Developing common bean genotypes that possess short cooking time and good traits for canning is very key in accelerating bean consumption among both the urban poor and the middle class population. With the objective of assessing the genotypic variability and with Genome wide association studies (GWAS) identify SNP markers associated with the two traits, 250 common bean accessions were evaluated using alpha lattice design with two replications and two seasons. Three months post-harvest, the bean grains were evaluated for the two traits. Analysis from mixed models revealed significant variation for both traits among the 250 accessions tested. Cooking time ranged from 51.56 to 215 minutes, with 11 genotypes cooking in less than 60 minutes and total canning quality score ranged from 41.3 to 84% with 31 genotypes scoring 76% and above. GWAS conducted on 217genotypes revealed a total of 47 significant marker trait associations for the two traits; on chromosome Pv01 for cooking time(CT) and washed drain coefficient (WDC), viscosity, WDC, washed drain solids(WDS), splitting and hydration coefficient(HC) on chromosome Pv02, WDS, HC, free starch(FS) and splitting on Pv03, CT, WDC and WDS on Pv04, viscosity, splitting, FS, colour and CT on Pv05. Clumping on Pv06, visual appeal, colour and viscosity on Pv07, visual appeal, clumping, splitting and WDC on Pv08, clumping, viscosity, FS and on Pv09, colour, FS, WDS and clumping on Pv010, CT, FS, clumping, viscosity and WDS on Pv011. Possible candidate genes including; phvul.007G2803001 and Phvul.007G280700.2 both on chromosome 7 and Phvul.005G161200.1 on chromosome 5, all associated with seed coat colour were identified. Besides their usefulness in breeding research, these studies identified genotypes whose shorter cooking time and good canning quality traits could benefit the consumption and processing industries.

The sustainable utilisation of black soldier fly (BSF) for recycling organic waste into high-quality protein feed and organic fertiliser with a low environmental footprint is gaining momentum worldwide. Although BSF farming is becoming a rapidly growing agribusiness, studies on the BSF farming’s economic aspects are limited. This study analysed the economic benefits of farming BSF for animal feeds and composted frass, called frass fertiliser (FF) production using experimental data. The BSF larvae were fed on brewery spent grain amended with sawdust, biochar, and gypsum to determine the cost-effective feed and other by-products production. The agronomic performance of FF on the maize crop was assessed using field experiments. Our results demonstrated that sourcing and preparing the waste substrate for rearing the BSF larvae accounts for 81-90% of the total BSF production cost. The utilisation of FF as an additional value-added product would increase farmer’s net income by 5-15 folds compared to BSF farming alone. Feedstock amended with 20% biochar increased net income by 10-64% for BSF larvae and FF production than other feedstocks. Production of one megagram (Mg) of dried BSF larvae (USD 900) would generate 10-34 Mg of FF worth USD 3,000-10,200. Maize grown on plots treated with FF yielded 29-44% higher net income than maize harvested from plots amended with commercial organic fertiliser. Furthermore, smallholder insect farmers’ direct use of FF for maize production would generate 30-232% higher net income than farmers purchasing similar FF. Our results demonstrate for the first time the role of insect farming in circular economy and justify the opportunities for future investments that would lead to enhanced sustainability for agricultural and food systems, especially for smallholder farmers in low- and middle-income countries.

The increasing demand for animal protein in sub-Saharan Africa has led to insects being considered an alternative protein source for food and feed. In Uganda, chicken mash, containing fish meal as the protein source is commonly used to rear crickets. However, fishmeal is an expensive protein source that is also human food. This study therefore aimed at establishing an alternative preferred (consumed in the highest quantity) plant leaf diet for raising the Modicogryllus conspersus cricket, and the most suitable temperature for hatchability and egg development. The effect of (a) three diets (cassava leaves + cocoyam leaves + milk weed leaves; cassava leaves + pumpkin leaves + wandering Jew; and cassava leaves + lablab + Cinderella weed) on growth; and (b) incubation temperature (26, 28, 30, 32, and 34 °C) on egg hatchability and egg development time were studied. Cassava, pumpkin and milk weed leaves were the most ‘preferred’ of the tested plant leaves. Egg development time was longer at lower temperatures, ranging between 7-14 days across a 26-34 °C temperature range. The highest hatchability (95%) was observed at 28 °C, below and above which hatchability decreased. The maximum nymph weight (1.58 mg) at hatching was observed at 26 °C and decreased with increasing egg incubation temperature. Efforts to recycle organic waste using black soldier fly (BSF) larvae into high-quality alternative protein ingredients in animal feeds and organic fertilizers have gained momentum worldwide. However, there is limited information on waste manipulation to increase nutrient retention for enhanced larval performance and frass fertilizer quality. In the present study, brewer's spent grain with a carbon to nitrogen (C/N) ratio of 11 (control) was amended with sawdust to obtain substrates with C/N ratios of 15, 20, 25 and 30. The effects of substrate C/N ratios on BSF larval yield, waste degradation, biomass conversion efficiency, compost maturity and nutrient levels of frass fertilizer were evaluated. Substrates amended with sawdust did not significantly affect waste degradation efficiency and biomass conversion rates of BSF larvae. The wet and dried larval yields were significantly higher for substrates with C/N ratio of 15 compared to the other amended substrates. An amended substrate with C/N ratio of 15 enhanced nutrients uptake by BSF larvae, and increased nitrogen (N) and phosphorus retention in frass compost by 21 and 15%, respectively. Compost maturation time was shortened to five weeks, as indicated by the stable C/N ratios and high seed germination indices. This study has demonstrated that the amendment of the substrate with sawdust to C/N ratio of 15 could generate compost with desirable nutrients for use as high-quality fertilizer for organic farming.

