- Cooking (Flowers)--History, Plants, Edible
- Abstract
Most of us like to look at them, but why on earth would anyone want to eat them? As Constance L. Kirker and Mary Newman show in this book, however, flowers have a long history as a tasty ingredient in a variety of cuisines. The Greeks, Romans, Persians, Ottomans, Mayans, Chinese, and Indians all knew how to cook with them for centuries, and today contemporary chefs use them to add something special to their dishes. Edible Flowers is the fascinating history of how flowers have been used in cooking, from ancient Greek dishes to the today's molecular gastronomy and farm-to-table restaurants. Looking at flowers'natural qualities: their unique and beautiful appearance, their pungent fragrance, and their surprisingly good taste, Kirker and Newman proffer a bouquet of dishes—from soups to stews to desserts to beverages—that use them in interesting ways. Tying this culinary history into a larger cultural one, they show how flowers'cultural, symbolic, and religious connotations have added value and meaning to dishes in daily life and special occasions. From fried squash blossoms to marigold dressings, this book rediscovers the flower not just as something beautiful but as something absolutely delicious.

26. Edible Memory : The Lure of Heirloom Tomatoes and Other Forgotten Foods
- Author

- Subjects
- Heirloom varieties (Plants), Food--Social aspects
- Abstract
Each week during the growing season, farmers'markets offer up such delicious treasures as brandywine tomatoes, cosmic purple carrots, pink pearl apples, and chioggia beets—varieties of fruits and vegetables that are prized by home chefs and carefully stewarded by farmers from year to year. These are the heirlooms and the antiques of the food world, endowed with their own rich histories. While cooking techniques and flavor fads have changed from generation to generation, a Ribston Pippin apple today can taste just as flavorful as it did in the eighteenth century. But how does an apple become an antique and a tomato an heirloom? In Edible Memory, Jennifer A. Jordan examines the ways that people around the world have sought to identify and preserve old-fashioned varieties of produce. In doing so, Jordan shows that these fruits and vegetables offer a powerful emotional and physical connection to a shared genetic, cultural, and culinary past. Jordan begins with the heirloom tomato, inquiring into its botanical origins in South America and its culinary beginnings in Aztec cooking to show how the homely and homegrown tomato has since grown to be an object of wealth and taste, as well as a popular symbol of the farm-to-table and heritage foods movements. She shows how a shift in the 1940s away from open pollination resulted in a narrow range of hybrid tomato crops. But memory and the pursuit of flavor led to intense seed-saving efforts increasing in the 1970s, as local produce and seeds began to be recognized as living windows to the past. In the chapters that follow, Jordan combines lush description and thorough research as she investigates the long history of antique apples; changing tastes in turnips and related foods like kale and parsnips; the movement of vegetables and fruits around the globe in the wake of Columbus; and the poignant, perishable world of stone fruits and tropical fruit, in order to reveal the connections—the edible memories—these heirlooms offer for farmers, gardeners, chefs, diners, and home cooks. This deep culinary connection to the past influences not only the foods we grow and consume, but the ways we shape and imagine our farms, gardens, and local landscapes. From the farmers'market to the seed bank to the neighborhood bistro, these foods offer essential keys not only to our past but also to the future of agriculture, the environment, and taste. By cultivating these edible memories, Jordan reveals, we can stay connected to a delicious heritage of historic flavors, and to the pleasures and possibilities for generations of feasts to come.

