The influence of the physical structure level in the diet on animal performance was investigated in 52 Belgian Blue doublemuscled bulls starting from a live weight of 348 kg until slaughter at about 645 kg. Four diets with different concentrate/maize silage ratios were offered ad libitum. The structural value (SV), developed in Belgium as a measure of physical structure in the diet for dairy cows, amounted to respectively 0.63 (HSV; high SV), 0.54 (MSV; moderate SV), 0.43 (LSV; low SV) and 0.34 (VLSV; very low SV) per kg dry matter.Growth rate, food intake and food conversion were all linearly affected by the decreasing SV of the diet. Among carcass parameters only the SEUROP conformation score showed a significant effect of the SV, with the MSV group having the highest score and VLSV the lowest. No important influence of the SV on the histological damage of the ruminal papillae or on the foot lesions was found.Based on the lower growth rate and food intake of the LSV group versus the HSV group, a SV of the diet between 0.54 and 0.43 is considered as an absolute minimum for Belgian Blue double-muscled bulls.

A 4-year experiment has been conducted on finishing Belgian Blue cull cows of double-muscled type in order to study the effects of diets containing adequate levels of metabolizable protein, but either normal (NENP), low (LENP) or medium (MENP) levels of metabolizable energy, on animal performance, carcass and meat characteristics, and plasma metabolites and hormones. The LENP diet was offered during the whole (LENP group) or second half of the finishing (NENP-LENP groups), and the MENP diet during the whole finishing (MENP group). The degree of fatness required for the slaughter of animals from NENP groups was close to 4-5 (scale from 0 (very lean) to 5 (very fat)). In each underfed group, the slaughter of the animals was synchronized to that of NENP cows, by degressive degree of fatness. The same duration of finishing was thus obtained for all groups.The experimental feeding strategies reduced the amounts of fat deposited in the carcass and the meat while muscle deposition was remarkably preserved. The proportions of saturated and monounsaturated fatty acids in intramuscular fat were also decreased while their proportions increased in plasma free fatty acids. Plasma insulin levels were also reduced and those ofIGF-1 were, surprisingly, maintained. The low energy diet promoted thus the settlement of a discrete lipolytic state while high levels ofIGF-1 preserved muscle deposition. This feeding strategy should be evaluated in other breeds of cattle.

Two groups of 12 Belgian Blue double-muscled cull females were used successively in a 2-year repeated experiment and divided into three groups according to age, allowing four animals per group each year. The aim of the trial was to relate, during the finishing period, the metabolic and endocrine parameters with age. Females were fattened with a diet based on maize silage and were blood sampled on several occasions. The average daily gain (ADG) decreased with the age of the cows. Plasma glucose and triglycerides decreased also with age while the youngest females showed lower concentrations of urea than those older. The composition of plasma non-esterified fatty acids also differed considerably between groups. The hormones that best related with ADG were IGF-1 and insulin. Plasma concentrations of thyroid hormones were lower in the oldest animals. No difference between groups was found for GH. Heifers presented lower concentrations of GH and IGF-1 than those reported elsewhere in fattening bulls of the same breed. It may be concluded that in Belgian Blue double-muscled females, glucose, IGF-1 and insulin are good indicators of the growth potential. Young adult cows presented intermediate characteristics of metabolic and endocrine status that were close either to younger or to older cows.

In Belgium, both dairy and beef cattle are managed intensively. Three commercial farms owning both a Belgian Blue —double muscled type- suckler beef herd and a Holstein-Friesian dairy herd were surveyed between 1994 and 1998. The aim of the study was to compare growth and reproduction performances of both breeds in a similar farm environment. The replacement heifers of both breeds were kept together until advanced pregnancy. Reproduction data were collected monthly from heifers older than fourteen months. The live weight of the replacement heifers was recorded quarterly until 20 months of age. Breed influenced the growth of replacement heifers at 6, 9 and 12 months (P < 0.001). The growth rate of Belgian Blue heifers was reduced after the age of one year and the live weight difference between breeds was not significant anymore. Belgian Blue heifers were always heavier than Holstein-Friesian heifers. Successfully bred heifers had a greater growth rate than non successfully bred heifers within the Belgian Blue breed. This was significant for the weight at 6 months (P < 0.05) and at 12 months (P < 0.05). Such an effect was not detected for the Holstein-Friesian breed (P > 0.05). Weight was not a limiting factor for fecundity of the Holstein-Friesian heifers. Management policies other than growth performance explained the difference between optimal fecundity and the fecundity index met in this study. Non successfully bred Belgian Blue heifers were lighter than successfully bred animals. Unsufficient weight performance had an impact on fecundity in that breed.