This qualitative study on knowledge, attitudes and practices (KAP) among poultry and pond fish farmers from Kisii, Nakuru and Kirinyaga counties in Kenya was conducted to establish insect for feed interventions likely to reduce the cost of feeds in these enterprises and benefit women and men equitably. Data were collected through sex and enterprise type disaggregated focus group discussions with farmers. Poultry farming was more established than fish farming in all three counties. Women were more involved than men in poultry, and men more than women in fish, farming. For both enterprises, women did same number of chores as men except for fish in the dry season when women did more chores. For most chores, women worked longer than men. Men and women knew of many insects fed raw to chicken and fish. Men stated that insect fed chickens are bigger and women affirmed that they are tastier. For both enterprises, men mainly decided on allocation of money jointly with women, or alone. Women mainly decided on allocation of feeding resources. Because gender roles were more clearly defined in poultry enterprises, it would be more useful to start conducting gender targeted interventions with poultry farmers. Among the interventions recommended include insect farming technologies at the homestead for women and wild insect catching technologies for women and men. Surplus insects farmed / harvested can be sold to commercial feed processors through contractual arrangements between them and the producers. Advocacy interventions to prevent economically dormant men taking over insect rearing enterprises from women once they become profitable, and time saving technologies for use by time-poor women are also recommended.

Edible insects are receiving attention as a protein source in the food and feed sector. However, successful commercialisation requires mass production matched with appropriate processing and storage techniques. The quality of dried and pulverised black soldier fly larvae stored in woven polypropylene (PP) sacks, polyethylene (PE) bags and plastic containers with screw lid (PL) in ambient and refrigerated environments was monitored over six months. Chemical indicators (oxidation, fatty acid profile), microbiological parameters (total viable counts, yeast and moulds, Enterobacteriaceae, presumptive coliforms, Salmonella) and colour change were examined. Temperature and relative humidity of the storage environments were monitored. In the ambient environment (temperature: 23.6±2.7 °C; relative humidity: 57.6±7.0%), chemical deterioration progressed 1.5 and 1.2 times faster in PP and PE, respectively, compared to PL. Refrigeration (temperature: 5.4±1.1 °C; relative humidity: 97±5.7%) exacerbated spoilage in the PP due to permeation of moisture through the woven strands, but slowed chemical deterioration by factors of 3.3 (PL) and 2.8 (PE). Likewise, based on the average counts of Enterobacteriaceae and yeast and moulds, microbiological deterioration progressed 2.1 and 1.4 times faster in the PP and PE, respectively, while refrigeration retarded build-up of microbial loads by factors of 1.3-9.6. The presence of Salmonella spp. in the experimental product indicates that due attention must be given to adequacy of processing and handling procedures for dried black soldier fly meal.

School‐age children frequently consume snacks. However, most of the snacks they consume are of low nutritional quality. The objective of this study was to develop a nutrient‐rich and acceptable extruded bean‐based snack, which could contribute to improved nutrient intake, especially for school‐age children. Snack formulations developed from Roba1 beans, maize, orange‐fleshed sweet potato, and amaranth mixtures, and processed in a twin‐screw extruder, were evaluated and optimized for nutritional, textural and sensory properties. High proportion of beans in the formulation was associated with high protein, iron, zinc, and dietary fiber content. An optimal formulation (82.03:10: 5:2.97; beans, maize, OFSP, amaranth), containing 20.38 g, 4.12 g, 4.83 mg, and 1.51 mg per 100 g, of protein, dietary fiber, iron, and zinc, respectively, was obtained. The snacks were crunchy and moderately acceptable with average sensory scores of 6 on a 9‐point hedonic scale, and hardness 26.6 N. Nutrient contribution 43, 19, and 12% for protein, iron, and zinc, respectively, to children aged 6 to 8 years; and 24, 19, and 7.6%, respectively, to children aged 9 to 12 years from a 40 g serving was estimated from the snack. The results demonstrate the potential of using extrusion to produce nutrient enriched value‐added food products from blends of iron‐rich beans and common staples., Nutrient‐rich extruded composite snack formulations were processed from common beans, maize, orange‐fleshed sweet potato, and amaranth and evaluated. An optimal composite snack with acceptable taste, texture, and high potential nutrient contribution in terms of protein, iron, and zinc (to children) was identified.

