- Abstract
Watercore is an internal disorder that appears as water-soaked, glassy regions near the core in apples. Fast and non-destructive solutions for sensing watercore would be readily accepted in the postharvest industry. X-ray CT and MRI were compared as potential imaging technologies for detecting this particular disorder. After matching the 3D datasets of X-ray CT and MRI, the images that were obtained on identical fruit were compared quantitatively. Both MRI and CT were able to detect watercore, however the contrast in MRI images was superior. High-resolution micro-CT images showed the microstructural changes in watercore fruit: the intercellular spaces of the affected apple tissue are filled with water. This explained the higher density that is detected here by the X-rays and the higher water content in the MRI. Mean and variance of the frequency distribution of MRI and X-ray CT intensity appeared to be a parameter that allows the identification of healthy apples from affected fruit. Automatic image processing based on thresholding the images resulted in comparable watercore classification accuracy of up to 89% for X-ray CT and 79% for MRI data, despite the better contrast in the MRI images.

- Abstract
A model-based approach to design periodic thermal treatments for surface decontamination of strawberries, and fruit in general, was developed. The model accounts for the actual shape of the strawberry, surface decontamination kinetics and temperature-related product quality objectives. Conduction heat transferwas coupled with a first-order kinetic model for microbial inactivation at the surface of strawberries. The thermophysical properties were estimated based on the chemical composition of strawberries, and the inactivation properties of Botrytis cinerea were used. The heat transfer model was validated based on immersion experiments of strawberries in pure water at different temperatures. The effect of different periodic heating cycles on the internal temperature distribution was expressed by means of a thermal product state functional, in which temperature increases were exponentially penalised. Computer simulations revealed that heating cycles with a small period length minimise the overall product temperature increase and, hence, reduce the level of quality losses. In this way large temperature variations are limited to the product boundary. This model-based approach provides a postharvest engineering tool for design and fine tuning of surface decontamination processes and equipment.

- Abstract
The impregnation of leafy vegetables with cryoprotectants using a combination of vacuum impregnation (VI) and pulsed electric fields (PEF) has been proposed by our research group as a method of improving their freezing tolerance and consequently their general quality after thawing. In this study, we have investigated the metabolic consequences of the combination of these unit operations on spinach. The vacuum impregnated spinach leaves showed a drastic decrease in the porosity of the extracellular space. However, at maximum weight gain, randomly located air pockets remained, which may account for oxygen-consuming pathways in the cells being active after VI. The metabolic activity of the impregnated leaves showed a drastic increase that was further enhanced by the application of PEF to the impregnated tissue. Impregnating the leaves with trehalose by VI led to a significant accumulation of trehalose-6-phosphate (T6P), however, this was not further enhanced by PEF. It is suggested that the accumulation of T6P in the leaves may increase metabolic activity, and increase tissue resistance to abiotic stress., (Copyright © 2016 Elsevier B.V. All rights reserved.)
