The determined free total simple phenolic compound contents, bound total simple phenolic compound contents, and total flavonoid contents were 169.48 ± 3.36–178.52 ± 7.5, 53.13 ± 1.92–60.38 ± 0.82, and 85.18 ± 1.14–117.59 ± 4.31 mg QE/100 g, respectively, in white Injera, and 193.86 ± 6.38–204.90 ± 4.04, 70.25 ± 3.56–82.13 ± 3.12, and 97.31 ± 1.22–107.42 ± 3.29 mg QE/100 g, respectively, in brown Injera. The free total simple phenolic compound contents and bound total simple phenolic compound contents were found higher and lower, respectively, in white and brown Injera. Compared to the reported teff grains and other cereal grains, low linoleic acid (ω‐6) (21.1–24.8%) and high content of α‐linolenic acid (ω‐3) (16.3–18.9%) were found in the white and brown Injera, respectively. This value has much improved the ω‐6/ω‐3 in the white Injera (1.5 : 1) and brown Injera (1.2 : 1) and was surprisingly found consistent with the suggested 1‐2 : 1 ratio. Moreover, the lipid quality of teff Injera was found to be superior to that of other cereal grains, showing that this food product actually contains novel food components with substantial nutritional and health advantages. The results of this study may therefore aid teff consumers, processors, and researchers in raising knowledge of the nutritional value and health advantages of the white and brown Injera, as well as their contents of free and bound phenolics and fatty acid profiles. Extracts derived from various mushroom species have been documented to possess notable antimicrobial properties. However, the current corpus of knowledge pertaining to the precise evaluation of their structural characteristics is currently inadequate. In this study, a comprehensive analysis was undertaken to ascertain the antimicrobial attributes and effectiveness of phenolic compounds, such as ferulic acid, o-coumaric acid, p‐coumaric acid, rutin, quercetin, gallic p-hydroxybenzoic acid, and protocatechuic acid, identified from P. ostreatus. These compounds were examined for potential antiproliferative properties against multidrug‐resistant gonococcal clinical isolates. The results of this study revealed that p-hydroxybenzoic acid, o-coumaric acid, and chysin exhibited no antibacterial activity (MIC > 50 µg/ml) against any of the target N. gonorrhoeae isolates in the range of tested concentrations (0.1–50 µg/ml). A notable reduction in the growth activity of the target organisms was observed when subjected to cultivation in the presence of flavonoid compounds. The statistical significance of the parameter estimate for quercetin was observed at intercept (ISID 59), with a p value less than 0.0001 and a Chi‐square value of 44.84. The combination of ferulic acid with either protocatechuic acid or p-coumaric acid showed a trend towards reduced antimicrobial efficacy against most target isolates. The escalating incidence of health issues linked to environmental pollutants, specifically endocrine‐disrupting chemicals (EDCs), has emerged as a dire consequence of modern industrialization. Bisphenol A (BPA), a widespread EDC, is under scrutiny for its potential role in exacerbating bladder cancer via the modulation of cancer‐associated fibroblasts (CAFs). CAFs are integral to the tumor microenvironment, influencing cancer progression through their interactions with immune cells and secretion of various factors and exosomes. By recognizing the critical role of CAFs, this study delves into their utility as therapeutic targets, focusing on the identification of reliable biomarkers within CAFs for bladder cancer. Through weighted correlation network analysis, genes associated with T cell activity were pinpointed, culminating in the creation of a CAFs‐based, immune‐related gene prognostic model. Central to this model is ANPEP, an enzyme whose expression level not only serves as an indicator of T cell infiltration but also implicates a substantial role in the CAF‐mediated immunotherapy responses for bladder cancer. Our investigation posits ANPEP as a linchpin in regulating CAF functions, offering a novel perspective wherein targeting ANPEP may reduce the adverse side effects commonly associated with traditional immunotherapies. Furthermore, ANPEP‐targeted strategies could lessen the tumor mutational burden in bladder cancer patients. Empirical evidence from our proliferation and invasion assays indicates that heightened ANPEP expression is correlated with diminished patient survival. This work aims to merge ethnopharmacological knowledge with biochemical analysis to enrich our understanding of the significance of the argan tree (Argania spinosa (L.) Skeels) and to valorize its crucial role in the province of Essaouira (Morocco). First, a survey was conducted using semistructured interviews with 325 informants from Essaouira province between February and April 2023. The interviews covered sociodemographic data and information on argan tree uses, whether for therapeutic, cosmetic, or food purposes (i.e., applications, parts used, preparation, and administration). Second, phenolic extracts were prepared from various parts of the argan tree (i.e., leaves, kernels, nut shells, press cake, and oil) and then assessed for their antioxidant potential to scientifically validate their traditional uses. The evaluation of antioxidant activity focused on their free radical scavenging and reducing capacities, using DPPH and FRAP assays. Findings confirmed the cultural significance of the argan tree for the local population, as well as their strong dependence on its products. Indeed, it was noted that argan‐based products are widely favored in traditional cuisine, with a prevalence of 83.4%; Amlou is the most commonly consumed food. Therapeutic and cosmetic applications accounted for 48.6% and 28.0%, respectively, predominantly for treating skin and subcutaneous issues (69.5%) and diabetes (19.7%). Argan oil was the most cited argan product used, often consumed raw (97.5%), followed by almonds (22.8%). Cataplasm (26.1%) and maceration (24.6%) were preferred for argan derivative preparation. External application (50.1%) was the primary administration method, followed by oral consumption (38.1%) and massage (27.7%). For in vitro assays, the argan tree could prove to be a promising source of phenolic compounds, especially in the leaves (>4 times richer than other parts, 231.046 ± 5.090 mg GAE/g DW). DPPH and FRAP tests demonstrated notable antiradical potential and reducing power, concentration‐dependent. Leaf‐derived phenolic extracts exhibited the highest free radical scavenging potential (IC50 = 0.589 ± 0.005 mg/ml) and the best reducing capacity (IC50 = 0.420 ± 0.005 mg/ml), although these potencies remained below the standard used. This study represents valuable documentation that can serve to preserve information on the use of argan products while exploring their phytochemical and pharmacological properties. The edible part of the prickly pear fruit is most commonly consumed, while the peel is often discarded, leading to the loss of valuable bioactive components, such as phenolic compounds. This research aims to assess the antioxidant activity, total phenolic content, and quantities of phenolic and flavonoid contents of fruit peel of Opuntia ficus-indica, Opuntia robusta, and Opuntia dillenii. Ten phenolic compounds were identified, with isorhamnetin being the most abundant flavonoid measuring 7184.09 μg/g, while sinapic acid was identified as the major phenolic acid measuring 1806.36 μg/g. Opuntia robusta exhibited the highest total phenolic content, total flavonoids, and total phenolic acids measuring 5583.19 mg GAE 100 g−1, 21041.03 μg/g, and 3265.17 μg/g, respectively. Opuntia robusta and Opuntia dillenii demonstrated the higher antioxidant capacity in scavenging 2,2‐azinobis‐(3‐ethylbenzothiazoline‐6‐sulfonic acid) compared to Opuntia ficus-indica, whereas Opuntia dillenii and Opuntia ficus-indica exhibited the highest concentration of antioxidants capable of reducing the Fe3+ complex of ferric ions (TPTZ)3+ to the ferrous complex Fe (TPTZ)2+. In contrast, the 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) and total antioxidant capacity (TAC) assays showed no significant difference between the examined species. Compared to the local species Opuntia ficus-indica, the two newly introduced Dactylopius opuntiae‐resistant species are richer in phenolic compounds and exhibit greater antioxidant activity. Background. Helicobacter pylori are the principal causative factor in the etiological factors of chronic, active, or type B gastritis; peptic and duodenal ulcers; stomach carcinoma; and epithelial tissue lymphoid malignancies. It infects more than half of the population worldwide. To reduce H. pylori production, pharmacological therapy of H. pylori diseases typically involves using threefold treatment methods. However, as a result of such therapy, antimicrobial resistance is commonly developed. Alternative therapeutics for H. pylori diseases are thus of particular interest. Methods. Thyme essential oils (EOs) obtained from T. caramanicus Jalas plants in Iran were tested for antibacterial activity against H. pylori obtained from 320 poultry specimens in this investigation. Antibacterial activity was measured using inhibition zones, minimum inhibitory concentrations (MICs), and minimum bactericidal concentrations (MBCs). The impact of T. caramanicus Jalas essential oils on H. pylori isolate cagA, vacA, and babA2 gene expression was evaluated using a quantitative real‐time PCR method (p < 0.05). Results. The chemical content of these EOs varied significantly according to chromatographic examination. Thymol, carvacrol, and terpinene‐4‐ol are the most abundant components in these EOs. H. pylori was recognized as a Helicobacter species with a 175‐bp PCR product of 16S rRNA in 20/20 (100%). According to PCR results, all 20 (100%) isolates belonged to H. pylori. The EOs inhibited H. pylori in a dose‐dependent manner, with T. caramanicus Jalas being the most effective, followed by pterygium EOs in decreasing order. At 8 mg/mL of T. caramanicus Jalas EOs, IZs against H. pylori were 27.4 ± 0.42 