Information concerning 493 single calvings of the double-muscled beef cow herd of the institute was collected to investigate the relationship between the characteristics of dams and calves with regard to dystocia. Factors affecting dystocia are similar in double-muscled cattle to those in non-double-muscled cattle but the occurrence of dystocia is greatly increased in double-muscled cows. Incidence of caesarean section was significantly correlated with parity (–0·243), age of dam (–0·232), post-partum dam weight (–0·185), and calf birth weight (0·164). Caesarean deliveries were required for 89·5% of the parturitions. Calvings without caesarean section were characterized by higher means for post-partum dam live weight (634·7 kg), age (1675·5 days), parity (3·1) and the ratio of post-partum dam weight to calf birth weight (14·4), compared with 580·2 kg, 1251·1 days, 2·1, and 11·8, respectively for births with caesarean setion, while calf birth weight was lower in non-caesarean calvings (45·8 v. 49·9 kg). Caesarean births involved more male calves than females (55 v. 45%). Even when calf birth weight was 30 kg or lower, and also in multiparous cows, 40 and 86% of the deliveries, respectively, still occurred with a caesarean section.Incidence of caesarean section could not be accurately predicted from pre-partum characteristics such as pre-partum dam weight, age and parity.

Fifty double-muscled Belgian Blue bulls were divided into five groups. The first group (control, CG) was given, on an ad libitum basis, a fattening diet based on sugar-beet pulp. In G2 and G3, fattening was interrupted 103 and 187 days, respectively after the beginning of the experiment, by approximately a 2-month period of food restriction during which the animals received a maintenance ration. The last two groups, namely G4 and G5, received for about 4 months a limited amount of the restriction diet to support growth of 0·5 and 0 kg/day, respectively, before being fattened as CG. The average daily gain was 1·48 kg/day in CG v. 1·33, 1·30, 1·43 and 1·61 kg/day during the period of ad libitum feeding in G2, G3, G4 and G5. Higher nitrogen (N) balance during compensatory growth in G2, G4 and G5 (78·8, 81·0 and 74·6 v. 53·3 g N per day in CG, P < 0·001) resulted mainly from a higher efficiency of N retention. In G3, however, compensatory growth was characterized by lower N digestibility and efficiency of N retention. Muscle proportion in the carcass was higher in G3 while fat plus connective tissue proportion was lower (P < 0·05). Muscle pH values in CG were lower than in the other groups (P < 0·01) but ether extract values were higher. The intramuscular fat of G2 and G3 was characterized by higher proportions of polyunsaturated fatty acids.

To optimize performance and carcass quality of Belgian Blue double-muscled bulls four phased feeding regimens were evaluated. All diets were offered ad libitum and consisted of 650 g concentrates and 350 g maize silage per kg dry matter (DM). Total period was divided into three phases (ca. 360 to 460, 460 to 570 and 570 to 680 kg). All four groups received the same maize silage but the different energy and protein densities were applied using different concentrates. During the three phases, the negative control (NC) group constantly received a diet with a low protein and a moderate energy density; the second group (DP) received with each phase diets with decreasing protein density while the energy density remained moderate; the third group (IE) received diets with increasing energy density at a constantly high protein density and the last group (DPIE) received diets which decreased in protein and increased in energy density. The NC group grew significantly slower during the first interval (1·37 v. 1·62 kg/day for the other groups), resulting in a significantly longer total finishing period. During the third period IE had the slowest growth. The NC group needed 21 and 20 days more than the DP and DPIE groups, respectively, to reach the same slaughter weight. The NC group had the lowest DM intake during the first interval, the IE group during the third interval. No significant differences (P > 0·05) were found for food conversion, when expressed as DM or NEF (net energy for fattening). IE had the worst protein conversion while NC had the best, with the two other groups being intermediate. The only important significant difference concerning carcass quality was the improved dressing proportion of the IE and DP groups. Although significant, differences in the fat content of the m. longissimus thoracis are of minor importance. These results proved that for Belgian Blue double-muscled bulls, protein density of the diet can be decreased with increasing live weight, while energy should be increased to give optimal performance.

