This study aims to compare the analysis of phytochemicals, nutrition, cytotoxicity, and antioxidant activity of A. viridis and A. spinosus leaves because they are commonly used as wild leafy vegetables worldwide and valuable for traditional medicinal purposes. To achieve these goals, the standard protocol was followed in each experiment. Comparative analysis revealed that the A. spinosus leaf had more phytochemicals, such as alkaloids, flavonoids, terpenoids, carbohydrates, glycosides, cardiac glycosides, amino acids, xanthoproteins, phenols, saponins, steroids, and coumarins, than A. viridis. Aqueous solvents were more effective in identifying the presence of phytochemicals than methanol and ethanol. A. viridis leaves contain higher amounts of carbohydrates (49 ± 2 mg gluc./g), protein (53 ± 3 mg BSA/g), calcium (2.67 ± 0.03 mg/kg), amino acids (7 essential and 5 non-essential), total phenol (21 ± 1 mg GAE/g), and high antioxidant activity (IC50 = 109.0 ± 0.2 μg/cm3) than A. spinosus. On the other hand, A. spinosus leaves contain higher ash (17.1 ± 0.2 %), total flavonoid (16 ± 1 mg QE/g), and total antioxidant capacity (50 ± 1 mg AA/g) than A. viridis. The findings of the heavy metals analysis revealed that the concentrations of zinc, manganese, iron, and chromium were below the recommended limits of FAO/WHO, whereas copper (in both species) and cadmium (in A. viridis) were over the acceptable levels. Twelve amaranth accessions were evaluated in a randomized complete block design with three replications in the research field of the Institute of Agriculture and Animal Science, Lamjung, Sundarbazar, Lamjung, Nepal from March to July 2021 to assess the phenotypic diversity. Principal Component Analysis (PCA) showed that only two principal components were significant with their eigenvalues >1 and combinedly accounted for 88.3% of the total variance. PC1, which explained 71.9% of the variance, was highly and positively contributed by days to 50% inflorescence, plant height, leaf length, leaf width, petiole length, 1000 seed weight, and grain yield. PC1 was negatively affected by the number of primary branches per plant and the number of leaves per plant. PC2, which explained 16.4% of the variance, distinguished plants with high number of leaves and a higher inflorescence length. The accessions were grouped into 4 clusters. Cluster 2 had the greatest intracluster distance (D2 = 13.19), while Cluster 3 and 4 had the greatest intercluster distance (D2 = 21.73), followed by Cluster 2 and 3 (D2 = 17.37). Cluster 1 had the highest number of leaves per plant and the lowest yield. Cluster 2 had the maximum grain yield and plant height. Cluster 3 had the lowest inflorescence length, and cluster 4 had the highest leaf length and 1000 seed weight.

This study investigated the potential of Amaranthus spinosus for the remediation of heavy metal contaminated soils a mechanic workshop and refuse dumpsites. The plant was grown in each soil for 12 weeks. The heavy metals were extracted from the samples using HNO3 digestion and analyzed using atomic absorption spectrometry (AAS) equipment (Perkin Elmer Analyst 460). The growth of A. spinosus contributed to an enhanced loss of the heavy metals from the soils. The loss of the heavy metals due to the growth of A. spinosus was more in soils from the refuse dumpsite than in the soils from the mechanic workshop. The rate of heavy metal loss was faster in the soil from mechanic workshop mechanic workshop than in the soil from the dumpsite. The trend of the rate of heavy metals loss was Cu>Zn>Pb>Cd for vegetated soil and Zn>Cu>Pb>Cd for non-vegetated soil. The rate of the heavy metal loss shows it will take lesser time to achieve 100% loss of the heavy metals in the vegetated soil than in the non-vegetated soils. There was no statistical difference between the loss of the heavy metals from the soils of the mechanic workshop and refuse dumpsite (p > 0.05). The results of this study indicated that A. spinosus with BCF values greater than 1 for Zn and Cu suggest that the plant uses hyperaccumaulation as the mechanism of remediation of the metals. The percentage loss of the heavy metals from the soils had a negative correlation with the amounts of heavy metals accumulated in the tissues of the plant, the rate of loss, and the bioconcentration factors. The ability of A. spinosus to be considered for phytoremediation has to be viewed with caution, as the translocation factor index indicates that all the metals investigated in this study were being translocated to the aerial parts of the plant.

