Egg has valuable nutrients however; these nutrients may be affected by many factors. In this study, it was aimed to determine the effects of cage type, oviposition time and egg storage period on egg quality characteristics of laying hens. A total of 410 eggs were collected from unenriched and enriched cages in the morning and in the afternoon. After the eggs were weighed, they were stored at 21oC and 20% relative humidity until the 30th day of storage. It was determined that unenriched cage eggs had higher in shell breaking strength, albumen ash and pH & lipid of yolk and lower egg weight loss, yolk index & yolk color compared with enriched cage eggs. Morning eggs had the highest egg weight loss and the lowest egg weight, yolk height and yolk diameter. Dry matter & protein of albumen and dry matter & lipid of yolk were lower, while protein of yolk was higher in the morning eggs than those in the afternoon. It was observed that the storage period was important factor for egg quality characteristics. The effect of oviposition time and storage period interaction on egg quality should not be neglected. Interactions between cage type and storage period and between oviposition time and storage period were found statistically significant for some chemical composition of albumen and yolk. It is concluded that A quality egg criteria are preserved up to 14 days at an average temperature of 21°C and 20% humidity.

Waste management is the protection of the environment and the health of the population. Paper waste sludge is produced during paper production and sepiolite is a natural clay mineral. The aim of the study was to investigate the usability of sepiolite-added paper waste sludge as a bedding material in the broiler production. Two hundred eighty-eight 1-day old male broiler chicks were divided into the 6 bedding material groups (wood shavings (control), paper waste sludge, sepiolite, mix of 25% paper waste sludge and 75% sepiolite, mix of 50% paper waste sludge and 50% sepiolite, and mix of 75% paper waste sludge and 25% sepiolite) with 6 replicate pens per group. Litter quality, performance, and some welfare parameters of broilers were assessed during the 6 weeks’ period. Body weight at 42 days of age and body weight gain from 0 to 42 days of broilers reared on the wood shavings and mix of 50% paper waste sludge and 50% sepiolite were found higher than those of the sepiolite and paper waste sludge groups. Feed consumption and feed to gain ratio from 0 to 42 days, yields of carcass and carcass parts, percentages of organs and abdominal fat, IgG, percentage of bursa Fabricius, burns of foot pad and breast, litter pH and meat properties of broilers reared on the wood shavings, paper waste sludge, and sepiolite litter groups were not found to be statistically different. Litter moisture was found higher in the paper waste sludge group than that in the sepiolite group at the 42 days of rearing. As a conclusion, usage of mix of 50% paper waste sludge and 50% sepiolite as a litter does not have any negative effects on performance, welfare, and litter quality. This result is important in terms of utilizing a waste product.

Background Asthma is a common respiratory disorder; some data were present on the correlation between increased levels of some elements and the risk of asthma development. It was aimed to evaluate the levels of 13 selected blood and tooth elements (magnesium, phosphorus, calcium, chromium, manganese, iron, copper, zinc, strontium, molybdenum, cadmium, lead, mercury) in a well-controlled asthma group and the control group. Methods During the study period, 17 asthma patients and 26 age and gender-matched healthy children donated shed deciduous teeth having neither decay nor filling and enrolled for the study. The element levels in blood and teeth matrixes were analyzed with inductively coupled plasma mass spectrometry. Differences in blood and tooth elements in groups were evaluated with generalized linear models after adjusting confounding factors. Results After adjusting the child’s “z scores of body mass index for age”, history of iron deficiency anemia, and status of parental smoking, the generalized linear model revealed significantly lower tooth magnesium levels, lower blood zinc levels, and lower blood zinc/copper ratio in the asthma group than the control group (p = 0.042, p = 0.034, p = 0.002, respectively). Other studied elements for tooth and blood matrixes were similar in groups. Conclusion Our study revealed some differences in tooth and blood element levels in the asthma group. Further studies on zinc and magnesium levels of severe asthma cases are necessary for the interpretation of the results.

The aim was to evaluate the levels of aflatoxin M1 (AFM1), ochratoxin A (OTA), zearalenone (ZEN), deoxynivalenol (DON) in human milk, and to investigate the relation between selected mycotoxin levels in breast milk and infantile growth in exclusively-breastfed infants under four months. Mycotoxin analysis was performed with commercial ELISA kits. Infants were weighed, and z scores of weight-for-age (WAZ) were calculated with WHO standards. The first quartile of the mycotoxin levels was classified in subgroups as low-level, the last quartile as high-level, and between them as middle-level. The subgroups of AFM1, OTA, and DON had similar infants' WAZ. When cases without maternal smoke exposure were selected and WAZ at birth, infant age, and gender were adjusted, higher infant WAZ on admission was detected in high-ZEN subgroup (p = 0.033). Further cohort studies in exclusively-breastfed infants and absence of maternal smoke exposure could clarify the effect of ZEN on infant growth.

