In this study, headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (SPME-GC-MS) and odor activity value (OAV) analysis were used to investigate the changes in aroma components of Baiyaqilan oolong tea before and after roasting. The results showed large differences in the types and contents of aroma components in Baiyaqilan tea before and after roasting. The major aroma components before roasting included geraniol, dehydrolinalool, cis-bergamotene, phenylethanol, phenylacetaldehyde, cis-jasmone and geranyl acetone. The major aroma components after roasting included geraniol, dehydrolinalool, oxopholone, cis-jasmone, geranylacetone, cis-coumarin, phenylethanol, phenylacetaldehyde, safranal, trans-2-decenal, oxoisophorone, cis-bergamotene, cosmene, cis-linalool oxide, and 2-pentylfuran. The changes in aroma of Baiyaqilan tea after roasting were attributed to mechanisms such as volatilisation of low-boiling substances, conversion of α-lonone, thermal decomposition of glycosides, oxidation of alcohols, peroxidative decomposition of lipids, and conversion of terpenes and alcohols, resulting in the production of oxopholone, cis-linalool oxides, and 2-pentylfuran as well as a substantial increase in the contents of safranal, trans-2-decenal and cosmene. In summary, this study revealed that the roasting process produced aroma components, altering the aroma profile of oolong tea, and for the first time it was found that the roasting process could lead to the production of the key aroma components including oxopholone. These results provide a reference for in-depth understanding of the effect of the roasting process on the aroma components of oolong tea.

The oil body is an organelle that stores oil in oil crop seeds. The presence of a phospholipid-protein membrane on its surface allows for the dispersion of oil bodies in water, resulting in the formation of a stable water-in-oil emulsion. Oil bodies hold immense potential in the food industry due to its exceptional physicochemical stability and emulsifying properties. The extraction and stability of oil bodies has always been a research hotspot, driven by the need for enhanced extraction efficiency and applicability. There are diverse extraction methods and conditions for plant oil bodies, which can be generally classified into three categories: water extraction, solution extraction, and enzyme-assisted extraction. The choice of extraction methods depends on plant sources and applications. The stability of oil bodies is assessed from physical, chemical, and biological aspects. This comprehensive review summarizes the commonly employed evaluation methods with the aim of encouraging further research and application of oil bodies.

Jam, as a common processed fruit product, has a long history of consumption and is widely loved by consumers due to its diverse products and rich nutrition. The texture of traditional jam can only be formed under high sugar (55%–75%) and highly acidic (pH 2.0–3.5) conditions, which is a challenge for the production of low-sugar jam. In addition, the texture of jam is vulnerable to damage during transport and storage, leading to jam quality deterioration. Food thickeners, food additives that increase the viscosity, consistency and gel strength of liquid foods, are widely used for promoting the formation of the texture of low-sugar jam and maintaining its stability during transport and storage. In this article, the deterioration phenomenon and formation theory of jam texture are reviewed. The thickening or gelling mechanism of food thickeners (e.g., pectin) and their application in jam are described with a focus on the effects of food thickeners on the sensory attributes, texture, rheological properties, and microstructure of jam. Moreover, several possible future research directions are proposed, aiming to provide ideas for the development and application of thickeners in jam.

Harmful algal blooms (HABs) resulting from eutrophication pose a major threat to ecosystems and human health, necessitating effective control measures. Allelochemicals have shown their importance in slowing down algal proliferation due to their proven efficacy and low ecological impacts. In this study, allelopathy tea polyphenols (TPs) and β-cyclodextrin were combined to prepare slow-release algicidal microcapsules, and the diversity of microbial community in the algal inhibition process was analyzed. Results showed that TP slow-release microcapsules had strong algicidal activity. When against Microcystis aeruginosa within 20 d, their constant inhibitory rate was up to 99% compared to the control group. Microbial diversity decreased with an increase in algae density, and the species richness and diversity of algae increased under the stress of TP slow-release microcapsules. The redundancy analysis showed that the environmental factors with impacts on the abundance and diversity of bacterial communities in descending order were dissolved oxygen, pH, and temperature. This study provides a theoretical basis for the application of TP slow-release microcapsules to actual water.

