The utilization of nutritious side streams from food industry for human consumption - the so-called "upcycling" - is desirable to introduce healthy and sustainable food products into the market. While snack products with upcycled ingredients are on the rise, their applications in bakery and sweet pastry products is quite challenging due to side streams differing from the composition and functionality of traditional ingredients. This makes clear, that product design should be carried out interdisciplinary and based on an understanding of the fundamental composition and interplay of ingredients, as well as the effect on the organoleptic properties of intermediates and end products such as texture and taste. The overview on side streams and their potential outlined in this article may be a first step to understanding their relevance in cereal technology and the need to thoroughly understand their properties for food product development. Wheat is an important staple food worldwide, but often contaminated with moulds, which in specific cases, form toxic mycotoxins as secondary metabolites. The aim of this study was to investigate different preprocessing methods of wheat kernels that allow active agents such as functional microorganisms and enzymes to pass through the water-repellent hyaline layer in order to break down possible mycotoxins into less or non-toxic compounds. To be able to assess the processing efficacy, a qualitative visualisation method was developed and implemented. A wide range of processing techniques to perforate the outer layers while maintaining structural integrity of the kernel were tested, including ohmic heating, pulsed electric fields (PEF), ultrasonication, cold needle perforation (CNP), heat stress and steam explosion. It was shown that both the application of PEF as well as CNP are promising paths to perforate the outer wheat layers. The effectiveness of CNP was shown through a combined microscopic approach involving scanning electron microscopy and fluorescence microscopy with fluorescing particles in the size range of both enzymes and lactic acid bacteria.