The aim of the present study was to investigate the usage of thyme leaves and its effects on performance, some egg quality traits and humoral immunity in laying hens. A total of 108 laying hens aged 36 weeks were randomly assigned to three dietary groups for 16 weeks. Dried and ground (Thymus vulgaris L.) thyme leaves were used at the level of 0, 1 and 2% in the diets of groups. Feed intake, body weight, egg production, egg weight and egg quality characteristics were not affected by dietary thyme supplementation. Thyme supplementation at 2% resulted in beneficial effects in laying hens due to the lowering of yolk cholesterol and total saturated fatty acids concentration while increasing omega-3 fatty acids. Furthermore, the yolk malondialdehyde, blood serum cholesterol and triglycerides levels were reduced and antibody titers against SRBC were increased with 2% thyme supplementation. In conclusion, the results showed the antioxidative and hypolipidemic effects of thyme supplementation in laying hens along with improved humoral immune response without any negative effects on performance and egg quality characteristics.

This cross-sectional study with an open-ended manner aimed (1) to evaluate the environmental risk perception levels of mothers having at least one child and living in Adana and (2) to determine their awareness of the risk factors in their environment. Of mothers, 30.2% did not know the concept of environmental risk factor. Most frequent perceived risks were violence (17%), air pollution (15.5%) and undefined pollution (15%). The most common mentioned problems in their environment were air pollution (9.9%), violence (7.9%) and municipal service problems (8.4%). Mothers living in the urban area reported more violence, air pollution and undefined pollution as environmental threats than those living in the countryside. The place of residence, the education level of the mother and the number of people in the house significantly were related with the risk perception. There is a need for studies in other regions to determine the environmental literacy of mothers.

Melamine contamination is a recent public health problem emerging globally. Present study aimed to detect the rate of melamine presence in human milk in a cohort study and to evaluate any possible differences in maternal–infant pair characteristics such as breastfeeding status, crying and sleep problems of infants, maternal postpartum depression, maternal–infant bonding, infant and maternal anthropometry, and maternal complete blood count caused by the melamine exposure. Mothers of infants born in Şanlıurfa were invited to participate in ‘Urfa Child Cohort Survey’. Overall, two breast milk samples were taken between 5 days and 15 days postpartum and between 4 weeks and 10 weeks. Randox Food’s InfiniPlex array was used to analyse the presence of melamine. Melamine was detected in 32.2% and 24.4% of the first and the second milk samples; 16.7% of mothers had two positive samples. z Scores for birth weight and z scores for height for age were detected to be significantly lower in cases with two positive samples compared to cases with negative samples. Mean maternal white blood cells counts were found to be lower in cases with repeated melamine contact. Melamine might have a detrimental effect on birth weight, infant height and maternal blood count. Further studies should be done to detect environmental contamination in different regions and countries.

Background We evaluated (a) opinion of Syrian and Turkish healthcare workers (HCWs), and perceptions and attitudes of Syrian refugee mothers, pregnant women, fathers and grandmothers on age-appropriate breastfeeding, (b) the effect of cultural characteristics, migration and pandemics on Syrian’s infant nutrition, and (c) the suggestions of HCWs and Syrian family members to improve breastfeeding practices in the Syrian refugee society in a qualitative study. Methods The qualitative study consisting of structured focus group discussions (FGDs) was held in four provinces in Turkey where Syrian refugees live intensely in September and October 2020. Seven different types of online FGDs were held with Turkish HCWs working in maternity hospitals, Syrian HCWs working in Refugee Health Centers (RHCs), Syrian pregnant women, mothers, fathers, and grandmothers. In total, we carried out 46 FGDs with 335 individuals. Thematic analysis of the transcripts in a deductive-inductive fashion was carried out with MAXQDA 11. Results Most Syrian HCWs did not get any training on breastfeeding counseling. The short duration of breastfeeding in Syrian refugees was seen to be related to the cultural characteristics, and migration. Some cultural characteristics can be summarized as “believing that breastfeeding harms mother’s health”, “adolescent marriages”, “wanting to have as many children as possible”, “giving anise to infants and not breastfeeding at night”, “prelacteal feeding”, “believing that milk is not enough”, “over controlling mother–child interaction by grandmothers, which limits the interaction”, “short pregnancy intervals”, and “not using modern family planning techniques”. We found out that migration increased the tendency for adolescent pregnancies, deepened the poverty, and decreased family social support. We did not observe any change in breastfeeding practices during pandemics. Conclusions Breastfeeding counseling programs should be designed in consideration of cultural characteristics of Syrian HCWs and family members. Continuing health education programs for family members with socially appropriate interventions to prevent adolescent marriages are important.