Objective To explore the association of urinary heme oxygenase 1 （HO-1） with renal damage and lupus activity in patients with systemic lupus erythematosus （SLE） and determine the value of urinary HO-1 in the diagnosis and activity estimation of lupus nephritis （LN）. Methods A total of 65 patients with confirmed SLE were assigned into two groups of LN （n = 40） and non-LN （n = 25） according to whether or not there was renal damage. Urinary HO-1 was measured by enzyme-linked immunosorbent assay （ELISA） while the level of disease activity assessed by SLE Disease Activity Score （SLEDAI）. Urinary HO-1 level and other clinical data were compared between two groups. Logistic regression was utilized for examining the risk factors of LN and receiver operating characteristic （ROC） curve plotted for determining the diagnostic efficacy of urinary HO-1 for renal damage. Results Urinary HO-1 level in patients with renal damage was significantly higher than that without renal damage [（740.42 ± 86.98）ng/L vs （679.03 ± 61.33）ng/L, P = 0.003]. Urinary HO-1 level was correlated positively with SLEDAI, serum creatinine and urinary protein while negatively with glomerular filtration rate and creatinine clearance rate. Urinary HO-1, IgG, hypocomplementemia and hematuria were independent risk factors for LN （AUC = 0.853,95%CI: 0.753-0.953）. Area under the ROC curve for HO-1 alone was 0.710. When HO-1 was 721 ng/L, Youden index reached the optimal cut-off value. Conclusion Urine HO-1 level is significantly elevated in SLE patients with renal damage and it is associated with lupus activity. And HO-1 has clinical value in determining renal damage and disease activity in SLE patients.

The objective of this study is to investigate the mechanism of the modification of pea protein isolate (PPI) by transglutaminase (TG) in combination with dynamic high-pressure microfluidization (DHPM) and to clarify the applicability of the modified PPI in Pickering emulsion. Scanning electron microscopy (SEM) and Fourier transform infrared spectroscopy showed that the morphology of PPI particles became more uniform after the modification. The degree of cross-linking with TG increased, and the tertiary structure of protein molecules changed. In addition, the surface hydrophobicity and endogenous fluorescence of PPI decreased, the emulsifying properties improved and the average particle size decreased. The Pickering emulsion stabilized by the modified PPI had improved stability and emulsifying capacity, and the best emulsion stability was observed at 120 MPa. TG-DHPM modification could provide a feasible method for the application of PPI in Pickering emulsion. This study provides an experimental basis for the development of high-performance Pickering emulsion systems and is of significant reference value for the functional modification of natural proteins.

In order to construct a suitable pea protein-based 3D printable meat analog system, this study explored the effects and mechanism of the addition of pea dietary fiber, gluten, gellan gum and glutamine transaminase on the 3D printing performance and product quality of mixture systems using one-factor-at-a-time and orthogonal array design methods. The results showed that the 3D printing performance, texture characteristics and product characteristics significantly changed depending on the concentration of each ingredient. Using the orthogonal array method, the optimal formulation that provided the best 3D printing performance was determined as 0.45%, 5:1, 0.4% and 1.2 U/g for pea dietary fiber concentration, ratio of pea protein to gluten, gellan gum concentration and glutamine transglutaminase dosage, respectively. After the optimization, the printing accuracy improved by 27.80%. The hardness of the printed sample after cooking was 3 612.13 g, and the chewiness was 1 540.27 g·mm. In addition, the texture characteristics were better than those of the unoptimized sample. The results of infrared spectroscopy and intermolecular force showed that the addition of the components significantly enhanced the hydrogen bond, disulfide bond and hydrophobic interaction in the system. Compared with three commercially available artificial meat samples, the optimized sample exhibited significant advantages in texture characteristics, cooking loss and water-holding capacity, which were related to the structure formed by 3D printing and the interaction among the components. This study provides theoretical guidance and a basis for the application of pea protein in 3D printed plant-based meat.