Measurements of conformation and pelvic characteristics of pedigree Belgian Blue cows were compared in cattle from 11 herds. In seven herds comprising 56 cows caesarean sections were routinely used to deliver pedigree calves and in four herds comprising 52 cows they were given the opportunity to calve naturally per vaginum. Cows in the seven herds were approximately 10 months younger than those in the other herds. External pelvic measurements were linear distances between the tuber coxae, between the tuber coxarum and the tuber ischium, between the tuber ischii, the vertical distance between the underside of the tail and the tuber ischii, and heights of the tuber coxae and tuber ischii from the floor. Internal pelvic measurements were the vertical distance between the ventral body of the sacrum and the pubic symphysis and the horizontal distance between the wings of the ileum at the widest point of the pelvic inlet, both made with a Rice pelvimeter. Condition scores were assessed for all cows. There were correlations (P < 0·001) between internal pelvic height and width, external measurements, and age. For cattle that calved unassisted, pelvic height (P < 0·05) and area (P < 0·05) were significantly larger than those delivered by elective caesarean section. From internal pelvic measurements of 74 cows, those which always delivered live calves had a larger pelvic area (P < 0·01) than cows that delivered a dead foetus following any parturition.

Properties of the non-carcass parts in combination with empty body and half carcass weight (EBW and CCW; kg) were used to generate equations for predicting empty body chemical composition. Therefore, chemical composition of the non-carcass parts and weight of the depot fatty tissues were determined on 18 Belgian Blue double-muscled fattening bulls. Very high coefficients of determination (R2) were found between the empty body composition and on the one hand the non-carcass parts composition and on the other hand the weight of the fatty tissues. Fat in the empty body was most difficult to predict. The very high coefficients of determination are partly caused by the large variation in slaughter weight (309 to 723 kg). Therefore equations to estimate proportional composition of the empty body are discussed. Although R2 values are strongly reduced, residual standard deviations remain very low and the precision of prediction is good. The proportion of protein is most difficult to predict, as it shows a very small variation. Estimations based on composition of the non-carcass parts are mostly a little more precise than the estimates based on weight of the fatty tissues but as the latter are much easier to determine, these equations will be more appropriate for practical use. Similarly the little improvement of the estimation based on EBW instead of CCW, cannot account for the extra costs and time to determine EBW. The results of the homogenizations have proven that there is very little variation in composition, despite the large range in slaughter weight. As the Belgian Blue double-muscled animals are very deviant from other breeds, the equations found in this study can only be applied for this breed type.