Background Some elements were claimed to play a role in the pathogenesis of congenital heart defects (CHD) and influence the general well-being and health of these children. Objectives We aimed to assess the levels of some elements simultaneously in the blood and teeth samples of children with cyanotic and acyanotic CHD compared with healthy children. Methods A total of 39 children with CHD (11 with cyanotic and 28 with acyanotic CHD) and 42 age- and sex-adjusted controls were enrolled. Levels of 13 elements, including magnesium, phosphorus, calcium, chromium, manganese, iron, copper, zinc, strontium, cadmium, lead, mercury, and molybdenum, were assessed using inductively coupled plasma mass spectrometry. Results Children with cyanotic and acyanotic CHD had significantly lower teeth calcium and calcium/phosphorus ratio as compared to the controls after adjusting for confounders. The mean blood iron level was found to be significantly higher in the cyanotic CHD group compared to the other groups. In addition, children with acyanotic CHD had significantly higher teeth copper levels, higher blood molybdenum and lower blood magnesium levels compared to the healthy control group. Blood cadmium and mercury levels were found to be significantly elevated in both the cyanotic and acyanotic CHD groups compared to the healthy control group. There were no differences in toxic metal levels of teeth in cases with CHD. Conclusion Monitoring adequate and balanced gestational micronutrient intake might support not only maternal health but also fetal cardiac development and infant well-being. Supplementation of magnesium should be evaluated in patients having CHD.

Objective:The aim of the current study is to analyse the trends, determinants of prelacteal feeding (PLF) and its relations with the mode of delivery among infants Design:We pooled data from Turkey Demographic and Health Surveys (TDHS). The key outcome variable was PLF. Factors associated with PLF were analysed by using complex sample multiple logistic regression analysis, separately and merged database.Setting:TDHS in 2003, 2008, 2013 and 2018.Participants:Mother–infant dyads (n 4942).Results:PLF rates fluctuated between 29·3 and 41·4 %. The most common types of PLF were infant formula (61·1 %) followed by sugar/glucose water (24·9 %) and plain water (9·3 %). PLF rate was 1·51 times higher (95 % CI 1·28, 1·78) in cases delivered by caesarean section as compared with those delivered by vaginal route. According to the initiation time of breast-feeding after delivery, the most significant absolute change in PLF rate was observed within 1 h (10·9 % increase). Delayed initiation of breast-feeding was associated with significantly higher odds of PLF compared with the first hour (1 to < 2 h: adjusted OR (AOR) 1·29, 95 % CI 1·04, 1·61; 2–23 h: AOR 1·73, 95 % CI 1·42, 2·11; ≥24 h: AOR 11·37, 95 % CI 8·81, 14·69).Conclusions:To eliminate suboptimal breast-feeding practices, counselling on breast-feeding and delivery type during antenatal visits, postnatal breast-feeding support and social support should be provided to all mothers and families.

Maternal milk is essential for optimum growth and development of an infant. The aim was to examine the presence of pharmaceutical residuals in breastmilk. This cohort study enrolled 90 healthy mother-infant pairs at 5-14 days after delivery and a control examination was performed 4-8 weeks later. Milk samples were taken at both visits. RANDOX Infiniplex kit performed residual analysis. More than half of mothers (54.4 %) had anti-inflammatory drug residues in at least one milk sample: those were 52.2 % for tolfenamic acid and 2.2 % for meloxicam and 1.1 % for metamizole. The most frequent residue group included the beta-lactam antibiotic group, which was detected in 93.3 % of mothers' milk. The second one was the quinolone group (81.1 %). One-third of mothers expressed nitroxynil and one-fifth polymyxin in at least one sample. Almost all mothers had some unexpected drug residues in their milk. Additional studies from other countries can display maternal environmental exposures.

We aimed to assess element status in whole blood and tooth dentin and identify their correlations in overweight or obese children without additional metabolic risk factors. In a case-control study, 40 overweight and 80 normal weight children aged 6–10 years were enrolled. Samples of blood and tooth were collected. While all studied elements were similar in groups in univariate analysis, after adjustment for confounding factors, tooth Mn levels were lower and blood Zn levels were higher in the overweight/obese group (p = 0.049 and p = 0.032, respectively). A significant correlation in blood and tooth dentin levels of Sr and Zn was detected in both groups. In both biological substances, the concentrations of elements did not differ significantly in overweight children without metabolic comorbidities compared to healthy children of normal weight. Presence of low Mn levels in tooth dentin and high Zn levels in blood samples should be explored in further studies.

