Abstract

The article describes the use of Dionex Corp.'s Ion Chromatography with Integrated Pulsed Amperometric Detection features to determine biogenic amines in spoiled cheese. The system was used to detect a relatively high concentration of tyramine which increased more than four times its original concentration while histamine only increased slightly.