A comparison was made between fattening systems with Belgian Blue bulls of the double-muscle type, in order to assess the reponse in terms of compensatory growth when the bulls were grazed at a high stocking rate. Two groups of eight bulls were grazed on Lolium perenne and Trifolium repens pasture during an initial period of 135 days (period I). One group grazed at a stocking rate of six animals per ha allowing for normal growth at pasture (NGP); the other group grazed at stocking rate of 10 animals per ha (low growth at pasture, LGP). Both groups were then finished indoors (period II) with a concentrate based on dried sugar-beet pulp. Eight control bulls were also fattened indoors on the concentrate diet during periods I and II (CG). The bulls were slaughtered according to similar finishing fattening state. Live-weight gains were 1·47, 1·10 and 0·52 kg/day (P < 0·002) during period I in CG, NGP and LGP groups respectively. Corresponding live-weight gains during period II were 1·22, 1·37 and 1·50 kg/day (P > 0·05). The LGP group had lower food conversion ratios, slaughter weights (P < 0·05) and dressing proportions (P < 0·01). The meat from the grazed bulls had lower cooking losses (P < 0·05) and tended to have lower drip losses (P > 0·05) and higher tenderness (P > 0·05). It also had a higher cholesterol (P < 0·05) content. Large differences were observed in the fatty acid composition according to fat location (subcutaneous, intermuscular or intramuscular). The proportions of mono and polyunsaturated acids were increased in the fats of the animals previously grazed (P > 0·05, P < 0·05).

The effect of three protein (77, 97 and 117 g DVE (true protein digested in the small intestine) per kg dry matter (DM)) and two energy levels (7·38 and 8·03 MJ NEF (net energy for fattening) per kg DM) on the performance of Belgian White-blue double-muscled finishing bulls and on the quality of their carcasses and meat was investigated. The diet, offered ad libitum, consisted of 650 g/kg concentrates and 350 g/kg maize silage on DM basis.No significant influence was found of the energy level on the growth rate. The low protein level reduced live-weight gain, from 370 to 501 kg (1·43 kg on average v. 2·60 and 1·66 kg daily; P < 0·02). The growth rate during the entire period (370 to 692 kg) and the live weight at slaughter were significantly influenced by the protein content.The bulls given the high energy level lost less weight during the 20-h fasting period before slaughter. Their carcasses were classified with a higher fatness score and a better conformation. These carcasses had a higher fat content, while the proportion of bone in the carcass was lower than in the low energy groups. The cold carcass weight of the low protein groups (456 kg on average) was significantly smaller than that of the four other groups (470 kg on average). Although no differences between the six groups were found concerning the dressing proportion, this measurement was significantly influenced by the protein level (685 g/kg for low protein v. 692 for high protein). The SEUROP conformation was positively influenced by the protein and the energy level, while the fatness score was influenced only by the energy level (5·5 v. 6·0 for the low and the high energy level, respectively). Although the differences in conformation, fatness score and dressing proportion are significant, because of the small variation, the practical meaning is less important.

Genetic parameters were estimated for traits recorded in a calving survey for beef sires used in commercial dairy herds in England and Wales. The five traits included in the survey were calving difficulty score, calf mortality to 48 h after birth, gestation length, and subjectively assessed calf size and conformation. The data file examined included over 88 000 records, on 323 sires of eight beef sire breeds, namely Aberdeen Angus, Belgian Blue, Blonde d'Aquitaine, Charolais, Hereford, Limousin, Piedmontese and Simmental.Estimates of heritability and genetic and phenotypic correlations were obtained for all traits by REML procedures using a sire model. The effects of cow age, calf sex, year and season of the calving and sire breed were included in the model, together with interactions.Heritability estimates were 0·09 (s.e. 0·01) for calving difficulty score, 0·32 (s.e. 0·03) for gestation length, 0·02 (s.e. 0·003) for mortality, 0·09 (s.e. 0·01) for calf size and 0·06 (s.e. 0·01) for calf conformation.Heritability estimates for the scored categorical and binomial (mortality) traits were also obtained using threshold model analysis. As expected, these estimates were higher than the REML estimates; 0·16 (s.e. 0·01) for calving difficulty score, 0·08 (s.e. 0·01) for mortality, 0·14 (s.e. 0·01) for calf size and 0·09 (s.e. 0·01) for calf conformation. Calving difficulty score was strongly correlated genetically with calf size (-0·84), mortality (0·74) and calf conformation (-0·72), and moderately correlated with gestation length (0·26). Calf size and conformation were very highly correlated genetically (0·86), and both were also strongly correlated with mortality (-0·63 and -0·52 respectively). In all cases, the genetic correlations were stronger than the phenotypic correlations.Sire genetic merit was predicted for all traits and the distribution of these predictions is described. Sire predictions of genetic merit for calving difficulty score on the underlying scale were backtransformed to predict the expected incidence of serious difficulties in future calvings and these predictions are illustrated for the major sire breeds.