A conducive regulatory environment is crucial for ensuring the safety and effective promotion of insects for direct and indirect human consumption. In this review, national and regional policies, regulations, and relevant publications in sub-Saharan Africa (SSA) were examined for their take on the use of insects as food and feed. Majority of the SSA countries (91.7%) lacked food safety policies, and of the four countries (8.3%) that had, only one considered the ‘risk-based approach’ for assessing food safety. Two policies, one in Malawi and the other in Tanzania respectively, recognized insects’ use. The lack of regulatory frameworks in most SSA countries is partly attributed to inadequate scientific data regarding insects’ biological, chemical and physical safety. This potentially exposes consumers to health hazards and limits income from insect and insect-based food and feed operations. However, some information and/or data to inform policy, and in a few cases to develop standards, has been generated by several research and development projects in the region. The need for supportive regulations toward the use of insects has been recognized and is being acted upon in a number of SSA countries. For effective promotion of insects as food and feed in SSA, countries need to generate risk assessment data as recommended by Codex Alimentarius and develop and implement relevant standards.

It has been reported that plants that experience some form of stress while growing tend to accumulate increased levels of nutrients that are useful to humans. We compare the proximate and mineral composition of Tamarindus indica leaves, fruit pulp and seeds from Uganda’s semi-arid and sub-humid zones with contrasting environmental conditions including temperature, rainfall, soils and geology. Pesticide use is a common practice worldwide, especially in Sub-Saharan African (SSA) countries, where ongoing agriculture intensification and the need for disease vector control make it essential. The population can thus be exposed to variable amounts of pesticides through the diet. Edible insects are a highly regarded food source in SSA. However, they are still mostly harvested from the wild, where chemical applications are not necessarily controlled, representing a major cause of concern for consumers. We investigated residues of legacy (OCPs) and current-use pesticides (CUPs) in selected edible insects commonly consumed in Uganda and Nigeria, and evaluated the eventual health risk for the adult population associated with their consumption. Targeted OCPs were < LOQ in all analysed edible insects, except for hexachlorobenzene (up to 0.87 ng/g dw), while several CUPs were present at notable levels. Cypermethrin showed the highest median concentration (17 ng/g dw), while the Nigerian cricket Brachytrupes membranaceus was the most contaminated sample, with concentrations of aldicarb, propoxur, chlorpyrifos, dichlorvos and paclobutrazol reaching 118 ng/g dw, 327 ng/g dw, 156 ng/g dw, 26 ng/dw, and 14 ng/g dw, respectively. The concentrations of pesticides were generally well below the available maximum residue levels (MRLs), and the dietary risk assessment did not indicate health threats for the adult population. However, we suggest that the monitoring of the chemical safety of edible insects in SSA should be further investigated and insects should be integrated into more extensive dietary studies.

Unlike other foods of animal origin, the spoilage mechanisms of edible insects remain unknown. This research intends to establish the cause of spoilage of the long-horned grasshopper, Ruspolia differens, with high and low water activity (aw). To achieve this, fresh and spoiled raw and processed grasshoppers stored under different conditions were assessed for (i) fat oxidation, (ii) antioxidant levels, and (iii) volatile compounds which served as indicators for different spoilage mechanisms. Results indicate that the free fatty acid value (6.69% as oleic acid), peroxide value (2.66 mEq O2/kg) and p-anisidine value (1.04) of fresh R. differens are similar to those of spoiled raw (aw = 0.98) and oven-roasted (aw = 0.95) R. differens. The headspace of the latter only possesses volatile sulphur compounds (dimethyl disulphide and dimethyl trisulphide), indicating microbial spoilage. Globally, there is growing interest to integrate cricket-based ingredients (flour) into food products to combat food and nutrition insecurity. However, there is lack of information on in-depth nutrient profile of the two cricket species (Scapsipedus icipeandGryllus bimaculatus), which are the most widely consumed in Africa. Here we determined the nutrient composition of two cricket species and compared them with published records of key animal and plant sources. Our results revealed that the crude protein contents ofS. icipeandG. bimaculatuswere similar (56.8 and 56.9%, respectively) and comparable to those of animal protein sources. Both cricket species had balanced amino acid profiles that are superior to that of animal and plant sources, except for histidine and cysteine. The protein digestibility ofS. icipeandG. bimaculatusranged between 80 and 88%, which is comparable to that of common plant foods but slightly lower than that of animal proteins. The iron, Zinc, and potassium contents were considerably higher in both cricket species compared to that of plant and animal sources. The calcium contents of both crickets (S. icipeandG. bimaculatus) was superior to that of plant and animal origin except for kidney beans and eggs, respectively. Riboflavin, thiamine, and folic acid concentrations ofS. icipeandG. bimaculatuswere superior to that of the conventional sources. Vitamin A levels were significantly higher inS. icipecompared toG. bimaculatus. This implies thatS. icipeandG. bimaculatuscan adequately contribute to our daily required nutrient intake. Thus, integrating cricket flours into ready-to-eat food products would address some of the most pressing nutritional deficiency challenges that many developing countries have to grapple with, particularly high risk to serious health problems such as anemia, poor pregnancy outcomes, hypertension, increased risk of morbidity and mortality, stunted growth and impaired physical and cognitive development. We conclude that edible crickets present unique opportunities for improving food and nutritional insecurity status of both resource-poor and Western populations.

