This study investigated the efficacy of ultra-high pressure homogenization (UHPH) in the presence or absence of added hydrocolloids for enhancing a range of physic-chemical properties of soymilk-which are important for extending shelf-life. Soymilk preparations containing different concentrations (0.01%, 0.02%, and 0.05%, w/v) of 2 different hydrocolloids (κ-carrageenan, κ-C, and gum Arabic, GA) were subjected to 3 different levels of UHPH (70, 140, and 210 MPa) and stored in sterilized containers at 4 °C. Emulsion properties of the soymilk preparations were analyzed over a period of 5 weeks. The results showed that soymilk with 0.05% κ-C had markedly improved storage properties, evident by significantly (P < 0.05) enhanced surface energy and absolute ζ potential values compared to the unhomogenized soymilk with no hydrocolloid (16% and 39% augmentations, respectively) at the 1st week of storage. This trend continued throughout the entire period of study. The soymilk containing 0.05% κ-C also exhibited significantly (P < 0.05) lower (60%) mean globular particle size at the initial week compared to the latter ones and maintained the trend throughout the 3rd week of storage. The study can potentially lead to a considerable economic benefit to the soymilk industry by providing valuable information to extend shelf-life of soymilk., Practical Application: Soymilk is one of the most important soy products, and as a beverage, it is rapidly gaining popularity in the Western markets. However, it tends to form precipitates during storage to affect quality of the product. This study used a 2-prong approach of ultra-high pressure homogenization and addition of hydrocolloids to prevent aggregation of soymilk particles and the retention of antioxidant capacity. The antimicrobial activity of various essential oils and carvacrol was determined on fresh raw catfish fillets against a 4-strain Listeria monocytogenes mixture representing serotypes 1/2b, 3b, 4b, and 4c that were predominantly isolated from catfish processing environments. Thyme oil, oregano oil and carvacrol exhibited concentration and time dependent responses in broth against L. monocytogenes; for example 0.5% concentrations resulted in 4 log CFU/mL reduction within 30 min whereas 0.1% concentrations required more than 24 h for the same level of reduction. Lemon, orange, and tangerine oils, at 0.5% showed listeriostatic effect in which 4 log CFU/mL of the initial L. monocytogenes load was unchanged at 4 °C in 10 d whereas 1% concentrations were listericidal in a time dependent manner. Apart from carvacrol, efficacy of tested essential oils in reducing L. monocytogenes and total microbial load from catfish fillet was very limited. Dipping treatment of catfish fillets in 2% carvacrol solution for 30 min at 4 °C reduced L. monocytogenes to an undetectable level from their initial load of 5 log CFU/g and reduced total microbial load from catfish fillets by approximately 5 log CFU/g. Unlabelled: Blueberries for the frozen market are washed but this process sometimes is not effective or further contaminates the berries. This study was designed to optimize conditions for hot water treatment (temperature, time, and antimicrobial concentration) to remove biofilm and decrease microbial load on blueberries. Scanning electron microscopy (SEM) image showed a well-developed microbial biofilm on blueberries dipped in room temperature water. The biofilm consisted of yeast and bacterial cells attached to the berry surface in the form of microcolonies, which produced exopolymer substances between or upon the cells. Berry exposure to 75 and 90 °C showed little to no microorganisms on the blueberry surface; however, the sensory quality (wax/bloom) of berries at those temperatures was unacceptable. Response surface plots showed that increasing temperature was a significant factor on reduction of aerobic plate counts (APCs) and yeast/mold counts (YMCs) while adding Boxyl® did not have significant effect on APC. Overlaid contour plots showed that treatments of 65 to 70 °C for 10 to 15 s showed maximum reductions of 1.5 and 2.0 log CFU/g on APCs and YMCs, respectively; with acceptable level of bloom/wax score on fresh blueberries. This study showed that SEM, response surface, and overlaid contour plots proved successful in arriving at optima to reduce microbial counts while maintaining bloom/wax on the surface of the blueberries., Practical Application: Since chemical sanitizing treatments such as chlorine showed ineffectiveness to reduce microorganisms loaded on berry surface (Beuchat and others 2001, Sapers 2001), hot water treatment on fresh blueberries could maximize microbial reduction with acceptable quality of fresh blueberries., (© 2011 Institute of Food Technologists®)