As most of the unenriched cages will soon switch to enriched cages, it is important to characterize all the effects in the laying hens for sustainable production. Laying hens can be used in several production periods by applying molting. The aim of this study was to determine the cage type (unenriched and enriched) on performance, welfare, and microbiological properties of laying hens during the molting period and the second production cycle. Overall, 840 brown laying hybrids were used in the experiment. Laying hens were reared on two different cage types (unenriched cage (UEC) and enriched cage (EC)) in the same poultry house. When the hybrids were 75 weeks old, they were subjected to force molting with whole grain barley. Performance, welfare, microbiological, and serological data of laying hens were obtained from 73 to 107 weeks of age. Egg production, egg weight, feed conversion ratio, breaking strength, albumen and yolk index, Haugh unit, feather condition, and breaking force of femur and metatarsus were better in the post-molting period. However, keel bone deformities and Newcastle disease virus antibody titers are the worst in the post-molting period. Stiffness of femur and metatarsus was increased with period. These results indicate that necessary precautions should be taken against the problems that may occur in the direction of bone and health. During the molting period, hens kept in EC had lower egg production but they returned to egg production at a high rate. EC type had a positive effect on egg production, feed conversion ratio, feather and foot condition, and breaking force of metatarsus.

Background The study aimed to provide an overall picture of the general pattern of exclusive breast feeding (EBF) in sub-Saharan Africa (SSA) by examining maternal sociodemographic, antenatal and postnatal factors associated with EBF in the region, as well as explore countries variations in EBF rates. Methods We utilised cross-sectional data from the Demographic Health Surveys in 27 SSA countries. Our study sample included 25 084 infants under 6 months of age. The key outcome variable was EBF in the last 24 h. Due to the hierarchical structure of the data, a multilevel logistic regression model was used to explore factors associated with EBF. Results The overall prevalence of EBF in SSA was 36.0%, the prevalence was highest in Rwanda and lowest in Gabon. In the multilevel regression model, factors that were associated with increased likelihood of EBF included secondary and above maternal education, mothers within the ages of 25–34 years, rural residence, richer household wealth quantile, 4+ antenatal care visit, delivering in a health facility, singleton births, female infants, early initiation of breast feeding (EIBF), and younger infants. However, countries with higher gross national income per capita had lower EBF rates. Conclusions To achieve a substantial increase in EBF rates in SSA, breast-feeding interventions and policies should target all women but with more emphasis to mothers with younger age, low educational status, urban residence, poor status, multiple births, and male infants. In addition, there is a need to promote antenatal care utilisation, hospital deliveries, and EIBF.

Background Environmental factors, including elemental homeostasis, have not been studied sufficiently in neurodevelopmental disorders (NDD). This study aims to compare the status of 13 elements in blood and deciduous teeth dentine of children having an autism spectrum disorder or attention deficit hyperactivity disorder with typically developing controls. Methods Elements including calcium, phosphorus, magnesium, iron, zinc, copper, chromium, manganese, mercury, lead, cadmium, molybdenum, and strontium in both deciduous teeth and blood were analyzed by inductively coupled plasma mass spectrometry. Results Strontium levels in both blood and teeth samples were found to be significantly lower in the NDD group. Additionally, blood cadmium and mercury levels, and copper/zinc ratio were higher in the NDD group. Conclusions Our results warrant further investigation in a large series of NDD examining symptom levels and genetic variations associated with elemental homeostasis.

However, little knowledge is available regarding the usage of different bedding materials supplemented with sepiolite and their effects on animal performance and final product quality. For this purpose, a total of 288 day-old male broiler chicks were randomly allocated into two types of bedding materials (wood shavings and rice hulls). Each bedding material group was divided into 3 subgroups: control with 0% sepiolite, 25%-sepiolite group, and 50%-sepiolite group. Each sub-group was placed in 6 pens with 8 chicks per pen. The effects of bedding materials and sepiolite additions on slaughter yields and some meat quality parameters in broilers were evaluated. Slaughter parameters including hot carcass yield and relative weights of thigh and breast meat, heart, liver, gizzard and bursa Fabricius in broilers were not affected by bedding materials and sepiolite additions (P > 0.05). Also, no significant differences were observed among experimental groups for cooking loss and nutritional profile of breast and thigh meat of broilers (P > 0.05). The freshly measured pH(0) of breast and thigh meats was significantly affected by the bedding material and was higher for wood shavings group (P < 0.01). Breast and thigh meats of broilers reared on rice hulls were lighter (P < 0.01), less red, and less yellow in color than those reared on wood shavings, whereas no effect of sepiolite additions was observed on the color of both meat cuts. No substantial effect of bedding material and sepiolite additions was observed on white stripping; however, their occurrence rate found was very high for meat of broilers reared on rice hulls than those reared on wood shavings (P > 0.05). In conclusion, broilers reared on either wood shavings or rice hulls with or without sepiolite additions did not show any negative effects on slaughter yields and meat quality parameters. Furthermore, sepiolite can be an option as a bedding material for broiler industry, but further research with thorough economic analysis is required.