The variety of bioactive compounds found in different species of Amaranthus, an herb that is a staple food in many parts of India. The plethora of herb Amaranthus has been a rich source of bioactive compounds like essential oils, sesquiterpenes, diterpenes, triterpenes, phenolic acids, flavonoids, etc. The traditional uses of Amaranthus, spp. have been established scientifically and were shown due to the presence of different phytochemicals. Although the pharmacological activities of Amaranthus genus have been well-documented, further studies are needed to fully understand their mechanisms of action and clinical applications. In conclusion, the phytochemistry and pharmacological activity of genus Amaranthus make it a promising source of natural products for drug discovery and development. The present is review mainly concise to the ethnopharmacological relevance and pharmacological studies of Amaranthus species. The efficient remediation of the soil co-contaminated with heavy metals and polybrominated diphenyl ethers (PBDEs) from electronic disassembly zones is a new challenge. Here, we screened a fungus of F. solani (F.s) can immobilize Cd and remove PBDEs. wIt combined with tourmaline enhances the remediation of co- pollutants in the soil. Furthermore, the environment risks of the enhanced technology were assessed through the amount of Cd/BDE-153 in Amaranthus tricolor L. (amaranth) migrated from soil, as well as the changes of soil microorganism communities and enzyme activities. The results showed the combined treatment of tourmaline and F.s made the removal percentage of BDE-153 in rhizosphere soil co-contaminated with BDE-153 and Cd reached 46.5%. And the weak acid extractable Cd in rhizosphere soil decreased by 33.7% compared to control group. In addition, the combined remediation technology resulted in a 32.5% (22.8%), 45.5% (37.2%), and 50.7% (38.1%) decrease in BDE-153 (Cd) content in the roots, stems, and leaves of amaranth, respectively. Tourmaline combined with F.s can significantly increase soil microorganism diversity, soil dehydrogenase and urease activities, further improving the remediation rate of Cd and BDE-153co-pollutants in soil and the biomass of amaranth. A study of anatomical features of mature leaves and stems (at fruiting stage) of 12 Amaranthus taxa (Family: Amaranthaceae) shows high variation between them and supplied new characters. The internal structures were evaluated to clarify their effectiveness in solving taxonomic complexity and identification difficulty in this genus. Observation of the transections of blades showed that the epidermis is uniseriate, ground tissue consists of angular collenchyma and thin parenchyma. The vascular bundles shape has three patterns crescent, ring, ovate. Also they may be united or separated while the midrib shape in cross section has two patterns in which U-shaped, cordate or crescent bundle occurs. All leaves are petiolate. The examination of the petioles exhibits new and varied characters such as petiole shape (cross section), vascular bundles (shape, number, arrangement). While the resulted characters from the observation of the stem structure showed less variation. Nineteen qualitative characters with 38 character states resulted from leaf anatomy. Only (8) characters were sufficient to generate an identification anatomical key. DELTA program was used in key-generation. Also different measurements were carried out by a photo analysis program (Image J), such as lamina thickness, mesophyll thickness, area of upper and lower epidermal cells and thickness of upper and lower epidermal cells to exhibit most possible dissimilarities between the studied species.