- Abstract
“Fascinating...Buchmann's knowledge and enthusiasm jump off the page.” —The Wall Street Journal “An extraordinarily good book.” —Edward O. Wilson The lively and definitive story of the beauty, sexuality, lore, economics, and ecology of the world's flowers, written by a devoted scientist and illustrated with his stunning photographs.Flowers—and the fruits they often become—feed, clothe, and inspire us. Indeed, they have done so for all of human history. Yet although we use flowers to celebrate important occasions, to express love, and to please our senses, we know little about them, their functions in nature, or even how we depend on them. In a volume that will delight gardeners, naturalists, cooks, artists, or anyone interested in history or culture, pollination ecologist Stephen Buchmann serves as an expert guide through the fascinating world of flowers. He explains how other species relate to flowers in ways crucial to the natural world. Next he takes us on an engaging exploration of the roles flowers play in the production of food, spices, medicines, and perfumes. Flowering plants, Buchmann then shows, have long served as inspirational themes in art and literature. Flowers have in fact so thoroughly seduced us that we now buy some ten million a day, driving breeders to create infinite varieties and unusual blooms. In this cultural and natural investigation of floral history, Stephen Buchmann's masterful narrative illuminates just why there is, indeed, a reason for flowers.

- Food--Social aspects, Sustainable urban development, City planning, Sociology, Urban
- Abstract
Cities are home to over fifty percent of the world's population, a figure which is expected to increase enormously by 2050. Despite the growing demand on urban resources and infrastructure, food is still often overlooked as a key factor in planning and designing cities. Without incorporating food into the design process – how it is grown, transported, and bought, cooked, eaten and disposed of – it is impossible to create truly resilient and convivial urbanism.Moving from the table and home garden to the town, city, and suburbs, Food and Urbanism explores the connections between food and place in past and present design practices. The book also looks to future methods for extending the'gastronomic'possibilities of urban space. Supported by examples from places across the world, including the UK, Norway, Germany, France, Spain, Portugal, Greece, Romania, Australia and the USA, the book offers insights into how the interplay of physical design and socio-spatial practices centred around food can help to maintain socially rich, productive and sustainable urban space. Susan Parham brings together the latest research from a number of disciplines – urban planning, food studies, sociology, geography, and design – with her own fieldwork on a range of foodscapes to highlight the fundamental role food has to play in shaping the urban future.

- Abstract
Covering topics ranging from the establishment of the Gulf Coast shrimping industry in 1800s to the Korean taco truck craze in the present day, this book explores the widespread contributions of Asian Americans to U.S. food culture.Since the late 18th century, Asian immigrants to the United States have brought their influences to bear on American culture, yielding a rich, varied, and nuanced culinary landscape. The past 50 years have seen these contributions significantly amplified, with the rise of globalization considerably blurring the boundaries between East and West, giving rise to fusion foods and transnational ingredients and cooking techniques. The Asian American population grew from under 1 million in 1960 to an estimated 19.4 million in 2013. Three-quarters of the Asian American population in 2012 was foreign-born, a trend that ensures that Asian cuisines will continue to invigorate and enrich the United States food culture. This work focuses on the historical trajectory that led to this remarkable point in Asian American food culture. In particular, it charts the rise of Asian American food culture in the United States, beginning with the nation's first Chinese'chow chows'and ending with the successful campaign of Indochina war refugees to overturn the Texas legislation that banned the cultivation of water spinach—a staple vegetable in their traditional diet. The book focuses in particular on the five largest immigrant groups from East and Southeast Asia—those of Chinese, Japanese, Korean, Filipino, and Vietnamese descent.Students and food enthusiasts alike now have a substantial resource to turn to besides ethnic cookbooks to learn how the cooking and food culture of these groups have altered and been integrated into the United States foodscape. The work begins with a chronology that highlights Asian immigration patterns and government legislation as well as major culinary developments. The book's seven chapters provide an historical overview of Asian immigration and the development of Asian American food culture; detail the major ingredients of the traditional Asian diet that are now found in the United States; introduce Asian cooking philosophies, techniques, and equipment as well as trace the history of Asian American cookbooks; and outline the basic structure and content of traditional Asian American meals. Author Alice L. McLean's book also details the rise of Chinese, Japanese, Korean, Filipino, and Vietnamese restaurants in the United States and discusses the contemporary dining options found in ethnic enclaves; introduces celebratory dining, providing an overview of typical festive foods eaten on key occasions; and explores the use of food as medicine among Asian Americans.