The objective of this study was to evaluate the comparison of different brown and white layers in embryonic development and uptake of nutrients in the egg. A total of 360 fertilized eggs obtained from two brown (Atak-S and Brown Nick) and two white (Atabey and Nick) layer breeders at 28 wk old. Hatching eggs from each genotype were examined on the day of setting for fresh egg analysis and then at the beginning of the embryonic day (E19) and embryonic day (E21) for egg, embryo and villus analysis. Differences in egg weight, shell percentages, relative weight of yolk and albumen, relative weight and length of embryo, villus height, some values of shell, yolk and albumen and relative chick weight in examined hybrids were significant. Yolk sac utilization of embryos during the incubation in the white layer hybrids was greater than that in the brown layer hybrids. Villus heights in the duodenum, jejenum and ileum of embryos in the brown layer hybrids was greater than that in the white layer hybrids. Genotype is important parameter to determine the egg composition at the same age and in animals being fed the same diet. It was observed that the consumption of yolk and shell nutrients from the embryos during the incubation was not related to whether embryos were from the brown or white layer hybrids. Only uptake of the yolk sac and villus height in the embryo among examined variables varied depending on whether the embryos were from the brown or white layer hybrids.

This study was conducted to assess the blood boron levels (BBL) in prepubertal children in the West and Central Anatolia regions of Turkey and its relationship with chosen anthropometric measurements. A multistage sampling design that combined multicluster (West Anatolia vs. Central Anatolia regions and rural vs. urban residents) and simple random sampling methods were used for the sample selection. BBL was measured using inductively coupled plasma mass spectrometry. Weight, height, mid-arm circumference, and triceps skinfold thickness were measured. Z-scores for weight-for-age, height-for-age, and body mass index (BMI)-for-age were calculated. Furthermore, arm-muscle area, arm-fat area, and fat percentage were measured. This study enrolled 2126 children, of whom 50.7% were male. The mean age was 8.9 years. The mean concentration of BBL was 15.6 μg/L (interquartile range: 11.7-19.6 μg/L). We aimed to determine the levels of organochlorine pesticides (OCPs) in the breast milk; to assess the effect of detectable OCPs on maternal-infant characteristics and; to evaluate the relation between OCPs and the maternal psychopathologies [Brief Symptom Inventory (BSI), Postpartum Bonding Questionnaire (PBQ), Mother-to-Infant Bonding Scale (MIBS) and Edinburgh Postnatal Depression Scale (EPDS)] and infant growth. DDT, beta-hexachlorocyclohexane (HCH), aldrin and heptachlor were detected in 89.3, 70.7, 58.7 and 34.7 % of the samples, respectively. Mothers with low monthly family income had detectable DDTs less frequently. The frequencies of detectable heptachlor epoxide were significantly higher in mothers with gestational nausea. Anaemic mothers had more frequently detectable alpha-HCH. Z scores of head circumference were inversely correlated with beta-HCH and DDT levels. The heptachlor epoxide levels were positively correlated with PBQ, MIBS and indexes of BSI. No relation was detected between EPDS and OCPs. Further studies are needed for changes in maternal psychopathologies.

A total of 495 freshly laid eggs were obtained from the same flock of Pekin ducks, aged 28, 34, and 40 wk, and were reared in accordance with the management guide of the duck breeders (Star 53-Grimaud Freres). At each breeder age, egg measurements were made on a random subsample of unincubated eggs. Embryo and yolk sac measurements were made on embryonic day (E) 12, E16, E20, and E25. On d 28 of incubation, the healthy ducklings were removed and sex of chicks was determined. All chicks were weighed and hatching results were determined. Egg weight and yolk percentages increased; however, albumen percentages, shell thickness, and yolk index decreased as the flock aged. Shell percentages, shell breaking strength, albumen index, and haugh units were not affected by breeder age. Also, breeder age affected the Mg, P, K, Ca, Cu, and Zn levels in the yolk, except for Na level on day of setting, and breeder age affected the mineral consumed by embryo during incubation. However, on E25, the levels of examined minerals, except for P level in the yolk sac, were not statistically different in duck breeder age groups. Relative yolk sac and embryo weights of eggs obtained from different breeder ages varied from E16 to E25; however, embryo length was different in breeder age groups from E12 to E20. Hatching weight was affected by breeder age and sex. Hatching results were not different among breeder age groups. This study indicates that breeder age is important for some egg characteristics, relative yolk sac weight, some contents of minerals in the yolk, embryonic growth during incubation, and duckling weight.