Intercropping is a widely used agricultural system; however, the effect of intercropping between accumulator plants on phytoextraction in heavy metal-contaminated soils remains unknown. Here, a field experiment was conducted to investigate the phytoextraction efficiency and related environmental effects of three Amaranthaceae plants (Amaranthus hypochondriacus, Celosia argentea, and Pfaffia glomerata) using mono- and intercropping models. In monocropping, the total biomass of A. hypochondriacus was only 51.2 % of that of C. argentea. Compared with monocropping, intercropping reduced the fresh weight per plant of A. hypochondriacus by 53.0 % (intercropping with C. argentea) and 40.5 % (intercropping with P. glomerata) but increased the biomass per plant of C. argentea and P. glomerata by 128.2 and 14.2 %, respectively. The Cd uptake of the three plants in the monocropping models showed the following trend: C. argentea > P. glomerata > A. hypochondriacus. Interplanting A. hypochondriacus and C. argentea further increased the phytoextraction efficiency by 361.2 % (compared with A. hypochondriacus monocropping) and 52.0 % (compared with C. argentea monocropping). Soil exchangeable Cd, Pb, Cu, Zn, K, and P, soil N-NO 3 - and N-NH 4 + , soil common bacteria and arbuscular mycorrhiza (AM) fungi, and soil total organic carbon (TOC) play key roles in Cd and Pb uptake by the three accumulator plants (p < 0.05). The biomass of common bacteria, Gm + , Gm - bacteria, fungi, AM fungi, and actinomycetes increased with the three accumulators planted in the mono- and intercropping models. Compared with C. argentea monocropping, the biomass of soil microbes in the rhizosphere soil was obviously increased in the intercropping A. hypochondriacus and C. argentea models. The increase in alien plant invasions poses a major threat to global biodiversity and ecosystem stability. However, the presence of microplastics (MPs) as an environmental stressor could impact the interactions between invasive and native species in an invasive plant community. Nevertheless, the community alterations and underlying mechanisms resulting from these interactions remain unclear. Herein, we systematically investigated the impacts of polyethylene (PE) and polypropylene (PP) on invasive plant communities invaded by Amaranthus palmeri through soil seed bank. The results illustrated that MPs markedly declined community height and biomass, and altered community structure, low-dose MPs could prominently increase community invasion resistance, but reduced community stability. The niche width and niche overlap of A. palmeri and S. viridis declined when exposed to high-dose MPs, but MPs elicited a significant rise in the niche width of S. salsa. PP had the potential to reduce the diversity of invasive plant community. Structural equation model revealed that PP addition could change soil total phosphorus content, thereby leading to a reduction of the community stability. Functional properties and ability to stabilize Pickering emulsions of amaranth starch with the novel nonenyl succinic anhydride (NSA) modification and the widely used octenyl succinic anhydride (OSA) modification were compared. The NSA modification was more effective in altering the rheological properties of amaranth starches. NSA-modified amaranth starch showed significantly higher peak viscosity (7.13 Pa·s at DS of 0.02209) than the OSA-modified amaranth starch (6.10 Pa·s at DS of 0.03042). The gelatinization temperature, gelatinization enthalpy, and relative crystallinity of amaranth starch were more affected by the OSA than the NSA. The Pickering emulsions stabilized with NSA-modified starches had higher stability than those with the OSA-modified starches as characterized by particle size distribution, morphological, and rheological approaches. A lower degree of substitution by NSA than by OSA is needed to achieve a similar emulsification capacity. Sterigmatocystin (STE) is a common hepatotoxic and nephrotoxic contaminant in cereals, however, its phytotoxicity and mechanisms are poorly understood. Here, the phytotoxic mechanisms of STE were investigated via the metabolomics of Amaranthus retroflexus L. A total of 140 and 113 differential metabolites were detected in the leaves and stems, respectively, among which amino acids, lipids, and phenolic compounds were significantly perturbed. Valine, leucine, isoleucine, and lysine biosynthesis were affected by