The perception of key players in the fish farming sector towards the use of insects is important for their acceptance to adopt insects as an alternative protein source to the expensive fish meal. Perception was established through a cross-sectional study of 208 fish farmers and 71 fish feed traders and/or processors conducted in Gulu, Tororo and Masaka districts in Uganda, using descriptive, Chi-square, correlation and factor statistical analysis of the data collected. Males dominated the fish farming and fish feed trading and/or processing enterprises. Youths were involved to almost the same extent as adults. Fish farmers majorly practiced pond fish farming, mainly using vegetable and grain based feeds. Most fish farmers (94.9%) and feed traders or processors (91.5%) were willing to use insects for feed but only 44.8% of fish farmers and 8.6% of feed traders and processors had ever used insects. All insects ever used by the respondents for feeding fish, including white ants, grasshoppers, termites and cockroaches were not reared but harvested from the environment. Willingness to use (rear/buy/sell) insects as fish feed was significantly and positively correlated with farmers’ and fish feed traders’ and/or processors’ perception that insects were good sources of nourishment for fish. Familiarity with use of insects and knowledge/awareness of their use significantly contributed to respondents’ positive perception. The apparent willingness to use insects for feeding fish should be promoted by encouraging mass insect production. Assessment of the consumer’s acceptability of fish reared on insects is necessary to ensure market for insect-fed fish.

Long-horned grasshopper (Ruspolia differens Serville) is a tasty delicacy in over 20 African countries. This study evaluated the impact of diverse post-harvest thermal treatment (blanching, boiling, toasting, and deep-frying) on the nutrients, total flavonoid content and sterols preservation of R. differens products. Crude protein, ash, and fibre of R. differens was drastically reduced by deep-frying technique. There was increase in Omega-3 (α-linolenic acid), Omega-6 fatty acid (linoleic and arachidonic acids) and sterols [(22Z)-27-Norergosta-5,22-dien-3β-ol, cholesterol, campesterol, cholest-4-ene-3-one and β-sitosterol] and flavonoids (2-3 folds) during blanching compared to other techniques. The iron and zinc content increased significantly in blanched and boiled products of R. differens. Thus, losses of nutrients, total flavonoid content and sterols during processing of R. differens for food can be mitigated by employing blanching technique, which is cheaper and least time-consuming. The implications of these dietary and therapeutic compounds on human nutrition and health are discussed.

Efforts to promote sustainable production and processing of Ruspolia differens Serville (Orthoptera: Tettigoniidae) as a viable agribusiness model for enhancing food and nutrition security have gained momentum. However, the inexistence of rearing techniques adapted to this insect creates uncertainty regarding the effectiveness of up-scaling production. This study evaluated the effect of five temperatures (26, 28, 30, 32 and 34 °C) on egg development time, percentage hatchability and nymphal weight at hatching. It also evaluated the average weekly wet weight attained by R. differens and percentage survival during growth when reared at 30 °C on four different food plant diets. The diets composed of (1) star grass Cynodon dactylon (L.) Pers.; (2) wild millet Eleusine indica (L.) Gaertn.; (3) guinea grass Panicum maximum Jacq.; and (4) a mixture of the three food plants. The highest hatchability (89.33±3.06%) was observed for egg clusters that were not detached from the leaf sheaths and incubated at 30 °C. At the same temperature, the hatchability of eggs detached from the leaf sheath was 43.33±4.16%. The wet nymphal weight at hatching varied significantly across the different incubation temperatures. For eggs that were not detached from the leaf sheath, it ranged between 3.12±1.20 mg at 30 °C to 4.15±0.98 mg at 34 °C, while for eggs that were detached, it ranged between 2.96±1.14 at 32 °C to 6.0±2.0 mg at 26 °C. The highest wet nymphal weight (586.4 mg) and growth rate (10.47 mg/day) of adult R. differens after 8 weeks was recorded on wild millet, followed by the mixture of the three food plants (553.7 mg; 9.9 mg/day). Food plants significantly influenced survival of nymphs, with C. dactylon and P. maximum associated with the highest survival rate (53.3%). These findings are central to upscaling R. differens production.

Major protein sources for feed manufacture have become costly, and this has led to increased cost of products such as aquafeeds. This has dampening effect on fish production especially in developing countries, and has necessitated a search for alternative protein sources in processed feeds. The effects of extrusion on aquafeed blends containing fractions of adult cricket (Acheta domesticus) meal (ACM) or black soldier fly (Hermetia illucens) pre-pupae meal (BSFM) on proximate composition and in vitro protein digestibility were investigated. Extrusion resulted in higher contents of protein and nitrogen free extract, and lower contents of ether extract and crude fibre as compared to the non-extruded feed. These observations were mainly associated with denaturation of proteins leading to increase in solubility, solubilisation of fibre due to the shearing forces at high temperature resulting in higher nitrogen free extract, and formation of starch-lipid complexes leading to lower ether extract. Our findings indicate that ACM or BSFM can be used to substitute fresh water shrimp meal up to 75 g/100 g level and still achieve highly nutritious processed fish feed.