There are a lot of differences among breeds which have been studied extensively, however, the differences during the incubation period are not yet fully known. Therefore, the present study was conducted to evaluate the composition of the egg parts, absorption of nutrients, and development of embryos from different genotypes. A total of 354 fresh hatching eggs were obtained from one hybrid (Lohman White, LW) and two pure breeds (Denizli and Gerze). Hatching eggs from each genotype were examined on the day of setting for egg analysis and then at the beginning of the embryonic d 19 (E19) and embryonic d 21 (E21) for egg, embryo, jejunum, and tibia analysis. On d 21 of incubation, the healthy chicks were removed and weighed. Egg weight, shell thickness, percentages of albumen, and some parameters of albumen composition (dry matter, water, ash, protein, energy, Na, Ca, K, and Mg) were higher in fresh eggs obtained from LW hens. Furthermore, the relative yolk sac and embryo weight, some yolk parameters (dry matter, water, protein, fat, and energy) and some shell parameters (dry matter, ash, Na, Ca, and K) were also higher in eggs obtained from LW hens during incubation. However, tibia deformation and villus width were lower in LW embryos than the other genotypes. Relative chick weights were 68.9, 72.0, and 68.0% in LW, Denizli, and Gerze genotypes, respectively. During incubation, differences in all examined parameters were significant except thickness and weight of shell, tibia deformation, and crypt depth. Yolk sac weight, some yolk composition parameters, K level in the shell, Cu level in the tibia, and villus height were also affected by genotype and period interaction. Methods: The study was conducted on 245 primary school children (50.2% boys, 49.8% girls,), aged 5 to 9 years. The prevalence and severity of dental caries was measured using the decayed, missing or filled surfaces (dmfs, DMFS) and teeth (dmft, DMFT) indices. Results: Mean dmft indices in children for boys and girls were 5.5 +/- 3.92 and 5.0 +/- 3.64, respectively. The prevalence of children with dental caries (dmft >= 1) was 84.9%. The prevalence of children with body mass index (BMI) =+1SD was 15.9% and 22.9%, respectively. This study was designed to investigate the effects of the usage of glycerol from biodiesel production from soybean oil in laying hen diets on laying performance, egg traits, heterophils to lymphocytes ratio (H/L), some blood parameters and antibody production to SRBC. A total of 180 Lohmann Brown laying hens 39 weeks of age were allocated to four dietary treatments with one control group and three treatment groups and fed for 16 weeks. Each group was divided into five replicates as subgroups, comprising of 9 hens each. Glycerol was used at the level of 2.5, 5 and 7.5% in the diets of the first, second and third treatment groups, respectively. The diets were formulated to be isocaloric and isonitrogenous. Dietary treatments did not significantly affect body weight, egg production, egg weight, feed efficiency, mortality, egg albumen index, egg yolk index and egg Haugh unit, yolk weight percentage, exterior egg quality characteristics, excreta moisture, H/L ratio, blood parameters and antibody production to SRBC. Hens fed diets with 7.5% glycerol consumed significantly less feed than those of the other groups. BACKGROUND: The objective of this study was to determine the effects of dietary black cumin seed on performance, egg traits, egg cholesterol content and egg yolk fatty acid composition in laying hens during a 12 week period. For this purpose a total of 160 Lohmann Brown laying hens 36 weeks of age were allocated to four dietary treatments with one control group and three treatment groups. Black cumin seed (Nigella sativa L.) was used at the level of 5, 10 and 15 g kg−1 in the diets of the first, second and third treatment groups, respectively. RESULTS: Dietary treatments did not significantly affect body weight, feed intake, egg production, egg quality characteristics and blood parameters. Diets containing 10 and 15 g kg−1 black cumin seed increased egg weight (P < 0.01), improved feed efficiency (P < 0.01) and decreased egg yolk cholesterol, saturated fatty acids (% of total fatty acid methyl esters) and the ratio of saturated to unsaturated fatty acids (P < 0.05) compared to the diet of control group. CONCLUSION: Dietary black cumin seed at the level of 10 and 15 g kg−1 had beneficial effects on egg weight, feed efficiency, egg cholesterol content and egg yolk fatty acid composition. The aim of this study was to determine the effects of early feed restriction on performance, carcass characteristics, meat and liver composition, some blood parameters, H-L ratio, antibody titers against SRBC and tonic immobility duration in broilers. One hundred ninety male chicks (Ross 308) were randomly allocated into two treatment groups each of 95 chicks. Broilers in one treatment fed ad libitum until 42 day of age, however in other treatment, broilers were deprived of feed for 4 h per day from 7 to 21 day. Body weight, feed consumption, feed to gain ratio, carcass characteristics and the percentage of examined organs except heart were not statistically significant in groups. Percentage of heart was higher (p < 0.05) in broilers fed ad libitum. At 41 d of age, H-L ratio (p < 0.05) and TI duration (p = 0.001) were higher, serum glucose (p < 0.05) and triglyceride (p < 0.001) levels were lower in broilers fed ad libitum. Chemical composition of breast and thigh and also fat and ash of liver were not affected by early feed restriction. Moisture of liver (p = 0.001) was lower and protein of liver (p < 0.01) was higher in broilers fed ad libitum