STE. These metabolic responses revealed that STE might be toxic to plants by altering the plasma membrane and inducing oxidative damage, which was verified by measuring the relative electrical conductivity and quantification of reactive oxygen species. The elevated amino acids, as well as the decreased of D-sedoheptuiose-7-phosphate indicated increased proteolysis and carbohydrate metabolism restriction. Furthermore, the IAA level also decreased. The Chenopodium genus includes >250 species, among which only quinoa, pigweed, djulis, and kaniwa have been explored for starches. Chenopodium is a non-conventional and rich source of starch, which has been found effective in producing different classes of food. Chenopodium starches are characterized by their smaller granule size (0.4-3.5 μm), higher swelling index, shorter/lower gelatinization regions/temperature, good emulsifying properties, and high digestibility, making them suitable for food applications. However, most of the investigations into Chenopodium starches are in the primary stages (isolation, modification, and characterization), except for quinoa. This review comprehensively explores the major developments in Chenopodium starch research, emphasizing isolation, structural composition, functionality, hydrolysis, modification, and application. The gap between the current serious soil heavy metal (HM) contamination and the low efficiency of soil remediation threatens human health. The aim of this study was to propose a method to improve the efficiency of phytoremediation by exogenous rutin application and explain the potential mechanism. A series of rutin treatments were designed to evaluate the biomass, cadmium (Cd) accumulation and physiological and biochemical responses of Amaranthus hypochondriacus under different Cd stresses. The results showed a decline in cell membrane damage with rutin application, and more Cd ions were immobilized in the cell wall than in the vacuole, resulting in an increase in Cd tolerance in plants. The addition of rutin caused significant effects on the synthesis of glutathione (GSH), including the advancement of the conversion of GSH to phytochelatins (PCs). Among them, PC 2 and PC 3 in the leaves contributed the most to the high accumulation of Cd. Overall, the phytoremediation efficiency and phytoextraction amount of Amaranthus hypochondriacus with rutin application were improved maximumly by 219.48% and 260.00%, respectively. Improving biomass enzymatic saccharification is effective for crop straw utilization, whereas phytoremediation is efficient for trace metal elimination from polluted agricultural soil. Here, we found that the green proteins extracted from Amaranthus leaf tissue could act as active biosurfactant to remarkably enhance lignocellulose enzymatic saccharification for high bioethanol production examined in eight grassy and woody plants after mild chemical and green-like pretreatments were performed. Notably, this study estimated that total green proteins supply collected from one-hectare-land Amaranth plants could even lead to additional 6400-12,400 tons of bioethanol, being over 10-fold bioethanol yield higher than those of soybean seed proteins and chemical surfactant. Meanwhile, the Amaranth green proteins were characterized as a dominated biosorbent for multiple trace metals (Cd, Pb, As) adsorption, being 2.9-6 folds higher than those of its lignocellulose. The Amaranth plants were also assessed to accumulate much more trace metals than all other plants as previously examined from large-scale contaminated soils. Furthermore, the Amaranth green proteins not only effectively block lignin to release active cellulases for the mostly enhanced biomass hydrolyzes, but also efficiently involve in multiple chemical bindings with Cd, which should thus address critical issues of high-costly biomass waste utilization and low-efficient trace metal remediation., (Copyright © 2020 Elsevier B.V. The contamination of water resource and food chain by persistent organic pollutants (POPs) constitutes a major environmental and human health concern worldwide. The aim of this study was to investigate the levels of POPs in irrigation water, soil and in Amaranthus viridis (A. viridis) from different gardening sites in Kinshasa to evaluate the potential environmental and human health risks. A survey study for the use of pesticides and fertilizers was carried out with 740 market gardeners. The levels