Recent research on edible insects’ composition has placed more emphasis on the quantity and quality of macro- and micro- nutrients and less emphasis on their bio-active components. This study aimed at assessing the effect of four factors, namely: defatting, solvent type (ethanol, methanol and acetone), solvent concentration (50 %, 75 % and 100 %) and extraction time (15, 30, 45 and 60 minutes) on the extraction efficiency, the total anti-oxidant activity and the amount of total phenolics and total flavonoids of Ruspolia differens. It was not known if the removal of fat (defatting) would influence the total anti-oxidant activity, and the distribution of anti-oxidant compounds in the R. differens matrix. Non-defatting (extraction of fat from the matrix), use of acetone and sonication for 60 minutes are associated with high anti-oxidant activity and high amounts of bio-active compouds extracted. Aqueous acetone (50 %) extracts had the highest average anti-oxidant activity (87.00 ± 2.59 % RSA) while 100 % acetone extracts had the highest average total phenolics (11.14 ± 0.18 GAE/g) and average total flavonoids (3.02 ± 0.21 QE/g) content, indicating the presence of other, possibly highly polar, bio-active compounds in R. differens. ispartof: Journal of Insects as Food and Feed vol:7 issue:2 status: Published online

Objectives Calcium deregulation in diabetes mellitus (DM) is central to the brain–heart axis pathology. This has led to the use of medical plants in complementary medicine such as Amaranthus hypochondriacus (GA). The objective of the study was to establish the effects of grain amaranth feed supplementation on calcium, s100al protein and antioxidant levels on the brain–heart axis in diabetic male Wistar rats. Methods The study involved six groups (n=5) with DM being induced in 20 rats. To the diabetic rats, Group I received mixtard®, Group II was positive control, Groups III and IV received GA feed supplementation at 25 and 50%. In the nondiabetic rats (n=10), Group V received 50% grain amaranth while Group VI was the negative control. The brain and heart tissues were harvested after five weeks and processed using standard methods. Results Grain amaranth feed supplementation led to improved calcium levels in DM as compared to the positive control. This also led to increased s100a1, antioxidant levels in the brain–heart axis during DM. This then protected the tissues against oxidative damage, thus preserving tissue function and structure. Conclusions Grain amaranth’s actions on calcium signaling subsequently affected s100a1 protein levels, leading to improved tissue function in diabetes.

Black soldier fly frass fertilizer (BSFFF) is increasingly gaining momentum worldwide as organic fertilizer. However, research on its performance on crop production remains largely unknown. Here, we evaluate the comparative performance of BSFFF and commercial organic fertilizer (SAFI) on maize (H513) production. Both fertilizers were applied at the rates of 0, 2.5, 5, and 7.5 t ha-1, and 0, 30, 60, and 100 kg nitrogen (N) ha-1. Mineral fertilizer (urea) was also applied at 0, 30, 60 and 100 kg N ha-1 to establish the N fertilizer equivalence (NFE) of the organic fertilizers. Maize grown in plots treated with BSFFF had the tallest plants and highest chlorophyll concentrations. Plots treated with 7.5 t ha-1 of BSFFF had 14% higher grain yields than plots treated with a similar rate of SAFI. There was a 27% and 7% increase in grain yields in plots treated with 100 kg N ha-1 of BSFFF compared to those treated with equivalent rates of SAFI and urea fertilizers, respectively. Application of BSFFF at 7.5 t ha-1 significantly increased N uptake by up to 23% compared to the equivalent rate of SAFI. Likewise, application of BSFFF at 100 kg N ha-1 increased maize N uptake by 76% and 29% compared to SAFI and urea, respectively. Maize treated with BSFFF at 2.5 t ha-1 and 30 kg N ha-1 had higher nitrogen recovery efficiencies compared to equivalent rates of SAFI. The agronomic N use efficiency (AEN) of maize treated with 2.5 t ha-1 of BSFFF was 2.4 times higher than the value achieved using an equivalent rate of SAFI. Also, the AEN of maize grown using 30 kg N ha-1 was 27% and 116% higher than the values obtained using equivalent rates of SAFI and urea fertilizers, respectively. The NFE of BSFFF (108%) was 2.5 times higher than that of SAFI. Application rates of 2.5 t ha-1 and 30 kg N ha-1 of BSFFF were found to be effective in improving maize yield, while double rates of SAFI were required. Our findings demonstrate that BSFFF is a promising and sustainable alternative to commercial fertilizers for increased maize production.

The use of black soldier fly frass fertilizer (BSFFF) is being promoted globally. However, information on nitrogen (N) fertilizer equivalence (NFE) value and synchrony of N mineralization for crop production remains largely unknown. Comparative studies between BSFFF and commercial organic fertilizer (SAFI) were undertaken under field conditions to determine synchrony of N release for maize uptake. The BSFFF, SAFI, and urea fertilizers were applied at the rates of 0, 30, 60, and 100 kg N ha&minus, 1. The yield data from urea treated plots were used to determine the NFE of both organic inputs. Results showed that maize from BSFFF treated plots had higher N uptake than that from SAFI treated plots. High N immobilization was observed throughout the active growth stages of maize grown in soil amended with BSFFF, whereas soil treated with SAFI achieved net N release at the silking stage. Up to three times higher negative N fluxes were observed in SAFI amended soils as compared with BSFFF treated plots at the tasseling stage. The BSFFF applied at 30 and 60 kg N ha&minus, 1 achieved significantly higher NFE than all SAFI treatments. Our findings revealed that BSFFF is a promising and sustainable alternative to SAFI or urea for enhanced maize production.