mm, and at 8 mg/mL of pterygium, IZs against H. pylori were 1 ± 0.02. T. caramanicus Jalas essential oils were used to treat all bacteria, and the findings showed that T. caramanicus Jalas had a substantial inhibitory impact on the expression of cagA, vacA, and babA2 virulence‐related genes (p < 0.05). Conclusions. In a dose‐dependent manner, the EOs of T. caramanicus Jalas EO demonstrated a high degree of antimicrobial property against H. pylori bacteria. The most efficient EOs were those from T. caramanicus Jalas with relative concentrations of thymol and carvacrol, followed by the coumarin‐dominated pterygium EO with reduced antibacterial activity. Red pepper is a valuable ingredient known for its abundance of vitamins and antioxidants. But, it usually needs to be dried for longer preservation. Hence, this research is aimed at examining the drying kinetics and quality attributes of dried red peppers utilizing various solar drying methods, in comparison with traditional open sun drying (OSD) and industrial laboratory thin layer dryers (LTLD). Analysis parameters employed include determining moisture content, measuring color properties, evaluating antioxidant capacity, analyzing capsaicinoid content, and assessing microbial presence. The drying process took place in a sunny environment with fluctuations in temperature and relative humidity as evidence of the dynamic conditions experienced within the solar dryers. It was observed that the logarithmic model was the most accurate in predicting moisture ratio over time, estimating a drying time of 25 hours to achieve 10% moisture content. The result demonstrated that direct solar dryers (DSD), indirect solar dryers (ISD), and mix mode solar dryers (MMSD) methods showed moderate changes in color parameters, with average Δ L ∗ , Δ a ∗ , and Δ b ∗ values of -5.08, -23.71, and -13.62, respectively. The average overall color difference (Δ E) for these methods was 27.96. In addition, after comparing it to the LTLD method, which showed the highest content of phenolic compounds at 47.89%, MMSD displayed a slightly lower content of 44.71%. Similarly, MMSD exhibited higher levels of DPPH radical scavenging activity and ferric reducing power, measuring at 44.22% and 1163.75 μmol Fe2+/L, respectively. The capsaicin content remained relatively consistent across all drying methods, with MMSD, DSD, and LTLD demonstrating similar levels of approximately 31 mg/g. Although MMSD had slightly higher mold and yeast counts compared to LTLD, ISD, and DSD, it remained lower than OSD (less than 0.56 log 10 cfu / g ). Furthermore, MMSD showed a lower total microbial count in comparison to other drying methods. The dried stigmas of Crocus sativus L. produce saffron, a precious spice used for its culinary and medicinal properties since ancient times, while its petals are considered the main by-product of saffron production. The present study aimed to comparatively evaluate the phenolic content, antioxidant capacity, and antibacterial activity of methanolic extracts of stigmas and petals of Crocus sativus L. from Taliouine. The polyphenol content was measured using the Folin–Ciocalteu method, the antioxidant activity was determined using the DPPH free radical scavenging method, and the well-diffusion method was used to assess antibacterial activity against seven pathogenic bacterial strains (Bacillus subtilis, Escherichia coli, Listeria monocytogenes, Proteus vulgaris, Pseudomonas aeruginosa, Salmonella enterica, and Staphylococcus aureus). Furthermore, the minimum inhibitory concentration (MIC) of the extracts was determined using the microdilution broth test. Our findings revealed that stigmas and petals contained phenolic compounds at the rate of 56.11 ± 4.70 and 64.73 ± 3.42 mg GAE/g, as well as DPPH radical scavenging capacity with IC50 of 1700 µg/ml and 430 µg/ml, respectively. Petal extract showed more effective antibacterial activity, with inhibition diameters ranging from 10.66 ± 0.57 to 22.00 ± 1.00 mm and MIC values ranging from 2.81 to 5.62 mg/ml, compared to the stigma extract, which displayed inhibition diameters from 10.00 ± 0.00 to 18.67 ± 0.76 mm and MIC from 2.81 to 11.25 mg/ml, against five of the seven bacterial strains tested, including S. aureus, E. coli, P. vulgaris, P. aeruginosa, and S. enterica. Statistical analyses were performed to determine the significance of these results. Thus, stigmas and petals of Crocus sativus L. might serve as a suitable source of natural antioxidant and antimicrobial agents for application in the food and pharmaceutical industries. Many varietal aromas of wine are located in the berry skin. In the present study, we evaluated four important Austrian grape varieties: Grüner Veltliner, Sauvignon Blanc, Traminer, and Pinot Blanc. We assessed whether prefermentation skin contact, fermentation with the skin (only for Grüner Veltliner), and stabulation (lees stirring; only for Sauvignon Blanc, Traminer, and Pinot Blanc) could enhance the varietal aromas of the different grape cultivars. The aim was to intensify the varietal aromas without extracting the undesirable phenols. We performed a detailed analytical characterisation of approximately 100 volatile and phenolic compounds as well as a sensory characterisation. Although mash fermentation significantly increased the spicy aromas of Grüner Veltliner, which are affected by climate change (especially the sesquiterpene rotundone), it markedly decreased the fruitiness and increased the bitterness; therefore, it cannot be recommended for this cultivar. For Sauvignon Blanc, stabulation is a possible option; the varietal aromas (thiols and methoxypyrazines) were increased in the final wines of these variants. For Pinot Blanc and Traminer, prefermentation skin contact yielded the best results: for Traminer, it produced the highest content of monoterpenes (especially z-rose oxide), and for Pinot Blanc, it produced the highest content of ethyl esters. To summarise, stabulation will not completely replace classic skin contact, and mash fermentation is certainly not an alternative for the production of standard Grüner Veltliner wine. This investigation focused on assessing and enhancing ultrasound-assisted extraction (UAE) using natural deep eutectic solvents (NADES) to extract phenolics and terpenoids from sweet basil leaves. The initial stage involved evaluating the extraction performance of twelve NADES and ethanol. A NADES comprising lactic acid and glucose with a 2 : 1 molar ratio and 20% water content (WC) obtained the highest total phenolic content (TPC) and total terpenoid content (TTC). Single-factor experiments systematically examined the impact of liquid-to-solid ratio (LSR), water content in NADES (WC), ultrasound power, temperature, and exposure time on the extraction yield. Optimization using Box–Behnken Design (BBD) models for the lactic acid and glucose-based UAE revealed the optimal conditions to be 80 ml/g LSR, 30% water, 300 W, 50°C temperature, and a 15-minute exposure time. Under these optimized parameters, the extraction achieved the highest TPC and TTC at 69.88 mg GAE/g and 110.71 mg UA/g, respectively. Micromeria graeca L. is a dense chemical source of bioactive compounds such as phenolic compounds, which have various health-related properties. The current study aimed to investigate the impact of different extractor solvents on phenol and flavonoid contents, as well as the antioxidant and antifungal activities of different extracts. Initially, three extractor solvents (methanol, ethyl acetate, and water) were used to prepare the Soxhlet extracts, which were then examined for their polyphenolic content, flavonoid content, and antioxidant potential using three complementary assays (DPPH, FRAP, and TAC). The antifungal capacity against the two fungal strains (Candida albicans and Aspergillus niger) was performed using the method of diffusion on disc. The dosage of phytochemical compounds revealed that the highest values were established in water extract with values of 360 ± 22.1 mg GAE/g dry weight plant and 81.3 ± 21.2 mg RE/g dry weight plant for TPC and TFC, respectively. In addition, the strongest antioxidant activity measured by DPPH and FRAP assays was established in water extract with IC50 values of 0.33 ± 0.23 and 0.23 ± 0.12 mg/mL, respectively, while the methanol extract showed the best antioxidant activity as measured by TAC with an IC50 of 483 ± 17.6 mg GAEq/g dry weight plant. The water extract recorded the most important antifungal activity against Candida albicans with an inhibition zone of 16 ± 1.6 mm and MFC = 500 μg/mL, whereas ethyl acetate extract showed the lowest activity against both studied fungi strains. Micromeria graeca L. contains considerable amounts of bioactive contents with high antioxidant and antifungal potentials, which may make it a promising source of antioxidants and natural antifungal agents. The aims of this study were to determine the polyphenolic profile, to estimate the total phenolic and flavonoid contents, and to evaluate the antioxidant and antidiabetic activities of the extract of Pistacia lentiscus leaves, and the hydroacetonic mixture was employed as an alternative for common solvents in the extraction process. In order to explain the antidiabetic activity, molecular docking has been performed on the main constituents of the leaf extract. The characterization of the extract has been performed by high-performance liquid chromatography (HPLC) leading to the detection of 20 compounds of which gallic acid, ellagic acid, catechin, kaempferol, and quercetin 3-glucoside were identified using authentic standards. The total phenolic and flavonoid contents, assessed using the Folin–Ciocalteu and quercetin methods, were 394.5 ± 0.08 mg gallic acid equivalent/g dry extract (mg GAE/g DE) and 101.2 ± 0.095 mg quercetin equivalent/g dry extract (mg QE/g DE), respectively. On the other hand, the antioxidant activity of leaf extract, quantified by determining the ability to neutralize the free radical DPPH and β-carotene/linoleate model system, reached the values of 0.0027 ± 0.002 mg/mL and 0.128 ± 0.04 mg/mL, respectively. Regarding