Bu çalışmada, Şanlıurfa ilinde bir alabalık üretim tesisinden temin edilen gökkuşağı alabalıklarının (Oncorhyncus mykiss), farklı muhafaza ve pişirme işleminin yağ asidi bileşimine etkisi araştırılmıştır. Temin edilen 27 adet alabalık 3 gruba ayrılmıştır. İlk grup 0. gün işleme alınmış olup kontrol grubu olarak değerlendirmelerde kullanılmıştır. Diğer iki grup ise, -18°C’de 15 ve 30 gün muhafaza edilmiştir. Alabalıklar 180°C’de 25dk fırında pişirilmiştir. Çiğ ve pişirilmiş olan alabalıkların kas dokusundan derili ve derisiz örnekler alınarak her bir örnekte kuru madde, toplam yağ ve yağ asitleri analizleri yapılmıştır. Çiğ gökkuşağı alabalığında toplam yağ oranı %4,33 iken, fırında pişirdikten sonra %6,54’e yükselmiştir. Balığın derili ve derisiz olması, toplam yağ oranında istatistiksel olarak bir değişim yapmamıştır. Fırında pişirme yönteminin uygulanması sonucunda ΣSFA, ΣUFA, ΣMUFA, ΣPUFA ve Σomega-3 ile Σomega-6 yağ asitleri düzeylerindeki farklılık istatistiksel olarak önemli bulunmamıştır. Balıklarda ΣSFA düzeyleri -18°C’de 30 gün muhafaza edilmesiyle azaldığı görülmüştür. Sonuç olarak dondurularak muhafaza edilen alabalıkların fırında, derili veya derisiz olmadan kuru pişirme işleminden geçirilmesi sonucunda, toplam yağ oranında artış görülse de, insan sağlığı ve özellikle kalp damar hastalıklarında koruyucu olan PUFA’larda önemli bir değişime sebep olmadığı görülmüştür., In this study, the effects of different storage and cooking processes on the fatty acid profile of rainbow trouts (Oncorhyncus mykiss) obtained from the fish culture manufacturing plant in Şanlıurfa were investigated. 27 rainbow trouts were divided into 3 groups. The first group as control group was processed on 0th day. Other two groups have been stored at-18°C for 15 and 30 days. Fish samples were cooked in the oven at180°C for 25 minutes. Muscle tissue specimens with and without skin have been taken for the analysis of dry matter, total fat and fatty acid profile in the raw and cooked trouts. The total fat of the raw rainbow trout was found to be 4.33%, but after cooking in the oven increased to 6.54%. There are no statistically differences in total fat content among fish samples with and without skin. Oven cooking didn’t affect the levels of ΣSFA, ΣUFA, ΣMUFA, ΣPUFA, Σw-3 fatty acids and Σw-6 fatty acids. The levels of ΣSFA were reduced after the storage at-18°C for 30 days. As a result, total fat content increased after oven cooking fish samples with and without skin under frozen storage but the levels of PUFA which is important for human health and especially for protective effect on cardiovascular diseases were not affected.

This study was conducted to investigate the effects of garlic powder on the performance, egg traits and blood parameters of laying hens. One hundred and sixty-two SHSY-type brown layers aged 21 weeks were chosen at random from a large flock. They were allocated to three dietary treatments. Each treatment comprised six replicates of nine layers in groups of three. The diets were supplemented with 0, 5 and 10 g kg−1 garlic powder. The experimental period lasted 22 weeks. Garlic powder addition did not significantly affect body weight, egg production, feed consumption, feed efficiency, egg shell index, egg breaking strength, egg shell thickness, egg albumen index, egg yolk index, egg Haugh unit, egg yolk weight and serum protein concentration. Egg weight increased (P < 0.01) with garlic powder supplementation. There was a significant (P < 0.01) reduction in egg cholesterol concentration as mg g−1 yolk when the dietary level of garlic powder was increased from 0 to 10 g kg−1. Hen serum triglyceride (P < 0.05) and total cholesterol (P < 0.01) concentrations decreased with garlic powder supplementation. This study demonstrated that garlic powder addition increased egg weight and decreased egg yolk cholesterol concentration (mg g−1 yolk) and serum triglyceride and cholesterol concentrations without adverse effects on performance and egg traits. This study was undertaken to determine the microbiological quality of sheep carcasses during different stages in the slaughtering process. A total of eleven carcasses were selected at random in an abattoir. The samples were taken by excision from four different sites; leg, brisket, shoulder and neck. The samples were collected from the same carcasses at four different stages in the slaughtering process; after dressing, after evisceration, after washing and chilling. The aerobic mesophilic bacteria, coliforms and Enterobacteriaceae recovered from each sample were enumerated. Chilling reduced the aerobic mesophilic and coliform counts of carcasses, significantly. Levels of carcass microbial load after chilling were 1.69, 0.11 and 0.11 log cfu/cm2 for aerobic mesophilic counts, coliform counts and Enterobacteriaceae counts, respectively. According to data obtained in the present study, chilling of carcasses was the most important step in improving the hygienic quality of carcasses. Processing stages changed significantly both aerobic mesophilic and coliform counts of neck, therefore, among different sites of carcass, neck should be the only critical site for microbiological sampling for sheep carcasses.