Black soldier fly (BSF) (Hermetia illucens L.) is one of the most efficient bio-waste recyclers. Although, waste substrate amendments with biochar or gypsum during composting process are known to enhance nutrient retention, their impact on agro-industrial waste have not been documented. Hence, this study focuses on a comparative effect of agro-industrial waste amended with biochar and gypsum on BSF larval performance, waste degradation, and nitrogen (N) and potassium retention in frass fertilizer. Brewery spent grain was amended with biochar or gypsum at 0, 5, 10, 15 and 20% to determine the most effective rates of inclusion. Amending feedstock with 20% biochar significantly increased wet (89%) and dried (86%) larval yields than the control (unamended feedstock). However, amendment with 15% gypsum caused decrease in wet (34%) and dried (30%) larval yields but conserved the highest amount of N in frass. Furthermore, the inclusion of 20% biochar recorded the highest frass fertilizer yield and gave a 21% increase in N retention in frass fertilizer, while biomass conversion rate was increased by 195% compared to the control. Feedstock amendment with 5% biochar had the highest waste degradation efficiency. Potassium content in frass fertilizer was also significantly enhanced with biochar amendment. At maturity, frass compost with more than 10% inclusion rate of biochar had the highest cabbage seed germination indices (>100%). The findings of this study revealed that initial composting of biochar amended feedstocks using BSF larvae can significantly shorten compost maturity time to 5 weeks with enhanced nutrient recycling compared to the conventional composting methods.

Edible insects are increasingly being considered as food and feed ingredients because of their rich nutrient content. Already, edible insect farming has taken-off in Africa, but quality and safety concerns call for simple, actionable hazard control mechanisms. We examined the effects of traditional processing techniques&mdash, boiling, toasting, solar-drying, oven-drying, boiling + oven-drying, boiling + solar-drying, toasting + oven-drying, toasting + solar-drying&mdash, on the proximate composition and microbiological quality of adult Acheta domesticus and Ruspolia differens, the prepupae of Hermetia illucens and 5th instar larvae of Spodoptera littoralis. Boiling, toasting, and drying decreased the dry matter crude fat by 0.8&ndash, 51% in the order: toasting &gt, boiling &gt, oven-drying &gt, solar-drying, whereas the protein contents increased by 1.2&ndash, 22% following the same order. Boiling and toasting decreased aerobic mesophilic bacterial populations, lowered Staphylococcus aureus, and eliminated the yeasts and moulds, Lac+ enteric bacteria, and Salmonella. Oven-drying alone marginally lowered bacterial populations as well as yeast and moulds, whereas solar-drying alone had no effect on these parameters. Oven-drying of the boiled or toasted products increased the aerobic mesophilic bacteria counts but the products remained negative on Lac+ enteric bacteria and Salmonella. Traditional processing improves microbial safety but alters the nutritional value. Species- and treatment-specific patterns exist.

Heat processing is commonly used to prepare edible insects for consumption. This study aimed at determining the effect of boiling and subsequent oven roasting on Ruspolia differens’ nutrient composition, colour and odor compounds. Boiling leads to: a significant increase in protein and decrease in fat content on a dry matter basis; a minimal influence on its amino and fatty acids profile; a significant reduction in its ash content due to leaching of phosphorus, potassium and sodium; a significant increase in iron, zinc, copper, manganese and calcium content; and a fivefold reduction in the amount of vitamin B12. Insects are potential ingredients for animal feed and human food. Their suitability may be influenced by species and nutritional value. This study was aimed at determining the nutritional profile of four insects: Dipterans; black soldier fly (Hermetia illucens Linnaeus) family stratiomyidae and blue calliphora flies (Calliphora vomitoria Linnaeus) family Calliphoridae; and orthopterans; crickets (Acheta domesticus Linnaeus) family Gryllidae and grasshoppers (Ruspolia nitidula Linnaeus) family Tettigoniidae to establish their potential as alternative protein sources for animals (fish and poultry) and humans. Gross energy, crude protein, crude fat, crude fiber, carbohydrates, and total ash were in the ranges of 2028.11-2551.61 kJ/100 g, 44.31-64.90, 0.61-46.29, 5.075-16.61, 3.43-12.27, and 3.23-8.74 g/100 g, respectively. Hermetia illucens had the highest energy and ash content; C. vomitoria were highest in protein and fiber content, R. nitidula were highest in fat, whereas A. domesticus had the highest carbohydrate content. All insects had essential amino acids required for poultry, fish, and human nutrition. The arginine to lysine ratios of H. illucens, C. vomitoria, A. domesticus, and R. nitidula were 1.45, 1.06, 1.06, and 1.45, respectively. The fatty acids comprised of polyunsaturated fatty acids (PUFAs) and saturated fatty acids (SFAs). Palmitic acid (23.6-38.8 g/100 g of total fat) was the most abundant SFA, exception R. nitidula with 14 g/100 g stearic acid. Linoleic acid (190-1,723 mg/100 g) and linolenic acid (650-1,903 mg/100 g) were the most abundant PUFAs. Only C. vomitoria had docosahexaenoic acid. Background Accurate measurement of body composition in children and adolescents is important as the quantities of fat and fat-free mass have implications for health risk. The objectives of the present study were: to determine the reliability of Fourier Transform Infrared spectroscopy (FTIR) measurements and; compare the Fat Mass (FM), Fat Free Mass (FFM) and body fat percentage (%BF) values determined by bioelectrical impedance analysis (BIA) to those determined by deuterium dilution method (DDM) to identify correlations and agreement between the two methods. Methods A cross-sectional study was conducted among 203 children and adolescents aged 8–19 years attending schools in Kampala city, Uganda. Pearson product-moment correlation at 5% significance level was considered for assessing correlations. Bland Altman analysis was used to examine the agreement between of FTIR measurements and between estimates by DDM and BIA.. Reliability of measurements was determined by Cronbach’s alpha. Results There was good agreement between the in vivo D2O saliva enrichment measurements at 3 and 4 h among the studied age groups based on Bland-Altman plots. Cronbach’s alpha revealed that measurements of D2O saliva enrichment had very good reliability. For children and young adolescents, DDM and BIA gave similar estimates of FFM, FM, and %BF. Among older adolescents, BIA significantly over-estimated FFM and significantly under-estimated FM and %BF compared to estimates by DDM. The correlation between FFM, FM and %BF estimates by DDM and BIA was high and significant among young and older adolescents and for FFM among children. Conclusions Reliability of the FTIR spectroscopy measurements was very good among the studied population. BIA is suitable for assessing body composition among children (8–9 years) and young adolescents (10–14 years) but not among older adolescents (15–19 years) in Uganda. The body composition measurements of older adolescents determined by DDM can be predicted using those provided by BIA using population-specific regression equations.