the antidiabetic activity, based on the inhibition of pancreatic α-amylase activity, a significant inhibition of about 68.20% with an IC50 value of 0.266 mg/mL had been observed. This finding is consistent with the molecular docking study of the main phenolic compounds of the extracts, where a remarkable binding affinity against α-amylase was observed, with values of −7.631 (kcal/mol), −6.818 (kcal/mol), and −5.517 (kcal/mol) for the major compounds catechin, quercetin-3-glucoside, and gallic acid, respectively. Aim. The present study evaluated the therapeutic effects of luteolin in alleviating pulpitis of dental pulp- (DP-) derived microvesicles (MVs) via the inhibition of protein kinase R- (PKR-) mediated inflammation. Methodology. Proteomic analysis of immortalized human dental pulp (DP-1) cell-derived MVs was performed to identify PKR-associated molecules. The effect of luteolin on PKR phosphorylation in DP-1 cells and the expression of tumor necrosis factor-α (TNF-α) in THP-1 macrophage-like cells were validated. The effect of luteolin on cell proliferation was compared with that of chemical PKR inhibitors (C16 and 2-AP) and the unique commercially available sedative guaiacol-parachlorophenol. In the dog experimental pulpitis model, the pulps were treated with (1) saline, (2) guaiacol-parachlorophenol, and (3) luteolin. Sixteen teeth from four dogs were extracted, and the pulp tissues were analyzed using hematoxylin and eosin staining. Immunohistochemical staining was performed to analyze the expression of phosphorylated PKR (pPKR), myeloperoxidase (MPO), and CD68. Experimental endodontic-periodontal complex lesions were established in mouse molar through a silk ligature and simultaneous MV injection. MVs were prepared from DP-1 cells with or without pretreatment with 2-AP or luteolin. A three-dimensional microcomputed tomography analysis was performed on day 7 (n = 6). Periodontal bone resorption volumes were calculated for each group (nonligated–ligated), and the ratio of bone volume to tissue volume was measured. Results. Proteomic analysis identified an endogenous PKR activator, and a protein activator of interferon-induced PKR, also known as PACT, was included in MVs. Luteolin inhibited the expressions of pPKR in DP-1 cells and TNF-α in THP-1 cells with the lowest suppression of cell proliferation. In the dog model of experimental pulpitis, luteolin treatment suppressed the expression of pPKR-, MPO-, and CD68-positive cells in pulp tissues, whereas guaiacol-parachlorophenol treatment caused coagulative necrosis and disruption. In a mouse model of endodontic-periodontal complex lesions, luteolin treatment significantly decreased MV-induced alveolar bone resorption. Conclusion. Luteolin is an effective and safe compound that inhibits PKR activation in DP-derived MVs, enabling pulp preservation. [ABSTRACT FROM AUTHOR]

The present study investigated the phytochemical content of Hibiscus panduriformis, Alternanthera pungens, and Wissadula rostrata and assessed their radical scavenging and anti-inflammatory properties. n-Hexane, dichloromethane (DCM), ethyl acetate, and methanol extracts were prepared from the powdered plant parts. The phytochemical analysis was performed using qualitative high-performance thin-layer chromatography, and polyphenols were quantified using well-established methods. The anti-inflammatory effect was by lipoxygenase inhibition, while the antiradical impact was evaluated through DPPH and ABTS radicals. Steroids, triterpenoids, flavonoids, and tannins were identified in the three plants. The highest phenolic content (95.67 ± 2.19 mg gallic acid equivalent/g) was obtained in the methanolic extract of W. rostrata, while the lowest was measured in H. panduriformis. H. panduriformis was found to be highly rich in flavonoids (61.22 ± 0.09 mg rutin equivalent/g), condensed tannins (62.53 ± 0.03 mg catechin equivalent/g), and hydrolyzable tannins (125.1 ± 1.02 mg tannic acid equivalent/g). The methanolic extract of H. panduriformis displayed the greatest antilipoxygenase activity with an IC50 value of 8.78 ± 1.05 μg/mL. It should be noted that although a moderate to low effect was observed, the extracts were more likely to scavenge DPPH (IC50 values ranged from 0.106 ± 0.010 to 1 mg/mL) than ABTS radicals. There was a strong to moderate correlation between the antilipoxygenase and DPPH radical scavenging effects of the methanolic extracts and total phenolic content (antilipoxygenase, r = 0.7175 ; DPPH, r = 0.9376). Furthermore, it is worth noting that this is the first report investigating the phytochemical analysis and in vitro biological properties of Hibiscus panduriformis. The results highlighted the richness of this plant in polyphenols and demonstrated its high and moderate effects on lipoxygenase and DPPH radicals, respectively. Objective. To identify and quantify the active phenolic components in Lonicerae japonicae flos (LJF) for fever treatment and their mechanism of action using network pharmacology and molecular docking. Methods. Based on qualitative analysis of LJF, 194 phenolics were obtained, including 81 phenolic acids and 113 flavonoids. Gene Ontology and Kyoto Encyclopedia of Genes and Genomes pathway analyses were used to identify potential targets for these components to interact with fever. Molecular docking with microsomal PGE2 synthase-1, EP1, EP2, EP3, and EP4 targets was used to determine antipyretic components. The antipyretic efficacy of the main components was verified by in vivo experiments. Finally, high-performance liquid chromatography-tandem mass spectrometry was used to quantify the main antipyretic components of LJF. Results. Phenolics in LJF may prevent and treat fever by participating in calcium signaling, regulating TRP channels, and cAMP signaling. Luteolin-7-O-glucoside, apigenin-7-O-glucoside, 3,5-O-dicaffeoylquinic acid, luteolin, and other components have a good docking effect with PGE2 synthase-1 and its four subtypes. 3,5-O-dicaffeoylquinic acid, luteolin-7-O-glucoside, and apigenin-7-O-glucoside have good antipyretic effects in a yeast-induced pyrexia model. The content of these antipyretic components varies with the developmental period of LJF. Phenolic acids are the main components that distinguish the different developmental periods of LJF. Picrorhiza kurrooa Royle ex Benth. is one of the well-established herbal plants with an exceptional therapeutic potential. It belongs to the Scrophulariaceae family and is commonly called as kutki. The drug obtained from the plant is a bitter tonic due to the presence of kutkin in it. Over 61 secondary metabolites from the plants have been identified, including iridoid glycosides, flavonoids, cucurbitacins, and phenolic chemicals. However, picrosides are the major phytochemicals in this species that are responsible for its well-known hepatoprotective properties. The present study was conducted to compare Picrorhiza kurrooa (dried rhizomes) obtained from local traders from the markets of three different districts of Uttarakhand, i.e., the Dewal block of Chamoli, Ukhimath block of Rudraprayag, and Dharchula block of Pithoragarh. Biochemical analysis was conducted on the powder of dried rhizomes for alkaloids, phenolics, tannins, flavonoids, and antioxidant activity. Based on analysis, it was found that the total phenolic content, total flavonoid content, total alkaloid content, and radical scavenging activity of P. kurrooa rhizomes purchased from Darma valley, Pithoragarh district of Uttarakhand, were the highest, followed by rhizomes collected from the Dewal block of Chamoli district and the least were found in rhizomes obtained from the Ukhimath block of Rudraprayag district of Uttarakhand. The maximum tannin content was found in Picrorhiza kurrooa rhizomes obtained from the Dewal block of Chamoli, while total reducing power was observed the highest in rhizomes from the Ukhimath block of Rudraprayag. The results provided evidence that P. kurrooa obtained from Darma valley, Pithoragarh, are the potential source of phenolics, flavonoids, and tannins and have the highest DPPH-scavenging activity and therefore could be served as the basis for future drugs and food materials. Parrotia persica is one of the endemic plants in Iran and belongs to the Hamamelidaceae family. A wide range of biological activities of this plant have been attributed to several phenolic compounds. In this study, the phenolic bioactive compounds extraction from P. persica leaves was performed using conventional and ultrasonic-assisted extraction (UAE) techniques through the response surface methodology (RSM) to optimize the best extraction conditions and reach the maximum amount of phenolic compounds. The central composite design (CCD) was conducted for the optimization of four extraction parameters, including extraction time, alcohol concentration, solvent-to-solid ratio, and temperature. The coding of parameters was performed as an independent variable at five levels. Quantitative and qualitative assessments were achieved by using HPLC, LC-MS, and UV-Vis spectrophotometry. According to the results, UAE was chosen as the best method with the optimal extraction values: 15 min as an extraction time, 40% alcohol portion in solvent, solvent-to-solid ratio equal to 30 : 1, and 25°C for temperature. In this regard, it was found that the similarity of experimental to predicted findings was 98.7% for the phenolic content and 94.9% for the mass extract in the UAE method. The findings showed a good similarity between the experimental and predicted values, and no significant changes were observed between the real and theoretical results. In addition, our finding revealed that the optimum extraction yield was 28.5% for the mass extract in the UAE optimization process. Furthermore, the antioxidant activity by DPPH assay indicates that the extract which was obtained using UAE in optimum condition, proposed remarkable antioxidant activity (IC50 29.86 μg·ml−1). Moreover, the cytotoxic assay was performed against PC-3 cancer cells, and it was found that the optimized extract using UAE has a promising cytotoxic