of POPs (including organochlorine pesticides (OCPs), polychlorinated biphenyls (PCBs), polybrominated diphenyl ethers (PBDEs), and polycyclic aromatic hydrocarbons (PAHs)) were analyzed in irrigation water and 144 vegetable samples collected from different gardening sites. The assessment of potential human health risk was estimated by calculating daily intake and toxic equivalency to quantify the carcinogenicity. The results show highest PAH levels in A. viridis from all studied sites. The concentrations of the sum of seven PCBs (Σ7PCB S ) congeners in analyzed plants ranged between 15.89 and 401.36 ng g -1 . The distributions of OCPs in both water and A. viridis were congener specific, chlorpyrifos-ethyl and p,p'-DDE were predominantly detected. Among PBDEs, only BDE47 was quantified with noticeable concentration in A. viridis, while no PBDEs were detected in irrigation water. Higher estimated daily intake values indicate that consuming leafy vegetables might associate with increased human health risks. However, calculated incremental lifetime cancer risk values indicates no potential carcinogenic risk for the local population. The results of this study provide important information on A. viridis contamination by POPs and strongly recommend implementing the appropriate measures to control the use of chemicals used in studied gardening areas. The remediation efficiency of phytoextraction on heavy metal could be influenced by metal bioavailability and plant growth. Hence, we applied a synergistic intensification system with plant hormone (24-Epibrassinolide, EBR) and metal-resistant bacterium (Serratia sp. CTZ4) to enhance Cd extraction of Amaranthus hypochondriacus L. in contaminated soil. Results demonstrated that the combination of CTZ4 and EBR promoted soil microecology through decreasing soil pH, improving soil enzymatic activity (dehydrogenase, invertase, acid phosphate, urease). Besides, microbial community structure was evaluated to understand the diversity and relative abundance of microbe in soil after remediation. Moreover, the maximum extraction of Cd was 5.91 mg kg -1 and increased about 60.16 % to CK. Meanwhile, the antioxidant system (SOD, CAT activities) of plant was improved significantly as well as plants biomass increasing by 46.02 % with the combination of EBR and CTZ4. Cylic electron flow (CEF) around Photosystem I in photosynthetic eukaryotes is likely to be necessary to augment ATP production, rapidly- and precisely balancing the plastid ATP/NADPH energy budget to meet the demands of downstream metabolism. Many regulatory aspects of this process are unclear. Here we demonstrate that the higher plant plastid NADH/Fd:plastoquinone reductase (NDH) and proposed PGR5/PGRL1 ferredoxin:plastoquinone reductase (FQR) pathways of CEF are strongly, rapidly and reversibly inhibited in vitro by ATP with K i values of 670 μM and 240 μM respectively, within the range of physiological changes in ATP concentrations. Control experiments ruled out effects on secondary reactions, e.g. FNR- and cytochrome b 6 f activity, nonphotochemical quenching of chlorophyll fluorescence etc., supporting the view that ATP is an inhibitor of CEF and its associated pmf generation and subsequent ATP production. The effects are specific to ATP, with the ATP analog AMP-PNP showing little inhibitory effect, and ADP inhibiting only at higher concentrations. For the FQR pathway, inhibition was found to be classically competitive with Fd, and the NDH pathway showing partial competition with Fd. We propose a straightforward model for regulation of CEF in plants in which CEF is activated under conditions when stromal ATP low, but is downregulated as ATP levels build up, allowing for effective ATP homeostasis. The differences in K i values suggest a two-tiered regulatory system, where the highly efficient proton pumping NDH is activated with moderate decreases in ATP, with the less energetically-efficient FQR pathway being activated under more severe ATP depletion., (Copyright © 2019. The effects of sublethal doses of herbicides on plants cannot be ignored, yet little is known about the effects of sublethal doses of herbicides on the F1 generation of plants. Seed germination and seedling growth of native and invasive plants following the sublethal exposure of parent plants to herbicides were comparatively analyzed in this study. Sublethal atrazine and tribenuron-methyl had carry-over effects on the