The ever-increasing animal feed costs are driving many vulnerable communities involved in animal husbandry out of business. The high cost is mainly driven by the protein source, which represents the most expensive component in animal feed. In conventional feed, protein is obtained mainly from soybean and fish meal (SFM). The present study explored potential of partially replacing this SFM with black soldier fly prepupae meal (BSFPM) in Cobb 500 broiler chicken diets. A SFM-based diet was compared to three experimental diets formulated by partially substituting SFM with BSFPM at 13.8, 27.4, and 42.0% of the crude protein (CP) in the starter feed and 11.0, 37.2, and 55.5% of the CP in the finisher feed of diets D1, D2, and D3, respectively. Dietary effects on average daily feed intake, average daily body weight gain, feed conversion ratio, carcass characteristics, breast meat sensory attributes, and the economic implication of their use in broiler production were evaluated. Replacement of SFM with BSFPM did not affect daily feed intake, daily body weight gain, feed conversion ratio, aroma or taste of cooked breast meat. A 16.0% higher Cost Benefit Ratio and 25.0% better Return on Investment was recorded when the birds were reared on the highest concentration of black soldier fly (D3) compared to the conventional diet which was 19.0% more expensive. The implication of these findings for the promotion of insect mass production enterprises for animal feed protein, and their potential for income generation and job creation particularly in developing countries is discussed.

Edible insects are part of the diets of a significant proportion of rural populations in the tropics especially Africa and Asia, and their use as source of key nutrients for better nutrition is re-emerging. Indigenously, elemental methods are used to process the insects before they are consumed or sold in retail outlets. In recent years, better knowledge of processing, packaging and storage has become necessary because of commercialisation needs. A common processing approach involves drying after a brief heat-treatment step, and then milling into a powdered product which is sold to manufacturers or consumers as ingredient for processing final products. The hydration properties of dried powders of edible house cricket and black soldier fly larvae (BSFL) were studied with the aim of predicting shelf-life stability under typical packaging and storage temperatures experienced in the tropics. Moisture adsorption isotherms were determined gravimetrically at 25, 30 and 35 °C, over 0.11–0.97 water activity (aW) range, and the data fitted to various models. Sorption isotherms were of type II according to Brunauer classification indicating monolayer-multilayer sorption behaviour. Cricket powder exhibited higher hydration capacity, and aW of this product was less sensitive to temperature variation as compared to BSFL powder. In the two products, water exhibited transitions from bound- to free- state at ~5 g/100 g moisture content. Based on Heiss-Eichner model, a shelf-life of 7 months at 25 °C can be achieved if the cricket and BSFL powders are dried to ca. 5 g/100 g moisture content and packaged in 80 μm thick polyethylene films. At 35 °C the shelf-life of the cricket product is shortened three- to four-fold whereas the BSFL powder is unable to store.

Fish farming is faced with the challenge of high cost of feeds because of the cost of high quality protein needed for formulation of the feeds. Thus, there is urgent need for alternative protein sources. The effects of substituting freshwater shrimp meal (FWSM) with black soldier fly larvae meal (BSFM) or adult cricket meal (ACM) on physico-chemical properties of hot-extruded fish feed pellets were investigated. The FWSM protein in a 26 g/100 g protein fish feed formulation was substituted at 0, 25, 50 and 75%, and moisture content of the formulated blends adjusted to 10, 20 or 30 g/100 g prior to extrusion. Floatability, expansion rate, bulk density, durability index, water absorption index, water solubility index, and water stability of extruded pellets were determined. Sinking velocity and the total suspended and dissolved solids in water were determined for the optimal pellets. Pellet floatability was not influenced by the type of insect meal but the interaction between level of inclusion and moisture content of the feed at extrusion. Pellets with high floatability >90% were produced from all feed blends at 30 g/100 g moisture content. Expansion ratio, was not influenced by type of insect meal or the level of inclusion but by the moisture content whereby feed blends extruded at 30 g/100 g moisture gave pellets with high expansion ratio ~60%. Bulk density was influenced by the interaction of the three factors. Pellet durability and water absorption indices were not influenced by the investigated factors or their interactions. Processed pellets were generally highly durable (99%) out of water, but the stability in water was significantly influenced by the interaction of type of insect meal level of inclusion and moisture content at extrusion. Water solubility increased with increasing extrusion moisture. Overall, it was possible to process good quality extruded pellets with 75% BSFM or 75% ACM at 30 g/100 g feed moisture.