An analysis has been carried out of over 88000 calving survey records for bulls of eight beef breeds tested in commercial dairy herds in England and Wales. The data were collected from 1981 to 1993. The traits analysed were the degree of difficulty at calving, assessed from no difficulty to serious difficulty, calf mortality to 48 h, gestation length, and subjective assessments of calf size and conformation.Major sire breeds in the survey were the Hereford (30070 records, 93 sires), Charolais (25816 records, 105 sires) and the Limousin (15420 records, 55 sires). Other sire breeds were Belgian Blue (5391 records, 24 sires), Simmental (3864 records, 19 sires), Aberdeen Angus (2886 records, 12 sires), Piedmontese (2423 records, 7 sires) and the Blonde d'Aquitaine (2271 records, 8 sires).Information was routinely recorded on cow age (heifer or mature), sex of the calf, and the year and month of the calving, while cow size and the regional location of the herd were also recorded in later years.Heifers had more difficult calvings, higher calf losses and shorter gestations than mature cows (all P < 0·05) Seriously difficult calvings and calf mortality were higher for male calves, which were also larger and had better conformation than heifer calves (P < 0·05).Sire breed effects were significant for all traits, although sire breed ranking for calving ease was different for cow and heifer calvings and some interactions involving sire breed were also significant. For cow calvings, the easiest calving breeds were the Hereford (1·1%) and the Aberdeen Angus (1·4%), while the Charolais (4·3%), Blonde d'Aquitaine (3·7%) and Simmental (3·1%) had most difficult calvings.Gestation length differed between sire breeds, from Aberdeen Angus (281·0 days) and Hereford (282·7 days) up to the Limousin (288·1 days) and the Blonde d'Aquitaine (289·0 days). For calf size and conformation, the Simmental, Charolais and Blonde d'Aquitaine were the best.In general, summer months were associated with lower incidences of difficult calvings, lower losses and shorter gestations.Large cows had calves which were larger and of better conformation than small or medium cows, but large cows also had longer gestations, more difficult calvings and poorer calf survival (all P < 0·05).Statistical models are discussed that should be used for the genetic evaluation of calving survey traits, when beef bulls are to be used in dairy herds in the United Kingdom.

Three hundred and eight cattle, comprising steers and heifers from continental and British crosses were finished on an 18-month beef production system at Warren Farm, Lambourn, Berkshire and slaughtered across a range of fatness levels. The eating quality of roasting joints (semimembranosus.) and sirloin steaks (longissimus thoracis et lumborumj was evaluated and the chemical composition of the lean tissue was taken on a subset of the samples. Results suggested that the greatest differences between the breeds was in the joints. There were significant (P < 0·01) differences in the lipid, moisture and collagen contents of the lean tissue of the joints from the different sire breeds. The Belgian Blue sire progeny had significantly lower lipid content than the Charolais or Aberdeen Angus crosses, and significantly lower collagen content than the Aberdeen Angus cross. In addition joints from Belgian Blue crosses were more tender than joints from other breed crosses. Although the lipid and moisture contents of the steaks from different sire crosses were significantly different there was no evidence of differences in eating quality. Perhaps surprisingly there were no significant relationships between the eating quality and chemical composition between or within breed. Irrespective of breed, carcass fatness influenced the juiciness of both the joints and the steaks although the response was different for continental crosses and British crosses and depended on carcass sex. Over and above this response, steer meat was generally more juicy than heifer meat.

