9. Motive für den Konsum von Bio-Fleischprodukten - Eine explorative Interviewstudie mit Kunden eines Demeter-Hofes

Abstract

Der Klimawandel und der Biodiversitätsverlust als direkte und indirekte Folgen nicht-nachhaltiger Verhaltensweisen des Menschen stehen so stark wie noch nie im Fokus des gesellschaftlichen Diskurses. Im Ernährungssektor sind knapp 70 % der globalen Treibhausgase auf tierische Erzeugnisse zurückzuführen (vgl. Campbell et al. 2017). Zudem trägt die konventionelle Landwirtschaft – und speziell die industrielle Tierhaltung – wesentlich zum Klimawandel und Biodiversitätsverlust bei. Besonders die industrielle Fleischproduktion kann den Zielsetzungen der globalen Nachhaltigkeitsagenda (Sustainable Development Goals – SDGs) hinsichtlich des Schutzes von Klima und Biodiversität nicht gerecht werden. Eine Umstellung auf eine nachhaltige Landwirtschaft mit ökologisch produziertem Fleisch würde eine mögliche Alternative zur konventionellen Tierhaltung bieten. Auch bei den Konsumenten ist in den letzten Jahren ein Trend hin zu einer vermehrten Nutzung von ökologisch produzierten Nahrungsmitteln zu erkennen (Statista 2019). Zur erfolgreichen Vermarktung ökologisch erzeugter Nahrungsmittel wie Bio-Fleisch ist die Akzeptanzförderung bei den Verbrauchern maßgeblich, unter anderem durch geeignete Marketingstrategien und Bildungsmaßnahmen. Auch gemäß dem Übereinkommen über die biologische Vielfalt (CBD) sind „Aufklärung und Bewusstseinsbildung“ zentrale Maßnahmen zum Schutz und zur Erhaltung der Biodiversität (United Nations 1992; Artikel 13a). Um verbrauchergerechte Marketingstrategien und Bildungskonzepte im Bereich der nachhaltigen Ernährung zu entwickeln, sind zunächst die Motive der Verbraucher bei der Nahrungsmittelwahl zu ermitteln. Die vorliegende Studie untersucht die Motive für den Konsum von Bio-Fleisch bei Kunden eines Demeter-Hofes.

Abstract

Attention to the importance of nature and human health linkages has increased in the past years, both in science and in policy. While knowledge about and recognition of the importance of nature and human health linkages are increasing rapidly, challenges still remain. Among them are building bridges between relevant but often still somewhat disconnected sectors and topics. There is a need to bring together researchers in the fields of health sciences, ecology, social sciences, sustainability sciences and other interdisciplinary sciences, as well as for cooperation between governments, companies and citizens. In this chapter, we introduce European networking initiatives aimed at building such bridges.

Abstract

We are at a point in history marked by unprecedented changes in the environmental foundations of human health and well-being. At the same time, the demands from human populations have never been greater, with profound differences in how we engage with the natural environment. By the middle of this century, when climate change impacts are further increasing, the United Nations expects the global population to be approaching 10 billion. In this chapter, we provide a synthesis of published evidence of the complex and important relationships between elements of biodiversity, health and climate change. We draw primarily on reviews conducted in the past five years supplemented with evidence on additional themes. We also develop a detailed case study example focused on urban climate, climate change and biodiversity, taken from the perspective of a large and representative conurbation. The case study uses a body of existing published evidence together with new data and insights to demonstrate important pathways, impacts and outcomes. We end by identifying a set of research questions and stress the need for even more extensive multi-disciplinary and multi-sector approaches. Nevertheless, despite the need for more knowledge, it is already clear that more effective action could, and should, be taken.

Abstract

Modern urban life style is associated with chronic stress, insufficient physical activity and exposure to anthropogenic environmental hazards. Urban green space, such as parks, playgrounds, and residential greenery, can promote mental and physical health and reduce morbidity and mortality in urban residents by providing psychological relaxation and stress alleviation, stimulating social cohesion, supporting physical activity, and reducing exposure to air pollutants, noise and excessive heat.This chapter summarizes the pathways that link green spaces to health and well-being, and discusses available evidence of specific beneficial effects such as improved mental health, reduced risks of cardiovascular disease, obesity, diabetes and death, and improved pregnancy outcomesSpecific attention is given to benefits of urban green space for disadvantaged groups and their impacts on health equity. Potential health risks associated with urban green spaces are also discussed along with approaches to reducing or eliminating these risks through proper design and maintenance of green spaces.
