Background/aim: Recommendations from the 2015 Dietary Guidelines for Americans for the prevention of chronic diseases include eating a variety of nutrient dense foods such as fruits and vegetables. Fruits and vegetables in particular are beneficial because of their cardio-protective antioxidant contents, satiating high fiber content, and low-fat content. Adequate intake of fruits, vegetables, and other nutrient-dense foods low in fat is a key component of food literacy and can help in the prevention and treatment of chronic diseases such as diabetes, obesity, and heart disease. Food literacy is a new concept with many components aimed at improving one’s lifelong relationship with food. To our knowledge, the effectiveness of grocery store nutrition education interventions using these components has not been qualitatively assessed.Objective: Our goal was to conduct a review of supermarket-based nutrition intervention randomized controlled trials for inclusion of 4 key elements of food literacy education (dietary planning and management, selecting healthy foods, preparing healthy foods, and understanding the connection between healthy foods and health and well-being) and to qualitatively examine study outcomes and findings in relation to the included food literacy elements. Design: Systematic review of randomized controlled trials (RCT’s) (search performed September of 2018, including studies from 2008 to 2018) using EBSCOHost and PubMed databases. Inclusion criteria: randomized controlled study, nutrition education interventions taking place in a grocery store, supermarket, or corner store (real or simulated), a main outcome aimed at improving diet quality (i.e. increasing fruit and vegetable intake or purchasing, overall diet quality) or improving a metabolic parameter (BMI, blood pressure, etc.). Exclusion criteria: Interventions studying the effects of a price discount/price manipulation, or food item availability manipulation alone. For studies that fit these criteria, we thoroughly reviewed the educational components of each intervention to determine how these components aligned with those of Vidgen and Gallagos’ “eleven components of food literacy derived from the Expert and Young People’s Studies”. These eleven components were grouped into four domains identified as “core” or “essential” to food literacy. We qualitatively evaluated the interventions for inclusion of education and skills training across the 4 domains and examined study outcomes in relation to this coverage. Results: Of the 8 retail-based intervention studies that met inclusion criteria, all 8 included nutrition education that contained food literacy content in one or more of the 4 domains of the Vidgen and Gallegos food model: Plan/Manage, Select, Prepare, or Eat. Of the 8 studies, 2 had significant findings in the nutrition education only group without the use of price discounts, as well as face-to-face nutritionist or dietitian nutrition education. Both of these studies had 3 or more food literacy domains covered in the intervention.Conclusion: Grocery store nutrition education interventions addressing several or all domains of food literacy, with in-person dietitian or nutrition educator contact, may be helpful in improving ones purchasing or intake of fruits and vegetables. However, more homogeneous intervention designs, settings, and outcome measures, as well as quantitative analyses, are needed in order to make stronger, more definitive conclusions.

Imagine a grocery store that physically helps you to make healthy decisions for you. Your Twinkies, Hoho's, and other processed foods are all available and within sight, but you've got to work for them. In the wake of challenges that Americans face every day, this thesis project is putting a magnifying glass to (hi)stories and the human experience, and promoting change for American suburban and urban grocery stores to be health-fitness machines that we need them to be in order to help those of us on a quest to stay fit and healthy. With the information age pretty much exploding- as we are able to do a search for just about anything on Google, lack of information is not necessarily the problem. While gimmicky short term dieting fads come and go, an architectural model solution can set the foundation and structure to sustain progress. Let's look to the origins of architecture, labyrinths are built of walls, but if we are not careful, we can let them lead us to dead ends. Let's look to the origins of the marketplace, where fresh foods are taken directly from the source. For many of us, the modern American grocery store is the origin of our energy, where we will return again and again. It is our food source. It might be one root of our society's increasing levels of unhealthy weight gain, but also the source of opportunity to challenge the current design of the boxed store.

During gentrification and urban renewal efforts, there is the possibility for two or more different socio-economic and/or cultural groups to exist within one area. This thesis looks to see how these groups can coexist together and possibly create a community.The building typology found in Over The Rhine of storefront on the ground and housing above will be developed further. The fact that everyone in the neighborhood needs to procure food is utilized, making the grocery store a catalyst for community. The residential componant will not only house people, but engage the street front as well as itself. In order to do this, the project is created on the foundation of dynamic interaction between the private and public, the building and the street, and people with people.

