As for the previous symposium, all aspects of the physiology, biochemistry, chemistry and molecular biology of fructans in plants and micro-organisms were covered in a series of reviews and research presentations. On this occasion, however, only research papers were considered for publication by "The New Phytologist," resulting in a volume, which gives a comprehensive and detailed account of current research in this area.
