Abstract

Starch and protein are two important components in food system. The interactions between starch and protein have important influence on the structure, physicochemical properties of starch and the texture and digestibility of starch-based food. In recent years, the effect of exogenous protein on starch-protein interaction in mixed system and its application have become a hot research topic in the field of food. This article reviews the interaction mode between starch and protein, the effect of protein on physicochemical properties （gelatinization properties, retrogradation properties, rheological properties, thermal properties and texture properties） and microstructure of starch-protein mixed system, summarizes the regulation effect of protein on digestibility of starch in mixed system and its mechanism, and presents the application of the mixed system in food processing, aiming to clarify the mechanism of interactions between starch and protein and provide theoretical reference for the research and development of starch-based food.

Abstract

Objective: This study aimed to control the degree of crosslinking and etherification in the preparation process of crosslinked hydroxypropyl starch and improve the product performance. Methods: Waxy corn starch was used as a raw material to prepare the composite modified starch （hydroxypropyl distarch phosphate, HDP） under alkaline conditions, during which process sodium trimetaphosphate （STMP） and propylene oxide （PO） was used as the cross-linker and etherifying agent, respectively. The effects of the addition level of STMP and PO on the properties of the Brabender viscosity behavior, transparency and freeze-thaw stability of waxy corn starch were investigated. Results: Combined with the preliminary laboratory exploration and the optimization of this study, a HDP with improved thermal stability, transparency and freeze-thaw stability and lowered gelatinization temperature was obtained. The preparation conditions of HDP were as follows: in the case that the amount of sodium trimetaphosphate was 0.30 g/100 g and cross-linking reaction time was 45 minutes, and the amount of propylene oxide added was 6 mL/100 g and the etherification time was 90 minutes. Conclusion: Compared to raw waxy corn starch, the cross-linked and etherified starches with decreased gelatinization temperature and improved freeze-thaw stability, thermal stability and gelling properties are observed.

Abstract

In this work, we make two improvements on the staggered grid hydrodynamics (SGH) Lagrangian scheme for modeling 2-dimensional compressible multi-material flows on triangular mesh. The first improvement is the construction of a dynamic local remeshing scheme for preventing mesh distortion. The remeshing scheme is similar to many published algorithms except that it introduces some special operations for treating grids around multi-material interfaces. This makes the simulation of extremely deforming and topology-variable multi-material processes possible, such as the complete process of a heavy fluid dipping into a light fluid. The second improvement is the construction of an Euler-like flow on each edge of the mesh to count for the "edge-bending" effect, so as to mitigate the "checkerboard" oscillation that commonly exists in Lagrangian simulations, especially the triangular mesh based simulations. 41. Eco‐Friendly Self‐Adaptive Catalytic Strategy for Plastics Lifecycles: Achieving Green Preparation, Superior Flame Retardancy, and Self‐Driven Sustainability.

Abstract

Semi‐rigid polyurethane foams (SPUF) with high deformation resistance and strength are indispensable for cushioning applications. However, for high fire risk and cascaded pollutant effects, overused multifarious additives and foam wastes exacerbate global environmental concerns. One option to address this issue is to develop eco‐friendly multifunctional flame retardants that participate in the material lifecycles of preparation, safe service, waste management, and sustainable recycling. Herein, a novel self‐adaptive catalytic strategy is reported that exploits the temperature and agent structure‐responsive catalytic ability of eco‐friendly sodium propionate (SP), reconciling the often‐conflicting properties of fabrication and recycling while effectively mitigating combustion risks and additive pollution. The adaptive catalytic function of SP impressively involves all aspects of foam life cycles: 1) catalyzing foaming without complex/hazardous catalysts; 2) providing superior flame‐retardant efficiency with a high limiting oxygen index of 25.5% without relying on traditional flame retardants; 3) promoting in situ network fragmentation and reorganization into strong adhesives (5.8 MPa); and 4) further recycling of the newly formed adhesives in a self‐driven sustainable manner. A novel green strategy is presented that addresses fire hazards, plastic pollution, and the unsustainability of recycling, minimizing the ecological risks of foam, which will positively impact future sustainable material design involving diverse additives.