Sodium or potassium salts such as lactate and acetate can be used to inhibit the growth of spoilage bacteria and food-borne pathogens, and thereby prolong the shelf-life of refrigerated seafood. However, minimal information is available regarding the combined effects of potassium salts (acetate and lactate) with an agglomerated phosphate blend on the quality and safety of refrigerated catfish fillets. The objective of this study was to determine the microbiological and quality characteristics of marinated catfish fillets treated with organic acid salts. Catfish fillets were vacuum-tumbled with a brine solution with and without the added organic acid salts, at 10% over initial, raw weight prior to tray-packing and storage at 4 °C for 14 d. Fillets were evaluated for yields, color, pH, tenderness, consumer acceptability, and shelf-life. No differences (P > 0.05) existed among the treated and untreated fillets with regards to solution pick-up and pH, but all treated fillets increased (P < 0.05) cooking yields and Intl. Commission on Illumination (CIE) a* values, and decreased (P < 0.05) CIE L* and b* values in the catfish fillets when compared to the untreated fillets. The fillets treated with a combination of potassium acetate and potassium lactate had lower (P < 0.05) psychrotrophic plate counts and lower spoilage scores than the control treatments on days 7, 10, and 14. In addition, consumers preferred (P < 0.05) treated catfish fillets (fried) with respect to appearance, flavor, and overall acceptability over the negative control. Triclosan (TCS) and triclocarban (TCC), widely used as antibacterial agents, have been frequently detected in biosolids. Biosolids land application may introduce pharmaceuticals and personal care products (PPCPs) such as TCS and TCC into the environment. Microcosm studies were conducted to investigate TCS and TCC transformation in Marietta fine loam and McLaurin coarse loam. Both compounds were spiked into the soils with and without biosolids amendment under non-sterilized and sterilized conditions and incubated aerobically at 30 degrees C for up to 100 d. In both soils, transformation of TCS followed second-order reaction kinetics, with estimated reaction rate constants of (5.27 +/- 0.920) x 10(-1) and (9.13 +/- 1.58) x 10(-2) (mg kg(-1))(-1) d(-1) for Marietta fine loam and McLaurin coarse loam, respectively. Transformation of TCC in both soils was slower than that for TCS. After 100 d, 53 +/- 1% and 71 +/- 2% of the initially added TCC and only 2.8 +/- 0.35% and 6.2 +/- 0.80% of initially added TCS remained in Marietta fine loam and McLaurin coarse loam, respectively. The transformation of both compounds were faster in the Marietta fine loam (pH 7.8; 1.8% organic matter) than in the McLaurin coarse loam (pH 4.7; 0.65% organic matter). Our result suggests that biotic processes are more of a controlling factor affecting TCS transformation, whereas abiotic processes may affect TCC transformation more significantly. Addition of biosolids to the two soils slowed the transformation of both compounds, indicating interactions between both compounds and biosolids may adversely affect their transformation in soils, an important factor that must be included in models predicting environmental fate of biosolids-associated PPCPs.

Randomized complete block designs with 3 replications were utilized to evaluate the effects of carbon dioxide (CO(2)) (0% at 96 h, 60% at 48 h, and 60% at 96 h) and ozone (O(3)) (0 and 175 ppm for 48 h) on the volatile flavor compound concentrations in dry-cured ham. Minimal differences existed in the presence and concentration of aroma active compounds in both CO(2) and O(3) fumigated hams but phenols were slightly more prevalent (P < 0.05) in the CO(2) treatments and oxidation compounds were slightly elevated (P < 0.05) in the ozone treated samples when compared to the control. Triangle tests (n = 54 and 56) indicated that consumers could not discern (P > 0.75) between the control hams and the hams that were fumigated with CO(2) and O(3), respectively. This study revealed that there were minimal aroma/flavor differences among the ham treatments between 0 and 60% CO(2) for 96 h; and also between 0 and 175 ppm O(3).

Red muscadine (Vitis rotundifolia Michx.) juices with natural organic, phenolic acids and polyphenol compounds were tested against Cronobacter sakazakii. The concentration of total phenolic compounds of commercial baby juices ranged from 176.7 to 347.7 mg/mL. Commercial baby juices showed poor antimicrobial activity, reducing less than 1-log of C. sakazakii in juice samples for 2 h at 37 degrees C. Red muscadine juices, regardless of processing methods (filtration, pasteurization, and sterilization), achieved a 6-log reduction of C. sakazakii in the same time period (2 h). The mixture of synthetic organic acids (malic and tartaric acids) and polyphenolic acid (tannic acid) showed strong antimicrobial activity against C. sakazakii. Among synthetic organic acids, tannic acid was undetected in commercial baby juices. Tannic acid showed the highest antimicrobial activity (1.4- to 3.8-log reduction) against C. sakazakii, while malic and tartaric acids showed less than 0.5-log reduction. These results suggest that red muscadine juice could be utilized as a natural antimicrobial in baby food formulations to inhibit C. sakazakii.

Unlabelled: Catfish fillets were injected to 115% over green weight prior to tray-packing and storage at 4 degrees C for 1, 4, 8, and 11 d. Fillets were evaluated for yields, surface color, pH, cooking loss, tenderness, purge loss, and shelf-life. All phosphate treatments increased (P < 0.05) fillet tenderness, but the agglomerated blend of sodium phosphates (AGSP) increased (P < 0.05) pH and yields, and decreased (P < 0.05) CIE L* and CIE b* values. Psychrotrophic plate counts (PPC) of fillets treated with the agglomerated blend of polyphosphates (AGPP) were lower (P < 0.05) than the control at each storage time, but PPC of all samples reached 7 log CFU/g by day 8 of storage. All agglomerated phosphates and STP (sodium tripolyphosphate) improved yields and quality when compared to the nonmarinated control. However, AGSP was the most effective phosphate at increasing pick-up and yields and decreasing cooking loss due to the pH effect that causes more water to be trapped within the food system. Major quality differences may not have occurred between STP and agglomerated phosphates (other than AGSP) since injection relies solely on pH and ionic strength for marinade pickup, whereas tumbling also relies on mechanical action, which relies more on the presence of various phosphate chain lengths and solubility to impact yields. All phosphate treatments improved the quality of tray-packed, refrigerated catfish fillets that were enhanced through multineedle injection. However, AGSP also increased fillet pH, optimized yields, and improved color., Practical Application: Use of an agglomerated phosphate blend with a high pH (AGSP) maximized the yield of catfish fillets that were marinated through multineedle injection. In addition, STP and agglomerated phosphate blends increased the yield and tenderness of catfish fillets when compared to the nonmarinated control.