germination and seedling growth of the F1 generation of invasive redroot pigweed (Amaranthus retroflexus L.) and native velvetleaf (Abutilon theophrasti Medicus), both of which had different responses to the carry-over effects of sublethal herbicide. The germination percentage of the F1 redroot pigweed (decreased) was greater than that of the F1 velvetleaf (increased or not significantly changed) following parental exposure to atrazine or tribenuron-methyl. Atrazine reduced the radical growth of 7-day-old velvetleaf seedlings and decreased the difference in seedling length between velvetleaf and redroot pigweed, while tribenuron-methyl had no significant effects on the growth of 7-day-old velvetleaf seedlings. The herbicide inhibition effect on the germination and growth of F1 velvetleaf and redroot pigweed did not increase as the sublethal dose increased. This study suggests that carry-over effects of sublethal herbicides weaken the growth advantage of the F1 velvetleaf at the seedling stage and may have a more negative influence on progeny population development of native velvetleaf compared with invasive redroot pigweed., (Copyright © 2018. Background: Cardiovascular diseases (CVDs) have a high prevalence in developing and developed countries and myocardial infarction accounts for majority of deaths and disabilities. The current study dealt with the protective role of Amaranthus viridis Linn on isoproterenol (ISO)-induced myocardial infarction (MI) in rats., Methods: Subcutaneous injection of ISO (20 mg/kg body weight in 1 ml saline) to rats for two consecutive days offered significant alteration in cardiac marker enzymes (AST, ALT, LDH and CPK), cardiac troponin, lipid peroxidation products (TBARS and hydroperoxide) and antioxidant system (CAT, SOD, GPx, GST, GSH and GSSG). ISO-induced myocardial damage was indicated by increased activities of marker enzymes in serum and the levels of cardiac troponin in the serum. In addition to these diagnostic markers, the levels of lipid peroxidation products in the heart were significantly (p<0.05) increased and the activities of enzymic antioxidants and non-enzymic antioxidant such as glutathione in the heart was significantly (p<0.05) decreased and GSSG in the heart was increased in ISO-induced rats., Results: Effect of Amaranthus viridis oral treatment (100, 200 and 300 mg/kg body weight) for 45 days elicited a significant cardio protective activity by lowering the levels of serum marker enzymes, cardiac troponin, GSSG and lipid peroxidation and elevated the levels of antioxidant enzymes and GSH. The effect at a dose of 300 mg/kg of A. viridis was more pronounced than that of the dose 100 mg/kg and 200mg/kg and brought back all the parameters to near normal. Few studies have evaluated the impact of fortification with iron-rich foods such as amaranth grain and multi-micronutrient powder (MNP) containing low doses of highly bioavailable iron to control iron deficiency anemia (IDA) in children. We assessed the efficacy of maize porridge enriched with amaranth grain or MNP to reduce IDA in Kenyan preschool children. In a 16-wk intervention trial, children (n = 279; 12-59 mo) were randomly assigned to: unrefined maize porridge (control; 4.1 mg of iron/meal; phytate:iron molar ratio 5:1); unrefined maize (30%) and amaranth grain (70%) porridge (amaranth group; 23 mg of iron/meal; phytate:iron molar ratio 3:1); or unrefined maize porridge with MNP (MNP group; 6.6 mg iron/meal; phytate:iron molar ratio 2.6:1; 2.5 mg iron as NaFeEDTA). Primary outcomes were anemia and iron status with treatment effects estimated relative to control. At baseline, 38% were anemic and 30% iron deficient. Consumption of MNP reduced the prevalence of anemia [-46% (95% CI: -67, -12)], iron deficiency [-70% (95% CI: -89, -16)], and IDA [-75% (95% CI: -92, -20)]. The soluble transferrin receptor [-10% (95% CI: -16, -4)] concentration was lower, whereas the hemoglobin (Hb) [2.7 g/L (95% CI: 0.4, 5.1)] and plasma ferritin [40% (95% CI: 10, 95)] concentrations increased in the MNP group. There was no significant change in Hb or iron status in the amaranth group. Consumption of maize porridge fortified with low-dose, highly bioavailable iron MNP can reduce the prevalence of IDA in preschool children. In contrast, fortification with amaranth grain did not improve iron status despite a large increase in iron intake, likely due to high ratio of phytic acid:iron in the meal.