This study investigated the effects of adding different amounts of sesame oleosomes on the properties of polysaccharide edible films, and explored the application of the film incorporated with sesame oleosomes in strawberry preservation in terms of sensory evaluation and physicochemical indexes. The results showed that the extracted sesame oleosomes contained 72.3% fat, which could maintain good oxidative stability for 8 days. Adding an appropriate amount of sesame oleosomes to edible films could effectively improve the softness, water vapor barrier, solubility and elongation. However, adding excess sesame oleosomes (≥ 5.6%) decreased the mechanical properties and transparency. Taken together, the optimal proportion of oleosome addition was 1.2%. Compared with the blank and oleosome-free control groups, the oleosome-incorporated film effectively delayed the rotting and softening of strawberry fruits as well as the decrease in moisture, soluble solids and titratable acids, and extended the shelf life by at least 1 day. This study showed that a certain amount of oleosomes can be used as lipid derivatives in lipid-based edible films to extend the shelf life of fruits and vegetables.

Healthy foods are foods that have additional health benefits when compared with ordinary foods. In recent years, with the vigorous development of the healthy food industry, healthy foods have gradually entered the public eye and become a hot spot. Natural products are a class of bioactive compounds that play an important role in healthy foods, and the processing is a vital part of the development of the healthy food industry. The development of healthy foods is inseparable from the ever-changing food processing technology. Based on this, this article summarizes the high-tech processing technologies for healthy foods, comprehensively compares and analyzes the high and new technologies applied in the processing steps such as natural product production, active ingredient protection, component modification, preservation, sterilization, and product design, and provides an outlook on the future development of healthy foods by using high and new technologies.