The time spent under a shelter by eight grazing fattening bulls of the Belgian Blue breed in each of 3 years consecutively for a total of 48 days was recorded using a time-lapse recorder with infrared illumination.During one grazing period, data were collected over 35 days (experiment 1). Observations were divided into 166 h with rain (20%) and 674 h without precipitation (80%). The average occupation rates were 15·4 (s.e. 29·1) % for the hours with rain and 4·5 (s.e. 14·8) % for the hours without precipitation (P < 0·001). The effect of intensity and duration of rain on the occupation rate was significant from 0·4 l/m2 or from 2 h.Experiment 2 (13 days of observation) examined the influence of temperature and solar radiation on the use of shelter. The occupation rates were 21 (s.e. 23) % during the daylight hours (07.00 to 19.00 h), 6 (s.e. 8) % during the night (19.00 to 07.00 h) and 14 (s.e. 14) % during a 24-h period. The occupation rate between 07.00 and 19.00 h was significantly correlated to the mean daily temperature (r = 0·75), the maximum daily temperature (r — 0·86) and the direct solar radiation time (r 0·60). When the maximum daily temperature exceeded 20°C, the use of the shelter increased from 10 to 49% of the daylight hours.There was no significant difference between the live-weight gains of animals from the observed group and those of other bulls on an adjacent pasture without shelter. Nevertheless, these observations suggest that a shelter may improve the welfare of grazing cattle.

A comparison was made between two different finishing systems with Belgian Blue bulls. Two groups of bulls were grazed during an initial 140-day period and then finished indoors with concentrates. There were two stocking rates during the grazing period: a medium at six bulls per ha (MGFI) and a high at eight bulls per ha (HGFI). A third group of bulls was finished indoors on a concentrate diet during the whole finishing period (FI). The experiment was repeated over 2 years consecutively. The pasture which was grazed at the medium stocking rate was characterized by a higher sward height (P < 0·01), more refusals (P < 0·001), less Lolium perenne (P < 0·05) and more Trifolium repens (PP < 0·001) and improved the gain indoors (1·24 v. 1·01 kg/day, P < 0·001). In the groups which were initially grazed when compared with the indoor system, the fattening period was longer (236·0 and 241·0 v. 186·9 days, Pv. 1·44 kg/day, P < 0·001 for MGFI, HGFI and Fl respectively). The dressing proportion was greater also (P < 0·05), and there were higher concentrations of muscles (P < 0·05) and bones (P < 0·05) in the carcass of the bulls which were grazed initially. One hundred and twenty spring-born steers, comprising 40 Friesians (FR), 40 Meuse-Rhine-lssel (MRI) × Friesians (MR), and 40 Belgian Blue × Friesians (BB) were reared together from 3 weeks of age to the start of their second winter. During the second winter there was a 3 (FR, MR and BB breed types) × 2 (3 kg and 6 kg supplementary concentrates per head daily with grass silage ad libitum) × 2 (96- and 220-day finishing periods) factorial arrangement of treatments (10 animals per subgroup). Carcass weights and grades were recorded after slaughter at the end of the second winter, and one side from each of 96 carcasses (eight per subgroup) was dissected into bone, muscle, intermuscular fat and subcutaneous fat. A sample of m. longissimus from the 10th rib was chemically analysed. Slaughter weights and carcass weights per day from arrival to slaughter were 796, 813 and 828 (s.e.d. 11·7) g and 419, 440 and 457 (s.e.d. 7·1) g for FR, MR and BB, respectively. Corresponding carcass weights were 314, 329 and 342 (s.e.d. 4·5) kg. BB had better conformation than both FR and MR. BB also had a lower carcass fat score, lower proportions of bone, intermuscular fat and subcutaneous fat, a higher proportion of muscle and muscle with higher proportion of moisture and a lower proportion of lipid than FR and MR. The higher level of concentrates increased side iveight by 8 kg, but the overall effects on carcass composition were small. The longer finishing period increased side weight by 25 kg and was associated with significantly reduced proportions of bone and muscle and an increased proportion of fat. Allometric regression coefficients for carcass weight on slaughter weight, and for bone, muscle and fat weights on side weight were 1·19, 0·39, 0·80 and 2·16, respectively. It is concluded that despite the better carcass conformation of MR, there was little difference in carcass and muscle composition between FR and MR. BB, in addition to having a higher growth rate and better carcass conformation than FR, also had more muscle in the carcass, more of the total muscle in the higher value joints and a lower proportion of lipid in the muscle. It was calculated that FR, MR and BB would have similar proportions of separable fat in the carcass at approximate carcass weights of 300, 320 and 400 kg, respectively.