The phytoavailability of Cd, Pb, Cr, Zn, Cu, and Ni, retained in tidal flat soil after fresh water leaching during reclamation was investigated. Two salt-tolerant varieties of tomato (Lycopersicon esculentum) and edible amaranth (Amaranthus mangostanus L.) were planted in soils having eight different desalination levels (from 6.7 to 1.4 g kg(-1) salinity) using pot experiments. Soil leaching significantly decreased the uptake of all metals by crop roots except for Ni. The reduction of soil salinity and exchangeable fraction content of Cd and Pb after leaching contributed to the decrease of uptake of metals by roots. All heavy metal concentrations in the edible parts of both crops in the two lowest salinity level treatments were lower than their maximum allowable levels in food. Results suggest that reclamation of tidal flats can reduce the phytoavailability of the heavy metals retained in soil. Concentrations of heavy metals such as Pb, Cd, Cu and Zn have been estimated in air particulates, water and food samples collected from different suburbs in Bombay during 1991-1994. The concentrations of these metals are translated into intake rates through inhalation and ingestion pathways. Results indicate the highest concentration of Pb and Cu are in pulses (green gram), Cd in leafy vegetables (amaranth) and Zn in meat. Root vegetables and fruits contained a lower concentration of these metals. Total intakes of Zn, Cu, Pb and Cd through air, water and food were 10,500 micrograms/day, 1500 micrograms/day, 30 micrograms/day and 4.3 micrograms/day, respectively. Although the major contribution for the daily intake is the ingestion route, eventual uptake in the body stream is contributed through inhalation for Pb (41%) and Cd (16%) and ingestion for Cu (98.8%) and Zn (99.6%). The total intake of these elements through the duplicate diet study is 9500 micrograms/day for Zn, 1770 micrograms/day for Cu, 27 micrograms/day for Pb and 2.5 micrograms/day for Cd, respectively. The daily intake of these metals by the population of Bombay is well below the recommended dietary values.

All amaranth varieties contain tocotrienols and squalene compounds which are known to affect cholesterol biosynthesis. Therefore, in the present study, the influence of dietary supplementation of whole seed, popped, and milled amaranth and amaranth oil on cholesterogenesis was studied in 6-wk-old female chickens. Serum total cholesterol and LDL-cholesterol were lowered 10-30% and 7-70% (P < 0.01), respectively, in birds fed amaranth-containing diets. HDL-cholesterol was not affected by amaranth supplementation. Activities of liver cholesterol 7alpha-hydroxylase (the enzyme responsible for cholesterol breakdown into bile acids) were 10-18% higher (P < 0.01) than those of controls for birds fed most forms of amaranth and its oil, whereas activities of liver 3-hydroxy-3-methylglutaryl coenzyme A reductase (the rate-limiting enzyme for cholesterol biosynthesis) were lowered by about only 9% (P < 0.01) by popped, milled amaranth and its oil. This lack of marked inhibition of this enzyme suggests the presence of some other potent cholesterol inhibitor(s) apart from tocotrienols and squalene in amaranth.

Amaranthus caudatus L. toasted flour, popped grain and flakes were each fed to nine young children as the source of all diet protein and fat and 50% of diet energy, preceded and followed by casein control diets. All provided 6.4-6.7% of energy as protein and 9.3-10.1% as fat. Balances were carried out during the last 6 d of the three 9-d amaranth periods and during the four control periods. Fecal wet and dry weights during amaranth diets were 129-157% of those during casein control diets; fecal energy, fat and carbohydrate from the toasted flour periods were 193, 268 and 256%; from the popped grain 253, 586 and 195%; and from the flakes 225, 356 and 255% of those during casein diets. Apparent N absorptions were 84.1-84.6% of the casein values (P less than 0.001); apparent retentions from toasted, popped and flaked amaranth were 70.9, 65.9 and 59.0% of casein (P less than 0.001). The last of these was significantly lower than the first (P less than 0.05). Fecal fat was much higher (P less than 0.001) from the popped than from the flaked grain and the toasted flour. Toasted flour was then added to maize meal so that amaranth provided 20 or 30% of the protein. Seven young children received diets in which 6.4% of total energy came from one of the above mixes, or from casein, as protein. Soya-cottonseed oils completed 25% lipid energy in all three diets; balance of energy was from sucrose in the experimental diets and from sucrose, corn syrup solids and cornstarch in the casein diet.(ABSTRACT TRUNCATED AT 250 WORDS)