Background: Patients with diabetes have an increased risk of developing heart failure with preserved ejection fraction (HFpEF). This study aimed to compare indices of myocardial deformation and perfusion between patients with type 2 diabetes mellitus (T2DM) with and without HFpEF and to investigate the relationship between myocardial strain and perfusion reserve. Methods: This study included 156 patients with T2DM without obstructive coronary artery disease (CAD) and 50 healthy volunteers who underwent cardiac magnetic resonance (CMR) examination at our center. Patients with T2DM were subdivided into the T2DM–HFpEF (n = 74) and the T2DM–non-HFpEF (n = 82) groups. The parameters of left ventricular (LV) and left atrial (LA) strain as well as stress myocardial perfusion were compared. The correlation between myocardial deformation and perfusion parameters was also assessed. Mediation analyses were used to evaluate the direct and indirect effects of T2DM on LA strain. Results: Patients with T2DM and HFpEF had reduced LV radial peak systolic strain rate (PSSR), LV circumferential peak diastolic strain rate (PDSR), LA reservoir strain, global myocardial perfusion reserve index (MPRI), and increased LA booster strain compared to patients with T2DM without HFpEF (all P < 0.05). Furthermore, LV longitudinal PSSR, LA reservoir, and LA conduit strain were notably impaired in patients with T2DM without HFpEF compared to controls (all P < 0.05), but LV torsion, LV radial PSSR, and LA booster strain compensated for these alterations (all P < 0.05). Multivariate linear regression analysis demonstrated that LA reservoir and LA booster strain were independently associated with global MPRI (β = 0.259, P < 0.001; β = − 0.326, P < 0.001, respectively). Further, the difference in LA reservoir and LA booster strain between patients with T2DM with and without HFpEF was totally mediated by global MPRI. Global stress PI, LA booster, global rest PI, and global MPRI showed high accuracy in diagnosing HFpEF among patients with T2DM (areas under the curve [AUC]: 0.803, 0.790, 0.740, 0.740, respectively). Conclusions: Patients with T2DM and HFpEF exhibited significant LV systolic and diastolic deformation, decreased LA reservoir strain, severe impairment of myocardial perfusion, and elevated LA booster strain that is a compensatory response in HFpEF. Global MPRI was identified as an independent influencing factor on LA reservoir and LA booster strain. The difference in LA reservoir and LA booster strain between patients with T2DM with and without HFpEF was totally mediated by global MPRI, suggesting a possible mechanistic link between microcirculation impairment and cardiac dysfunction in diabetes. Purpose: To explore the microstate characteristics and underlying brain network activity of Ménière's disease (MD) patients based on high‐density electroencephalography (EEG), elucidate the association between microstate dynamics and clinical manifestation, and explore the potential of EEG microstate features as future neurobiomarkers for MD. Methods: Thirty‐two patients diagnosed with MD and 29 healthy controls (HC) matched for demographic characteristics were included in the study. Dysfunction and subjective symptom severity were assessed by neuropsychological questionnaires, pure tone audiometry, and vestibular function tests. Resting‐state EEG recordings were obtained using a 256‐channel EEG system, and the electric field topographies were clustered into four dominant microstate classes (A, B, C, and D). The dynamic parameters of each microstate were analyzed and utilized as input for a support vector machine (SVM) classifier to identify significant microstate signatures associated with MD. The clinical significance was further explored through Spearman correlation analysis. Results: MD patients exhibited an increased presence of microstate class C and a decreased frequency of transitions between microstate class A and B, as well as between class A and D. The transitions from microstate class A to C were also elevated. Further analysis revealed a positive correlation between equilibrium scores and the transitions from microstate class A to C under somatosensory challenging conditions. Conversely, transitions between class A and B were negatively correlated with vertigo symptoms. No significant correlations were detected between these characteristics and auditory test results or emotional scores. Utilizing the microstate features identified via sequential backward selection, the linear SVM classifier achieved a sensitivity of 86.21% and a specificity of 90.61% in distinguishing MD patients from HC. Conclusions: We identified several EEG microstate characteristics in MD patients that facilitate postural control yet exacerbate subjective symptoms, and effectively discriminate MD from HC. As storage time increases, the quality of traditional Chinese medicines (TCMs) may change, and stability is an essential aspect of ensuring the safety and efficacy of TCMs. In this study, the effects of different storage times on the stability of 12 decoction pieces were evaluated. High-performance liquid chromatography was used to determine the contents of the active components in the 12 decoction pieces. The chemical composition data were analyzed using fingerprinting and clustering heatmap (CH). Results showed that during storage, significant variations (relative standard deviation > 10%) were observed in the levels of paeoniflorin in Paeoniae Radix Alba and Paeoniae Radix Rubra, hesperidin in Citri Reticulatae Pericarpium and Citri Reticulatae Pericarpium Viride, bufothionine in Siccus Bufo and chlorogenic acid in White Chrysanthemi Flos and Lonice Raejaponicae Caulis. However, calycosin-7-glucoside and calycosin in Astragali Radix Praeparata Cum Melle and chlorogenic acid in Lonicerae Japonicae Flos, Yellow Chrysanthemi Flos and Mori Folium were all <10%, which is consistent with the CH. Decoction pieces can be stored for up to six months, but it is recommended that volatile oil-containing and animal-based decoction pieces should not be stored for more than one month. Objectives: The geographical environment and military activities in the plateau area pose potential work-related stressors for military personnel, leading to burnout which is an external manifestation of internal energy exhaustion caused by stress. Without countermeasures, this can result in serious military problems. This study aims to examine the association between burnout and occupational stressors among military personnel stationed in the plateau area of China. Material and methods: A stratified randomized cluster sampling survey was conducted among 2026 military personnel from 6 different troops stationed in the plateau area of China. The Chinese Maslach Burnout Inventory-General Survey(MBI-GS in Chinese) was administered from March 2022 to December 2023, and data were analyzed using SPSS version 25. Results: A total of 2026 military personnel participated in the survey. The mean overall burnout score was 3.37 ± 0.73, with emotional exhaustion at 2.69 ± 0.89, depersonalization at 3.58 ± 0.92, and professional achievement at 3.81 ± 0.85 levels respectively reported by participants on average scale scores ranging from zero to six. Severe level of burnout was reported by 43.2% of participants while medium level of burnout was reported by 54.3%. Age, education level, length of military service, and household income were identified as important factors influencing burnout. Conclusion: This study highlights a relatively high prevalence of burnout among military personnel stationed in plateau areas necessitating attention towards their occupational health particularly focusing on working hours and economic aspects so as to formulate effective policies and implement intervention measures that strengthen career development for soldiers deployed in such regions. Background: The influenza A virus is the primary cause of respiratory infections and poses a global health risk. Pudilan Xiaoyan oral liquid (PDL) exhibits anti-inflammatory and immunomodulatory properties. PDL is commonly employed in clinical practice to manage upper respiratory tract infections. However, there is still much to uncover regarding its potential therapeutic mechanism. Methods: Institute of cancer research mice were infected with influenza A virus via nasal drip. The general state of the mice, lung index, and lung index inhibition rate were used to evaluate the efficacy of PDL. Enzyme-linked immunosorbent assay, western blotting, and immunohistochemistry were used to observe the presence of proteins and cytokines in the lung tissue. Apoptosis was evaluated using the TUNEL assay. Results: PDL improved the mental state of influenza A virus-infected mice, reduced the lung index, and inhibited viral replication. The expression of interleukin-1β and tumor necrosis factor-α were decreased, whereas the expression of interleukin-10 in the lung tissue was increased due to PDL treatment. In addition, PDL treatment modulated Toll-like receptor 4 and MyD88 expressions in the lung tissues. PDL significantly reduced apoptosis and decreased cleaved caspase-3 and PARP levels, whereas increased B-cell lymphoma-2 expression in the lung tissue. Notably, the moderate-dose group of PDL exhibited a more pronounced effect. These findings indicate that PDL exerts a protective effect against pneumonia injury in influenza A virus-infected mice. Conclusion: PDL inhibited the inflammatory response and regulated apoptosis by regulating Toll-like receptor 4 and MyD88 protein expressions, thereby protecting the lung tissue from viral infection-induced lung tissue injury. OBJECTIVE: To investigate predictors of anticoagulation efficacy in deep venous thrombosis (DVT) by ultrasound elastography (UE). METHODS: The basic clinical, laboratory and ultrasound treatment data of fifty-eight patients with DVT were collected and analyzed. Then the results of ultrasound after 3-month anticoagulation treatment were compared among different groups. Multiple logistic regression analysis was used to identify independent risk factors that affected anticoagulation efficacy. The predictive efficacy of each independent risk factor was accessed by drawing operating characteristic (ROC) curves. RESULTS: According to the regression analysis, the elastic modulus (OR = 0.631, P = 0.001) and strain rate ratio (OR = 0.332, P = 0.006) were identified as independent risk factors for the effectiveness of anticoagulation therapy in patients with DVT. According to the ROC curves, elastic modulus and strain rate ratio could predict effective anticoagulation therapy for DVT, and the optimal threshold values were 22.10 kPa and 1.80 respectively. The corresponding AUC values were 0.879 and 0.854, with a sensitivity of 71.4% and 59.5%, a specificity of 93.7%, and a Youden index of 65.1% and 62.7%, respectively. CONCLUSIONS: The elastic modulus (≤22.10 kPa) or strain rate ratio (≤1.80) of the thrombus were independent predictors for the effectiveness of anticoagulation therapy. [ABSTRACT FROM AUTHOR]

