Resonance-enhanced multiphoton ionization-time-of-flight mass spectrometry (REMPI TOFMS) is a selective as well as sensitive analytical technique, well suited for real-time on-line monitoring of organic compounds in complex pyrolysis gases. In the present work, the on-line REMPI-TOFMS technique was applied to investigate dynamic effects in ‘all day’ pyrolytic processes, namely the coffee roasting process and tobacco smoking.
