Organic residue analysis utilises analytical organic chemical techniques to identify the nature and origins of organic remains that cannot be identified using traditional techniques of archaeological investigation because they are either amorphous, invisible or present at trace concentrations. Investigations performed in the last ca. 50 years, applying the modern instrumental analytical techniques, have confirmed the survival of a wide range of compound classes at archaeological sites in association with various archaeological artefacts, ecofacts and deposits. Compound classes identified include: lipids, proteins, DNA, pigments, but rarely carbohydrates. Chromatographic and mass spectrometric techniques are essential to separate and identify preserved biomolecular components, termed “biomarkers” that can be related databases of the components of modern animals and plants. The utility of biomarkers or their mixtures (termed “distributions”, “chemical fingerprints” or “chemical signatures”) is enhanced by determination of their stable isotope compositions by GC-combustion-isotope ratio MS. These approaches have been applied to a diverse range of artefacts and ecofacts and deposits to determine a wide range of activities relating to human activities in the past including: pottery vessel use, diet, animal management, plant exploitation, hunting and fishing, ritual and funerary activities.

The emergence of agriculture in Greece denotes the start of the Neolithic in Europe, however, little is known about dietary practices in the region. Archaeobotanical and zooarchaeological remains indicate reliance on cereals and pulses, together with meat-based subsistence practices, including sheep/goat and pig husbandry. Preliminary investigations of dietary practices obtained through lipid residue analysis of pottery of a small number of sites in the region have confirmed primarily carcass products were processed. The weak evidence for dairy products contrasts with finding of dairy-based subsistence strategies in NW Anatolia, which is surprising given its close proximity. This paper aims to build on this earlier work to provide a more detailed model for the dietary changes throughout the region, both chronologically and spatially. To achieve this >900 potsherds from 11 sites spanning the Early (EN) to Late Neolithic (LN) periods from the north of Greece have been investigated using the lipid biomarker approach involving high temperature-gas chromatography (HT-GC), GC-mass spectrometry (GC-MS) and GC-combustion-isotope ratio MS (GC-C-IRMS) to determine the nature and origins of organic residues preserved in the fabric of pottery vessels. Lipid residue analysis of pottery vessels revealed ruminant and non-ruminant carcass fats comprise the majority of animal fat types identified, reflecting the high abundance of sheep/goat and pig in faunal assemblages. The emergence of dairying in northern Greece can now be dated to the site of EN/Middle Neolithic (MN) Ritini (5900/5700 - 5500 cal. B.C.E.), 32 however, the frequency of dairy fat residues was low, overall, indicating that dairying was not intensively practised. The δ13C values of the fatty acids extracted from potsherds reflect a predominately C3 diet, however, in the EN and MN there is greater variation with some lipids exhibiting enriched δ13C values indicating a significant abundance of C4 plants in the ecosystem(s) covered by the study. Significantly, plant-derived n-alkanes (C22 to C34) detected in pottery vessels provide the first evidence for plant processing identified in lipid residues from ceramic vessels in Neolithic northern Greece, supporting the abundant archaeobotanical evidence for the processing of cereals and pulses.

Le lait a une place importante dans le régime alimentaire d’un certain nombre de nos sociétés modernes, en particulier sur le continent européen. Pourtant, le lait n’est entré dans notre régime alimentaire que tardivement. En effet, ce n’est qu’avec la domestication des bovins, brebis et chèvres il y a plus de 10 000 ans, que l’homme a commencé à consommer du lait. Le lait frais est riche en lactose, le « sucre du lait », et sa consommation par des individus qui y sont intolérants peut provoquer des troubles digestifs. Pourtant, de nos jours, un adulte sur trois dans le monde peut digérer le lactose grâce à la production de l’enzyme lactase permettant l’hydrolyse du lactose en glucose et galactose. En Europe, la production de lactase à l’âge adulte est due à une seule mutation (-13910*T) dans le génome humain. Cette adaptation à la consommation de lait frais depuis la Préhistoire suggère une pression de sélection forte dans la population européenne. Tandis que l’analyse d’ADN ancien d’individus du début de Néolithique n’a pas permis de détecter cet allèle, il apparaît chez une proportion plus importante d’individus plusieurs millénaires après la domestication des bovins et caprinés. Outre les analyses génétiques permettant de détecter si les premiers agriculteurs avaient la capacité de digérer le lactose, la problématique de l’exploitation du lait pendant la préhistoire peut être abordée à partir des restes des animaux domestiques. L’étude des ossements animaux découverts sur les sites archéologiques permet d’avoir accès aux stratégies d’abattage des bovins et caprinés, et donc à la gestion démographique des troupeaux. Les courbes d’abattage ont permis de montrer que les caprinés étaient exploités pour leur lait dès le Néolithique précéramique. D’autres méthodes complémentaires des courbes d’abattage, les analyses isotopiques des restes dentaires animaux (bovins et caprinés), permettent d’établir la saisonnalité des naissances et l’âge au sevrage. Bien que relativement récentes, ces études ont déjà montré un sevrage précoce des veaux dans certains sites néolithiques, probablement en lien avec une durée de lactation plus courte chez les vaches néolithiques. L’étude de tessons de poterie est aussi un champ d’investigation précieux pour examiner les débuts de l’exploitation laitière. L’identification de lipides issus de lait dans des poteries du VIIe millénaire a permis de montrer que le lait était bien une denrée alimentaire au Proche-Orient. De même, la présence de résidus laitiers dans des récipients perforés découverts dans des sites archéologiques du début du Ve millénaire a permis d’identifier la production de fromages. Les approches génétique, archéozoologique et biomoléculaire restent complémentaires pour élucider les débuts de l’histoire de l’exploitation laitière.

A few sparse vessels typologically attributed to the Gàta-Wieselburg Culture are known from Friuli Venezia Giulia region in north-eastern Italy. Such Culture developed between nowadays western Austria and Hungary during the Early-Middle Bronze Age (Reinecke Br A1b and A2, 2100–1700/1600 BC). Single artefacts, generally biconical double-handled jugs with well burnished surfaces, were discovered in caves of the Trieste Karst (Ciclami, Tartaruga, Teresiana and Ossa) and the Natisone valley (Velika jama). Most of them and a similar vessel from a Gàta-Wieselburg site in Hungary (Bük) have been investigated using several destructive and non-destructive techniques. X-ray computed microtomography, portable X-ray fluorescence, optical microscopy and absorbed lipid residue analyses by gas chromatography-mass spectrometry have been applied in order to study their vessel-forming technique, provenance and probable use. According to the preliminary results the Karst vessels were probably imported and the identification of rather uncommon lipids, whose precise identification is still ongoing, opens interesting questions about their possible function.
