Summary: A comprehensive metagenomics-based investigation of the microorganisms present within milk kefir communities from across the globe was carried out with a view to defining the milk kefir pan-metagenome, including details relating to core and non-core components. Milk kefir samples, generated by inoculating full fat, pasteurized cow’s milk with 64 kefir grains sourced from 25 different countries, were analyzed. We identified core features, including a consistent pattern of domination by representatives from the species Lactobacillus helveticus or the sub-species Lactobacillus kefiranofaciens subsp. kefiranofaciens, Lactococcus lactis subsp. lactis or Lla. cremoris subsp. cremoris in each kefir. Notably, even in kefirs where the lactococci did not dominate, they and 51 associated metabolic pathways were identified across all metagenomes. These insights can contribute to future efforts to create tailored kefir-based microbial communities for different applications and assist regulators and producers to ensure that kefir products have a microbial composition that reflects the artisanal beverage.

Geographic location and meteorological factors can affect the content of bioaerosol concentrations. This study was conducted to determine the natural background concentrations of culturable fungal spores and dust particles in three different geographical areas. Focus was given to the dominant airborne genera Cladosporium, Penicillium, Aspergillus and the species Aspergillus fumigatus. The influence of weather conditions on the microorganism concentrations in urban, rural and mountain regions were examined. Possible correlations between particle counts and culturable fungal spore concentrations were investigated. 125 measurements of the air were conducted using the air sampler MAS-100NT® and the particle counter Alphasense OPC-N3. The analyses of the collected samples were based on culture methods using different media. The highest median of fungal spore concentrations was detected in the urban region and was of 2.0 × 10 3 CFU/m 3 for xerophilic fungi and 1.7 × 10 3 CFU/m 3 for the genus Cladosporium. The concentrations of fine and coarse particles in rural and urban regions were the highest of 1.9 × 10 7 pa/m 3 and 1.3 × 10 7 pa/m 3 , respectively. Little cloud cover and slight wind had a positive influence on the concentration of fungal spores. Furthermore, correlations were observed between air temperature and the concentrations of xerophilic fungi as well as the genera Cladosporium. In contrast, relative humidity correlated negatively with total fungi and Cladosporium and no correlation was found with the other fungi. For the region of Styria in summer and early autumn, the natural background concentration for xerophilic fungi ranged between 3.5 × 10 2 and 4.7 × 10 3 CFU/m 3 air. No significant differences were detected between the fungal spore concentrations in urban, rural and mountainous regions. Farmland and migratory bird populations are in decline. The Common quail (Coturnix coturnix) provides an exception to this trend and its populations have remained stable over the last two decades. However, some basic facts regarding quail biology and ecology, such as the geographic distribution of age and sex classes during the summer, remain poorly understood. We analyzed 43,194 Spanish quail ringing records from 1961 to 2014 to assess the effects of geography and weather conditions on the probability that individuals will be ringed during the various stages of their annual cycle (arrival -spring migration-, stationary breeding period, departure -autumn migration- and winter) for the different quail age-sex classes over time. We found that spatial distribution of the age and sex classes can be explained by date, latitude, longitude, altitude, rainfall, and temperature. Our results suggest that date accounts for most of the variation in the distribution of quail age classes, followed by the weather variables, and then latitude, and altitude. Similarly, date also accounts for most of the variation in the distribution of the two sexes. These results could partially explain why this species has avoided population decline, since its ecological strategy is based on its temporal and spatial distribution combined with the segregation of age and sex groups. We hypothesize that the distribution of quail age and sex classes follows variations in weather and habitat suitability to exploit seasonal and geographic variations in resource availability. The migratory and nomadic movements of quail, combined with the occurrence of multiple breeding attempts within a single season, may also allow these birds to overcome the impacts of predators and anthropogenic environmental change.