activity (IC50 10.4 μg·ml−1) without toxicity toward normal cells. Since there is a possibility to use P. persica as one of the commercial herbal sources, the optimized extraction models could be utilized for scaling up the phenolic compound extraction from P. persica leaf. Purple rice, locally known as "Cẩm" rice, is cultivated in the southern region of Vietnam. The bran of "Cẩm" rice is often disregarded and underutilized; nevertheless, it harbours substantial nutritive value, particularly in terms of antioxidant compounds. Additionally, sonication, an emerging and "green" technological approach, has been employed to augment the extraction efficiency of these antioxidants. This research is aimed at optimizing and maximizing the antioxidant recovery capacity including phenolic and total flavonoid compounds, along with their antioxidant activities, through the assistance of ultrasound waves. The effect of the extract on the starch digestion process was also investigated. The study employed the Box-Behnken experimental design, encompassing three variables: extraction time (20-40 minutes), temperature (60-80°C), and solvent-to-material ratio (8 : 1 to 12 : 1). Analysis was conducted on total phenolic compounds, total flavonoid content, and antioxidant activities. Results demonstrated that the peak yield of antioxidant compounds and their corresponding activities were attained at an extraction duration of 29.38 minutes, a temperature of 69°C, and a solvent-to-material ratio of 9.92. Under these optimal conditions, the yields were as follows: total phenolic compounds at 60.821 mg GAE/g, total flavonoid compounds at 3.2696 mg QE/g, percentage inhibition of DPPH at 74.778%, and FRAP value at 54.112 μmol Fe (II)/g. The established models were validated and exhibited a strong alignment between predicted and actual values, with disparities of less than 3% under optimal conditions. Furthermore, the extract was codigested with cooked corn starch, revealing a dose-dependent effect on starch digestibility. The sluggishness of digestion rate was observed when 20 mg of the extract was supplemented to 200 mg of cooked corn starch. The current research focused on improving the nutritional quality of cupcakes by using micronutrient-rich vegetables, specifically purslane's leaves and stems. The purslane leaves and stems were sun-dried and analyzed for their proximate, mineral, and antioxidant potential. After conducting preliminary trials, flour blends supplemented with purslane powders ranging from 2 to 4% were evaluated for their rheological behavior and suitability in bakery cupcakes. The results indicated that purslane leaves and stems are a rich source of crude proteins (18.04 ±0.61 and 15.62 ±1.63%, respectively) and mineral contents, especially iron contents (214.28 ±123.13 and 243.37 ±5.25 mg/100 g, respectively). The powder retained a significant quantity of phenolic compounds and antioxidant potential after sun-drying. The rheological evaluation indicated the dose-dependent incremental response on dough development and dough stability time. Although cupcakes prepared with purslane leaves and stem powder received lower ratings than the control, statistically, the cupcakes supplemented with 2 to 4% purslane powder were on par with each other. Gari is a partially gelatinized roasted fermented granular white or yellowish product made from storage roots of cassava. It is consumed as fast foods in many countries across the world. Physicochemical composition, particle size, colour, and antioxidant activities of five gari (92/0326, 96/1414, IRAD4115, EN, and AD) processed from fresh storage roots harvested at 12 months after planting (MAP) and 15MAP compared to four (4) commercial gari (M1, M2, M3, and M4) were evaluated. The analytical results revealed that colour value b ∗ and particle size varied significantly (p < 0.05) among the gari samples. Bound flavonoid contents were lower than free flavonoids (3.93 to 10.50 mgQE/100 g and 2.40 to 8.85 mgQE/100 g, respectively). Fourier transform infrared confirmed the functional groups in all gari samples. The antioxidant activity of the bound phenolics showed significantly (p < 0.05) higher DPPH scavenging ability than free phenolics (gari M2: 2.70 μgTE/g). Similarly, the bound phenolics showed significant (p < 0.05) variation of HRSA scavenging activity (0.18-35.09 μgTE/g). However, the best HRSA scavenging activity was found with bound phenolics of gari 96/1414, whereas HRSA scavenging activity was not detected in gari 92/0326, 96/1414, and AD. The value of ABTS scavenging activity of gari varied significantly (p < 0.05) from 20.60 to 30.17 μgTE/g and from 20.70 to 34.39 for free and bound phenolics, respectively, while free phenolics showed higher FRAP value (7.97 mgTE/g) than the bound phenolics (4.59 mgTE/g). Additionally, phenolics and antioxidant activities showed significantly (p < 0.05) a positive correlation. The present study has provided an insight into the physicochemical composition, bioactive compounds, and antioxidant activities of various gari processed at different season and maturity period of harvesting. Rubus alceifolius Poir (R.A. Poir) leaves are rich in phenolic compounds, offering many health benefits due to their incredible antioxidant potential. In this study, conditions for the ultrasound-assisted extraction (UAE) of phenolic compounds and antioxidant activity from R.A. Poir leaves were optimized using response surface methodology (RSM). This methodology assessed the effects of ultrasound power ( X 1 : 100-500 W), extraction temperature ( X 2 : 30-60°C), and extraction time ( X 3 : 5-55 min). The optimized UAE conditions were then compared with conventional extraction methods (Soxhlet extraction: SE and maceration extraction: ME) for extracting total phenolics. A phenolic profile using GC-MS and antioxidant activity (ABTS) was also compared. According to the RSM, the best conditions for UAE to extract the highest total polyphenol content and ABTS radical scavenging activity were 320 W ultrasound power, 40°C extraction temperature, and 35.5 min sonication duration. Under these optimal conditions, the TPC and antioxidant activity reached 16.68 mg GAE/g dm and 21.9 mg TE/g, respectively, closely aligning with the predicted values. The UAE extraction technique proved to be more efficient in extracting phenolics and antioxidant capacity (ABTS (2,2 ′ -azino-bis(3-ethylbenzthiazoline-6-sulphonic acid)) radical scavenging activity, and enzyme inhibition) compared to the conventional extraction methods (SE and ME). A GC-MS analysis identified 12 components, including 5 phenolics and 3 flavonoids, which likely contribute to the antioxidant activity. Consequently, the UAE method improved extraction efficiency within a shorter time frame, suggesting that UAE is a promising, efficient, and ecofriendly technology for extracting bioactive compounds from R.A. Salt-dried bamboo shoots (SDBS), steamed dried bamboo shoots (TDBS), fumigation-dried bamboo shoots (UDBS), and fermentation-dried bamboo shoots (FDBS) are four popular types of dried bamboo shoots (DBS) enjoyed by Chinese people. In this work, we aimed at investigating the release pattern of bound phenolics from DBS prepared by different processes on simulated in vitro colonic fermentation. The results showed that nine phenolic compounds were identified from DBS, including seven phenolic acids and two flavonoids. Also, the contents of chlorogenic acid, p-coumaric acid, and ferulic acid were higher. Among the four types of DBS, FDBS exhibited the highest release of bound phenolics during colonic fermentation, with a value of 3.619 mg GAE/g DW. In addition, all the DBS produced four short-chain fatty acids (SCFAs), with the highest content of acetic acid at 7.721 mmol/L, followed by propionic acid and valeric acid, and the lowest content of butyric acid at only 0.023 mmol/L, along with a gradual decrease in their cellulose, hemicellulose, and lignin contents. Concurrently, confocal laser scanning microscopy (CLSM) observation images showed that reduced red fluorescence exhibited a decrease in bound phenolics content, while reduced green fluorescence indicated a decrease in fiber content. A significant positive correlation (P < 0.05) was observed between the release of bound phenolics and total SCFA production during colonic fermentation of SDBS, TDBS, UDBS, and FDBS, with correlation coefficients of 0.632, 0.844, 0.717, and 0.916, respectively, and a significant negative correlation (P < 0.05) with the IC50 values for the inhibition of α-amylase and α-glucosidase, with correlation coefficients of −0.643, −0.613, −0.823, and −0.839, respectively. The four DBS were ranked in descending order of bound phenolic release, SCFA production, dietary fiber reduction, and inhibitory activity associated with the metabolic syndrome: FDBS, TDBS, SDBS, and UDBS. DBS released large amounts of bound phenolics and produced SCFAs during colonic fermentation, which might be potentially beneficial for maintaining intestinal microbiota balance. The study was conducted to compare the chemical composition and bioactive compounds of leaves from different mulberry species grown in Syria (Morus alba, Morus nigra, Morus rubra, and Morus nigra sp). The leaves were collected in July 2022 and their proximate composition (moisture, ash, lipids, and protein), total polyphenol content (TPC), ascorbic acid, and antioxidant activity, as measured by ferric reducing antioxidant power (FRAP), were investigated. The results showed that the moisture, ash, and fat content ranged from 61.84 to 71.17%, 12.87 to 17.61%, and 3.82 to 9.68% dry weight (DW), respectively. The phenolic concentration of leaves from four different mulberry cultivars varied significantly, from 164.9 (Morus alba) to 461.5 gallic acid equivalents mg/100 g DW (M. nigra). The antioxidant activity of mulberry leaves ranged from 122 to 166.3 meq ascorbic acid/100 g DW and was arranged as follows: M. rubra > M. nigra sp > M. nigra > M. alba. The goal of this study is to draw attention to the vital nutrients, health advantages, and potential for encouraging the