Readers of this expansive, three-volume encyclopedia will gain scientific, sociological, and demographic insight into the complex relationship between plants and humans across history.Comprising three volumes and approximately half a million words, this work is likely the most comprehensive reference of its kind, providing detailed information not only about specific plants and food crops such as barley, corn, potato, rice, and wheat, but also interdisciplinary content that draws on the natural sciences, social sciences, and humanities. The entries underscore the fascination that humans have long held for plants, identifies the myriad reasons why much of life on earth would be impossible without plants, and points out the intertwined relationship of plants and humans—and how delicate this balance can be. While the majority of the content is dedicated to the food plants that are essential to human existence, material on ornamentals, fiber crops, pharmacological plants, and carnivorous plants is also included.

- Abstract
When Eric Toensmeier and Jonathan Bates moved into a duplex in a run-down part of Holyoke, Massachusetts, the tenth-of-an-acre lot was barren ground and bad soil, peppered with broken pieces of concrete, asphalt, and brick. The two friends got to work designing what would become not just another urban farm, but a'permaculture paradise'replete with perennial broccoli, paw paws, bananas, and moringa—all told, more than two hundred low-maintenance edible plants in an innovative food forest on a small city lot. The garden—intended to function like a natural ecosystem with the plants themselves providing most of the garden's needs for fertility, pest control, and weed suppression—also features an edible water garden, a year-round unheated greenhouse, tropical crops, urban poultry, and even silkworms. In telling the story of Paradise Lot, Toensmeier explains the principles and practices of permaculture, the choice of exotic and unusual food plants, the techniques of design and cultivation, and, of course, the adventures, mistakes, and do-overs in the process. Packed full of detailed, useful information about designing a highly productive permaculture garden, Paradise Lot is also a funny and charming story of two single guys, both plant nerds, with a wild plan: to realize the garden of their dreams and meet women to share it with. Amazingly, on both counts, they succeed.

-
Jim PathFinder Ewing and Jim PathFinder Ewing
- Abstract
When did growing and eating food cease to be considered sacred? How did food lose its connection with health? Why is our food system out of control? What simple steps can we each take to profoundly change our world as a healthier place for us all? Journalist, author Jim PathFinder Ewing answers these and other questions with his new book, Conscious Food: Sustainable Growing, Spiritual Eating. Ewing provides a background on the emergence of agriculture and the declining connection with food as society evolved, particularly during times of war, and scrutinizes today's'conventional'farming that relies upon deadly toxins and unsustainable fossil fuels. The book outlines how modern people can avoid being victims of biocultural evolution and the resultant entropy of declining global and personal health--and instead contribute to the movement toward mindful food choices and better world health, both physically and spiritually. Ewing discusses how society can nurture the unseen Spirit world that permeates plants through adopting nondenominational spiritual understandings, and includes how-to examples for growing organic food and fostering a supportive community and urban agriculture, as well as notes for expanded resources.

This thoroughly engaging encyclopedia considers the rich diversity of unfamiliar foods eaten around the world. The title They Eat That?: A Cultural Encyclopedia of Weird and Exotic Food from around the World says it all. This fun encyclopedia, organized A–Z, describes and offers cultural context for foodstuffs people eat today that might be described as'weird'—at least to the American palate. Entries also include American regional standards, such as scrapple and chitterlings, that other regions might find distasteful, as well as a few mainstream American foods, like honey, that are equally odd when one considers their derivation. A long narrative entry on insects, for example, discusses the fact that insects are enjoyed as a regular part of the diet in some Asian, South and Central American, and African countries. It then looks at the kinds of insects eaten, where and how they are eaten, cultural uses, nutrition, and preparation. Each of the encyclopedia's 100 entries includes a representative recipe or, for a food already prepared like maggoty cheese, describes how it is eaten. Each entry ends with suggested readings.
