Dietary changes, mainly in developing countries, will be the major driver for an increase in environmental impacts of the global food system. Many assessments of these impacts have used the food patterns of high-income countries as the reference. However, it is questionable whether people in very different socioeconomic, cultural, and biophysical contexts will adopt the food pattern of Western Europe or North America. This paper explores the environmental implications of regional differences in diets around the world. Changes in dietary composition between 1961 and 2018 were reviewed. Comparable regional diets were envisaged by adjusting existing local food preferences to a daily consumption of 3,500 kcal/cap/day, of which 30% of the calories were considered to be from animal products. Our results show that the compositions of regional diets remained relatively stable from 1961 to 2018, particularly in consumption of animal products, and are not approaching homogeneity across regions. If future diets retain their present composition, the environmental impact may be up to 30% lower than the typical "low estimate" of an affluent diet from the literature (e.g., the Mediterranean diet), but in some cases higher than the "top estimate" of an affluent diet in the literature (e.g., the North American diet); driven mainly by the type of meat consumed. Diets differ in the relative magnitudes of their effects on individual environmental indicators. For example, one diet may cause less water use but more greenhouse gas emissions than another diet, so different strategies are required for the reduction of their environmental impacts. This paper offers a critical assessment of how tourism development in the municipality of Los Cabos, Baja California Sur affects land and water use. Los Cabos is a seaside tourism Mecca located at the southern tip of the Baja California peninsula, in Mexico's northwest. There, subsidised profits and a process of dispossession in the tourism sector have to do mainly with land and water appropriation in the form of restrictions to beach access by the local population, urban segregation and, in an arid region, privileging water provision for the tourism industry over the needs of the population. In order to sustain these claims, we map water and land use for tourism in Cabo San Lucas. We also analyse the expansion of the Los Cabos type of tourism to the small town of La Ribera, in the East Cape-Cabo Pulmo area, where marinas and high scale housing for residential tourism sprout along the coast. We argue that the seemingly ever-growing presence of tourism in the region carries with it an urgent call for the reappraisal of current approaches to land and water use, if local resources are to deliver quality of life for the population, and not only economic profitability for (mostly) foreign capital. Analytically, we address these issues by unpacking David Harvey's concept of accumulation by dispossession, which – we argue – is for our purposes a broader tent than the (mostly Latin American) theorisations on extractivism, as we explain later in the relevant section of the paper. Urbanization and the changing climate are increasingly influencing people's access to land and water. Changes in use of, and rights and access to, land and water are most acutely experienced in peri-urban areas. We analyze these changes in peri-urban Kathmandu, Nepal. Increasing pressures on land and growing water needs of an expanding population in Kathmandu Valley are creating new patterns of water use, water-related conflicts, and (in)securities. We use two case studies that are characteristic of these changes, with a focus on the microlevel redefinitions of, and struggles about, rights, access, and notions of legitimate water use, and what these mean for water security and water conflict in a socially and institutionally complex and dynamic environment. Our findings show that these water-related changes cause contestations and conflicts between peri-urban water users. Amid increasing competition for water, people are using new sources and technologies, searching for negotiated solutions based on local norms and rights, and co-opting other water users through cooperation to create access opportunities and avoid conflicts. Our cases show self-restraint in practices of claiming or accessing water, while avoidance of conflicts also derives from an awareness of unequal power relations between user groups, past experiences of violence used against protesters, and lack of active intervention to regulate increasing exploitation of peri-urban land and water resources. Property rights granted by land and water policies are not always identical with the claims – meaning perceived rights - people base their actions on. A high discrepancy between both resembles an ineffective policy implementation and bears the risk of unsustainable decision-making. Furthermore, perceived rights to land and its corresponding resource water can vary significantly. In this paper, we operationalize the property rights concepts and empirically assess, by specifying and quantifying, the difference between property rights and farmers’ customary claims to both, land and water resources. With regard to land, actors tend to base their decisions on customary claims, and override property rights. In contrast, regarding water, we find that the full benefits of property rights granted by a policy reform are often not recognized. Whereas in the first case political control and monitoring mechanisms seems to fail, in the latter a lack of information sharing let the farmers not exploit their full investment potential.