consumption of jamun fruits (Syzygium cumini L.) and making the most of their useful features to create valuable goods. In the current study, efforts have been made to evaluate the jamun fruit's physicochemical characteristics and bioactive components. Moreover, ready-to-serve beverages, squash, syrup, and jam, have been prepared, and their quality has been monitored throughout the storage. Jamun fruit had an ovoid or spherical form and was a dark purple tint. The initial analysis of fruits showed 83.59% moisture, 17.56 °Brix, 3.63 pH, 328.50 mg cyd-3-Glu/100 g anthocyanin, 219.21 mg GAE/100 g total phenolics, 91.33 mg QE/100 g total flavonoids, and 91.33% antioxidant activity. High-performance liquid chromatography examination, revealed the existence of three main anthocyanin pigments, delphinidin 3, 5-diglucoside, petunidin 3, 5-diglucoside, and malvidin 3, 5-diglucoside, which were measured at 175.80, 156.50, and 83.12 mg/100 g, respectively. While the main phenolic compounds present were chlorogenic, gallic, caffeic, vanillic, and catechin, with respective concentrations of 14.22, 12.18, 10.33, 6.44, and 4.13 mg/100 g. Total soluble solids, pH, and total sugars increased with the storage of jamun products, but acidity, total phenolic, and anthocyanin contents declined. In conclusion, jamun is a fruit that has promise for the future of producing useful goods. The various jamun fruit-based products met good standards and were sensory-acceptable. Background. Both high-fat diet (HFD) and 4-nonylphenol (4-NP) could affect fat formation in adipose tissue individually. We investigated whether HFD promote abnormal adipose tissue formation caused by early exposure to 4-NP in life and preliminarily explore the possible mechanisms involved. Methods. The first-generation rats were treated with HFD on postnatal day after pregnant rats exposure to 5 ug/kg/day 4-NP. Then, the second generation rats started to only receive normal diet without 4-NP or HFD. We analyzed organ coefficient and histopathology of fat tissues, biochemical index, and gene level involved in lipid metabolism in female offspring rats. Results. HFD and 4-NP interaction synergistically increased birth weight, body weight, and organ coefficients of adipose tissue in offspring female rats. HFD accelerately aggravated abnormal lipid metabolism and increased the adipocyte mean areas around the uterus of the offspring female rats induced by prenatal exposure to 4-NP. HFD also facilitate the regulation of gene expression involved lipid metabolism in offspring female rats induced by perinatal exposure to 4-NP, even passed on to the second generation of female rats. Moreover, HFD and 4-NP interaction synergistically declined the gene and protein expression of estrogen receptor (ER) in the adipose tissue of second-generation female rats. Conclusion. HFD and 4-NP synergistically regulate the expression of lipid metabolism genes in adipose tissue of F2 female rats and promote adipose tissue generation, leading to obesity in offspring rats, which is closely related to low expression of ER. Recently, processed foods have become an important part of human eating habits. However, several processing techniques, such as dehulling and roasting, are applied to raw foods. Roasting is a thermal process that depends on temperature and time and improves the extraction yield of oil by generating pores in the oilseed cell walls. Sesame (Sesamum indicum L.) is an annual plant belonging to Pedaliaceae and is considered to be one of the oldest oil crops. Nowadays, the cultivation of this plant is economically important in several countries. This review clarifies the botanical characteristics and nutritional importance of sesame seeds, reviews their phytochemical composition, and discusses the effects of dehulling and roasting on their nutritional quality. S. indicum, which is known to contain several classes of bioactive compounds, including fatty acids, phenolic compounds, amino acids, and lignans, has been reported to possess a wide range of biological activities such as antioxidant, anti-inflammatory, anticancer, antimicrobial, and cardioprotective activity; however, processing such as dehulling eliminates undesirable chemical constituents while roasting provides the best chemical composition at moderate temperatures. Mosquitoes present an immense threat to millions of people worldwide and act as vectors for filariasis disease. The objective of the study was to determine the effect of Allium sativum and Zingiber officinale extracts against filariasis vectors. The larvae were collected from the breeding site by using standard procedures for identification and larvicidal activities. Twenty grams (20 g) from each (Allium sativum and Zingiber officinale) were extracted separately by aqueous, ethanol, and methanol solvents. The phytochemical analysis was determined in the crude sample by using standard methods. Then, larvicidal effects were determined by introducing 10 larvae of the vectors to the concentrations of 250 ppm, 500 ppm, and 750 ppm of the crude sample, and data were subjected to probit analysis to determine the LC 50 and Chi-squared test to check the significance of the mortality by R software. Anopheles funestus, Anopheles gambiae s.l., Anopheles pharoensis, Culex antennatus, and Culex quinquefasciatus were the filariasis vectors identified during the study period. The presence of phytochemical tests such as anthraquinones, flavonoids, glycosides, phenol, saponin, steroids, tannin, and terpenes was obtained. The larvicidal effects of the selected plant extracts ranged from 0%-100%. The lowest LC 50 (53 ppm) was observed for A. sativum methanol test extract against Cx. quinquefasciatus. Ethanol extracts of A. sativum have a significant effect on An. funestus ( X 2 = 7.5 , p = 0.02352) and Cx. quinquefasciatus ( X 2 = 10.833 , p = 0.0.0044), whereas aqueous extracts have a significant effect only on An. gambiae s.l. ( X 2 = 7.0807 , p = 0.029. Ethanol extracts of Z. officinale have a significant effect only on the mortality of An. pharoensis ( X 2 = 7.0807 , p = 0.029), but methanol and aqueous extracts have no significant effect against filariasis vectors. In conclusion, A. sativum have a high toxic effect than Z. officinale extract against filariasis vectors in all type of solvents. So using those plant extracts is the best to reduce the risk of the synthetic chemical on nontarget organisms and the environment, in addition to the control of mosquito-borne diseases, but further studies will be conducted to evaluate the toxicity at different stages of the vectors. B. dracunculifolia is popularly used to treat skin diseases. This work aimed to evaluate the topical anti-inflammatory properties of B. dracunculifolia root extract (BdR) and its major compound baccharis oxide (BOx) on mice ear edema models. BdR was analyzed by GC-MS, and BOx was isolated by chromatographic fractionation. Topical anti-inflammatory activities were determined by using the croton oil, capsaicin, histamine, and phenol-induced mouse ear edema models. N-acetyl-β-D- glucosaminidase (NAG) and myeloperoxidase (MPO) activities, as well as NO dosage and histopathological analyses, were also evaluated. Phytochemical analysis of BdR showed BOx as one of the major constituents. BdR and BOx (both at 0.1, 0.5, and 1.0 mg/ear) significantly reduced croton oil, histamine, and phenol-induced ear edema, while only BOx was effective in reducing capsaicin-induced edema. MPO and NAG activities, as well as NO production, were significantly inhibited by BdR and BOx. Histopathological analysis confirmed the topical anti-inflammatory properties of BdR and BOx. Our findings showed that BdR and BOx demonstrated significant topical anti-inflammatory effects in mouse ear edema induced by different agents, suggesting their possible application on skin inflammatory diseases. In order to highlight the activities of bioactive compounds present in the stem of sweet cherries, four different cultivars (Van, Burlat, Napoleon, and Cœur pigeon) were collected in Sefrou city in Morocco and were studied. Several assays were performed for this purpose, such as the quantification of phenolic compounds (TPC, TFC, and CTC) and the evaluation of the antioxidant activity using DPPH, ABTS, and FRAP assays. The phenolic profile of each extract was characterized by UHPLC-DAD/MS analysis. The antidiabetic (α-amylase inhibition) and antigout (xanthine oxidase inhibition) activities were also investigated. The results showed high levels of phenolic compounds, with the values of 340 ± 12.06, 244 ± 10.20, 232 ± 5.07, and 19 ± 3.10 mg gallic acid equivalent/g extract for the cultivars Napoleon, Coeur de pigeon, Van, and Burlat, respectively. According to the same order, the flavonoids showed amounts of 34.31 ± 2.08, 23.75 ± 1.02, 24.37 ± 1.20, and 23.31 ± 0.90 mg (rutin equivalent) RE/g extract. These values were correlated with the results of the antioxidant assays, where the Napoleon cultivar proved to be the most potent using the DPPH (IC50 = 2.51 µg/mL) and ABTS (IC50 = 55.38 µg/mL) assays. The phenolic profile of each extract resulted in the identification of twenty-two compounds belonging to five distinct groups. The major phenolic compounds identified were sakuranetin and dihydrowgonin with their glucosides. Antidiabetic activity assays showed that only stem extracts from Burlat and Napoleon cultivars were able to inhibit the α-amylase enzyme with values of 85.57 ± 1.09% and 68.01 ± 3.52%, respectively. All stem extracts proved their ability to inhibit the xanthine oxidase enzyme which is directly linked to the gout disease, with a high value for Van cultivar (40.63 ± 2.37%). The hilly and rural areas' people of Bangladesh have a great history of putting into use numerous traditional medicinal plants to cure diseases. Therefore, with ethanol extract of Molineria capitulata (EEMC), methanol extract of Trichosanthes tricuspidata (METT), and methanol extract of Amorphophallus campanulatus (MEAC), we mandate evaluation of in vitro α-amylase inhibition, antioxidants, and molecular docking, and ADMET/T analysis. According to