Animal food sources provide human beings with minerals considerably in adequate quantities. Fish is an indispensable reliable source of nutrients, as aquaculture is a sector that is fast growing and which provides 50% of the world’s fish production. However, fish production is hampered by the increasing costs of feeds due to the ever rising cost of fish meal, an integral component of fish feeds. Substituting fish meal with cheap, yet highly nutritious ingredients in fish feeds is therefore paramount. This study investigated the effects of substituting fish meal with adult cricket meal (ACM) and black soldier fly meal (BSFM) on minerals content of extruded fish feeds, where four levels of substitution (0, 25, 50 and 75%) were used. The cost of compound feed is a constraint in intensive fish and poultry farming, contributing 60-80% of the total production costs, 70% of which is due to fish and soy meal used as protein source. This review presents the extent to which insects have been utilised as an alternative protein source in feed in sub-Saharan Africa (SSA). A key word search of agricultural, biological and multi-disciplinary databases and academic search engines was conducted for literature on the extent of research and utilisation of insects in poultry and fish feed in SSA. There is limited published information on the practice as well as technical and economic feasibility of the use of insects as alternative protein ingredients in compound feed. This is likely because research on the subject is fairly recently initiated and yet to be published. Excluding South Africa, rearing, processing and use of insects is still at experimentation level at laboratory scale. Insects (grasshoppers, house fly maggots, Westwood larvae, termites and garden snail) meal replaced conventional protein sources by 10-100% without affecting the growth performance of fish and poultry. In some cases, insect based feed performed better than conventional feed. Nutritional composition data of insects published for SSA majorly focused on proximate composition and not characterisation of the nutritional quality. Several research and development projects on the technical and economic feasibility, social acceptability and potential social-economic impact are ongoing and expected to increase available data when completed. Published research confirms the potential of insects for use in poultry and fish production systems and mass production and processing of target insects is the next necessary step. Based on available and ongoing research, piloting and up-scaling the use of insects as alternative protein sources in animal feed in partnership with private sector in SSA is necessary. This will confirm and enhance the technical and economic feasibility of using of insects as an alternative protein source on a commercial scale.

BACKGROUND Extrusion processing offers the possibility of processing common beans industrially into highly nutritious and functional products. However, there is limited information on properties of extrudates from different beans varieties and their association with raw material characteristics and extrusion conditions. In this study, physicochemical properties of raw and extruded Bishaz, K131, NABE19, Roba1 and RWR2245 common beans were determined. The relationships between bean characteristics and extrusion conditions on the extrudate properties were analyzed. RESULTS Extrudate physicochemical and pasting properties varied significantly (P < 0.05) among bean varieties. Expansion ratio and water solubility decreased, while bulk density, water absorption, peak and breakdown viscosities increased as feed moisture increased. Protein exhibited significant positive correlation (P < 0.05) with water solubility index, and negative correlations (P < 0.05) with water absorption, bulk density and pasting viscosities. Dietary fibre, and iron showed positive correlation while total ash exhibited negative correlation with peak viscosity, final viscosity and setback. Similar trends were observed in principal component analysis. CONCLUSION Extrudate physicochemical properties were found to be associated with beans protein, starch, iron, zinc and fibre contents. Therefore, bean chemical composition may serve as an indicator for beans extrusion behavior and could be useful in selection of beans for extrusion.

The study was done to determine the knowledge, attitude and practices towards edible insects, their consumption and practices of harvesting and processing in Lango sub-region, with the aim of increasing their consumption and improving nutrition of the people. Data was collected using semi structured questionnaires and focus group discussions. Common insect orders used as food in the area included: Isoptera (termites), Orthoptera (grasshoppers, crickets), and Hymenoptera (honey bee broods). Winged termites (Macrotermes spp.), locally known as Ngwen was consumed by more than 97% of the respondents. Soldier termites (Syntermes soldiers), locally called okok, were consumed by 73% of the respondents and crickets (Brachytrupes spp.), locally known as odir, was consumed by 69% of respondents. These insects were seasonally abundant and consumed in households in seasons of availability. Winged and soldier termites were harvested by attraction to light at the termite mound and by ‘termite fishing’ technique, respectively. Grasshoppers were harvested by hand picking from cropland bushes. Women and children were more actively involved in collection of insects than men. Pan frying, roasting, boiling followed by sun drying were the most common methods of processing insects. Dried insects were either served as snacks or a side dish. A main dish locally known as alakena is prepared from freshly ground termites. Dried winged termites were preserved for consumption at a later date. Women and children consumed more edible insects than men. The results show that insects are important as a food resource to the rural poor. However, majority of the respondents did not know that insects are nutritious. Therefore there is need to popularise consumption of edible insects in and outside the subregion through research on nutritional values of insects and documenting the information and processing insects using modern techniques in order to increase its commercial value and availability of insect products in all seasons.