This thesis examines whether children's food environment, especially food stores that have fresh produce, affects obesity prevalence among elementary school children in the state of Arkansas. Misclassified food outlet types in the Dun and Bradstreet commercial data set were first corrected and then food environment measures were computed and aggregated to geographic regions corresponding to school attendance areas. After applying classical panel estimation, it was found that the fixed effects model fit the data best. Results indicate that an additional supermarket within a one-mile radial of the census neighborhood block center will bring down childhood obesity prevalence by 0.58 percent, whereas associations between densities of supermarkets within farther buffers and children's overweight status were not found. In addition, distance from neighborhood block center to closest supermarkets did not seem to play a role in determining children's BMI, nor did presence of dollar, convenience and drug stores. Finally, fixed effects models incorporating spatial lags and spatial errors were estimated. Results showed no significant spatial effects.

Grocery store associates in the deli-bakery departments serve and prepare an increasing amount of ready-to-eat foods. This increases the need for a detailed, effective food safety training program in retail grocery establishments to prevent food borne illness. This research examines food safety knowledge, training preferences, needs, and current practices of grocery stores deli-bakery employees in Southwest and Southern Virginia. This research had two phases. Phase I: employees completed a thirty-four question needs assessment survey concerning background, food safety training needs, preferences and knowledge. Phase 2: 15 employees (from phase 1 locations) food behaviors were observed for approximately six hours each (89.05 hours total). Observational data collection focused on glove use, cross-contamination, and hand washing. The results showed that most grocery food handlers desired hands-on, interactive and one-on-one training that occurs frequently, but is short: less than two hours in length. Overall, most grocery food handlers had general safe food handling knowledge; however, the observational behavior data indicates behaviors do not reflect their knowledge. Greater than 95% understanding was found on the subjects of hand washing and glove use; however, these items were observed practiced incorrectly the most with bare hand contact with ready-to-eat foods and lack of hand washing prior to glove use. The creation of short, hands-on or interactive trainings for retail grocery food handlers that focuses on changing food handling and preparation behaviors may be more effective than current training.

Quality nutritional goods aren’t as readily available to the urban poor. The supermarket distribution chain encounters too many obstacles within the city to be successful in providing goods at prices as effectively as its suburban counterparts. Urban poor households struggle to maintain their food budgets. Residents of these neighborhoods are often aware of the implications of a poor diet, but aren’t confident enough in their knowledge of nutrition to correct it. Because of this, many of them are overweight, in poor health, and believe they’re powerless to change. The functions of the urban supermarket must evolve to meet these nutritional and economic needs. The architecture also needs to evolve to reflect these changes while serving as an icon for the community. The “big-box” structure isn’t an inviting place to make smart healthy choices. The rejection of this mentality must be reflected in the architecture or its differentiation will be lost.

Meaning in architecture—of one form or another—is arguably what most architects intend to produce in their work. However, as William Hubbard points out in Complicity and Conviction: Steps Toward an Architecture of Convention, much of what architects deem meaningful in design fails to reach the lay person. A dichotomy exists between what the architect and the lay person value in architecture. Because architects do not attempt to find value beyond this dichotomy, it is reinforced and the majority of buildings constructed today lack meaningful design. In a world of increasing dependence on consultants, where the role of the architect is continually diminished, a lack of value in design not only poses a problem for the profession, but makes the everyday world less rich. The specific meanings that each person takes from a building are different and impossible to predict with much accuracy. An architecture that is designed to engage people of all walks of life however, provides the opportunity for finding meaning. But how does an architect design to engage people? An “architecture of reality” focuses on the phenomenological experiences people have in the built environment. When buildings center on this experience and enhance it, people become more aware of their surroundings and are more engaged. This thesis proposes that by designing an architecture of reality, architecture will be more valuable to people. The aim of this thesis is to propose criteria, based on how people experience buildings, which can be used to design any type of architecture. These criteria which when experienced lead to a sense of clarity and awareness in the everyday, are adapted from theoretical texts and built work. This awareness is the key to an engaging architecture—not only monumental architecture, but to less prestigious building types. Appeal in the everyday will translate into an inherent value in design, and help the profession of architecture to gain a more significant role in the lives of many.

An exploratory field study was conducted to examine internal and external factors that influence adolescents' consumer behavior when serving as the family purchasing agents. Demographic, lifestyle, and marketing activities were examined to determine the influences that affect whether the adolescent will purchase the preferred family brands or other brands. Participating adolescents were sent by their parents to the grocery store on two separate occasions to purchase four preselected grocery items. The brands purchased were recorded and compared to the preferred brand names provided by the parents. While no statistical significance was found, occasional trends were observed. The analysis indicated that adolescents who experience a pluralistic family communication style will purchase products other than the preferred household brands. Adolescents who are exposed to television and radio tend to deviate more from the preferred family brands more often than do adolescents with less media exposure. Adolescents who work are more likely to go to the grocery store more often for their families than do nonworking adolescents. Also, adolescents seem to possess a price sensitivity to both high and low-involvement grocery items.