iodine starch methods, α-amylase inhibition was performed, and quantitative total phenolic and flavonoid content was determined by established methods, whereas DPPH free radical scavenging and reducing power assays were performed in previously established protocols, respectively. A comparative study among three plants (EEMC, METT, and MEAC) possessed a significant (p < 0.01) effect but EEMC showed the highest impact on enzyme inhibition. Plants in the measuring phenolic content METT and flavonoid measurement MEAC displayed most potent in the same way in the DPPH test was METT, and in reducing power capability MEAC has showed the highest effect between three extracts. Docking's study also reveals the compounds of METT (Cyclotricuspidoside A and Cyclotricuspidoside C) exhibit the superior score among all the compounds. This finding indicates that EEMC, METT, and MEAC substantially impact α-amylase inhibition along with antioxidants. In this context, this study mainly focused on the production of healthy apple chips snacks and the determination of degradation kinetics of antioxidant activity, total phenolic compounds, and color values of apple chip snacks during convective hot air drying at three different temperatures (45, 55, and 65°C) and sample thicknesses (1.5 and 5 ± 0.5 mm). The drying kinetics, desorption isotherms, activation energy, and half-life of the apple chip snack were also calculated. The Page and GAB models are the best models for the determination of the drying (>0.992) and desorption (>0.9979) behavior of apple snacks with the highest R2 values. The drying of all samples took place in the falling rate period. The Deff values increased depending on the increasing air temperature and slice thickness. The antioxidant activity, total phenolic compounds, and total color change of the 5 mm thick samples were degraded following the first-order reaction kinetics. The higher antioxidant activity, phenolic compounds, L∗ values, and lower half-life values were observed in conditions where the thickness (1.5 mm) and temperature (45°C) are low. The activation energy values calculated for the total phenolic compounds are higher than those calculated for the antioxidant activity. This investigation is aimed at elucidating the effects of roasting degree and extraction method on coffee beverages prepared with beans from Asia. According to the results with the improvement of the roasting degree, a decrease in titratable acidity, total phenolic compounds, the concentrations of chlorogenic acid and trigonelline, and total antioxidant capacity was observed. Cold coffee beverages showed higher total sugar and trigonelline. The volatile components, such as pyridine, furan-2-yl-methyl acetate, 2-furanemethanol, and 5-methylfurfural, were also affected by roasting degree and extraction methods. Cold brew coffee exhibited higher intensities of enzymatic flavor and sweetness. Furthermore, the principal component analysis revealed a distinct difference in coffee characterization in roasting degree in cold coffee brews than in hot ones. The results indicate that roasting degree affects physicochemical and sensory properties more than extraction temperature. Objective. Cedrus deodara (Roxb. Ex Lamb.) G. Don possesses various biological activities, which have been documented in modern and traditional medicine. In this study, burn wound healing activity of the methanol extract of C. deodara wood was evaluated via a burn wound model in Wistar rats. Methods. The methanol extract of C. deodara was evaluated for the contents of phenolic compounds, flavonoids, and tannins. Also, its antioxidant activity was determined using the DPPH assay. Then, a topical ointment containing the methanol extract of C. deodara (10%) was used to evaluate the healing effects on a model of second-degree thermal burn in 4 groups of 7 rats within 21 days. In this respect, average wound surface area, wound closure, and various histological features were examined. Results. Our findings revealed that the wounds treated with the methanol extract of C. deodara showed higher wound contraction (33.6, 87.1, and 93.4% on days 7, 14, and 21, respectively) compared with the positive control (27.6, 80.7, and 88.3% on days 7, 14, and 21, respectively) and the negative control (20.1, 77.9, and 80.2% on days 7, 14, and 21, respectively). According to the results from epitheliogenesis score, the number of inflammatory cells, neovascularization, and collagen density, good burn wound healing activity of the methanol extract of C. deodarawas demonstrated. Background. Dodonaea angustifolia is a known medicinal plant across East Arica. The flower of D. angustifolia is not well investigated in terms of phytochemistry and biological activities. This study aims to investigate the presence of flavonoids and phenolic acids in the flower of D. angustifolia and its antioxidant activity. Methods. Preliminary phytochemical screening was carried out using the standard protocols. Antioxidant activity evaluation using DPPH assay and total phenol content (TPC) and total flavonoid content (TFC) determinations in the flower extract were compared with the values of the leaf extract. UHPLC-DAD analysis was managed to develop the profile of the flower extract. Prediction of biological activity spectra for substances (PASS) was done using an online server for antioxidant and related activities. Results. Preliminary phytochemical screening and TPC and TFC values confirmed the presence of flavonoids and phenolic acids. From the HPLC analysis of flavonoids, quercetin, myricetin, rutin, and phenolic acids such as chlorogenic acid, gallic acid, and syringic acid were detected and quantified. The biological activity spectrum was predicted for the detected and quantified polyphenols. Conclusions. D. angustifolia flower is a rich source of flavonoids and phenolic acids, which are extractable and can be checked for further biological activity. It was possible to identify and quantify phenolic compounds through HPLC analysis in the methanol extract of D. angustifolia flower. The PASS biological activity prediction results showed that there were stronger antioxidant activities for the identified flavonoids. The effect of mulberry leaf tea (MT) on texture, microstructure, starch retrogradation, and antioxidant capacity of rice noodles was investigated. Addition of MT powder at 5 to 25% increased protein, fiber, and antioxidant capacity of rice noodles. The presence of phenolic compounds in MT enhanced firmness and elongation of rice noodles, while fiber disrupted the noodle microstructure, resulting in lower firmness and elongation at high concentration. MT noodles kept for 7 days at 4°C had total phenolic content and antioxidant capacity 7 times and 5 times higher than the control rice noodles at day 0, respectively. Addition of MT reduced the retrogradation enthalpy of rice flour and retarded increase in firmness and decrease in elongation of rice noodles during storage. Medicinal plants are a rich source of antioxidants such as flavonoids, phenols, tannins, and alkaloids among others and are currently used as alternative and complementary drugs in the management of stress-related disorders. Strychnos henningsii and Ficus sycomorus have been traditionally used by the people of Mbeere, Embu county, Kenya, as medicine for the treatment of various oxidative stress-related disorders such as diabetes and rheumatism; however, no empirical data are available to authenticate the said claim. The aim of this study was to evaluate preliminary phytochemical screening and in vitro antioxidant activity of dichloromethane (DCM) leaf extract of S. henningsii and stem bark extract of F. sycomorus using DPPH, hydrogen peroxide, and ferric reducing power assays; total flavonoids and phenolic compounds were also determined by colorimetric assay and Folin–Ciocalteu reaction, respectively. Phytochemical screening showed that both extracts possessed saponins, flavonoids, phenols, steroids, alkaloids, and cardiac glycosides; however, terpenoids were found to be absent in S. henningsii. The total phenolic and flavonoid content of the DCM stem bark extract of F. sycomorus was lower than that of the leaf extract of S. henningsii. These extracts significantly exhibited strong antioxidant activities at different concentrations tested. The IC50 values of S. henningsii and F. sycomorus were 0.325 mg/ml and 0.330 mg/ml for hydrogen peroxide and 0.068 mg/ml and 0.062 mg/ml for DPPH, respectively. Both DCM leaf and stem bark extracts of S. henningsii and F. sycomorus were found to have strong ferric reducing power. Thunbergia laurifolia leaf is used in Thai herbal medicine to moderate alcohol, food poisoning, and other health-related diseases mainly due to its overwhelming phytochemical compounds which exert several biological functions such as antioxidant, and anti-inflammatory properties, among others. This study investigated the potential effects of hot air-drying conditions (TL-D80°C, TL-D90°C, and TL -D100°C) of T. laurifolia tea leaves on phenolic compounds, total flavonoid content (TFC), total phenolic content (TPC), and antioxidant activities (AOA) of the infused teas. The results show that an increase in drying temperature significantly p < 0.05 improved TPC (709.7 ± 1.36–744.8 ± 5.79 mg GAE/) and TFC (198.98 ± 7.59–207.16 ± 4.10 mg RE/L) of infused teas. TL-D80°C (69.9 ± 0.95%) and TL-D90°C (69.3 ± 0.7%) infused teas showed significantly p < 0.05 higher DPPH inhibitory effect compared to TL-D100°C. Treatment had no effects p > 0.05 on ABTS.