Sub-regional employment change in the UK's hotel and catering industry between 1989 to 1991 are studied. Results show that the factors influencing employment change include tourism, local economic cycles and population change. Employment fell in canteens, clubs and eating places while jobs increased in take-aways, pubs and other tourist accommodations. Employment in the hotel sector also remained unchanged.

A regional employment survey of the UK's hospitality industry finds that Merseyside in northern England has shown the greatest net employment gain between 1989-91 with an increase of 12.3%. The top five areas also include Lancashire, Derbyshire and South Yorkshire. Northern England is shown to have performed better than the more affluent south in the survey, with just 11 of the 28 counties showing hospitality employment increases being in southern England or East Anglia.

The workforce in the UK hotel and catering industries fell by 2% or 23,000 jobs nationwide from 1989-91. There were marked differences in different counties, with the greatest concentration of jobs going in urban areas around London and Manchester and in West Yorkshire. In part due to population decline, the highest percentage of jobs were lost in regional areas of Scotland, while employment in the Scottish borders was up by more than 20%. Employment in the south of the UK was more affected by recession.

Scotland and Northern Ireland are two of the most economically depressed areas of Britian but the hospitality industry in both areas has grown during the 1980s, providing an increase in jobs in the sector of 13% in Scotland and 35% in Nothern Ireland. Most hospitality jobs are concentrated in urban areas but Scotland also has significant numbers of hospitality workers in rural areas where they service the tourist trade. Northern Ireland is relatively undeveloped as a market for the industry. Neither area is expected to see much increase in hospitality employment in the 1990s.

Employment in the hospitality industry in the North of England is marked by contrast. The urban areas experienced little growth during the 1980s while some rural counties saw jobs increase by over 30%. Greater Manchester has the most jobs in the region and was second in the whole of England. Northumberland has the least jobs, reflecting the low population density. The recession has been later in the North of England but has affected the Western counties worst. Little growth in jobs is predicted for the future.

Employment in the catering industry increased by over 60% in the South of England during the 1980s. Cornwall had the lowest growth rate of three percent while London achieved 14%. Since 1990, the recession has affected the region with jobs declining at the rate of 10% in London and between nought and four percent in the rest of the region. This compares with a national decline of 2.2% A small annual growth of between 1.7 and 1.9 percent is predicted for the years from 1993 to 2000 but London is likely to see further decline. London's statistics are exceptional.

Employment in the hospitality industry in Central Britain increased by 35% during the 1980s but has declined by 2% since 1990. The region includes Wales where employment has declined by 3% and the prospects for growth in hotel and catering jobs are poor. Areas of the Midlands where population is expanding are likely to recover from the fall in jobs more rapidly than other parts of the region.