Nitrite (NO2−) and hydrazine (N2H4) are common N‐pollutants in groundwater. The electrochemical method can realize the treatment of N‐pollutants and the synthesis of energy substance ammonia (NH3). Designing and synthesizing efficient electrocatalysts is of great significance. Herein, ultrathin Co0.5NiS nanosheets attached on nickel foam (Co0.5NiS‐NSs/NF) are synthesized via cyanogel‐NaBH4 hydrolysis process and succedent sulfurization approach. Owing to the ultrathin nanosheet structure and the interaction between Ni and Co, Co0.5NiS‐NSs/NF exhibits high activity for NO2− reduction reaction (NO2−RR), in which the Faraday efficiency is 92.2% and the NH3 yield is 0.25 mmol h−1 cm−2 at −0.15 V potential. Meanwhile, Co0.5NiS‐NSs/NF also displays remarkable activity for N2H4 oxidation reaction in KOH electrolyte. Therefore, a symmetrical Co0.5NiS‐NSs/NF||Co0.5NiS‐NSs/NF electrolyzer is assembled, which only needs the operating voltage of 0.36 V to reach 10 mA cm−2 for NO2−‐to‐NH3 conversion in the presence of N2H4. A new cyclohexenone derivative, phomopine (1), together with five known compounds (2-6) were isolated from Phomopsis sp. XM-01. The structure of 1 was determined by extensive spectroscopic analyses and electronic circular dichroism (ECD) calculation. In vitro bioassays, compounds 1 and 2 exhibited potent antimicrobial activities against Candida albicans and Staphylococcus aureus with their corresponding minimum inhibitory concentrations (MICs) of 64 μg/mL and 16 μg/mL, respectively.