+ scavenging activity. The phenolic compounds detected in infused teas were rosmarinic acid, caffeic acid, gallic acid, catechin, rutin, and quercetin. Regarding, the cumulative phenolic compounds TL-D100°C infused teas were significantly higher p < 0.05 compared to TL-D90°C and TL-D80°C. The results suggest that drying conditions (i.e., TL-D100°C within 30 min) could be used to achieve appropriate moisture content of T. laurifolia tea leaves without compromising the phytochemical compositions and antioxidant potentials of the resulting infused teas. Terminalia brownii is widely used in folklore medicine and has diverse biological activities. However, its effect on the immune system is yet to be studied. Therefore, our study evaluated the immunomodulatory effect of T. brownii on nonspecific immunity. Innate immunity is the initial defence phase against pathogens or injuries. Dichloromethane plant extracts were tested on female Swiss albino mice and Wister rats. The effect of the extract on innate immunity was assessed via total and differential leukocyte counts, tumor necrosis factor-alpha, and nitric oxide production by mouse macrophages. The 3-(4, 5-dimethyl thiazolyl-2)-2, 5-diphenyltetrazolium bromide assay was employed for viability testing. Phytochemical profiling was carried out using gas chromatography-mass spectrometry, while toxicity studies were carried out following the Organization for Economic Cooperation and Development guidelines. Our results demonstrated that administration of T. brownii stem bark dichloromethane extract to pyrogallol-immuno compromised mice significantly (p < 0.05) increased total and differential leukocyte counts compared with the control. The extract showed no adverse effect on the viability of Vero cells and macrophages and significantly (p < 0.05) augmented tumor necrosis factor-alpha and nitric oxide production. Hexadecanoic acid, linoleic acid, octadecanoic acid, squalene, campesterol, stigmasterol, and β-sitosterol, all of which stimulate, were identified in the extract. The extract did not cause any death or toxic signs in rats. In conclusion, T. brownii dichloromethane extract has an immunoenhancing effect on innate immune responses and is not toxic. The observed immunoenhancing impact of the extract was attributed to the presence of the identified compounds. Introduction. Globally, the consumption and production of tea are on the rise because of its beneficial constituents. Scarce literature exists on the effects of extraction periods on the contents of the biologically important and protective phytochemicals such as phenolics, flavonoids, and antioxidants in locally produced teas in Uganda. Aim. This study determined the effects of extraction periods on the aqueous total phenolic content (TPC) of local Camella sinensis, black primary grades and green tea, and their ecological differences, their total flavonoid content (TFC), and antioxidant capacities (AOC). Methods. Samples of local tea were collected from Kigezi, Ankole, and Buganda regions, and those of green tea were purchased from a local supermarket in Uganda. Four- and 40-minute infusions were separately prepared for each sample. Total phenolic and flavonoid contents were determined using the Folin–Ciocalteu and aluminium chloride methods using garlic acid and quercetin as standards, respectively. Antioxidant content was determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging and ferric reducing assay power (FRAP) methods, using ascorbic acid as the standard. Results. Green tea had the highest total phenolic content both with four-minute (9.50 ± 0.25 mgGAE/g) and 40-minute (25.81 ± 1.13 mgGAE/g) extractions, followed by D1 (4.14 ± 0.33 mgGAE/g) at four minutes and PF (23.60 ± 2.37 mgGAE/g) at 40 minutes. Regionally, Kigezi (4.71 ± 0.09 and 22.13 ± 0.85 mgGAE/g) at four and 40 minutes, respectively, gave the highest TPC. In TFC, tea from Buganda (4,371 ± 0.00 μgQE/g) was the highest. In DPPH and FRAP, GT (93.82 ± 0.03%, 39.04 ± 0.02 AAEμg/mL) was the best, followed by Buganda tea (88.71 ± 0.03%, 36.99 ± 0.01 AAEµg/mL), respectively. Conclusion. Longer extraction periods increase TPC in all teas. Green tea generates approximately twice the TPC generated by black tea in four-minute infusions. In this study, ultrasound-assisted extraction (UAE) was used for the extraction of bioactive compounds from eggplant peels (EPP) and conditions were optimized by using response surface methodology (RSM). Methanol concentrations (60%, 70%, and 80%), time (30 min, 45 min, and 60 min), and temperature (30°C, 45°C, and 60°C) were selected as independent extraction parameters, whereas total anthocyanin content (TAC), DPPH inhibition, and total phenolic content (TPC) were response variables. The optimal extraction was at 45°C for 45 min of extraction time with 70% solvent which corresponded to TAC, TPC, and DPPH inhibition values of 7.94 mg/g, 7.03 mg GAE/g, and 94.8%, respectively. The optimized EPP extract was chemically characterized by a Fourier-transform infrared spectrometer (FTIR), high-performance liquid chromatography (HPLC), and a gas chromatography mass spectrometer (GCMS). The optimized extract was further evaluated for antioxidant and anticancer potential. For antioxidant and anticancer potential, the corresponding IC50 values of the EPP extract were 243.2 μg/ml and 1.52–1.99 mg/ml, respectively. Furthermore, the EPP extract significantly inhibited the migratory ability of cancer cells in a dose-dependent manner. Major components identified in the EPP extract were chlorogenic acid (261.76 mg/kg), benzoic acid (184.41 mg/kg), syringic acid (78.48 mg/kg), p-coumaric acid (49.59 mg/kg), cinnamic acid (32.17 mg/kg), quercetin (5.24 mg/kg), sinapic acid (5.14 mg/kg), and gallic acid (4.34 mg/kg). The EPP extract-enriched ice-cream showed high antioxidant potential and consumer acceptability than the blank ice-cream formulation. The antioxidant properties of sage (Salvia officinalis L.) and thyme (Thymus vulgaris L.), and their mixtures were examined using the 2,2-Diphenyl-1-picrylhydrazyl (DPPH•) scavenging activity and ferric-reducing activity of plasma (FRAP) methods. The antimicrobial activity of the plant extracts against four bacterial strains (Escherichia coli, Staphylococcus aureus, Bacillus cereus, and Salmonella typhomorium) was determined using the agar well diffusion method. Results showed the highest overall rate of increase in total phenolic (13.67 mg·GAE/g·DW), and flavonoid (6.75 mg·QUE/g·DW) contents in the thyme–sage mixture extract compared with the thyme and sage extracts. As found by GC-MS analysis of methanolic extracts, thymol, apigenin, rosmarinic acid, and carvacrol were the most abundant phenolic compounds in the thyme–sage extract. The lowest EC50 (DPPH•, 55.51 μg·ml−1) and the highest FRAP value (95.51 mM Fe (II) mg−1 extract) were recorded in the extract of the thyme–sage mixture compared with sage and thyme extracts, and butylated hydroxytoluene solution (BHT). The highest antimicrobial activity against E. coli, S. aureus, B. cereus, and S. typhomorium was observed in the thyme–sage mixture with the inhibition zone diameters of 22.13, 28.67, 31.25, and 23.65 mm, respectively. It is concluded that the extract obtained from the thyme–sage mixture has more potential to be used in the pharmaceutical and food industry as a natural antibacterial and antioxidant agent. The purpose of this study was to investigate the phytochemical composition and antioxidant activity of 17 edible wild fruits that are widely distributed and consumed in Malawi for pharmacological value exploration. Qualitative phytochemical analysis, total phenolic content, total flavonoid content, ferric reducing antioxidant power (FRAP), total antioxidant activity (TAA), and 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity (DPPH) were performed in aqueous and methanolic fruit extracts. The results showed that the extracts contained alkaloids, saponins, terpenoids, glycosides, coumarins, phenolic compounds, tannins, flavonoids, steroids, and quinones. Piliostigma thonningii had the highest total phenolic content (1675.33 ± 12.34 mg GAEg-1 FW) in methanolic extracts, and Annona senegalensis gave the highest levels of total flavonoid content (649.67 ± 2.08 mg RE g-1 FW) in aqueous extracts. The results of antioxidant activities (FRAP, TAA, and DPPH) varied widely, and the variations were significant (P < 0.05). Thespesia garckeana and Mangifera indica exhibited a high ability to chelate metal cations in methanolic extracts and in aqueous extracts, respectively. DPPH levels were higher in aqueous extracts and ranged from 11.07% to 99.61%. This study provides evidence that the studied edible fruits of Malawi have potential as value-added products for various treatments of oxidative stress-associated ailments as they contain more phytochemical constituents. Red pepper (Capsicum annum L.) is an increasingly important economic crop in the world. Thus, this study aimed to investigate the growth, physiological, and biochemical responses of red pepper cultivars under drought stress conditions. A pot culture experiment was conducted in a completely randomized design with three replications, four treatments, and three cultivars. Totally, 36 pots and six seeds per pot were used to grow the seeds. After five weeks, the cultivars were exposed to different drought stress conditions (100% FC or control, 80% FC or low stress, 60% FC or moderate stress, and 40% FC or severe stress). All the collected data were subjected to an analysis of variance (ANOVA). Shoot length was reduced significantly (p < 0.05) in the Hagerew cultivar under severe drought stress. The photosynthesis rate was reduced by 21.11% (p < 0.05) in the Mitmita cultivar under severe drought stress. The highest percentage reduction of chlorophyll content (77.28%) was recorded in the Hagerew cultivar. Both Markofana and Mitmita responded to drought stress by increasing the accumulation of proline and phenolic compounds. The root-to-shoot ratio was increased significantly in both Markofana and Mitmita cultivars (27.91% and 50.92%), respectively, under drought-stress conditions. Hypericum revolutum subsp. keniense is a plant mainly used to treat diarrhoea, rheumatism, nervous disorders, and wounds in African traditional medicine. The objective of the current work was to establish antibacterial, antioxidant potency, and chemical composition of essential oil from the leaves and flowers of Hypericum revolutum subsp. keniense. The oils were isolated by steam distillation. Antibacterial activity against methicillin-resistant Staphylococcus aureus, Staphylococcus aureus (ATCC 12393), Escherichia coli (ATCC 