People are exploring the potential application of 3D printing in food, biomedicine and environment, but it is urgent to find suitable bio-ink. Bio-ink compounded with starch and hydrocolloid can not only improve the rheology, structure and printability of starch-based edible bio-ink, but also endow it with other functional characteristics, so that it can be applied to food, biomedicine and even the environment, and meet the strategic needs of national health, green and sustainable development. In this paper, hydrocolloids are reviewed as potential means to regulate the physicochemical properties of starch, which endows it with good printability and presents excellent printing products. The specific applications of the bio-ink in the fields of food, biomedicine and environment in hypoglycemic, lipid-lowering, swallowable food, delivery, intelligent materials, and bio-sensor are also discussed. Then, the challenges and future development trends of realizing large-scale application are prospected. Proper physicochemical properties of starch-hydrocolloid are positively correlated with printability. The presentation of excellent printability has realized the application in different fields, not only satisfies most people, but also create benefits for some specific people. This review is expected to provide some theoretical guidance for the further development of 3D printing technology and its large-scale application.

Lignosulfonate-based colloidal spheres were prepared from sodium lignosulfonate and cetyltrimethylammonium bromide (NaLS/CTAB) complex through electrostatic and hydrophobic self-assembly. Due to the stronger hydrophobicity and UV-blocking performance, NaLS/CTAB colloids were easier to be blended with HDPE than lignosulfonate, and therefore applied to UV-absorbing thermoplastics. Results showed NaLS/CTAB colloidal spheres had a particle size of 160 nm with a polydispersity index of 0.081. NaLS/CTAB molecules started to form spheres at critical water content of 64 vol% when the initial concentration of NaLS/CTAB in EtOH was 0.5 mg/cm 3 and the obtaining of colloids was completed at a water content of 90 vol%. The size and polydispersity of spheres were well controlled by adjusting initial concentrations of NaLS/CTAB in EtOH. Since NaLS/CTAB colloidal spheres retained phenylpropane units and phenolic hydroxyl groups of NaLS, NaLS/CTAB/HDPE composites displayed excellent UV-absorbing properties. Meanwhile, the mechanical property of NaLS/CTAB/HDPE composites was also superior to that of frequently-used CaCO 3 /HDPE materials in industry, reaching the requirement of industrial uses. However, too high additions would result in the increased agglomeration of NaLS/CTAB spheres in HDPE, and thus the deteriorated mechanical property. Additionally, the added spheres played a role of "ball", which caused the decreased viscosity, improved flowability and processability of composites., (Copyright © 2022 The Authors. Food-grade colloidal particles and complexes, which are formed via modulation of the noncovalent interactions between macromolecules and natural small molecules, can be developed as novel functional ingredients in a safe and sustainable way. For this study was prepared a novel zein/tannic acid (TA) complex colloidal particle (ZTP) based on the hydrogen-bonding interaction between zein and TA in aqueous ethanol solution by using a simple antisolvent approach. Pickering emulsion gels with high oil volume fraction (φ(oil) > 50%) were successfully fabricated via one-step homogenization. Circular dichroism (CD) and small-angle X-ray scattering (SAXS) measurements, which were used to characterize the structure of zein/TA complexes in ethanol solution, clearly showed that TA binding generated a conformational change of zein without altering their supramolecular structure at pH 5.0 and intermediate TA concentrations. Consequently, the resultant ZTP had tuned near neutral wettability (θ(ow) ∼ 86°) and enhanced interfacial reactivity, but without significantly decreased surface charge. These allowed the ZTP to stabilize the oil droplets and further triggered cross-linking to form a continuous network among and around the oil droplets and protein particles, leading to the formation of stable Pickering emulsion gels. Layer-by-layer (LbL) interfacial architecture on the oil-water surface of the droplets was observed, which implied a possibility to fabricate hierarchical interface microstructure via modulation of the noncovalent interaction between hydrophobic protein and natural polyphenol.

Hydrophobic particles based on dodecyl 3,4,5-trihydroxybenzoate (LG) were coupled onto the surface of cellulose nanofibrils (CNFs) and silica by treatment with a multicomponent colloidal system (MCS) derived from the laccase-mediated reaction of LG in the presence of a sulfonated lignin (SL). Surface modification upon treatment with MCS was monitored in situ and in real time by quartz crystal microgravimetry. The colloidal stability of MCS and its components in water was followed by measuring space- and time-resolved light transmission and back scattering. The sulfonated lignin increased dispersion stability and reduced the characteristic MCS particle size [from ≈4 to ≈80 nm, according to AFM and dynamic light scattering (DLS)]. It also facilitated the surface enzymatic reaction that led to adsorption and coupling of MCS onto CNFs and silica surfaces. The combined effect of reduced surface energy and surface roughness by MCS treatment produced an increase in water contact angle on CNFs and silica of about 90 and 80°, respectively. Surface pretreatment with chitosan further increased the extent of MCS adsorption on the surfaces. This method represents a sustainable alternative to traditional approaches for cellulose hydrophobization and a step forward in implementing green routes for surface modification., (© 2014 WILEY-VCH Verlag GmbH & Co.