Bu çalışmanın amacı erkek ve dişi Pekin ördeklerinde ilk hafta ana makinesinde büyütmenin besi performansı, karkas özellikleri, et kalitesi ve bazı kan parametreleri üzerine etkilerini belirlemektir. Çalışmada toplam 120 adet (60 erkek ve 60 dişi) pekin ördeği palazı kullanılmıştır. Her cinsiyet grubu rastgele iki farklı yetiştirme grubuna ayrılmıştır. Birinci gruptaki (ana makinesi) palazlar besinin 1-7. günleri arasında ana makinesinde daha sonra altlıklı sistemde büyütülmüştür. İkinci gruptakiler (altlık/kontrol) ise besinin 1-42. günleri arasında altlıklı sistemde büyütülmüştür. Besinin 41. gününde her yetiştirme ve cinsiyet grubundan 5 ördek rastgele seçilerek kan örnekleri alınmıştır. Besinin 42. gününde ördekler özel bir kesimhanede kesilmiştir. Karkas randımanı, organ ağırlıkları ve karkas özellikleri belirlenmiştir. Göğüs ve but etlerinde pH, kül, yağ ve ham protein düzeyleri tespit edilmiştir. Altlıklı sistemde büyütülen ördeklerde toplam canlı ağırlık artışı, karkas randımanı ve göğüs eti yüzdesi ana makinesinde büyütülen ördeklere göre daha yüksek (P, The aim of this study is to determine effects of brooder machine rearing method in the first week on fattening performance, carcass characteristics, meat quality and some blood parameters of male and female Pekin ducks. A total of 120 (60 male and 60 female) ducklings were used in the research. Each sex group was randomly allocated into two rearing methods. In the first group (brooder machine), ducklings were arranged in the brooder machine from 1 to 7 d then reared on the deep litter floor until day 42 . In the second group (litter/control), ducklings were reared on the deep litter floor from the day 1 to the day 42 of the fattening period. At the day 41 of the fattening period, 5 ducks from each sex and rearing groups were randomly selected and bled. At the day 42 of the fattening period all ducklings were slaughtered in a commercial slaughterhouse. Hot carcass yield, organ weights and carcass characteristics were determined. For this purpose a total of 225 Hyline Brown laying hens, 39 wks of age, were allocated to one control group and four treatment groups. Basal diet was supplemented with YCW derived from bakers yeast Saccharomyces cerevisiae (InteMOS) at the level of 1, 2, 3 and 4 g/kg in the diets of the first, second, third and fourth treatment groups, respectively. Dietary treatments did not significantly affect body weight, feed intake, egg production, egg weight, feed conversion, and egg internal and external quality characteristics. YCW supplementation at the level of 1 and 2 g/kg decreased egg yolk cholesterol level as mg per g yolk (P < 0.05). Blood serum levels of cholesterol and triglyceride were decreased with the dietary inclusion of YCW at the level of 2, 3 and 4 g/kg (P < 0.01). Dietary YCW supplementation increased antibody titres to SRBC (P < 0.01). The purpose of this study was to determine the fecal coliform counts of beef carcasses during different stages in the slaughter process. A total of nine carcasses were selected at random in the abattoir. The samples were taken by excision from three different sites; rump, brisket and shoulder. The samples were collected from the same carcasses at four different stages of processing; after dressing, after evisceration, after washing and after chilling for 24 h in a chilling room. The processing steps did not increase the fecal coliform counts on the rump samples. There were no significant differences in the samples of rump and shoulder among different processing steps. The contamination level of the brisket after washing was significantly higher than other processing steps. Brisket and shoulder parts are critical points for microbiological sampling as these sites showed higher microbial counts after chilling steps. The data obtained have relevance for the planning of washing methods for the production of clean and safe carcasses.