As far as consumers are concerned, the major quality characteristics of beef meat are an attracting color and tenderness (Smulders et al., 1991). The chemical composition - protein, fat and fatty acids contents mainly - is of importance for the dietitian. These parameters are influenced to a large extent by the management - diet and environment - of the fattening animals. The aim of the present paper is to relate some parameters of meat quality and meat composition with animal performance in growing fattening bulls.

Measurement of muscle metabolite uptake may be approached by the technique of arterio-venous differences across the hindquarter, which contains large proportion of muscle, especially in double-muscled cattle. Muscle is an important site of amino acid catabolism (Goldberg and Chang, 1978). The extent of amino acid degradation may vary according to the time after feeding (Weijs, 1993). The aim of this experiment was to assess the changes in the kinetics of metabolite uptake across the hindquarter in Belgian Blue bulls fattened after a period of maintenance.

In Belgium, beef meat is traditionally produced with growing fattening bulls kept indoors and fed concentrate. Alternatives exist to this technic. Dufirasne et al. (1995) showed that young bulls may spend one season on pasture before a finishing period indoors. It has been reported recently that the finishing of young Belgian Blue bulls at grass did not provide carcasses with the required qualities (Hornick at al., 1995). The supplementation at grass has been suggested as an alternative. The aim of the present experiment was to study the effects of supplementation of bulls finished at grass on animal performance, carcass and meat characteristics.

Beef meat, in Belgium, is produced mainly from growing fattening bulls (38%) and culled cows from both dairy and beef breeds (38%). Meat from steers and veal calves is a smaller proportion (24%) of the total meat. Most of the beef meat is produced by specialized farmers in commercial units of large size with hundreds of animals slaughtered per year. The remaining production is done, at little scale, by some of the breeders. The success of beef production is associated with different factors such as genetic, housing conditions, diet and management. Nearly all the bulls which are slaughtered are from the Belgian Blue breed double muscled type. Belgian Blue is a breed of large size selected for meat production. The mam characteristics are high live weight gain, low feed conversion ratio, high dressing percentage and lean carcass (Hanset et al., 1989; Istasse et al., 1990).

Correlation between circulating thyroid hormones and live-weight gain during the first year of life were observed in four trials on cattle of the two main Belgian breeds: Belgian Blue and Friesian. Thyroid hormones assayed and considered as potential predictors of growth rate were: thyroxine (T4), triiodothyronine (T3) and free thyroxine (FT4). Triiodothyronine uptake (T,U), thyroid stimulating hormone (TSH) and free thyroxine index (FTI) were also estimated.No significant correlation was found between live-weight gain and T4 or T3 in 13 Belgian Blue heifers (trial 1). In 49 bulls submitted to a performance test, T4 and FTI increased from 3 to 12 months whilst T3U decreased (trial 2). Significant correlations between live-weight gain and T4 and between live-weight gain and FTI were obtained from samples taken between 66 and 95 days. Live-weight gain was correlated with T3U when animals were between 96 and 125 days, and 126 to 155 days of age. It is possible that the interaction between total T4 and T3U is important in controlling growth. In 13 young calves, beef merit, expressed as live-weight gain in 1 year, was highly correlated with T4 concentration at 8 to 10 days of age (trial 3). T3 and FT4 did not seem to be directly associated with the growth processes. In trial 4, live-weight gains of 42 young animals housed on a commercial farm were negatively correlated with T4 and with FTI. The conflicting results encountered may perhaps be explained by the lack of information on the use of anabolic preparations in field conditions. T4 concentration and FTI may be considered as potential parameters for the estimation of beef merit but the results are insufficient to draw definite conclusions.