25922), Acinetobacter baumannii (ATTC 19606), Salmonella enteritidis (NCTC12023), Salmonella typhimurium (ATCC 14028), Pseudomonas aeruginosa (ATCC 15442), and Haemophilus influenzae (ATCC 49766) was carried out by agar disk diffusion and microtiter broth dilution methods. Antioxidant activities of the essential oils were examined by different methods, DPPH, FRAP, and H2O2 assays. Chemical characterization was performed using gas chromatography interfaced with mass spectrometry, Fourier-transform infra-red (FTIR) spectroscopy, and quantification of phenolics and flavonoids by Folin–Ciocalteu reagent and aluminium nitrate, respectively. The oils showed potential antibacterial activity with mean zone of inhibition ranging from 20.67 ± 0.33 to 32.00 ± 1.00 mm at 100% oil concentration against the tested bacteria. Furthermore, the minimum inhibitory concentrations (MICs) in all the tested microorganisms were in the range from 250 to 15.6250 μg/ml. The essential oils derived from the leaves revealed varied antioxidant activity levels with the different methods of assay. The IC50 of values obtained from the three methods, DPPH, FRAP, and H2O2 were ˃1000 μg/ml, 0.31 μg/ml, and 12.33 μg/ml, respectively. Caryophyllene (22.1%) and 2, 3, 4-trimethylhexane were the major chemical components of the essential oils derived from the leaves and flowers, respectively. FTIR spectroscopy of the essential oils from the leaves and flowers showed similarity at peaks for hydroxyl, unsaturated olefinic, and amine functional groups. Further findings indicated that the total phenolic and flavonoid contents essential oils derived from leaves were 130.4 6 ± 10.5 mg GAE/g dry weight and 0.911 ± 0.04 mg CE/g dry weight, respectively. Quercus plants are widely distributed in Korea and have been used for their antiallergic and anti-inflammatory properties to treat dermatitis. The phenolic compounds of Quercus acutissima Carruth (QA) are estimated to have antioxidant and anti-inflammatory activities, based on the results of previous studies with Quercus mongilica, Quercus stenophylla, Quercus gilva Blame., and Quercus acuta Thunb. We yield QA extract and the isolated phenolic compounds (hyperoside (1), astragalin (2), kaempferol 3–O-(6″- galloyl)–β–D–glucopyranoside (KGG) (3), quercetin 3–O-(6″-O-galloyl)-β–D–glucopyranoside (QGG) (4), pedunculagin (5), and casuarinin (6)) and were identified using NMR. Among them, KGG (3) and QGG (4) were isolated for the first time from QA. QA extract and the isolated phenolic compounds demonstrated antioxidative, anti-inflammatory, and antiacne activities in RAW 264.7 mouse macrophage cells in vitro. 3–6 demonstrated strong inhibitory activities in the DPPH scavenging and NO production assay and anti-inflammatory and antiacne activities through western blotting (NLRP3, IL-1β, and 5α-reductase). Composition and technofunctional properties of the almond flours of 12 mango varieties from savannah zones of Cameroon (Central Africa) are assessed in order to highlight their potential use in breadmaking, through their effect on dough rheology. The compositions of almonds display starch as the major constituent (60–65%) with more than 80% of amylopectin and a significant presence of phenolic compounds (1–7%), lipids (7–13%), and proteins (4–7%), depending on mango varieties, with local varieties showing the highest polyphenol and lipid contents. Almond flours are characterized by high WAC (water absorption capacity) and OAC (oil absorption capacity) and pasting properties influenced by starch lipid and starch protein complexes. In wheat-mango almond composite flours, the pasting properties are mango variety and almond flour treatment (native or delipidated) dependent, with a substitution threshold effect variable from one variety to another. Alveographic profiles of the composite flours result in dough characterized by high tenacity (P) but low swelling index (G) and baking strength (W). These effects are intensified with increasing substitution of wheat. However, up to 10% wheat substitution, the composite flours seem acceptable in breadmaking, with 9 mango varieties hypothetically convenient for the reduction of bread staling. Moringa (Moringa oleifera Lam.) is an incredible plant with a storehouse of essential nutrients such as proteins, vitamins, minerals, and phytochemicals such as phenols, flavonoids, glycosides, and sterioids. Through hydroethanolic extraction, the recovery of these biomolecules could be achieved throughadvanced novel extraction methods such as microwave-assisted extraction. The main aim of this experimental trial is to optimize three independent factors including power (500 W–700 W), temperature (30°C–50°C), and extraction time (20 min–40 min) consisting of two levels of dependent variables such as extraction yield (EY) and total phenol content (TPC) using Response Surface Methodology (RSM) constructed by Central Composite Design (CCD) with 20 trial runs. The optimized extraction method recorded 14.64 to 17.65% of extraction yield and 63.36 to 76.40 mg GA/gram of total phenol content. As a result of the optimization of microwave-assisted extraction, the recovery of biomolecules from the dried moringa leaves is achieved by increasing the extraction temperature and time with the microwave power of the instrument. Rehmannia glutinosa (Gaertn.) DC., belonging to the family Scrophulariaceae, has been known since immemorial times as a prominent oriental drug in East Asia that can treat various ailments, such as kidney disorders, anemia, and diabetes. The increasing demand for R. glutinosa in the traditional medicine industry encouraged many researchers to develop a fast, efficient, and high-quality production system using biotechnological approaches. This study aimed to compare the chemical and biological activities of in vitro regenerated R. glutinosa (PKR) and commercial R. glutinosa (PCR) samples subjected to steam processing. We assessed the effects of steam processing and the differences in R. glutinosa material on 5-Hydroxymethyl-2-furaldehyde (5-HMF) content, total flavonoid and phenolic content, antioxidant activity, nitric oxide (NO) levels, and anti-inflammatory activity. PKR samples showed a significantly higher content of 5-HMF (0.15%) as compared to PCR samples (0.05%). Compared to unprocessed R. glutinosa (UPR) and PCR samples, PKR again showed the highest total phenolic and flavonoid content of 41.578 mg GAE/g and 17.208 mg RUE/g, respectively. Meanwhile, both processed R. glutinosa samples (PKR and PCR) showed a significantly higher DPPH antioxidant activity ((67.095 + 1.005)% and (61.579 + 0.907)%, respectively) than unprocessed R. glutinosa ((31.452 + 1.371)%). In addition, both PKR and PCR samples showed good anti-inflammatory activity by showing similar effects such as the inhibition of NO production and the suppression of inducible nitric oxide synthase (iNOS). Based on these results, PKR fulfilled the Chinese pharmacopeia standards, in terms of the amount of the marker compounds and showed a high level of bioactivity. The phenolics are the main bioactive substances of Huangshan Gongju, a famous chrysanthemum of China, but their digestive characteristics are still unknown. To explore the digestive properties of Huangshan Gongju phenolics, the flower was extracted and subjected to simulated digestions, and their phenolic profile and activity were analyzed. The results indicated that the total phenolics content and antioxidant activity of the extract varied with the simulated digestion steps, and they generally decreased in the oral and small intestine digestions but increased in the gastric digestion, and high correlations were detected between the total phenolics content and antioxidant activity (0.873 < r < 0.979, p <.01). The change of phenolic profile during the simulated digestions was similar to that of total phenolics content, and six individual phenolics were identified and quantified, and three of them, including chlorogenic acid, apigenin‐7‐O‐rutinoside, and apigenin‐7‐O‐6″‐acetylglucoside showed higher recovery (>64.29%), implying they may be the main functional phenolics of Huangshan Gongju. Practical applications: This study proved that most phenolics in Huangshan Gongju were relatively stable during digestion. Walnut diaphragm is defined as a dry wood septum located between the walnut shell and kernel. In this work, seven phenolic compounds from walnut diaphragm were purified and characterized, and their antioxidant activities and mechanisms of hypoglycemia were investigated. Compounds 1–7 were tested for DPPH, ABTS scavenging ability, and FRAP assay to evaluate the antioxidant activity. α‐Amylase inhibition assay was introduced to assess the hypoglycemic activity, and the mechanism was investigated by kinetic analysis, CD spectrum, and molecular docking. Compound 6 showed the strongest antioxidant ability, while compound 1 exhibited the strongest inhibition of α‐amylase by changing the secondary structure of α‐amylase in a mixed competitive inhibition mode. Molecular docking test predicted that the tetrahydropyran part in compound 1 may contribute to its hypoglycemic effect. This study furnishes a new theoretical reference for the utilization and development of walnut diaphragm into a health food with antioxidant and hypoglycemic properties. Practical applications: The finding of this research may serve as a basis for the subsequent development of walnut diaphragm into instant tea‐based health food or added to other food carriers to achieve auxiliary antioxidant and hypoglycemic effects. This study revealed that polyphenolic components were the material basis for the antioxidant and hypoglycemic effects of walnut diaphragm, which could be identified as landmark chemical components for controlling quality standards in the development of walnut diaphragm, thus accelerating the research process of quality standards for walnut diaphragm‐related products. Furthermore, the studies on the mechanism of hypoglycemic activity supply more credible data to support the development of walnut diaphragm into a safe and consumer‐friendly health food.
